Abstract
Herein, we developed multifunctional hydrogels formed between soybean protein (SPI)-gallic acid conjugate and oxidized dextran (ODex) via a Schiff base reaction. The effects of ODex on the morphology, structure, and functional properties of the hydrogels were elucidated. The results showed that the crosslinking modes in the hydrogels include hydrogen bonding, Schiff bases, Michael addition, and π-π stacking. The synergistic crosslinking of gallic acid and ODex conferred the hydrogels with an appropriate equilibrium swelling ratio, dense morphology, excellent mechanical properties, high thermal stability, and water-holding properties. When the addition of ODex was 0.8 (w/w), the hydrogel had a higher crosslinking degree (76.31 %), smaller average pore diameter (0.322 μm), and higher zero shear viscosity (748.5 mPa. s). In addition, in vitro digestion tests showed that hydrogel degradation was delayed upon increasing the degree of crosslinking, which improved the hydrogel's capacity to adsorb bile salts and control the release of curcumin. This study provides a theoretical basis for the design of high-quality protein hydrogels and other multifunctional materials suitable for various applications.

Abstract
A stimuli-responsive drug delivery system is developed for controlled delivery of curcumin (Cur) and chemo-photothermal therapy of breast cancer (BC). Cur is first loaded into mesoporous polydopamine nanoparticles (mPDA NPs) by π-π stacking, and then the Cur loaded mPDA NPs (mPDA NPs@Cur) are encapsulated in the hydrogels prepared through the crosslinking of oxidized konjac glucomannan (oxKGM) and carboxymethyl chitosan (CMCS). Owing to the pH-sensitivity of the hydrogels and the outstanding photothermal conversion capability of mPDA NPs, the release of Cur from the hydrogels can be greatly accelerated in acidic media upon near infrared (NIR) irradiation. Cytotoxicity assay indicates that the hydrogels have significant cytotoxicity against murine breast tumor cell 4 T1 while the drug-free hydrogels (oxKGM/CMCS/mPDA NPs) show good biocompatibility. In addition, the hyperthermia generated upon NIR irradiation can lead to the apoptosis of cancer cells, achieving chemo-photothermal combination therapy of BC. Release kinetics study reveals that the release of Cur from the hydrogels follows zero-order model.

Abstract
To reduce the content of non-network proteins in protein-based gels, a synergistic approach involving pH shift and D-galactose (DG) was developed herein to obtain elastic gels with dense networks. The results revealed that the combined effect of pH shift and DG promoted the formation of additional disulfide bonds and chemical bonds between molecules, resulting in a denser, and highly elastic gel network, which immobilized more aggregates, leading to a significant reduction in non-network protein content, and enhancing the functional properties of the gel. Moreover, non-network proteins primarily consisted of subunit A4 (mostly Glu and Asp), while the subunit B was the primary polypeptide forming the gel network. Therefore, the removal of the non-network protein has no significant effect on the microstructure, water holding capacity, elasticity, and recovery of the gel. Comprehensively, the combination of pH shift and DG generated a positive synergistic effect of the glycinin hydrogel network structure.

Abstract
Gels are intermediates between solid and liquid with elastic and flowable characteristics whose three-dimensional networks can restrict water, air, and oil. They have extensive applications in modern times in biomedical engineering, electronics, environmental engineering, etc. However, gels have also been made as foods from ancient times for over a thousand years, such as pudding, tofu, and cheese. Among them, protein-based gel-like foods have continuously garnered significant attention and research. In contrast, some polysaccharide-based gel-like foods in southeast Asia, such as "liangfen", "green tofu", "ice jelly", "tamarind jelly", "konjac tofu", and "black grass jelly", have not been noticed until recent years regarding their compositions and gelling mechanisms. This review commences on six traditional gel-like foods mentioned above, which refer to six different types of plants and four kinds of gel-forming polysaccharides, including pectin, tamarind seed xyloglucan, konjac glucomannan, and Mesona chinensis polysaccharide. Recent progress and developments of these gel-forming polysaccharides on different gelling mechanisms are summarized. Due to differences in corresponding gel properties, these polysaccharides are applied in various fields, such as delivery systems, tissue engineering, wound dressings, and adsorbent materials. Future trends of these gels would potentially focus on manipulating the mechanical properties by modifying the flexibility of polysaccharide molecules and designing composite gels, as well as producing stimuli-responsive hydrogels and other desirable aspects to catch up with the properties of synthetic counterparts.

