Abstract
In this study, the inhibition potential against Klebsiella pneumoniae (K. pneumoniae) and the characterization of fish oil (FO) emulsion gel (EGE) containing almond shell hydrochar (AH) were investigated. Oily water of mullet liver was emulsified using tween 80, then gelled using gelatin and finally immobilized into hydrochar using an ultrasonic homogenizer. Characteristics and surface analysis of hydrochar-based emulsion gel (HEGE) were examined using FTIR and SEM. Stability, particle size distribution and zeta potential of HEGE were measured. In this study, a zeta potential of -18.46 indicated that HEGE was more stable than EGE (35.7 mV). The addition of hydrochar to the emulsion gel containing micro-droplets enabled the structure to become fully layered and stable. Time-dependent inactivation of K. pneumoniae exposed to HEGE and fixed in 6 mm-fish skin was evaluated for the first time in this study. While the highest log reduction and percent reduction in the bacterial count were achieved within 5 min with 0.87 CFU/cm2 and 86.60% with EGE, the lowest log reduction and percent reduction were achieved with 0.003 CFU/cm2 and 0.082% with HEGE in 30 min. In conclusion, the almond shell hydrochar-immobilized emulsion gel is a functional adsorbent that can inhibit K. pneumonia, and its stability and performance make it a unique candidate for further studies in this field.

Abstract
This study aimed to evaluate the bioaccumulation of heavy metals (copper, zinc, and lead) and chemical compositions (fat, protein, moisture, and ash) in the Parastromateus niger muscle of the Oman Sea in pre-monsoon and post-monsoon. An atomic absorption spectrophotometer was used to determine heavy metal concentrations in fish muscle tissue. Chemical composition contents were measured using the Association of Official Analytical Chemists (AOAC) methods. Zinc was the most abundant heavy metal in two seasons (0.077 ± 0.005 μg/g), followed by copper (0.033 ± 0.005 μg/g) and lead (0.015 ± 0.005 μg/g). The mean concentrations of all heavy metals of muscle in pre-monsoon were higher than in post-monsoon. The concentrations of Cu, Zn, and Pb were lower than the maximum permissible limits (MPL) of international standards for human consumption established by FAO, FAO/WHO, WHO, and MAFF. The protein and fat content in fish muscle collected in pre-monsoon was higher than in post-monsoon. A significant difference between protein, fat, moisture, and ash values was recorded in two seasons (P < 0.05). The human health risk of heavy metals was evaluated according to the United States Environmental Protection Agency (USEPA) standards. The estimated daily intake (EDI) of each heavy metal in two seasons was lower than the tolerable daily intake (TDI). THQ (target hazard quotient) and TTHQ (total target hazard quotient) values were lower than the threshold limit of 1.0, indicating a non-carcinogenic risk for consumers. TR (target carcinogenic risk) value for Pb was much lower than the unacceptable risk level (10-4); therefore, the consumption of muscles of Parastromateus niger did not significantly pose a human health risk.

Abstract
This perspective presents current and updated advances in research on nutrients and bioactive compounds in seafood. It is based on a literature quantitative research analysis approach. The main features of seafood components are introduced. This perspective aims at providing a current framework that relates nutrients, bioactive compounds, and seafood in a novel integrated and multidisciplinary manner, highlighting the current knowledge, the main research lines, and emerging strategies. The literature search was carried out by means of the Scopus database, and 22,542 documents were retrieved in the period from 1932 to 2024. Particularly, from the perspective of nutrition and health outputs, the main terms correlated with research on the relationship between seafood and nutritional and bioactive components, and the main existing research lines focused on this topic, were identified. The top recurring keywords were human/s, female, diet, nutrition, fish, male, adult, food intake.

Abstract
In this study, we examined the seasonal association between Polycyclic Aromatic Hydrocarbon (PAH) concentrations and mRNA expression profiles of some antioxidant genes (i.e. CAT, GST and SOD), as well as lipid peroxidation (LPO), in muscle of sexually inactive females of red mullet (Mullus barbatus). Fish were captured in a fishery area of the Northern Adriatic Sea during both winter and summer. We found significantly (p < 0.05) higher ∑HMW-PAHs concentrations in muscle of specimens caught during winter than summer. On the basis of sampling season, red mullets exhibited different gene expression profiles of antioxidant enzymes showing lower levels of both CAT and GST in winter than in summer. Accordingly, CAT was found to be negatively associated with ∑PAH concentrations, especially ∑LMW-PAH, in individuals collected during winter. Seasonal-related downregulation of some oxidative stress biomarker expression is suggestive of greater susceptibility of red mullets to PAHs during winter.

Abstract
In the present study, the lipid amount and fatty acid profile of different Sparidae species, including gilthead seabream, juvenile gilthead seabream, annular seabream, white seabream, common two-banded seabream were evaluated. Fish were seasonally collected from Köyceğiz Lagoon (Muğla, South Western Turkey) from June 2018 to June 2019 and after collection, the sex of each specimen was recorded. According to the results of the study, the highest lipid amount was found in female annular seabream individuals as 8.09 ± 0.78% in November and the lowest lipid amount was found in male juvenile gilthead seabream as 0.98 ± 0.12% in March. Palmitic acid and oleic acid were determined as the most abundant SFA and MUFA for all species, respectively. The highest value of DHA, which was the predominant PUFA was assessed as 15.33 ± 0.26% in female white seabream in November whereas the lowest value (3.83 ± 0.36%) was found in gilthead seabream in December. The n-6/n-3 ratio was determined between 0.27 ± 0.00 (for male common two-banded seabream in July)-1.20 ± 0.03 (for male gilthead seabream in December) and it followed within the range of healthy values for all species. As a conclusion, it was found that values of lipid and fatty acid profiles among the examined Sparidae species vary among the season of collection. The results of the study gave the seasonal nutritional values of four economically-important Sparidae species that being rich in healthy polyunsaturated fatty acids such as DHA, have beneficial in human nutrition.

