Seaweed cultivation has garnered significant interest, driven by its wide range of biomass benefits. However, comprehensive assessments from various perspectives are imperative to ensure the sustainable cultivation of seaweed. Biotic and Abiotic factors can significantly impact seaweed yield in complex commercial farming. Biotic factors include bacteria, fungi, viruses, and other algae, while abiotic factors include environmental conditions such as temperature, salinity, light intensity, and nutrient availability. Additionally, the susceptibility of seaweeds to pests and diseases further compounds the issue, leading to potential crop losses. This study endeavours to shed light on the immense potential of macroalgae cultivation and underscores the pressing need for scientific advancements in this field. The comprehensive review clearly explains the latest developments in seaweed cultivation and highlights significant advances from diverse seaweed research. Moreover, it provides insightful glimpses into possible future developments that could shape the trajectory of this promising industry.

Determination of the Nutrient and Toxic Element Content of Wild-Collected and Cultivated Seaweeds from Hawai'i

For centuries, Hawaiians have gathered seaweed for food, medicine, and ceremonial purposes. Seaweed contains nutrients, but some varieties can accumulate toxic elements. We measured target macrominerals (Na, Mg, P, K, Ca), microminerals (B, V, Mn, Co, Cu, Zn, Mo), and nonessential/toxic elements (As, Sr, Cd, Sn, Hg, Pb, and U) in a sample of wild-collected and cultivated seaweeds from Hawai'i. The samples consisted of brown (Sargassum aquifolium, Sargassum echinocarpum), red (Gracilaria parvispora, Halymenia formosa, Halymenia hawaiiana), and green (Ulva ohnoi) seaweed. Elemental composition was determined by inductively coupled plasma (ICP)-atomic emission spectroscopy and ICP-mass spectrometry (MS). Speciation of As was conducted by using liquid chromatography-ICP-MS. S. echinocarpum per 80 g serving was high in Ca (~37% daily value [DV]), U. ohnoi was high in Mg (~40%DV), H. formosa was high in Fe (~40%DV), and G. parvispora was high in Mn (~128%DV). In this study, the highest amounts of toxic elements were observed in S. aquifolium and S. echinocarpum (27.6 mg inorganic As/kg fdw), G. parvispora (43.3 mg Pb/kg fdw) and H. formosa (46.6 mg Pb/kg fdw). These results indicate that although seaweeds from Hawai'i contain a variety of nutrients, some species can accumulate high amounts of toxic elements.

Effects of foods and food components on the in vitro bioaccessibility of total arsenic and arsenic species from Hizikia fusiforme seaweed

Seaweed is an important food source, especially in many Asian countries, because of its high nutritional value; however, increasing arsenic (As) accumulation may pose serious hazards to human health. The influence of food components on As bioaccessibility and transformation in the high As-containing seaweed Hizikia fusiforme was determined using an in vitro gastrointestinal digestion method. The results showed that co-digestion with several daily foods (such as celery, broccoli, onion, green chili, tomato) produced a higher As bioaccessibility (approximately 6-11 % increase) compared with that of seaweed alone. Vegetables such as fennel (Foeniculum valgare Mill.), celery (Apium grareolens L.), blanched garlic leaves (Allium sativum L.), scallions (Allium fistulosum L.), ginger (Zingiber officinale Rosc.), and green pepper (Capsicum frutescens L. vat. grussum Bailey) decreased bioaccessible inorganic As (18-35 %) in both the gastric and small intestinal phases. Meanwhile, the process of reducing As(V) to As(III) also occurred during co-digestion with some food matrices. Egg white and other animal proteins were the most effective reducing agents, transforming >70 % As(V) into As(III) in the solution system. These results may have important implications for health risk assessment via co-consumption. The present study provides the first evidence showing that the co-consumption of some vegetables and proteins leads to a higher toxicity of inorganic arsenic-containing food. In addition, the positive and negative effects of co-digestion on the bioaccessibility of essential metals (iron, manganese) compared to single digestion were evaluated in this study.