Abstract
Few studies have been conducted on the relationship between the crosslinking ability of dialdehyde polysaccharides (DPs) with different structures and the structure and properties of hydrogels. Herein, the effects of dialdehyde sodium alginate (DSA), dialdehyde guar gum (DGG), and dialdehyde dextran (DDE) as crosslinking agents for gelatin (GE)-based hydrogels were comparatively studied. First, the structure and aldehyde content of DPs were evaluated. Subsequently, the structure, crosslinking degree, and physicochemical properties of GE/DP hydrogels were characterized. Compared with pure GE hydrogels, GE/DP hydrogels had higher thermal stability and mechanical properties. Moreover, the aldehyde content of DPs was ordered as follows: DSA < DGG < DDE. The higher crosslinking degree of the hydrogels formed by DPs with a higher aldehyde content resulted in smaller hydrogel pores, higher mechanical strength, and a lower equilibrium swelling rate. These observations provide a theoretical basis for selecting crosslinking candidates for hydrogel-specific applications.

Abstract
Lactoferrin (LF) with various biological functions demonstrates great application potential. However, its application was restricted by its poor gelation and instability. The aim of this work was to explore the effect of microbial transglutaminase (MTGase) and Tremella fuciformis polysaccharide (TP) on the functional properties of LF. The formation of a self-supporting LF gel could be induced by MTGase through generating covalent crosslinks between the LF protein molecules. Meanwhile, TP was introduced into the gel system to improve the strength of LF-TP composite gels by enhancing non-covalent interactions such as hydrogen bond and electrostatic interactions during gel formation. Additionally, the LF-TP composite gel exhibited outstanding functional characteristics such as gastrointestinal digestive stability and antioxidant property. This work clarified the mechanism on MTGase and TP-mediated modification of lactoferrin, offered a novel strategy to increase the functional characteristics of LF, and enlarged the application range of LF and TP.

Abstract
Konjac glucomannan (KG) is a dietary fiber hydrocolloid derived from Amorphophallus konjac tubers and is widely utilized as a food additive and dietary supplement. As a health-conscious choice, purified KG, along with konjac flour and KG-infused diets, have gained widespread acceptance in Asian and European markets. An overview of the chemical composition and structure of KG is given in this review, along with thorough explanations of the processes used in its extraction, production, and purification. KG has been shown to promote health by reducing glucose, cholesterol, triglyceride levels, and blood pressure, thereby offering significant weight loss advantages. Furthermore, this review delves into the extensive health benefits and pharmaceutical applications of KG and its derivatives, emphasizing its prebiotic, anti-inflammatory, and antitumor activities. This study highlights how these natural polysaccharides can positively influence health, underscoring their potential in various biomedical applications.

Abstract
In this work, lactoferrin (LF)-chitosan (CS) composite hydrogels with good loading capacity of thermosensitive bioactive substances were successfully obtained by microbial transglutaminase (MTG)-induced cross-linking. We evaluated the rheological, textural, and microstructural characteristics of the composite hydrogels under different conditions. The results demonstrated that the concentrations of LF and CS as well as the amount of MTG could regulate the textural properties, rheological properties, and water holding capability. The results of FTIR and fluorescence spectroscopy indicated that the main interactions within the composite gel were hydrogen and isopeptide bonds. Additionally, in vitro digestion simulation results verified that riboflavin kept stable in stomach due to the protection of LF-CS composite hydrogels and was released in small intestine. These results suggested that thermosensitive bioactive substance could be encapsulated and delivered by the LF-CS composite hydrogel, which could be applied in lots of potential applications in functional food as a new material.

