Recent advances in electrochemical sensors based on nanomaterials for detection of red dyes in food products: A review

Red dyes as Allura Red (E129), Amaranth (E124), Ponceau 4R (E123), Erythrosine (E127) and Carmoisine (E122), are very popular food additives due to their stability, low cost, and minimal microbial contamination. Despite these advantages, their consumption may result in asthma, hyperactivity, carcinogenic effects, etc depending on the uptake and age. Therefore, the United States Food and Drug Administration (FDA) and European Food Safety Authority (EFSA) have managed the permissions of allowed daily intake (ADI) for consumption levels of these dyes to be 0.01-7.0 mg/kg to assure foodstuffs consumer's safety and avoid their adverse effects. Yet, many countries as Japan and USA have prohibited their use in food and drinks to reduce their possible health risks. Based on the above concentration ranges, highly sensitive and selective detection techniques are required, accordingly, the application of electrochemical sensors for the analysis of these dyes in food samples is very promising due to their superior sensitivity and selectivity, low cost and rapid response compared to traditional spectrophotometric or chromatographic methods. Also, they can be miniaturized, portable and require no complicated sampling or preparation procedures, besides being ecofriendly which allows their commercialization for public consumers in fast detection kits. In this review, the role of nanomaterials such as: carbon-based, transition metal oxides, metal organic frameworks, ionic liquids and others in enhancing the detection properties of modified electrochemical sensors for red dyes will be evaluated in terms of the type of nanomaterial applied, tested food samples and their impact on the evaluation of foodstuffs quality.

Recent advances in Ponceau dyes monitoring as food colorant substances by electrochemical sensors and developed procedures for their removal from real samples

Ponceau dyes are one of the food coloring materials that are added to various pharmaceutical, health and food products and give them an appearance. These dyes contain contaminants such as Benzidine, 4-Aminobiphenyl, and 4-Aminoazobenzene that are safe in small amounts, but they are not approved by the US Food and Drug Administration (US-FDA) for human consumption. This study comprehensively was reviewed the properties, applications, chemistry, and toxicity of Ponceau dyes as food colorant substances. Electroanalysis of Ponceau dyes was discussed in detail, and the various electrochemical sensors used to detect and monitor these dyes as food colorant were examined. The applied methods of removing and degradation of these dyes in municipal and industrial wastes were also discussed. Conclusions and future perspectives to motivate future research were also explored.

Ultrasonic-assisted cloud point microextraction and spectrophotometric determination of Ponceau 4R in various beverage samples using Non-ionic surfactant PONPE 7.5

In the current study, a simple, cheap, and fast analytical procedure, termed ultrasonic-assisted cloud point microextraction (UA-CPME), combined with UV-VIS spectrophotometry, was developed for the pre-concentration and identification of Ponceau 4R in some beverage samples. Ponceau 4R was extracted from aqueous solution using polyethylene glycol mono-p-nonylphenyl ether (PONPE 7.5) as extraction solvent in the presence of Cu(II) at pH 6.0. Variables influencing the UA-CPME extraction efficiency such as pH, metal type and amount, temperature, ultrasonic effect, solvent type, non-ionic surfactant type and concentration were optimised in detail. Under optimum conditions, the analytical properties of the developed method were as follows: linear working range, 20-750 μg L^-1; limit of detection, 6.5 µg L^-1; and the pre-concentration factor, 200. The relative standard deviation (RSD%) obtained for 50 µg L^-1 (n = 5) of Ponceau 4R was 2.9%. The accuracy and precision of the method were evaluated by intra-day and inter-day studies. Finally, the developed method has been successfully applied to the separation and identification of Ponceau 4R in the selected samples and the recoveries ranged from 94.3 to 104.2.

Determination of Allura Red in the Presence of Cetylpyridinium Bromide by Square-wave Adsorptive Stripping Voltammetry on a Glassy Carbon Electrode

A simple method to determine Allura Red (AR) in cherry gelatin, chili sauce and strawberry juice by square-wave adsorptive stripping voltammetry (SWAdV) in the presence of cetylpyridinium bromide (CPB) is reported. Using a glassy carbon electrode (GCE), Amaranth (AM), Ponceau 4R (P-4R) and AR were oxidized to very close potential values in medium acid pH 3.0 with phosphate buffer solution (PBS), making selective AR detection impossible. Under these conditions AM, P-4R and AR were oxidized at 0.80, 0.77 and 0.81 V, respectively. When small amounts of CPB were added, an AR-CPB aggregate was formed. This change displaced the oxidation almost 0.14 V in the direction of the most positive potential and increased the current almost 50%, while AM and P-4R were oxidized at almost the same potential. Under these conditions, the selective determination of AR in food was possible. Detection limit was 0.032 μmol L^-1. Finally, the method was successfully applied to the determination of AR in these foods.

Morphology-dependent electrochemical sensing performance of metal (Ni, Co, Zn)-organic frameworks

To clarify the morphology effect of metal-organic frameworks (MOFs) on their electrochemistry as well as to explore their electrochemical applications, three MOFs with metal centers of nickel, cobalt, and zinc are synthesized. The used organic ligand is only 1,3,5-benzenetricarboxylic acid. Characterizations using Fourier Transform infrared spectroscopy, X-ray diffraction, scanning electron microscopy, and electrochemical techniques reveal that these MOFs possess similar bonding properties, crystalline structures and phase purity, but various morphology and electrochemical activities, including their own redox behavior, electrochemical response toward redox probes and analytes in solutions. As a case study of analytes, voltammetry of Ponceau 4R is investigated on three MOFs. Its sensitive and selective monitoring is further achieved on nickel MOFs with a linear range from 0.5 to 150 nM and a detection limit of 80 pM. Therefore, the morphology of MOFs determines electrochemistry of MOFs and their electrochemical sensing applications.
