Abstract
In this study, molecular dynamics simulation was used to explore the interaction characteristics of palmitic acid and CO2, and the effects of temperature and pressure on the solubility of palmitic acid in CO2 were investigated. In the range of 293-353 K and 5-30 MPa, the snapshot of palmitic acid distribution in CO2 shows that the molecular chain of palmitic acid in high-density CO2 system is more straight and more dispersed than that in low-density CO2 system. The radial distribution function further clearly shows that the solubility of palmitic acid in CO2 decreases with the increase of temperature and increases with the increase of pressure, which is consistent with the fatty acid solubility data reported in the literature and the setting rules of supercritical CO2 extraction process conditions. As the temperature decreases and the pressure increases, the interaction energy between palmitic acid and CO2 increases, which is conducive to overcoming the intermolecular force of palmitic acid and promoting dissolution. The solubility parameters of palmitic acid and CO2 can better reflect the trend of palmitic acid solubility changing with temperature and pressure, which can play a guiding role in the determination of process conditions and even the development of new processes.

Abstract
Consumers have an increasing demand for fruit and vegetables with high nutritional value worldwide. However, most fruit and vegetables are vulnerable to quality loss and spoilage during processing, transportation, and storage. Among the recently introduced emerging technologies, supercritical carbon dioxide (SCCO2) has been extensively utilized to treat and maintain fruit and vegetables mainly due to its nontoxicity, safety, and environmentally friendly. SCCO2 technology generates low processing costs and mild processing conditions (temperature and pressure) that allow for the application of CO2 at a supercritical state. This review aimed to summarize the current knowledge on the influence of SCCO2 technology on the quality attributes of fruit and vegetable products, such as physicochemical properties (pH, color, cloud, particle size distribution, texture), sensory quality, and nutritional composition (ascorbic acid, phenolic compounds, anthocyanins, carotenoids, and betalains). In addition, the effects and mechanisms of the SCCO2 technique on endogenous enzyme inactivation (polyphenol oxidase, peroxidase, and pectin methylesterase) were also elucidated. Finally, the prospects of the SCCO2 technique for industrial application was discussed from the economic and regulatory aspect.

Abstract
Rosmarinic acid (RA) is present in a broad variety of plants, including those in the Lamiaceae family, and has a wide range of pharmacological effects, particularly antioxidant activity. To extract RA from Orthosiphon stamineus (OS) leaves, a Lamiaceae plant, a suitable extraction process is necessary. The present study used a green extraction method of supercritical carbon dioxide (SCCO2) extraction with the addition of ethanol as a modifier to objectively measure and correlate the solubility of RA from OS leaves. The solubility of RA in SCCO2 was determined using a dynamic extraction approach, and the solubility data were correlated using three density-based semi-empirical models developed by Chrastil, del Valle-Aguilera, and Gonzalez. Temperatures of 40, 60, and 80 °C and pressures of 10, 20, and 30 MPa were used in the experiments. The maximum RA solubility was found at 80 °C and 10 MPa with 2.004 mg of rosmarinic acid/L solvent. The RA solubility data correlated strongly with the three semi-empirical models with less than 10% AARD. Furthermore, the fastest RA extraction rate of 0.0061 mg/g min−1 was recorded at 80 °C and 10 MPa, and the correlation using the Patricelli model was in strong agreement with experimental results with less than 15% AARD.

Abstract
The tiger nut is the tuber of Cyperus esculentus L., which is a high-quality wholesome crop that contains lipids, protein, starch, fiber, vitamins, minerals and bioactive factors. This article systematically reviewed the nutritional composition of tiger nuts; the processing methods for extracting oil, starch and other edible components; the physiochemical and functional characteristics; as well as their applications in food industry. Different extraction methods can affect functional and nutritional properties to a certain extent. At present, mechanical compression, alkaline methods and alkali extraction-acid precipitation are the most suitable methods for the production of its oil, starch and protein in the food industry, respectively. Based on traditional extraction methods, combination of innovative techniques aimed at yield and physiochemical characteristics is essential for the comprehensive utilization of nutrients. In addition, tiger nut has the radical scavenging ability, in vitro inhibition of lipid peroxidation, anti-inflammatory and anti-apoptotic effects and displays medical properties. It has been made to milk, snacks, beverages and gluten-free bread. Despite their ancient use for food and feed and the many years of intense research, tiger nuts and their components still deserve further exploitation on the functional properties, modifications and intensive processing to make them suitable for industrial production.

Abstract
A widely disseminated native species from Australia, Acacia mearnsii, which is mainly cultivated in Brazil and South Africa, represents a rich source of natural tannins used in the tanning process. Many flowers of the Acacia species are used as sources of compounds of interest for the cosmetic industry, such as phenolic compounds. In this study, supercritical fluid extraction was used to obtain non-volatile compounds from A. mearnsii flowers for the first time. The extract showed antimicrobial activity and the presence of p-anisic acid, a substance with industrial and pharmaceutical applications. The fractionation of the extract was performed using a chromatographic column and the fraction containing p-anisic acid presented better minimum inhibitory concentration (MIC) results than the crude extract. Thus, the extraction process was optimized to maximize the p-anisic acid extraction. The response surface methodology and the Box–Behnken design was used to evaluate the pressure, temperature, the cosolvent, and the influence of the particle size on the extraction process. After the optimization process, the p-anisic acid yield was 2.51% w/w and the extraction curve was plotted as a function of time. The simulation of the extraction process was performed using the three models available in the literature.

Abstract
Sacha inchi seed oil is a promising substance for applications in food, pharmaceutical, and nutraceutical industries because of its valuable components, particularly omega-3. In this research, sacha inchi oil was extracted from the seed kernels using supercritical carbon dioxide (CO2) extraction compared with Soxhlet extraction. The influences of extraction time, type of solvents (hexane, ethanol, butanol, and i-propanol), and solvent volume on the oil yield and compositions were investigated in the Soxhlet. In the supercritical CO2 extraction, the effects of extraction time, temperature, and pressure were evaluated. The physicochemical properties of sacha inchi oils extracted with supercritical CO2 were characterized. Scanning electron microscopy (SEM) equipped with energy dispersive X-ray analysis (EDX), Fourier transform infrared (FTIR) spectroscopy, thermogravimetric analysis (TGA), and differential scanning calorimetry (DSC) were also carried out. The results showed the advantage of using supercritical CO2 extraction to increase the omega-3 content in the extracted oil within a shorter extraction time. The omega-3 content of 46.08% was obtained from the supercritical CO2 extraction at 400 bar and 60 °C. Supercritical CO2 extraction is a safe and environmentally friendly method that yields a toxic-free oil.