A new evaluation system of iron bioavailability in seaweed

In marine ecosystems, the avid binding of iron (Fe) to organic ligands influences Fe bioavailability in seaweed. This study aimed to elucidate Fe's biological availability to seaweed and develop a simple and rapid bioassay method as a new evaluation system. Undaria pinnatifida was used as a model seaweed species and the actual seaweed samples were collected using the 0.5 m × 0.5 m quadrat from the Mashike Bay area of Hokkaido, Japan. Chlorophyll fluorescence measurements were utilized as an index to evaluate the biological -effectiveness of Fe and compared with the results of culture tests based on growth. The effect of Fe content on media, pre-culture, concentrations and types of chelating and reducing agents in clearing solutions, cleaning time, Fe removal effect, and resistance to seaweed were systematically optimized to obtain the maximum efficacy of the washing solution. A bioassay was developed to evaluate the Fe environment by combining chlorophyll fluorescence measurements. The findings suggest that the tolerance of seaweeds to the wash solution is strongly influenced by the concentrations of the chelating and reducing agents than their types. Washing with 0.02 M Ti-Citrate/EDTA solution for 80 s was the most effective in terms of maximum Fe removal with minimum cell damage. The application of pre-culture and chemical pre-treatment methods under Fe deficiency to the culture strain confirmed the maximum reproducibility in the culture test. Finally, the developed method was applied to actual seaweed samples and was found to be applicable to many seaweed species. However, the method was less robust for some seaweed species and depended on the seaweed growth stage.

Toxic and Trace Elements in Seaweeds from a North Atlantic Ocean Region (Tenerife, Canary Islands)

Canary Islands is a North Atlantic Ocean archipelago in the Macaronesian region that stand out for its great algae diversity and its climatic conditions. However, even in this low industrialised area, human activities tend to increase the marine pollution. Asparagopsis spp. and Liagora spp. algae are red algae frequent in the Canary Islands’ coasts. Therefore, they could be used as bio-indicators of marine pollution for trace elements. A total of 30 samples of both algae’s species from Tenerife’s southern coast, specifically in Playa Grande, Porís de Abona, in Arico (Tenerife, Spain) were used to determine trace element content (Mn, B, Ba, Cu, Cd, Co, Fe, Li, Mo, Ni, Pb, Sr, V, Zn, Al, Cr) through inductively coupled plasma atomic emission spectroscopy (ICP—OES). Highest Fe concentrations were found in Liagora spp. concentrations (1190 ± 1545 mg/kg dw) and Al (288 ± 157 mg/kg dw) was more significant in Asparagopsis spp. High concentrations of B were also registered in both species 80.2 ± 34.2 mg/kg dw and 77.9 ± 34.2 mg/kg dw, respectively. The recorded concentrations show a high contamination scenario in the collected area. Porís is known by its marine diversity and by its higher pollution levels, compared with other locations of Tenerife, due to the currents present on the Canary Island and its singular north orientation, actions must be taken to reduce pollution.

Distribution, accumulation and health risk assessment of trace elements in Sargassum fusiforme

This study compared the ability of Sargassum fusiforme to accumulate As, Cd, Cr, Cu, Ni, Pb and Zn in its five tissues (main branch, lateral branch, leaf, receptacles and pneumathode). The concentrations of these trace elements in seawater, surface sediments and different tissues of S. fusiforme were analyzed in different areas in Dongtong County (Wenzhou City, China). The presence of receptacle at all sites indicated that S. fusiforme had entered the mature stage. However, the proportion of each tissue in S. fusiforme in different sites was varied, indicating subtle differences in growth. S. fusiforme has a great capacity to accumulate trace elements, showing relatively high levels of As (28.2-64.2 mg kg-1) and Zn (19.9-80.8 mg kg-1). The elements are mainly stored in leaf, receptacles and pneumathode. Compared to element concentrations in the surrounding environment, the seaweed exhibited stronger bioconcentration capacity for As and Cd than for other elements. According to our health risk assessment results, the hazard index and carcinogenic risk were below the limit, suggesting that the S. fusiforme ingestion would not pose any health risk and the potential risk of intake branches was even lower than that of other tissues.

