Abstract
Peanut meal has an excellent total protein content but also has low rumen undegradable protein (RUP). High-performance ruminants have high RUP requirements. We aimed to evaluate the effects of processing peanut meal with an autoclave and conventional and microwave ovens, with and without using xylose on its ruminal kinetics degradation parameters and intestinal digestibility (ID). In situ studies were conducted to determine dry matter (DM) and crude protein (CP) rumen degradation kinetics. In vitro studies were conducted to evaluate intestinal digestibility (ID). The control treatment had a greater fraction A for DM and CP than peanut meals processed with an autoclave or conventional oven. The control had greater kd for CP compared with the microwave. The addition of xylose decreased fraction A, the degradation rate of fraction B (kd) and RUP, and increased the protein B fraction of autoclaved peanut meal. We observed a decrease in effective degradability (ED) and increased RUP for processed treatments in all experiments compared with the control. Processing methods did not affect the protein ID of autoclaved peanut meal compared to the control. An interaction between xylose and heating time was observed, where increasing heating time linearly reduced the ID of xylose-untreated treatments. Overall, these results suggest that the tested methods effectively increased the RUP content of peanut meal.

Abstract
The aim of this work was to study, for the first time, the effects of the rearing management (from birth to slaughter) applied throughout the life of young bulls on carcass and meat quality. Five rearing managements were defined statistically, from a combination of 30 rearing factors, using a hierarchical clustering on principal components. This study considered the individual data of 179 Charolais young bulls from commercial farms. The carcass traits were more sensitive to rearing management than the meat traits. Rearing management had an effect mainly on fat and overall meat grain for the carcass, and on color and tenderness for the longissimus meat. However, it was possible to produce carcass and/or meat with similar properties from different rearing managements. Among the five rearing managements defined in this study, two were identified as allowing the best trade-off to produce simultaneously high carcass and meat quality. The first management was characterized by absence of growth period and a short fattening duration, with a wrapped haylage or corn silage-based diet. The second management was characterized by short pre-weaning and growth periods, and a long fattening period.

Abstract
Protein metabolism and body composition have been identified as major determinants of residual feed intake (RFI) in beef cattle fed high-starch fattening diets. This study aimed to evaluate if these two identified RFI determinants in beef cattle are the same across two contrasting silage-based diets. During two consecutive years, an 84-day feed efficiency test (Test A) immediately followed by a second 112-day feed efficiency test (Test B) was carried out using a total of 100 animals offered either one of two diets (either corn silage- or grass silage-based) over 196 days. At the end of Test A, the 32 animals most divergent for RFI (16 extreme RFI animals per diet, eight low RFI and eight high RFI) were identified and evaluated during Test B for their i) N use efficiency (NUE; N retention/N intake) calculated either from a 10-d nitrogen balance trial or from estimations based on body composition changes occurring during the whole experiment (Test A and Test B; 196 days), ii) carcass and whole-body protein turnover rates analysed through the 3-methyl-histidine urinary excretion and the N isotopic turnover rates of urine, respectively, and iii) body composition measured at the slaughterhouse at the end of Test B. Oxygen consumption was measured during Test B for the 100 animals by two GreenFeed systems. Irrespective of the diet, efficient RFI animals tended (P = 0.08) to improve their NUE when N retention was estimated for 196 days or when considering their lower urinary urea-N to total N ratio (P = 0.03). In contrast, NUE calculated during the 10-d N balance showed no differences (P = 0.65) across RFI groups suggesting that this method may not be suitable to capture small NUE differences. Efficient RFI individuals presented higher dressing percentage and muscle deposition in the carcass (P = 0.003) but lighter rumen (P = 0.001), and a trend for lower oxygen consumption (P = 0.08) than inefficient RFI animals irrespective of the diet. Lower protein degradation rates of skeletal muscle and lower protein synthesis rates of plasma proteins were found in efficient RFI cattle but only with the corn silage-based diet (RFI × Diet; P = 0.02). The higher insulinaemia associated with the corn silage-based diet (P = 0.001) seemed to be a key metabolic feature explaining the positive association between protein turnover and RFI only in this diet. Feed N was more efficiently used for growth by efficient RFI animals regardless of the diet but lower protein turnover rates in efficient RFI animals were only observed with corn silage-based diets.