Abstract
The physicochemical properties of dietary fiber in the gastrointestinal tract, such as hydration properties, adsorption properties, rheological properties, have an important influence on the physiological process of host digestion and absorption, leading to the differences in satiety and glucose and lipid metabolisms. Based on the diversified physicochemical properties of konjac glucomannan (KGM), it is meaningful to review the relationship of structural characteristics, physicochemical properties and glycose and lipid metabolism. Firstly, this paper bypassed the category of intestinal microbes, and explained the potential of dietary fiber in regulating glucose and lipid metabolism during nutrient digestion and absorption from the perspective of colloidal nutrition. Secondly, the modification methods of KGM to regulate its physicochemical properties were discussed and the relationship between KGM's molecular structure types and glycose and lipid metabolism were summarized. Finally, based on the characteristics of KGM, the application of KGM in the main material and ingredients of fat reduction food was reviewed. We hope this work could provide theoretical basis for the study of dietary fiber colloid nutrition science.

Abstract
A mixed polysaccharide system is an important strategy to improve the performance of a single polysaccharide. Herein, quaternary polysaccharide gels were prepared by konjac glucomannan (KGM), xanthan gum (XG), κ-carrageenan (κ-CA), and agar (AR). The effects of KGM were evaluated by combining water holding capacity (WHC), rheological analysis, scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FTIR), differential scanning calorimetry (DSC), and texture profile analysis (TPA). More KGM gradually increased the springiness of the compounded gels. WHC increased and then decreased with the addition of KGM, performing best at KGM4 (KGM: κ-CA:XG:AR = 2:2:1:2). Rheological analysis showed that the compounded gels exhibited a pseudoplastic characteristic of shear thinning, KGM endowed the gel with a stronger shear thinning behavior and improved the solid-like nature of the gels at high temperatures. The thermal stability of the composite gel was improved by the participation of KGM. FTIR analysis showed that the interactions were mainly related to intermolecular hydrogen bonds and acetyl groups. The microscopic morphology of KGM4 was significantly continuous, smooth, and compact, exhibiting the best practical performance and taking the maximum advantage.

Abstract
An ideal chronic wound dressing needs to have some properties, such as antibacterial, antioxidant, regulating macrophage polarization and promoting angiogenesis. This work presents a microneedle patch fabricated from oxidized konjac glucomannan (OKGM-MNs), in which Copper-gallate metal-organic framework (CuGA-MOF) is encapsulated for wound healing (denoted as CuGA-MOF@OKGM-MNs). CuGA-MOF is composed of Cu2+ and gallic acid (GA), which are released through microneedles in the deep layer of the dermis. The released Cu2+ is able to act as an antibacterial agent and promote angiogenesis, while GA as a reactive oxygen species scavenger displays antioxidant activity. More attractively, the material OKGM used to prepare the microneedle patch is not only a drug carrier but also plays a role in promoting macrophage polarization M2 phenotype. In vitro experiments showed that CuGA-MOF@OKGM-MNs had good antibacterial and antioxidant properties. The therapeutic effect on wound healing has been confirmed in full-thickness skin wounds of diabetes mice models, which showed that the wound could be completely healed within 21 days under the treatment of CuGA-MOF@OKGM-MNs, and the healing effect was better than other groups. These indicated that the proposed CuGA-MOF@OKGM-MNs could be applicable in the treatment of clinical wound healing.

Abstract
In the food industry, there is a growing demand for bigels that offer both adaptable oral sensations and versatile delivery properties. Herein, we developed bigels using a binary hydrogel of konjac glucomannan (KGM) and gelatin (G) combined with a stearic acid oleogel. We closely examined how the oleogel/hydrogel volume ratio (φ) and the KGM/G mass ratio (γ) influenced various characteristics of the bigels, including their microstructure, texture, rheological properties, thermal-sensitivity, oral tribology, digestive stability, and nutraceutical delivery efficiency. A noteworthy observation was the structural evolution of the bigels with increasing φ values: transitioning from oleogel-in-hydrogel to a bicontinuous structure, and eventually to hydrogel-in-oleogel. Lower γ values yielded a softer, thermally-responsive bigel, whereas higher γ values imparted enhanced viscosity, stickiness, and spreadability to the bigel. Oral tribology assessments demonstrated that φ primarily influenced the friction sensations at lower chewing intensities. In contrast, γ played a significant role in augmenting oral friction perceptions during more intense chewing. Additionally, φ dictated the controlled release and bioaccessibility of curcumin, while γ determined digestive stability. This study provides valuable insights, emphasizing that through meticulous selection and adjustment of the hydrogel matrix composition, bigels can be custom-fabricated to achieve specific oral sensations and regulated digestive behaviors.