Effect of ascorbic acid and citric acid on bioavailability of iron from Tegillarca granosa via an in vitro digestion/Caco-2 cell culture system

Iron deficiency anaemia (IDA) has been receiving worldwide attention. Developing safe and effective iron supplements is of great significance for IDA treatment. Tegillarca granosa (T. granosa), a traditional aquaculture bivalve species in China, is considered to be an excellent source of micronutrients, but the distribution and bioavailability of these minerals have yet to be investigated. The present research was conducted to determine the contents and in vitro enzymatic digestibility of minerals in T. granosa, using beef and wheat flour as reference foods. Meanwhile, two iron-binding proteins, hemoglobin and ferritin, were extracted from T. granosa, and their structures, iron accessibility and bioavailability were investigated. Moreover, the effects of ascorbic acid (AA) and citric acid (CA), two commonly applied dietary factors, on these parameters were evaluated. Our results indicated that the mineral levels varied significantly among different food matrices, with T. granosa showing the highest contents of the tested elements. Comparison of iron absorption of meat versus wheat flour and hemoglobin versus ferritin confirmed that heme iron exhibited higher bioavailability than non-heme iron. The addition of the two organic acids notably enhanced the cellular iron uptake of T. granosa-derived proteins. This could be because AA/CA weakened hydrogen bonds within proteins and caused disordered secondary structures, thereby improving their enzymatic digestibility and releasing more soluble iron to be available for absorption. The results of this study provided a basis for the development of T. granosa-derived protein-based iron supplements, promoting the diverse utilization of marine aquatic resources.

Environmental performance of blue foods

Fish and other aquatic foods (blue foods) present an opportunity for more sustainable diets^1,2. Yet comprehensive comparison has been limited due to sparse inclusion of blue foods in environmental impact studies^3,4 relative to the vast diversity of production⁵. Here we provide standardized estimates of greenhouse gas, nitrogen, phosphorus, freshwater and land stressors for species groups covering nearly three quarters of global production. We find that across all blue foods, farmed bivalves and seaweeds generate the lowest stressors. Capture fisheries predominantly generate greenhouse gas emissions, with small pelagic fishes generating lower emissions than all fed aquaculture, but flatfish and crustaceans generating the highest. Among farmed finfish and crustaceans, silver and bighead carps have the lowest greenhouse gas, nitrogen and phosphorus emissions, but highest water use, while farmed salmon and trout use the least land and water. Finally, we model intervention scenarios and find improving feed conversion ratios reduces stressors across all fed groups, increasing fish yield reduces land and water use by up to half, and optimizing gears reduces capture fishery emissions by more than half for some groups. Collectively, our analysis identifies high-performing blue foods, highlights opportunities to improve environmental performance, advances data-poor environmental assessments, and informs sustainable diets.

Seaweed Components as Potential Modulators of the Gut Microbiota

Macroalgae, or seaweeds, are a rich source of components which may exert beneficial effects on the mammalian gut microbiota through the enhancement of bacterial diversity and abundance. An imbalance of gut bacteria has been linked to the development of disorders such as inflammatory bowel disease, immunodeficiency, hypertension, type-2-diabetes, obesity, and cancer. This review outlines current knowledge from in vitro and in vivo studies concerning the potential therapeutic application of seaweed-derived polysaccharides, polyphenols and peptides to modulate the gut microbiota through diet. Polysaccharides such as fucoidan, laminarin, alginate, ulvan and porphyran are unique to seaweeds. Several studies have shown their potential to act as prebiotics and to positively modulate the gut microbiota. Prebiotics enhance bacterial populations and often their production of short chain fatty acids, which are the energy source for gastrointestinal epithelial cells, provide protection against pathogens, influence immunomodulation, and induce apoptosis of colon cancer cells. The oral bioaccessibility and bioavailability of seaweed components is also discussed, including the advantages and limitations of static and dynamic in vitro gastrointestinal models versus ex vivo and in vivo methods. Seaweed bioactives show potential for use in prevention and, in some instances, treatment of human disease. However, it is also necessary to confirm these potential, therapeutic effects in large-scale clinical trials. Where possible, we have cited information concerning these trials.