Abstract
The goal of this study was to compare the chemical properties of three muscle types of beef cattle fed using different finishing diets compositions. Four finishing feeding models for bulls based on different proportions of concentrates, maise silage, grass silage and hay were evaluated. Muscles chemical composition was evaluated in m. infraspinatus (ISB), m. longissimus thoracis (LTC) and m. longissimus lumborum (LLS). The chemical composition of meat was influenced by muscle type. ISB was characterised by higher moisture, collagen content, lower protein and ash content, and net energy concentration than LTC and LLS. The differences between diets in dry matter and fat content in each of the muscle groups studied were stated. Furthermore, a difference in the collagen content in LLS and protein content in ISB was noted. High correlations (P ≤ 0.05) were found between the concentrate content in the finishing diet and protein content (r = 0.59) in ISB, and dry matter both in LLS (r = 0.69) and LTC (r = 0.58). The lowest fat content of beef was noted for all muscles obtained from animals fed with a diet composed of grass silage, hay, and concentrates (D1).

Abstract
Compensatory growth (CG) is the ability of an animal to undergo accelerated growth after a period of restricted feeding. However, there is a dearth of information in relation to the effect of genotype on CG response, thus the objective of this study was to evaluate CG response in two contrasting breed types, namely Aberdeen Angus (AN) and Belgian Blue (BB). Crossbred AN × Holstein-Friesian or BB × Holstein-Friesian steers were assigned to one of two treatment groups in a two (genotypes) × two (diets) factorial design. For 99 days, one group (11 AN and 12 BB) was offered a high energy control diet (H-H) whereas the second group (11 AN and 12 BB) was offered an energy restricted diet (L-H). At the end of the differential feeding period (99 days), both groups of animals were then offered a high energy control diet for a further 200 days. All animals were then slaughtered on day-299 of the study. During feed restriction, L-H had lower DM intake (DMI), had greater feed conversion ratio (FCR) and lower plasma concentrations of insulin, IGF-1, leptin, glucose, urea, betahydroxybutyrate and smaller M. longissimus thoracis or lumborum muscle and fat depths compared to H-H steers. During realimentation, there was no difference in DMI between diets; however, L-H had greater live weight gain compared to H-H steers. Overall, H-H consumed greater quantities on a DM basis, however, had a higher FCR compared to L-H steers. By the end of the realimentation period, there was no difference in plasma metabolite or hormone concentrations, linear body measurements, ultrasonically scanned fat depths, carcass conformation, dressing percentage or fat class between H-H and L-H steers. At slaughter, carcass weights were affected by diet with greater values for H-H compared to L-H steers. Genotype affected measures associated with body composition including pelvic width and both muscle and fat depths (P < 0.05). Overall, L-H had a CG (or recovery) index of 0.52 and did not make up for the loss of gains during the differential feeding period; however, M. longissimus thoracis et lumborum, a tissue of high economic value, recovered completely making it a target of interest for further investigation.

The repeatability of feed intake and feed efficiency in beef cattle offered high-concentrate, grass silage and pasture-based diets. Animal 2020; 14:2288-2297. Abstract
Breeding values for feed intake and feed efficiency in beef cattle are generally derived indoors on high-concentrate (HC) diets. Within temperate regions of north-western Europe, however, the majority of a growing beef animal's lifetime dietary intake comes from grazed grass and grass silage. Using 97 growing beef cattle, the objective of the current study was to assess the repeatability of both feed intake and feed efficiency across 3 successive dietary test periods comprising grass silage plus concentrates (S+C), grazed grass (GRZ) and a HC diet. Individual DM intake (DMI), DMI/kg BW and feed efficiency-related parameters, residual feed intake (RFI) and gain to feed ratio (G : F) were assessed. There was a significant correlation for DMI between the S+C and GRZ periods (r = 0.32; P < 0.01) as well as between the S+C and HC periods (r = 0.41; P < 0.001), whereas there was no association for DMI between the GRZ and HC periods. There was a significant correlation for DMI/kg BW between the S+C and GRZ periods (r = 0.33; P < 0.01) and between the S+C and HC periods (r = 0.40; P < 0.001), but there was no association for the trait between the GRZ and HC periods. There was a significant correlation for RFI between the S+C and GRZ periods (r = 0.25; P < 0.05) as well as between S+C and HC periods (r = 0.25; P < 0.05), whereas there was no association for RFI between the GRZ and HC periods. Gain to feed ratio was not correlated between any of the test periods. A secondary aspect of the study demonstrated that traits recorded in the GRZ period relating to grazing bite rate, the number of daily grazing bouts and ruminating bouts were associated with DMI (r = 0.28 to 0.42; P < 0.05 - 0.001), DMI/kg BW (r = 0.36 to 0.45; P < 0.01 - 0.001) and RFI (r = 0.31 to 0.42; P < 0.05 - 0.001). Additionally, the number of ruminating boli produced per day and per ruminating bout were associated with G : F (r = 0.28 and 0.26, respectively; P < 0.05). Results from this study demonstrate that evaluating animals for both feed intake and feed efficiency indoors on HC diets may not reflect their phenotypic performance when consuming conserved forage-based diets indoors or when grazing pasture.

