Abstract
BACKGROUND Malnutrition remains a global problem and is increasing with the emergence of the COVID-19 pandemic. In Madagascar, half of the children under five years of age suffer from stunting. However, since 2006, vitamin A supplementation campaigns, deworming and free vaccinations have been implemented within the framework of the Mother and Child Health Week (MCHW) to strengthen the fight against micronutrient deficiencies and reduce mortality. On the other hand, rice, the staple food of the Malagasy population, can provide some of the micronutrients necessary for good nutrition. However, the country's rice production is still insufficient, and the price has been rising steadily in recent years. This has led the government to resort to the policy of stabilizing rice prices through imported rice in 2017 and 2018. The aim of this paper is therefore to analyse the effects of these policies on the prevalence of malnutrition among children under five years of age in Madagascar. Which policy would be more effective: the nutrition policy or the price stabilisation policy? METHODS Data from the Multiple Indicator Cluster Survey conducted by the National Institute of Statistics in 2018 are used, and logistic regressions for the analysis of the effects of nutrition policies on nutrition outcomes are performed. For the effect of price stabilisation policy, panel data on 22 regions of Madagascar from 2016 to 2019 are considered, and a fixed effect model is used. RESULTS We found that the effects of the nutrition policy are not immediately visible. Only participation in the 2016 MCHW contributes to a lower probability of malnutrition occurrence. The odds ratios of the effects of this participation on stunting are 0.69 (p-value: 0.05); on underweight: 0.70 (p-value < 0.01); and on wasting: 0.57 (p-value < 0.01). However, the participation rate remains very low. Then, there is no effect of the rice price stabilization policy on nutrition outcomes (0.00; p-value = 0.11). CONCLUSIONS Price stabilisation policy is not sufficient to fight against malnutrition, due to a lack of food diversification. These results suggest the need for a policy to ensure nutritional intake and to sensitize the population to participate in the MCHW. TRIAL REGISTRATION Not applicable.

Abstract
Rice is a predominant staple food in many countries. It is a great source of energy but can also accumulate toxic and trace metal(loid)s from the environment and pose serious health hazards to consumers if overdosed. This study aims to determine the concentration of toxic metal(loid)s [arsenic (As), cadmium (Cd), nickel (Ni)] and essential metal(loid)s [iron (Fe), selenium (Se), copper (Cu), chromium (Cr), cobalt (Co)] in various types of commercially available rice (basmati, glutinous, brown, local whites, and fragrant rice) in Malaysia, and to assess the potential human health risk. Rice samples were digested following the USEPA 3050B acid digestion method and the concentrations of metal(loid)s were analyzed using an inductively coupled plasma mass spectrometry (ICP-MS). Mean concentrations (mg/kg as dry weight) of metal(loid)s (n=45) across all rice types were found in the order of Fe (41.37)>Cu (6.51)>Cr (1.91)>Ni (0.38)>As (0.35)>Se (0.07)>Cd (0.03)>Co (0.02). Thirty-three percent and none of the rice samples surpassed, respectively, the FAO/WHO recommended limits of As and Cd. This study revealed that rice could be a primary exposure pathway to toxic metal(loid)s, leading to either noncarcinogenic or carcinogenic health problems. The non-carcinogenic health risk was mainly associated with As which contributed 63% to the hazard index followed by Cr (34%), Cd (2%), and Ni (1%). The carcinogenic risk to adults was high (>10-4) for As, Cr, Cd, and Ni. The cancer risk (CR) for each element was 5 to 8 times higher than the upper limit of cancer risk for an environmental carcinogen (<10-4). The findings from this study could provide the metal(loid)s pollution status of various types of rice which are beneficial to relevant authorities in addressing food safety and security-related issues.

Abstract
Genetically modified (GM) crops expressing insecticidal and herbicide-tolerant traits provide a new approach to agriculture production, but concerns about food safety were often raised by the public. The present research shows the findings of the nutritional assessment of ZDAB3 expressing insecticidal Cry proteins (Cry1Ab and Cry2Ab) and EPSPS protein (G10evo-EPSPS). The key nutrients and anti-nutrients of ZDAB3 maize were examined and contrasted with those of its non-transgenic control maize grown at the same locations during three planting seasons. The values for proximates, amino acids, fatty acids, minerals, vitamins, phytic acid, and trypsin inhibitor assessed for ZDAB3 were comparable to those of its non-transgenic control maize or within the range of values reported for other commercial lines. In addition, no adverse effects related to the G10evo-EPSPS protein in mammals were observed. These data indicated that the expression of Cry1Ab, Cry2Ab, and G10evo-EPSPS proteins in ZDAB3 maize does not affect the nutritional compositions, and ZDAB3 maize is equivalent to non-transgenic maize regarding those important compositions.