Dietary Intake of Essential Elements (Na, K, Mg, Ca, Mn, Zn, Fe, Cu, Mo, Co) from Tofu Consumption

Tofu is one of the most consumed soybean products. Currently, tofu is consumed in vegan and vegetarian diets to avoid meat. However, it is necessary to determine the content of essential elements to assess the dietary intake. Essential elements (Na, K, Mg, Ca, Mn, Zn, Fe, Cu, Mo, Co) were determined in 130 samples of tofu by ICP-OES (inductively coupled plasma optical emission spectroscopy). The highest element content was found in flavoured tofu; the most notable were Na (2519 mg/kg wet weight) and Fe (19.5 mg/kg ww). Consumption of 200 g/day of flavoured tofu by adults would mean a high contribution of Cu (46.9% women, 38.1% men), Fe (55.7% women, 65.0% men) and Na (25.2% adults) to its AI (adequate intakes) sets by the EFSA (European Food Safety Authority). Natural tofu would mean a remarkably Mn contribution (50% adults) to the AI. Tofu could be an important source of essential elements such as Mg, Mn, Na, Cu and Fe.

Proximal Composition of Undaria pinnatifida from San Jorge Gulf (Patagonia, Argentina)

Undaria pinnatifida is a brown macroalga considered a high quality natural food because of its numerous health benefits. The aim of this paper is to provide seasonal information on the chemical content of blades and sporophylls of U. pinnatifida from San Jorge Gulf (SJG, Chubut, Argentina) in order to evaluate their different uses. Moreover, samples of algae deposited on the beach are also studied. A multi-elemental analysis is made by Total Reflection X-ray Fluorescence (TXRF). Sixteen elements are quantified: As, Br, Ca, Cr, Cu, Fe, K, Mn, Ni, P, Pb, Rb, S, Sr, V and Zn. The results reveal that the mineral content in blades of U. pinnatifida is high, especially in autumn. Some elements show an important seasonal variation, such as: K (14-54.8 g kg-1), P (2.7-7.0 g kg-1), Sr (361-569 mg kg-1), Fe (62-140 mg kg-1), Zn (8-103 mg kg-1), Br (45-94 mg kg-1) and Rb (4-24 mg kg-1). In the case of potentially toxic elements, a variation was seen mainly in arsenic, with higher values during summer and autumn. The concentrations of nickel and lead are below the limit of detection (0.9 mg kg-1). Sporophylls contain high concentrations of macro and micronutrients, with maximum values in spring. Besides, reproductive structures showed higher total arsenic values than blades. This could indicate that arsenic is mainly accumulated in sporophylls. Algae deposited on the beach are considered a waste; but they show a similar elemental composition to the samples extracted from the sea. We concluded that all samples analyzed could be used as food or fertilizers by local populations.

Effects of Seasonal Variability on the Physicochemical, Biochemical, and Nutritional Composition of Western Peninsular Malaysia Gracilaria manilaensis

This study evaluated the effect of seasonal variation on the physicochemical, biochemical, and nutritional composition of Gracilaria manilaensis. Sampling was designed during the main monsoon seasons in Malaysia-the Southwest monsoon (SWM) and Northeast monsoon (NEM)-to understand the intraspecific variation (p < 0.05). Carbohydrates, protein, and dietary fiber were found to be higher in NEM-G. manilaensis, whereas a higher ash content was quantified in SWM-G. manilaensis. No significant differences were found in crude lipid and moisture content (p > 0.05). Vitamin B2 was calculated as (0.29 ± 0.06 mg 100 g^-1) and (0.38 ± 0.06 mg 100 g^-1) for the NEM and SWM samples, respectively (p < 0.05). The fatty acid profile showed the dominance of saturated fatty acids (SFAs)-palmitic acids, stearic acid, and myristic acid-while the mineral contents were found to be good sources of calcium (1750.97-4047.74 mg 100 g^-1) and iron (1512.55-1346.05 mg 100 g^-1). Tryptophan and lysine were recorded as the limiting essential amino acids (EAAs) in NEM G. manilaensis, while leucine and phenylalanine were found to be the limiting EAAs in the SWM samples. None of the extracts exhibited antibacterial properties against the screened strains. The study concluded that seasonal changes have a great effect on the biochemical composition of G. manilaensis.