Abstract
BACKGROUND This study implemented a holistic approach based on the farm-to-fork data at the four levels of the continuum (farm - slaughterhouse - muscle - meat) to study the inter-individual cluster variability of beef tenderness. For that, 171 young bulls were selected on a large database of 480 animals according to the industrial expectations based on animal and carcass characteristics. The targeted factors were age at slaughter (14; 20 months), carcass weight (370; 470 kg), EUROP conformation (7; 15) and fatness (2.5; 5) scores of the carcasses. Multivariate analyses and unsupervised learning tools were performed. RESULTS Principal component analysis combined to agglomerative hierarchical clustering allowed ten clusters to be identified that differed (P < 0.0001) for the four targeted factors. The clusters were further different for variables belonging to each level of the continuum. The results indicated an inter-individual cluster variability rising in tenderness in link with the continuum data grouped according to industrial expectations. The associations of the whole variables of the continuum with tenderness were very important, but farm-to-fork continuum-levels dependent. The findings showed that the variables contributing most to the inter-individual cluster variability of tenderness seemed to be more related to the rearing practices, mainly feeding, and their consequences on carcass properties rather than to the muscle characteristics evaluated by enzyme metabolism and connective tissue. CONCLUSION It seems that considering the continuum data would allow possible trade-off managements of tenderness to identify levers at different levels from the farm-to-meat. © 2019 Society of Chemical Industry.

Abstract
BACKGROUND The present study explored the potential use of decision trees on rearing factors (q = 10) and carcass characteristics (q = 12) for the development of prediction model rules of beef tenderness prediction/categorization. Accordingly, 308 young bulls were used by a sensory panel to evaluate the tenderness potential of ribeye steaks grilled at 55 °C. A classification and regression tree method was implemented and allowed the prediction of tenderness using (i) rearing factors, (ii) carcass characteristics or (iii) both. RESULTS The resultant tree models yielded predictive accuracies of 70.78% (with four rearing factors: concentrate percentage; fattening duration; initial body weight and dry matter intake); 67.21% (with four carcass characteristics: fatness carcass score; carcass weight; dressing percentage and muscle carcass percentage) and 84.41% (with six rearing factors and carcass characteristics) compared to the k-means clustering of tenderness. In the final and robust regression tree, from the 22 attribute information, two carcass characteristics (fatness carcass score and muscle carcass percentage) and four rearing factors (fattening duration; concentrate percentage; dry matter intake and initial body weight) were retained as predictors. The first splitter of the 308 ribeye steaks in accordance with their tenderness scores was fatness carcass score, followed by fattening duration and concentrate percentage. CONCLUSION The trial in the preset study highlights the importance of thresholding approach for efficiently classifying ribeye steaks in accordance with their tenderness potential. The overall prediction model rule was: IF (fatness carcass score ≥ 2.88) AND (concentrate ≥ 82%) [AND (muscle carcass ≥ 71%)] THEN meat was [very] tender. © 2018 Society of Chemical Industry.