Abstract
Konjac glucomannan (KGM), a dietary fiber hydrocolloid polysaccharide isolated from Amorphophallus konjac tubers, has potential applications in various fields. However, the use of KGM-based hydrogels has mainly focused on the food, biomedical, and water treatment industries. KGM possesses several health benefits and could be a promising candidate for use in edible electronics. This paper presents the first review of KGM-based hydrogels as edible electronics and their potential health benefits. The paper initially focuses on the health-promoting effects of KGM-based hydrogels, such as prebiotic effects, antiobesity, antioxidant, and antibacterial properties. Then, it discusses the feasible design strategies for KGM-based hydrogels as edible electronics, considering their flexibility, mechanical properties, response to stimuli, degradability aspects, their role as electronic device components, and the retention period of the devices. Finally, this review outlines future directions for developing KGM-based hydrogels for use in edible electronics.

Abstract
The increasing emergence of drug-resistant bacteria and bacteria-infected wounds highlights the urgent need for new kinds of antibacterial wound dressing. Herein, we reported a novel bio-adhesive and antibacterial hydrogel consisting of hydrophobically modified gelatin, oxidized konjac glucomannan, and dopamine. This kind of functional hydrogel was endowed with developed stability in a liquid environment and strong tissue adhesion, even much higher than the commercial fibrin glue to wounds. The excellent bacteria-killing efficiency of hydrophobically modified hydrogel against S. aureus and E. coli was verified, as well as the low hemolysis ratio against erythrocytes in vitro. The hydrogel also exhibited good cytocompatibility in terms of supporting cell proliferation. Most importantly, these abovementioned properties could be customized by altering the substitution degree of hydrophobic groups during manufacturing, demonstrating its great potential in biomedical fields such as tissue adhesive and wound dressing.

Abstract
Controlled drug delivery could minimize side effects while maintaining a high local dose. Herein, a hydrogel carrier was prepared by forming dynamic imine bonds between gelatin and oxidized dextran (ODex) of different molecular weights (Mw = 10, 70, and 150 kDa). The morphology, thermal stability, rheology, mechanical properties, and swelling properties of the hydrogels and the controlled release of curcumin were characterized. When dextran with a higher Mw was used, the ODex contained more aldehyde groups, which led to a higher degree of cross-linking, considerably shorter gel time, decreased hydrogel porosity, and well-controlled release of curcumin. In addition, the cross-linked hydrogels exhibited not only high thermal stability but also excellent mechanical properties. However, because the matrix was hydrophilic, the swelling properties of the hydrogels were not significantly affected by the Mw of ODex. These observations suggest an approach for designing nutrient delivery carriers with improved controlled release.

Abstract
In this study, polysaccharides from Laminaria japonica (LJP) were produced by the treatment of ultraviolet/hydrogen peroxide (UV/H2O2) degradation into different molecular weights. Then, the degraded LJP were used to prepare LJP/chitosan/PVA hydrogel wound dressings. As the molecular weight of LJP decreased from 315 kDa to 20 kDa, the swelling ratio of the LJP-based hydrogels rose from 14.38 ± 0.60 to 20.47 ± 0.42 folds of the original weight. However, the mechanical properties of LJP-based hydrogels slightly decreased. With the extension of the UV/H2O2 degradation time, the molecular weight of LJP gradually decreased, and the anti-inflammatory activities of LJP-based hydrogels gradually increased. LJP that were degraded for 60 min (60-gel) showed the best inhibition effects on proinflammatory cytokines, while the contents of TNF-α, IL-6, and IL-1β decreased by 57.33%, 44.80%, and 67.72%, respectively, compared with the Model group. The above results suggested that low Mw LJP-based hydrogels showed great potential for a wound dressing application.