Abstract
Rice, as one of the main food crops, provides a vital source of dietary energy for over half the world's population. The OsFAD3 gene encodes fatty acid desaturase, catalyzing the conversion of linoleic acid (LA) to alpha-linolenic acid (ALA) in rice. However, the genetic characterization of OsFAD3 and its role in the conversion of LA to ALA remains elusive. Here, we validated the effects of two homologous genes, OsFAD3-1 and OsFAD3-2, on the ALA and LA/ALA ratio in rice grains using near-isogenic lines. Two major haplotypes of OsFAD3-1 are identified with different effects on the ALA and LA/ALA ratio in rice germplasm. High expression of OsFAD3-1 is associated with high ALA accumulation and eating quality of rice grains. Overexpression of OsFAD3-1 driven by a seed-specific promoter increases the ALA content up to 16-fold in the endosperm. A diagnostic marker is designed based on an 8-bp insertion/deletion in the OsFAD3-1 promoter, which can recognize OsFAD3-1 alleles in rice. These results indicate that OsFAD3-1 is a useful target gene in marker-assisted breeding programs to improve varieties with high ALA and appropriate LA/ALA ratio in brown rice.

Abstract
Aim: This study aimed to determine the food safety and protein adequacy of meats from various animals in the Shuchinsk-Burabay resort zone. Materials and Methods: Samples of meat were collected from markets “Zhomart” and “Kausar.” Two hundred and ninety-eight samples of meat were obtained: beef - 166, horse - 42, pork - 67, mutton - 8, and poultry - 15. From each carcass, part of the carcass, point samples were taken to form an average sample and conduct research. Analyses used inductively coupled plasma mass spectrometry and liquid chromatography. The determination of amino acid composition was carried out following the chromatographic method for determining the amino acid composition of meat proteins. Results: The quality of meats from the resort zone was lower than recommended due to the reduced content of essential amino acids, including valine, lysine, isoleucine, and phenylalanine. Concentrations of heavy metals and radionuclides did not exceed maximum permissible limits, and trace concentrations of arsenic, cadmium, and lead were detected in all meat samples, except beef. The latter meat showed increased concentrations of mercury. Conclusion: In terms of quality indicators, all types of meat met standards; however, pork protein displayed the most favorable amino acid composition, both for content of essential amino acids and the ratio of amounts of essential to non-essential amino acids. For content of heavy metals, poultry and pork meats were safest.

Abstract
Rice (Oryza sativa L.) is one of the staple foods widely consumed by Indonesian people. They usually have rice as the biggest portion on their diet, therefore rice becomes the main source of nutrients of Indonesian people mainly for those whom live in Java Islands. Although rice is known to contain various minerals, but the minerals level are varied based on differences in geographic region associated with soil quality. Hence, quantity and quality of minerals content of rice from different regions of the world are particularly important to be characterized. The present aim of the study was to assess the composition of mineral of rice from different geographical regions in Java Islands, Indonesia using nuclear analytical techniques i.e. Neutron Activation Analysis method... Quality control of data analysis was assessed using SRM NIST Rice Flour 1568a and gave good results with accuracy (% bias) ≤5% and precision (%CV) less than 10%. The essential elements contents such as Fe, Zn, and Se were quantified and found in the range of 2.8-60.9, 2.48-28.8, and 0.01-2.17 mg/kg respectively, while for the toxic elements, Cr and Co in rice are also quantified and found in the range of 0.03-1.24 and 0.003-0.59 mg/kg, respectivelyThe elemental concentrations in rices from Java Island followed the order Zn>Fe>Se>Cr>Co. It also found that rices from East Java Province have higher concentrations of Fe and Se, while the highest mean of Zn concentration was found in the rices from Jakarta province. The daily intake of those elements in rices give significant contribution to their RDA values. These results of mineral contents in rice hopefully can be used as one of references for estimating daily nutritional intake status of especially Javanese people.