Safety and quality of the green tide algal species Ulva prolifera for option of human consumption: A nutrition and contamination study

This study sampled U. prolifera and surface seawater from the same locations where green tide broke out in the southern Yellow Sea, in both the year 2016 and 2017. The revealed nutritive components of U. prolifera samples characterized U. prolifera as a high-protein, high-Fe, high ratio of unsaturated lipid acids and low-fat seaweed food, with an ideal ratio of essential and nonessential amino acids. The concentrations and health risk assessment of major micropollutants (heavy metals, pesticides and polycyclic aromatic hydrocarbon (PAHs)) in U. prolifera were also analyzed, respectively. The results showed that the Target Hazard Quotient values of five heavy metals (<1.0 × 10^-1) and the total hazard index of 13 pesticides (<1.5 × 10^-8) were lower than the unity, respectively, and the incremental lifetime cancer risk values of PAHs (<7.4 × 10^-7) were lower than the USEPA limit (1.0 × 10^-6). It suggested that consuming U. prolifera is safe as a food-source option, with PAHs causing relatively higher risks. PAHs from the sites closer to the shore were also found more originated from pyrolysis. We further confirmed the PAH congeners were partly in equilibrium between seawater and U. prolifera. It suggested the possibility that the food safety-risk turned to be above the USEPA limit was not high regardless of the sample collecting time. However, the sources of PAHs and their contributions to the accumulation in U. prolifera need further investigation. This study favored that U. prolifera of the green tide from the southern Yellow Sea has a potential for a nutritious-food production.

Minerals from Macroalgae Origin: Health Benefits and Risks for Consumers

Seaweeds are well-known for their exceptional capacity to accumulate essential minerals and trace elements needed for human nutrition, although their levels are commonly very variable depending on their morphological features, environmental conditions, and geographic location. Despite this variability, accumulation of Mg, and especially Fe, seems to be prevalent in Chlorophyta, while Rhodophyta and Phaeophyta accumulate higher concentrations of Mn and I, respectively. Both red and brown seaweeds also tend to accumulate higher concentrations of Na, K, and Zn than green seaweeds. Their valuable mineral content grants them great potential for application in the food industry as new ingredients for the development of numerous functional food products. Indeed, many studies have already shown that seaweeds can be used as NaCl replacers in common foods while increasing their content in elements that are oftentimes deficient in European population. In turn, high concentrations of some elements, such as I, need to be carefully addressed when evaluating seaweed consumption, since excessive intake of this element was proven to have negative impacts on health. In this regard, studies point out that although very bioaccessible, I bioavailability seems to be low, contrarily to other elements, such as Na, K, and Fe. Another weakness of seaweed consumption is their capacity to accumulate several toxic metals, which can pose some health risks. Therefore, considering the current great expansion of seaweed consumption by the Western population, specific regulations on this subject should be laid down. This review presents an overview of the mineral content of prevalent edible European macroalgae, highlighting the main factors interfering in their accumulation. Furthermore, the impact of using these marine vegetables as functional ingredients or NaCl replacers in foods will be discussed. Finally, the relationship between macroalgae’s toxic metals content and the lack of European legislation to regulate them will be addressed.