Abstract
Diabetic wound healing is a major clinical challenge due to its vulnerability to bacterial infection and the prolonged inflammation in the wound. Traditional dressings for the healing of diabetic wounds are often suffered from unsatisfactory efficacy and frequent dressing changes which may cause secondary damage. Therefore, it is necessary to find a wound dressing that balances material functionality, degradation, safety, and tissue regeneration. Our recent studies demonstrated that gallic acid (GA) could spontaneously form supramolecular hydrogels at a relatively high concentration. However, a single network of GA hydrogel is prone to degradation, poor adhesion, and poor swelling, and may not be suitable for wound healing dressings. In this study, a composite hydrogel (GAK) was constructed by introducing konjac glucomannan (KGM) into the gel system of gallic acid (GA) and applied to promote diabetic wound healing. The composite hydrogel (GAK) with superior surface adhesion, stability, and swelling properties than the single-network of GA hydrogel. Moreover, in vitro experiments showed that GAK hydrogel had excellent biocompatibility and exhibited antibacterial activity against Escherichia coli (E. coli) and Staphylococcus aureus (S. aureus). Additionally, the GAK hydrogel could significantly accelerate angiogenesis, collagen deposition, and re-epithelialization during wound healing in diabetic mice, reducing the expression of related inflammatory proteins interleukin-1β (IL-1β), tumor necrosis factor-alpha (TNF-α), and cyclooxygenase-2 (COX-2), and improving the wound closure rate. The findings of this study suggest that this composite hydrogel (GAK) can be an ideal dressing material for accelerating diabetic wound healing.

Abstract
Functional hydrogels with properties that mimic the structure of extracellular matrix (ECM) and regulate cell behaviors have drawn much attention in biomedical applications. Herein, gelatin-based hydrogels were designed and loaded with chondroitin sulfate (CS) to endow biological regulation on the angiogenesis behaviors of endothelial cells (ECs). Manufactured hydrogels containing various amounts of CS were characterized via methods including mechanical tests, cytocompatibility, hemolysis, and angiogenesis assays. The results showed that the prepared hydrogels exhibited excellent mechanical stability, cytocompatibility, and hemocompatibility. Additionally, the angiogenesis behaviors of ECs were obviously promoted. However, excessive loading of CS would weaken the effect due to a higher proportion of occupation on the cell membrane. In conclusion, this investigation highlights the great potential of these hydrogels in treating ischemic diseases and accelerating tissue regeneration in terms of regulating the angiogenesis process via CS release.

Abstract
In situ forming hydrogels with strong adhesive strength and antibacterial activity are of great interest to serve as tissue adhesive in fields like wound dressing and mass hemorrhage. In this study, hybrid hydrogel (GOHA) based on gelatin and oxidized hyaluronic acid was developed and endowed with excellent mechanical strength and tissue adhesion. According to our results, GOHA hydrogel exhibits a fast gelation time of around 60 s, robust compression strength of 223.43 ± 24.28 kPa, and strong adhesion of 14.33 ± 0.78 kPa to porcine skin, which is much higher than that of commercial fibrin glue (around 1.00 kPa). Meanwhile, through the loading of levofloxacin, obvious antibacterial activity can be obtained for wider applications. Notably, it would not compromise the hemocompatibility and cytocompatibility in vitro. In summary, this kind of hybrid hydrogel shows great potential as tissue adhesive in biomedical fields.

