Abstract
Electrospun nanofibers, renowned for their high specific surface area, robust mechanical properties, and versatile chemical functionalities, offer a promising platform for enzyme immobilization. Over the past decade, significant strides have been made in developing enzyme-induced electrospun nanofibers (EIEN). This review systematically summarizes the advanced applications of EIEN which are fabricated using both non-specific immobilization methods including interfacial adsorption (direct adsorption, cross-linking, and covalent binding) and encapsulation, and specific immobilization techniques (coordination and affinity immobilization). Future research should prioritize optimizing immobilization techniques to achieve a balance between enzyme activity, stability, and cost-effectiveness, thereby facilitating the industrialization of EIEN. We elucidate the rationale behind various immobilization methods and their applications, such as wastewater treatment, biosensors, and biomedicine. We aim to provide guidelines for developing suitable EIEN immobilization techniques tailored to specific future applications.

Abstract
The objective of this study was to immobilize a recombinant β-galactosidase (Gal) tagged with a cellulose-binding domain (CBD) onto a magnetic core-shell (CS) cellulose system. After 30 min of reaction, 4 U/capsule were immobilized (CS@Gal), resulting in levels of yield and efficiency exceeding 80 %. The optimal temperature for β-galactosidase-CBD activity increased from 40 to 50 °C following oriented immobilization. The inhibitory effect of galactose decreased in the enzyme reactions catalyzed by CS@Gal, and Mg2+ increased the immobilized enzyme activity by 40 % in the magnetic CS cellulose system. The relative enzyme activity of the CS@Gal was 20 % higher than that of the soluble enzyme activity after 20 min at 50 °C. The CS support and CS@Gal capsules exhibited an average size of 8 ± 1 mm, with the structure of the shell (alginate-pectin-cellulose) enveloping and isolating the magnetic core. The immobilized β-galactosidase-CBD within the magnetic CS cellulose system retained ∼80 % of its capacity to hydrolyze lactose from skim milk after 10 reuse cycles. This study unveils a novel and promising support for the oriented immobilization of recombinant β-galactosidase using a magnetic CS system and a CBD tag. This support facilitates β-galactosidase reuse and efficient separation, consequently enhancing the catalytic properties of the enzyme.

Abstract
Enzymes are widely used in the food industry due to their ability in improving the functional, sensory, and nutritional properties of food products. However, their poor stability under harsh industrial conditions and their compromised shelf-lives during long-term storage limit their applications. This review introduces typical enzymes and their functionality in the food industry and demonstrates spray drying as a promising approach for enzyme encapsulation. Recent studies on encapsulation of enzymes in the food industry using spray drying and the key achievements are summarized. The latest developments including the novel design of spray drying chambers, nozzle atomizers and advanced spray drying techniques are also analyzed and discussed in depth. In addition, the scale-up pathways connecting laboratory scale trials and industrial scale productions are illustrated, as most of the current studies have been limited to lab-scales. Enzyme encapsulation using spray drying is a versatile strategy to improve enzyme stability in an economical and industrial viable way. Various nozzle atomizers and drying chambers have recently been developed to increase process efficiency and product quality. A comprehensive understanding of the complex droplet-to-particle transformations during the drying process would be beneficial for both process optimization and scale-up design.

Abstract
Siraitia grosvenorii is a type of fruit used in traditional Chinese medicine. Previous studies have shown that the conversion of saponins was often carried out by chemical hydrolysis, which can be problematic because of the environmental hazards it may cause and the low yield it produces. Therefore, the purpose of this study is to establish a continuous bioreactor with immobilized enzymes to produce siamenoside I and mogroside IV. The results show that the immobilization process of β-glucosidase exhibited the best relative activity with a glutaraldehyde (GA) concentration of 1.5%, carrier activation time of 1 h and binding enzyme time of 12 h. After the immobilization through GA linkage, the highest relative activity of β-glucosidase was recorded through the reaction with the substrate at 60 °C and pH 5. Subsequently, the glass microspheres with immobilized β-glucosidase were filled into the reactor to maintain the optimal active environment, and the aqueous solution of Siraitia grosvenorii extract was introduced by controlling the flow rate. The highest concentration of siamenoside I and mogroside IV were obtained at a flow rate of 0.3 and 0.2 mL/min, respectively. By developing this immobilized enzyme system, siamenoside I and mogroside IV can be prepared in large quantities for industrial applications.

Abstract
We are facing a high risk of exposure to emerging contaminants and increasing environmental pollution with the concomitant growth of industries. Persistence of these pollutants is a major concern to the ecosystem. Laccases, also known as "green catalysts" are multi-copper oxidases which offers an eco-friendly solution for the degradation of these hazardous pollutants to less or non-toxic compounds. Although various other biological methods exist for the treatment of pollutants, the fact that laccases catalyze the oxidation of broad range of substrates in the presence of molecular oxygen without any additional cofactor and releases water as the by-product makes them exceptional. They have a good possibility of utilization in various industries, especially for the purpose of bioremediation. Besides this, they have also been used in medical/health care, food industry, bio-bleaching, wine stabilization, organic synthesis and biosensors. This review covers the catalytic behaviour of laccases, their immobilization strategies, potential applications in bioremediation of recalcitrant environmental pollutants and their engineering. It provides a comprehensive summary of most factors to consider while working with laccases in an industrial setting. It compares the benefits and drawbacks of the current techniques. Immobilization and mediators, two of the most significant aspects in working with laccases, have been meticulously discussed.