Characterization of Spanish powdered seaweeds: Composition, antioxidant capacity and technological properties

This work aimed to characterise four seaweed species: nori (Phorphyra), kombu (Laminaria), wakame (Undaria) and sea spaghetti (Himanthalia elongata). Their nutritional composition, total phenolic compounds (TPC), antioxidant capacity, oil and water holding capacity (OHC and WHC), and swelling capacity (SC) were determined. Wakame and nori exhibited the highest proteins contents, rich in essential amino acids and in those related to umami flavour. All the samples had a low lipid content and high ash content values. High fibre levels were observed, especially in kombu. The TPC content and antioxidant capacity of sea spaghetti was significantly higher than in the other samples. The OHC, WHC and SC of the seaweeds demonstrated their potential influence on texture of food products. The incorporation of these seaweeds into different foodstuffs could entail an improvement of the nutritional quality and texture properties, and could also reduce the use of Na and synthetic additives.

Estimation of the bioaccessibility and bioavailability of Fe, Mn, Cu, and Zn in Chinese vegetables using the in vitro digestion/Caco-2 cell model: the influence of gut microbiota

The influence of the human gut microbiota on the bioaccessibility and bioavailability of trace elements in vegetables has barely been studied. An in vitro digestion model combining the physiologically based extraction test (PBET) and the Simulator of Human Intestinal Microbial Ecosystem (SHIME) was applied. Results showed that the gut microbiota increased the bioaccessibility of iron (Fe) in ten test vegetables by 1.3-1.8 times, but reduced the bioaccessibility of manganese (Mn), copper (Cu), and zinc (Zn) in vegetables in the colon phase by 3.7% to 89.6%, 24.8% to 100.0%, and 59.9% to 100.0%, respectively. Using the Caco-2 cell model to simulate the human absorption process, the bioavailable contents and the bioavailability of the trace elements were further determined. Swamp cabbage was the best source of Fe and Cu; spinach and lettuce provided the highest amounts of bioavailable Mn and Zn, respectively. Referring to the daily reference intakes of trace elements, the obtained data provide a scientific basis for both reasonable ingestion of vegetables in diets and diversification of diets.

Biomimetic Gastrointestinal Tract Functions for Metal Absorption Assessment in Edible Plants: Comparison to In Vivo Absorption

A biomimetic gastrointestinal tract, including in vitro digestion and biomimetic biomembrane extraction, has been proposed for absorption assessment of metals from edible plants. However, its validity is still unknown. Herein, two species of edible plants, Anoectochilus roxburghii and Radix astragali, were selected and digested in a bionic mouth, stomach, and intestine, and then trace metals (Cr, Mn, Fe, Ni, Cu, Zn, Se, Sr, As, and Pb) were transformed to their final metal species. To check model predictability, in vitro and in vivo metal absorption were imitated and tested by monolayer liposome extraction and rat stomach or single-pass duodenal intestine, respectively. A strong correlation was established between in vivo and in vitro metal absorption ratios, with 0.89 > R² > 0.66, and a significant relationship (p < 0.05) was exhibited for stomach, intestine, two plant species, and 10 metal species. Our biomimetic system could be used as low-cost alternatives to animal and clinical studies for multi-metal absorption.

Higher iron bioavailability of a human-like collagen iron complex

Iron deficiency remains a public health problem around the world due to low iron intake and/or bioavailability. FeSO₄, ferrous succinate, and ferrous glycinate chelate are rich in iron but have poor bioavailability. To solve the problem of iron deficiency, following previous research studies, a thiolated human-like collagen-ironcomplex supplement with a high iron content was prepared in an anaerobic workstation. In addition, cell viability tests were evaluated after conducting an MTT assay, and a quantitative analysis of the thiolated human-like collagen-iron digesta samples was performed using the SDS-PAGE method coupled with gel filtration chromatography. The iron bioavailability was assessed using Caco-2 cell monolayers and iron-deficiency anemia mice models. The results showed that (1) one mole of thiolated human-like collagen-iron possessed approximately 35.34 moles of iron; (2) thiolated human-like collagen-iron did not exhibit cytotoxity and (3) thiolated human-like collagen- iron digesta samples had higher bioavailability than other iron supplements, including FeSO₄, ferrous succinate, ferrous glycine chelate and thiolated human-like collagen-Fe iron. Finally, the iron bioavailability was significantly enhanced by vitamin C. These results indicated that thiolated human-like collagen-iron is a promising iron supplement for use in the future.