Abstract
This study evaluates the effects of biological factors of fish and seasonality on Polycyclic Aromatic Hydrocarbon (PAH) accumulation in red mullet (Mullus barbatus) tissue. Specimens were collected monthly with a bottom trawl net in an offshore fishing ground in the Northern and Central Adriatic Sea (Geographical Sub Area 17) throughout 2016. The edible fillets of 380 individuals were analyzed for the concentrations of individual PAH, total PAH, and low, medium and high molecular weight (MW) PAHs. PAH bioaccumulation was related to their physicochemical characteristics (MW, and logarithm of the octanol-water partition coefficient, log Kow), some biological parameters of fish (body size, age, sex, reproductive stage and total lipid content), and catch season. The PAH bioaccumulation pattern and the effects of the different factors varied according to PAH MW. The heavier (medium and high MW) PAHs showed higher levels in winter-autumn and in pre-spawners compared with spawners and post-spawners. Our findings suggest that an important detoxification mechanism, albeit limited to the heavier PAHs, acts in the spawning and post-spawning stage. Low MW PAHs appeared to be unaffected by reproductive stage, lipid content and seasonality. Reproductive stage and seasonality seem to play an important role in the accumulation of heavier PAH, whereas total lipid content and age seem to exert a limited influence, and body size no effect at all.

Abstract
BACKGROUND The aim of this paper is to provide a methodological approach to evaluate the nutritional sustainability of typical agro-food products, representing Mediterranean eating habits and included in the Mediterranean food pyramid. RESULTS For each group of foods, suitable and easily measurable indicators were identified. Two macro-indicators were used to assess the nutritional sustainability of each product. The first macro-indicator, called 'business distinctiveness', takes into account the application of different regulations and standards regarding quality, safety and traceability as well as the origin of raw materials. The second macro-indicator, called 'nutritional quality', assesses product nutritional quality taking into account the contents of key compounds including micronutrients and bioactive phytochemicals. For each indicator a 0-10 scoring system was set up, with scores from 0 (unsustainable) to 10 (very sustainable), with 5 as a sustainability benchmark value. The benchmark value is the value from which a product can be considered sustainable. A simple formula was developed to produce a sustainability index. CONCLUSION The proposed sustainability index could be considered a useful tool to describe both the qualitative and quantitative value of micronutrients and bioactive phytochemical present in foodstuffs. This methodological approach can also be applied beyond the Mediterranean, to food products in other world regions. © 2018 Society of Chemical Industry.

Abstract
This study reports the occurrence of some endocrine disrupting chemicals in red mullet samples and sediments collected in two representative sites of the northern Sicilian coast (Italy). For this purpose, an improved method, using solid extraction and high-performance liquid chromatography analyses for the simultaneous determination of bisphenol A (BPA), 4-nonylphenol (4-NP) and 4-t-octylphenol (4-t-OP) in fish tissues and sediments, has been developed and validated. Method performance was demonstrated over the concentration range 0.1-200ng/mL, with detection limits from 0.06 to 0.1ng/mL. Recoveries ranged from 83.4% to 102.6%, with relative standard deviations of 7.7-14.0% for the entire procedure. Results showed that BPA, 4-t-OP and 4-NP were detected in all fish samples and sediments from two sampling sites, indicating that these chemicals have contaminated Mediterranean aquatic ecosystem and have accumulated in fish. The study provided more comprehensive fundamental data for risk assessment and contamination control of phenolic EDCs in aquatic environment.

Abstract
Lipids are important energy source and structural component for cellular membranes and tissues, involved in the osmoregulation and immune response, and are very important in the bioaccumulation of lipophilic chemicals too. Among lipids, fatty acids (FAs) give information on diet of organisms, since FA of consumer lipids can be related to those of diet; plants and animals vary in their FA signature because of differences in the synthesis of lipids. In this study, lipid content and FA composition in tissues of Antarctic organisms from the Ross Sea (Odontaster validus, Sterechinus neumayeri, Chionodraco hamatus, Trematomus bernacchii, Pygoscelis adèliae) were assessed. Differences in lipid characterisation were found between both species and tissues. The lipid content was highest in C. hamatus liver (3.51%), and lowest in T. bernacchii muscle (0.16%). The polyunsaturated fatty acids (PUFAs) prevailed in the C. hamatus muscle, and among FAs, the docosahexaenoic acid (DHA; C22:6n3) was the most abundant (20.93%). The C22:6n3 accumulated more in fish and penguin tissues than in invertebrate species. The high contribution of unsaturated fatty acids (>74%) in fish tissues wats related to the low environmental temperature. The fatty acid profile and the essential fatty acids occurrence were also discussed in the light of physiological adaptations and feeding habits of organisms; the relationships with contaminant bioaccumulation were also assessed. To the best of our knowledge, this is the first report of fatty acid composition and fingerprint in a Ross Sea trophic web and their correlation with contaminant concentration.