Abstract
The aim of this study is to investigate the adaptation of two species of cattail Typha australis Schum. and Thonn. and Typha laxmannii Lepech. based on analysis of the morphological and anatomical features of their vegetative and generative organs to soil pollution with potentially toxic elements (PTE) in the riparian zones of the sea edge of the Don River delta (Southern Russia). Both species of the cattail are able to accumulate high concentrations of Ni, Zn, Cd, Pb and can be used for phytoremediation of polluted territories. The pattern of PTE accumulation in hydrophytes has changed on polluted soils of coastal areas from roots/rhizomes > inflorescences > stems to roots/rhizomes > stems ≥ inflorescences. The comparative morphological and anatomical analysis showed a statistically significant effect of the environmental stress factor by the type of proliferation in T. australis, and species T. laxmannii was visually in a depressed, deformed state with mass manifestations of hypogenesis. These deformations should be considered, on one hand, as adaptive, but on the other, as pathological changes in the structure of the spikes of the cattails. Light-optical and electron microscopic studies have shown that the degree and nature of ultrastructural changes in cattails at the same level of soil pollution are different and most expressed in the assimilation tissue of leaves. However, these changes were destructive for T. australis, but for T. laxmannii, these indicated a high level of adaptation to the prolonged technogenic impact of PTE.

Abstract
Mineral elements play an extremely important role in human health, and are worthy of study in rice grain. Wild rice is an important gene pool for rice improvement including grain yield, disease, and pest resistance as well as mineral elements. In this study, we identified 33 quantitative trait loci (QTL) for Fe, Zn, Se, Cd, Hg, and As contents in wild rice Oryza longistaminata. Of which, 29 QTLs were the first report, and 12 QTLs were overlapped to form five clusters as qSe1/qCd1 on chromosome 1, qCd4.2/qHg4 on chromosome 4, qFe5.2/qZn5.2 on chromosome 5, qFe9/qHg9.2/qAs9.2 on chromosome 9, and qCd10/qHg10 on chromosome 10. Importantly, qSe1/qCd1, can significantly improve the Se content while reduce the Cd content, and qFe5.2/qZn5.2 can significantly improve both the Fe and Zn contents, they were delimited to an interval about 53.8 Kb and 26.2 Kb, respectively. These QTLs detected from Oryza longistaminata not only establish the basis for subsequent gene cloning to decipher the genetic mechanism of mineral element accumulation, but also provide new genetic resource for rice quality improvement.

Abstract
The ionome of the rice grain is crucial for the health of populations that consume rice as a staple food. However, the contribution of phenotypic plasticity to the variation of rice grain ionome and the genetic architecture of phenotypic plasticity are poorly understood. In this study, we investigated the rice grain ionome of a rice diversity panel in up to eight environments. A considerable proportion of phenotypic variance can be attributed to phenotypic plasticity. Then, phenotypic plasticity and mean phenotype were quantified using Bayesian Finlay-Wilkinson regression, and a significant correlation between them was observed. However, the genetic architecture of mean phenotype was distinct from that of phenotypic plasticity. Also, the correlation between them was mainly attributed to the phenotypic divergence between rice subspecies. Furthermore, the results of whole-genome regression analysis showed that the genetic loci related to phenotypic plasticity can explain a considerable proportion of the phenotypic variance in some environments, especially for Cd, Cu, Mn, and Zn. Our study not only sheds light on the genetic architecture of phenotypic plasticity of the rice grain ionome but also suggests that the genetic loci which related to phenotypic plasticity are valuable in rice grain ionome improvement breeding.

Abstract
Metals are generally classified into essential metals groups. Essential metals include copper (Cu), iron (Fe), manganese (Mn) and zinc (Zn), and nonessential metals include cadmium (Cd) and lead (Pb) etc. However, excessive intake of metals even essential metals would have detrimental effect on the body. In this study, seven potential toxic elements (PTEs) (i.e., Cd, Cr, Cu, Fe, Mn, Pb and Zn) and their distribution characteristics in the foods were analyzed as well as the combination of correlation analysis, factor analysis and cluster analysis were constructed. Meanwhile, combined with the dietary consumption data from the Fifth China Total Diet Study (FCTDS), the dietary exposure of PTEs were analyzed and a consequent safety risk assessment was conducted. The main results are as follows: (1) PTE contents in simply-processed samples were found to be lower than those in the highly-processed samples. (2) The average daily intake of the PTEs were about 12.26 (Cd), 153.17 (Cr), 25.16 (Pb) μg/d, 1.90 (Cu), 20.19 (Fe), 7.12 (Mn) and 12.69 (Zn) mg/d, respectively. (3) The total target hazard quotient (TTHQ) was 2.88, which was lower than 10. Therefore, the long-term consumption of these foods combined with the current dietary structure would not have a detrimental effect on the health of residents in Beijing.