Abstract
Due to the defects like long gelling time, inferior mechanical properties and weak adhesion, in-situ forming hydrogels are still restricted in biomedical applications like viscera rupture and targeted therapy. To address these problems, a new kind of multi-crosslinked hydrogel (G-OKG-DA) consisting of gelatin, oxidized konjac glucomannan (OKG), and dopamine (DA) is proposed in this study. The resulting hybrid hydrogel is endowed with a short gelling time (about 3 min) and injectable capacity. According to the mechanical and adhesive tests, G-OKG-DA hydrogel shows a robust tensile strength of 23.94 kPa, as well as a higher adhesive strength (around 150 kPa) than commercial fibrin glue. In addition, an instant self-healing behavior of G-OKG-DA hydrogel can be found, which is attributed to multi-crosslinking reactions including Schiff-base dynamic covalent bonds between OKG and gelatin, oxidative polymerization of DA, and catechol-mediated chemistry like Michael addition and DA-quinone coupling. Importantly, the multi-crosslinked hydrogel will not compromise its hemocompatibility and cytocompatibility in vitro, suggesting potential applications in biomedical fields as tissue adhesive and implants. Abstract
Leather is widely used in daily necessities, such as shoes and bags. Traditional chrome tanning might produce leathers with excellent mechanical and thermal properties but gives rise to problems, such as environmental pollution. To find an ecological alternative for chrome-tanning agents, soluble soybean polysaccharide (SSPS) was oxidized by sodium periodate to yield dialdehyde soluble soybean polysaccharide (DPA). By the response surface methodology (RSM)-based optimization of the preparation process, DPA was obtained at the optimized condition at the mass ratio of 1 : 1.9, oxidation time of 0.53 h, and oxidation temperature of 20 °C, and the hydrothermal shrinkage temperature of the DPA-tanned leather reached 79 °C. The Fourier transform infrared (FT-IR) spectra and gel permeation chromatography (GPC) showed that the aldehyde group was successfully introduced, and the molecular weight was significantly reduced. The DPA-tanned leather has good collagen fiber dispersion and mechanical properties and thus is suggested to be a green tanning agent for leather making. Leather is widely used in daily necessities, such as shoes and bags.![]()

Abstract
Injectable hydrogels, of which the cover area and volume can be flexibly adjusted according to the shape and depth of the wound, are considered to be an ideal material for wound dressing. Konjac glucomannan (KGM) is a natural polysaccharide with immunomodulatory capability, while γ-polyglutamic acid (γ-PGA) is a single chain polyamino acid with moisturizing, water-retention and antibacterial properties. This work intended to combine the advantages of the two materials to prepare an injectable hydrogel (P-OK) by mixing the adipic acid dihydrazide (ADH) modified γ-PGA with oxidized KGM. The chemical structures, the physical and chemical properties, and the biological properties of the P-OK hydrogel were evaluated. The optimal conditions to form the P-OK hydrogel were fixed, and the cytotoxicity, qPCR, antibacterial and animal experiments were performed. Results showed that the P-OK hydrogel had a fast gelation time, good water-retention rate, little cytotoxicity, good immunomodulating and antibacterial capabilities, and could shorten the healing period in the rat full-thickness defect model, which makes it a potential candidate for wound repair dressing.

Abstract
Natural polymer material-based hydrogels normally show inferior mechanical stability and strength to bear large deformation and cyclic loading, therefore their applications in food, biomedical and tissue engineering fields are greatly limited. In this study, gelatin-based hydrogels with remarkable stability, as well as tunable mechanical properties, were prepared via a facile method known as the Hofmeister effect. The higher concentration of potassium sulfatesolution resulted in more dehydration and molecular chain folding, thus the treated hydrogels showed significantly improved tensile and compressive modulus, and decreased equilibrium swelling ratio, as revealed by scanning electron microscopy (SEM), Fourier transform infraredspectroscopy (FTIR), and mechanical tests, etc. Additionally, the reinforced hydrogels were recoverable and biocompatible to modulate the proliferation behavior of human umbilical vein endothelial cells. In conclusion, this paper provides a facile reference for tuning mechanical properties of gelatin-based hydrogels and cell-hydrogel interactions, which show potential capacity in tissue engineering and biomedical fields.

Abstract
Injectable hydrogel possesses great application potential in disease treatment and tissue engineering, but damage to gel often occurs due to the squeezing pressure from injection devices and the mechanical forces from limb movement, and leads to the rapid degradation of gel matrix and the leakage of the load material. The self-healing injectable hydrogels can overcome these drawbacks via automatically repairing gel structural defects and restoring gel function. The polysaccharide hydrogels constructed through the Schiff base reaction own advantages including simple fabrication, injectability, and self-healing under physiological conditions, and therefore have drawn extensive attention and investigation recently. In this short review, the preparation and self-healing properties of the polysaccharide hydrogels that is established on the Schiff base reaction are focused on and their biological applications in drug delivery and cell therapy are discussed.