Abstract
The inclusion of fibre in a total mixed ration (TMR) often has operational and economic constraints. The objective of the present study was to compare intake and ruminal fermentation of steers fed either a TMR or a diet with the fibre fraction fed separately from the concentrate fraction. Six ruminally fistulated steers were used in a six-treatments, four-period cross-over experiment. Treatment structure was a 3 × 2 factorial. The first factor was fibre delivery either as a part of a TMR or offered separately from the concentrate fraction once every 3 or 6 days. The second factor was represented by two fibre sources, namely, alfalfa hay or cotton by-products. Fibre delivery and source did not significantly affect total, concentrate, fibre and digestible dry-matter intake, compared with TMR. A similar response was observed for ruminal pH, ammonia concentration and total volatile fatty acid concentration. Intake of crude protein and fibre, as well as the concentration of total volatile fatty acids, were higher for alfalfa hay than for cotton by-products. In conclusion, feeding the fibre portion separately from the concentrate fraction once every 3 or 6 days did not negatively affect intake and rumen function compared with when a TMR was fed, regardless of fibre source.

Modifying finishing strategies within established production systems has the potential to increase beef output and farm profit while reducing greenhouse gas (GHG) emissions. Thus, the objectives of this study were to investigate the effects of finishing duration on animal performance of Holstein-Friesian (HF) bulls and steers and evaluate the profitability and GHG emissions of these finishing strategies. A total of 90 HF calves were assigned to a complete randomised block design; three bull and three steer finishing strategies. Calves were rotationally grazed in a paddock system for the first season at pasture, housed and offered grass silage ad libitum plus 1.5 kg DM of concentrate per head daily for the first winter and returned to pasture for a second season. Bulls were slaughtered at 19 months of age and either finished indoors on concentrates ad libitum for 100 days (19AL), finished at pasture supplemented with 5 kg DM of concentrate per head daily for 100 (19SP) or 150 days (19LP). Steers were slaughtered at 21 months of age and finished at pasture, supplemented with 5 kg DM of concentrate per head daily for 60 (21SP) and 110 days (21LP) or slaughtered at 24 months of age and finished indoors over the second winter on grass silage ad libitum plus 5 kg DM of concentrate per head daily (24MO). The Grange Dairy Beef Systems Model and the Beef Systems Greenhouse Gas Emissions Model were used to evaluate profitability and GHG emissions, respectively. Average daily gain during the finishing period (P<0.001), live weight at slaughter (P<0.01), carcass weight (P<0.05) and fat score (P<0.001) were greater for 19AL than 19SP and 19LP, respectively. Similarly, concentrate dry matter intake was greater for 19AL than 19SP; 19LP was intermediate (P<0.001). Live weight at slaughter (P<0.001), carcass weight (P<0.001), conformation score (P<0.05) and fat score (P<0.001) were greater for 24MO than 21SP and 21LP, respectively. During the finishing period concentrate dry matter intake was greater for 21LP than 21SP with 24MO intermediate; 542, 283 and 436 kg DM, respectively. Although pasture-based finishing strategies had lower gross output values, concentrate feed costs were also reduced thus net margin was greater than indoor finishing strategies. Reducing concentrate input increased GHG emissions for bulls and steers slaughtered at the same age, respectively. Although prolonging the finishing duration reduced GHG emissions for bull and steer production systems, finishing bulls and steers over a longer period at pasture did not enhance animal performance and profit.

Abstract
Background The objective was to investigate the effect of placing mats on concrete slatted floors on performance, behaviour, hoof condition, dirt scores, physiological and immunological variables of beef steers, and to compare responses with animals on out-wintering pads. Continental crossbred beef steers [n = 360; mean (±SD) initial live weight 539 kg (42.2)] were blocked by breed and live weight and randomly assigned to one of five treatments; (1) Concrete slats alone, (2) Mat 1 (Natural Rubber structure) (Durapak Rubber Products), (3) Mat 2 (Natural rubber structure) (EasyFix), (4) Mat 3 (modified ethylene vinyl acetate (EVA) foam structure) and (5) Out-wintering pads (OWP’s). Results Animals on the OWPs had a greater (P < 0.05) live weight gain (P < 0.05) compared with the slat and Mat 2 treatments: results for Mat 1 and Mat 3 were the same (P > 0.05) as the other treatments. Animals on the OWPs had reduced lying percentage time compared with all the other treatments. Dry matter (DM) intake was greater for animals on the OWPs compared with all the other treatments. Carcass weight, kill out proportion, carcass fat score, carcass composition score, FCR and physiological responses were similar (P > 0.05) among treatments. No incidence of laminitis was observed among treatments. The number of hoof lesions was greater on all mat types (P < 0.05) compared with concrete slats and OWP treatments. Dirt scores were greater (P < 0.05) for animals on OWPs when measured on days 42, 84, 105, 126 and 150 compared with animals on slats. Conclusions Under the conditions adopted for the present study, there was no evidence to suggest that animals housed on bare concrete slats were disadvantaged in respect of animal welfare compared with animals housed on other floor types. It is concluded that the welfare of steers was not adversely affected by slats compared with different mat types or OWPs.