Abstract
Inorganic bromide (Br−) is an important contaminant ion as it can originate from the overuse of illegal methyl bromide as a fumigant in stored rice samples. Herein, we developed a simple and highly sensitive colorimetric sensor for bromide ion detection in rice samples. The sensor is based on the anti-aggregation of gold nanoparticles (AuNPs) by Br− in the presence of Cr3+, which made the method more selective than other typical aggregations of nanoparticles. The AuNPs underwent an aggregation process as a result of the coordination of Cr3+ and the carboxylate group of a citrate ion stabilized the AuNPs, resulting in a red-to-blue color change. When Br− was pre-mixed with the AuNPs and Cr3+ was added, the solution color changed from blue to red with an increase in the Br− concentration. The anti-aggregation process can be detected with the naked eye and monitored using UV-vis spectrophotometry. The linear calibration curve ranged between 0.31 and 3.75 μM Br− with a low LOD and LOQ of 0.04 and 0.13 μM. The recovery was excellent, ranging from 79.9–92.2% with an RSD of less than 4.0%. The good inter-day and intra-day precisions were 2.9–6.4% and 3.1–7.1%, respectively. The developed sensor has proved to provide a robust method for Br− detection in rice samples. In this work, we developed a AuNP colorimetric sensor for the facile, sensitive and selective detection of bromide ions in rice samples.![]()

Abstract
Rhizobia-legume symbiosis is the most well researched biological nitrogen fixation system. Coating legume seeds with rhizobia is now a recognized practical measure for improving the production of legume corp. However, the efficacy of some commercial rhizobia inoculants cannot be guaranteed in China due to the low rate of live rhizobia in these products. A greenhouse experiment was conducted to assess the effects of different rhizobial inoculant formulations on alfalfa productivity and nitrogen fixation. Two rhizobia strains, (ACCC17631 and ACCC17676), that are effective partners with alfalfa variety Zhongmu No. 1 were assessed with different concentrations of ammonium molybdate in seed-coat formulations with two different coating adhesives. Our study showed that the growth, nodulation, and nitrogen fixation ability of the plants inoculated with the ACCC17631 rhizobial strain were greatest when the ammonium molybdate application was0.2% of the formulation. An ammonium molybdate concentration of 0.1% was most beneficial to the growth of the plants inoculated with the ACCC17676 rhizobial strain. The sodium carboxymethyl cellulose and sodium alginate, used as coating adhesives, did not have a significant effect on alfalfa biomass and nitrogen fixation. However, the addition of skimmed milk to the adhesive improved nitrogenase activity. These results demonstrate that a new rhizobial seed-coat formulation benefitted alfalfa nodulation and yield.

Abstract
An association mapping of quantitative trait loci (QTLs) regulating the concentrations of eight elements in brown rice (Oryza sativa L.) was performed using USDA mini-core subset cultivated in two different environments. In addition, correlation between the grain elemental concentrations was also studied. A total of 60 marker loci associated with 8 grain elemental concentrations were identified, and these loci were clustered into 37 genomic regions. Twenty new QTLs were found to be associated with important elements such as Zn, Fe, and P, along with others. Fe concentration was associated with the greatest number of markers in two environments. In addition, several important elemental/metal transporter genes were identified in a few mapped regions. Positive correlation was observed within all grain elemental concentrations. In summary, the results provide insight into the genetic basis of rice grain element accumulation and may help in the identification of genes associated with the accumulation of Zn, Fe, and other essential elements in rice.

Abstract
The concentration of alum additive in deep-fried dough sticks (DFDSs) was investigated using a coaxial probe method based on dielectric properties in the 0.3–10-GHz frequency range. The dielectric spectra of aqueous solutions with different concentrations of alum, sodium bicarbonate, and mixtures thereof were used. The correspondence between dielectric loss and alum concentration was thereby revealed. A steady, uniform correspondence was successfully established by introducing ω·ɛ″(ω), the sum of dielectric loss and conductor loss (i.e., total loss), according to the electrical conductivity of the alum-containing aqueous solutions. Specific, resonant-type dielectric dispersion arising from alum due to atomic polarization was identified around 1 GHz. This was used to discriminate the alum additive in the DFDS from other ingredients. A quantitative relationship between alum and sodium bicarbonate concentrations in the aqueous solutions and the differential dielectric loss Δɛ″(ω) at 0.425 GHz was also established with a regression coefficient over 0.99. With the intention of eliminating the effects of the chemical reactions with sodium bicarbonate and the physical processes involved in leavening and frying during preparation, the developed technique was successfully applied to detect the alum dosage in a commercial DFDS (0.9942 g/L). The detected value agreed well with that determined using graphite furnace atomic absorption spectrometry (0.9722 g/L). The relative error was 2.2%. The results show that the proposed dielectric differential dispersion and loss technique is a suitable and effective method for determining the alum content in DFDSs.