Abstract
Organic-inorganic hybrid nanoflowers (HNFs) of laccase@Zn3(PO4)2 were fabricated through a facile, simple, and rapid one-step strategy. In this process, laccase was involved in nucleation and fast anisotropic growth reactions with Zn (II) and phosphate ions. The average pore size of the prepared HNFs was 54.5 nm, and its BET-specific surface area was 59.5 m2 g-1. In comparison with the free laccase, the entrapped enzyme activity in the constructed HNFs was 86.4%. In addition, the hybrid biocatalyst displayed a maximum rate of reaction (Vmax) of 1640.2 ± 3.6 μmol min-1 with respect to the native enzyme. The constructed HNFs maintained 45.1% and 60% of the original laccase activity after 12 successive reusability cycles and 30 days of storage at 4 °C, respectively. The as-obtained HNFs demonstrated a high bioremoval percentage of Direct blue-71 (94.1%) within a 10-h-treatment at 40 °C and 15 mg l-1 of the dye concentration. The pseudo-first order and second order were the best-fitted kinetic models for the dye removal using Zn3(PO4)2 nanoflakes and the fabricated HNFs, respectively. Besides, liquid chromatography-mass spectrometry (LC-MS) revealed biotransformation of the dye into less toxic metabolites as verified by testing on some bacterial strains.

Abstract
The market for industrial enzymes has witnessed constant growth, which is currently around 7% a year, projected to reach $10.5 billion in 2024. Lipases are hydrolase enzymes naturally responsible for triglyceride hydrolysis. They are the most expansively used industrial biocatalysts, with wide application in a broad range of industries. However, these biocatalytic processes are usually limited by the low stability of the enzyme, the half-life time, and the processes required to solve these problems are complex and lack application feasibility at the industrial scale. Emerging technologies create new materials for enzyme carriers and sophisticate the well-known immobilization principles to produce more robust, eco-friendlier, and cheaper biocatalysts. Therefore, this review discusses the trending studies and industrial applications of the materials and protocols for lipase immobilization, analyzing their advantages and disadvantages. Finally, it summarizes the current challenges and potential alternatives for lipases at the industrial level.

Abstract
This study developed a nutritionally valuable product with bioactive activity that improves the quality of bread. Djulis (Chenopodium formosanum), a native plant of Taiwan, was fermented using 23 different lactic acid bacteria strains. Lactobacillus casei BCRC10697 was identified as the ideal strain for fermentation, as it lowered the pH value of samples to 4.6 and demonstrated proteolysis ability 1.88 times higher than controls after 24 h of fermentation. Response surface methodology was adopted to optimize the djulis fermentation conditions for trolox equivalent antioxidant capacity (TEAC). The optimal conditions were a temperature of 33.5 °C, fructose content of 7.7%, and dough yield of 332.8, which yielded a TEAC at 6.82 mmol/kg. A 63% increase in TEAC and 20% increase in DPPH were observed when compared with unfermented djulis. Subsequently, the fermented djulis was used in different proportions as a substitute for wheat flour to make bread. The total phenolic and flavonoid compounds were 4.23 mg GAE/g and 3.46 mg QE/g, marking respective increases of 18% and 40% when the djulis was added. Texture analysis revealed that adding djulis increased the hardness and chewiness of sourdough breads. It also extended their shelf life by approximately 2 days. Thus, adding djulis to sourdough can enhance the functionality of breads and may provide a potential basis for developing djulis-based functional food.

Abstract
The present work aims to synthesize the rifaximin loaded chitosan-alginate core-shell nanoparticles (Rif@CS/Alg-NPs) for antibacterial applications. The core-shell nanoparticles (Rif@CS/Alg-NPs) were characterized by Fourier Transform Infrared (FT-IR) spectroscopy, Scanning Electron Microscopy (SEM), Transmission Electron Microscopy (TEM), X-rays diffraction (XRD) and zeta analyzer. The antibacterial activities of Rif@CS/Alg-NPs were investigated against three species of bacteria namely Escherichia coli (E. coli), Pseudomonas aeruginosa (PA) and Bacillus haynesii (BH). Rif@CS/Alg-NPs exhibited outstanding antibacterial activities against E. coli, P. aeroginosa and Bacillus haynesii (BH) with 24 mm, 30 mm and 34 mm zone of inhibitions, respectively. Cytotoxicity of Rif@CS/Alg-NPs was also evaluated against human lung adenocarcinoma cell line A549 and found to be nontoxic. The drug release behavior of Rif@CS/Alg-NPs was investigated at different pH levels and maximum drug release (80%) was achieved at pH (7.2). The drug release kinetic data followed the Higuchi (R2 = 0.9963) kinetic model, indicating the drug release from Rif@CS/Alg-NPs as a square root of time-dependent process and diffusion controlled. Current research provides a cost-effective and green approach toward the synthesis of Rif@CS/Alg-NPs for its antibacterial applications.