Abstract
This study aimed to examine the effect of divergent phenotypic ranking for residual feed intake (RFI) on ruminal CH emissions, diet digestibility, and indices of ruminal fermentation in heifers across 3 commercially relevant diets. Twenty-eight Limousin × Friesian heifers were used and were ranked on the basis of phenotypic RFI: 14 low-RFI and 14 high-RFI animals. Ruminal CH emissions were estimated over 5 d using the SF tracer gas technique on 3 successive occasions: 1) at the end of a 6-wk period (Period 1) on grass silage (GS), 2) at the end of an 8-wk period (Period 2) at pasture, and 3) at the end of a 5-wk period (Period 3) on a 30:70 corn silage:concentrate total mixed ration (TMR). Animals were allowed ad libitum access to feed and water at all times. Individual DMI was estimated during CH measurement and rumen samples were taken at the end of each CH measurement period. Diet type affected all feed intake and CH traits measured ( < 0.01) but was unavoidably confounded with animal age/size and experimental period. Correlation coefficients between RFI and DMI were significant ( < 0.05) only when animals were fed the TMR. Daily CH correlated with DMI ( = 0.42, < 0.05) only when animals grazed pasture. Daily DMI was lower in low-RFI animals ( = 0.047) but only when expressed as grams per kilogram metabolic BW. Absolute CH emissions did not differ between RFI groups ( > 0.05), but CH yield was greatest in low-RFI heifers ( = 0.03) as a proportion of both DMI and GE intake. Interactions between the main effects were observed ( < 0.05) for CP digestibility (CPD), DM digestibility (DMD), ruminal propionate, and the acetate:propionate ratio. Low-RFI animals had greater ( < 0.05) CPD and DMD than their high-RFI contemporaries when offered GS but not the other 2 diets. Low-RFI heifers also had greater OM digestibility ( = 0.027). Additionally, low-RFI heifers had a lower concentration of propionate ( < 0.05) compared with high-RFI heifers when fed GS, resulting in a greater ( < 0.05) acetate:propionate ratio. However, these differences were not evident for the other 2 diets. Energetically efficient animals do not have a lower ruminal methanogenic potential compared with their more inefficient counterparts and, indeed, some evidence to the contrary was found, which may reflect the greater nutrient digestive potential observed in low-RFI cattle.

Abstract
This study sought to chart the ontogenesis of rumen in Naemi lambs through histomorphometeric evaluation subjected to alfalfa hay in total mixed rations (TMR). A total of 40 growing healthy Naemi male lambs (28.85±1.09kg), at weaning (90±3days) was randomly distributed into four groups. One group was fed on TMR (control) only, while others were supplemented with restricted amount of alfalfa hay at the rate of 100g per day (T1), 200g once per two days (T2) and 300g once per three days (T3) in addition to ad libitum TMR. The results indicated that body weight and dry matter intake increased significantly in treated groups. Significantly higher (P<0.05) pH was recorded in all the treated groups after 8h of feeding. Similarly, the brightness (L*), redness (a*) and yellowness ((b*) of rumen was significantly higher (P<0.05) in treated groups. The papillary length, width and surface area of rumen were significantly (P<0.05) high in alfalfa supplemented groups. Iron (Fe) concentration in rumen tissue decreased significantly (P<0.05) in treated groups. We concluded that a dietary plan based on ad libitum TMR with the addition of alfalfa at the rate of aforementioned protocol not only enhanced feed intake and growth rate of the growing Naemi lambs but also improved the structural characteristics of the rumen.