Abstract
The distribution of 10 macronutrients and trace metals in the arable soils of Isfahan Province, their phytoavailability, and associated health risks were investigated; 134 plant and 114 soil samples (from 114 crop fields) were collected and analyzed at harvesting time. Calculation of the soil pollution index (SPI) revealed that arable soil polluted by metals was more severe in the north and southwest of the study area. The results of cluster analysis indicated that Pb, Zn, and Cu share a similar origin from industries and traffic. The concentrations of macronutrients and trace metals in the sampled crops were found in the order of K > Ca > S > Mg > P and Fe > Mn > Zn > Cu > Pb, respectively, whereas calculation of the bioconcentration factor (BCF) indicated that the accumulation of the investigated elements in crops was generally in the order of S ≈ K > P > Mg > Ca and Zn > Cu > Mn > Pb > Fe, respectively. Thus, various parameters including crop species and the physical, chemical, and biological properties of soil also affected the bioavailability of the elements besides the total element contents in soil. Daily intake (DI) values of elements were lower than the recommended daily intake (RDI) levels in rice grains except for Fe and Mn, but for wheat grains, all elements displayed DI values higher than the RDI. Moreover, based on the hazard index (HI) values, inhabitants are experiencing a significant potential health risk solely due to the consumption of wheat and rice grains (particularly wheat grains). Mn health quotient (HQ) also indicated a high risk of Mn absorption for crop consumer inhabitants.

Abstract
QTLs controlling the concentrations elements in rice grain were identified in two mapping populations. The QTLs were clustered such that most genomic regions were associated with more than one element. In this study, quantitative trait loci (QTLs) affecting the concentrations of 16 elements in whole, unmilled rice (Oryza sativa L.) grain were identified. Two rice mapping populations, the ‘Lemont’ × ‘TeQing’ recombinant inbred lines (LT-RILs), and the TeQing-into-Lemont backcross introgression lines (TILs) were used. To increase opportunity to detect and characterize QTLs, the TILs were grown under two contrasting field conditions, flooded and irrigated-but-unflooded. Correlations between the individual elements and between each element with grain shape, plant height, and time of heading were also studied. Transgressive segregation was observed among the LT-RILs for all elements. The 134 QTLs identified as associated with the grain concentrations of individual elements were found clustered into 39 genomic regions, 34 of which were found associated with grain element concentration in more than one population and/or flooding treatment. More QTLs were found significant among flooded TILs (92) than among unflooded TILs (47) or among flooded LT-RILs (40). Twenty-seven of the 40 QTLs identified among the LT-RILs were associated with the same element among the TILs. At least one QTL per element was validated in two or more population/environments. Nearly all of the grain element loci were linked to QTLs affecting additional elements, supporting the concept of element networks within plants. Several of the grain element QTLs co-located with QTLs for grain shape, plant height, and days to heading; but did not always differ for grain elemental concentration as predicted by those traits alone. A number of interesting patterns were found, including a strong Mg–P–K complex.

Abstract
The development of methods for direct determinations of Al, Cd, and Pb in rice by SS-GF AAS is presented. Heating program optimization associated with the use of an adequate chemical modifier containing Pd + Mg allowed direct analysis against aqueous calibrations. The obtained LOD values were 114.0, 3.0, and 16.0 μg kg⁻¹ for Al, Cd, and Pb, respectively. Important parameters associated with a solid sampling analysis were investigated, such as minimum and maximum sample mass size and analyte segregation. Seventeen rice samples available in São Paulo City were analyzed, and all of them presented analyte mass fractions less than the maximum allowed by legislation. The influences of rice washing and the cooking procedure were also investigated. The washing procedure diminished the Al and Pb total mass fractions, indicating an exogenous grain contamination. The cooking procedure diminished the Cd total mass fraction. Rice cooking using an aluminum container did not cause a significant increase in the Al mass fraction in the rice, indicating no translocation of this element from container to food. In general, coarse rice presented higher levels of Al when compared to polished or parabolized rice.
