Eating Quality of Pork from Entire Male Pigs after Dietary Supplementation with Hydrolysable Tannins

Boar taint is an unpleasant odour and flavour released during heat treatment of pork from uncastrated male pigs. The two main compounds responsible for boar taint are androstenone and skatole. Androstenone is a steroid hormone formed in the testis during sexual maturity. Skatole is a product of microbial degradation of the amino acid tryptophan in the hindgut of pigs. Both of these compounds are lipophilic, which means that they can be deposited in adipose tissue. Several studies have reported heritability estimates for their deposition from medium (skatole) to high magnitudes (androstenone). In addition to efforts to influence boar taint through genetic selection, much attention has also been paid to reducing its incidence using various feeding strategies. From this point of view, research has focused especially on the reduction in skatole content by supplementation of feed additives into the nutrition of entire male pigs. Promising results have been achieved using hydrolysable tannins in the diet. To date, most studies have investigated the effects of tannins on the production and accumulation of skatole in adipose tissue, intestinal microbiota, growth rate, carcasses and pork quality. Thus, the objective of this study was, in addition to determining the effects of tannins on androstenone and skatole accumulation, to assess the effects of tannins on the sensory traits of meat from entire males. The experiment was performed on 80 young boars-progeny of several hybrid sire lines. Animals were randomly assigned to one control and four experimental groups (each numbering 16). The control group (T0) received a standard diet without any tannin supplementation. Experimental groups were supplemented with 1% (T1), 2% (T2), 3% (T3) or 4% (T4) SCWE (sweet chestnut wood extract) rich in hydrolysable tannins (Farmatan). Pigs received this supplement for 40 days prior to slaughter. Subsequently, the pigs were slaughtered, and sensory analysis was applied to evaluate the odour, flavour, tenderness and juiciness of the pork. The results showed a significant effect of tannins on skatole accumulation in adipose tissue (p = 0.052-0.055). The odour and flavour of the pork were not affected by tannins. However, juiciness and tenderness were reduced by higher tannin supplementation (T3-T4) compared to the controls (p < 0.05), but these results were sex-dependent (in favour of men compared to women). Generally, women rated tenderness and juiciness worse than men regardless of the type of diet.

Preserving for the future the - once widespread but now vanishing - knowledge on traditional pig grazing in forests and marshes (Sava-Bosut floodplain, Serbia)

BACKGROUND

Traditional knowledge is key for sustainability, but it is rapidly disappearing. Pig keeping in forests and marshes is an ancient, once widespread, now vanishing practice, with a major economic and ecological potential. The knowledge of pig keepers and the foraging activity of pigs are hardly documented.

METHODS

We studied the knowledge of traditional pig keepers (svinjars) on wild plants and pig foraging on the Sava-Bosut forest-marsh complex in Serbia. We conducted picture-based interviews about 234 locally common and/or salient plant species, and participatory fieldwork (11 days) and visual observation (21 days) on pig foraging.

RESULTS

181 wild plant species were known by svinjars and 106 taxa were consumed by pigs. Svinjars knew well and could name most regularly foraged species. 98 species were reported by svinjars as foraged and 56 as not eaten. 28 species were observed by the authors as eaten regularly, while 21 were nibbled and 17 avoided. Contradictory information on foraging was rare both among svinjars (8 species) and between svinjars and researchers (7 species); several of these species were rare. Leaves of 92, fruits or seeds of 21 and 'roots' of 20 species were reported or observed as eaten, usually with high seasonality. Svinjars were overall observant, but knew little about some less salient species (e.g. Veronica, Circaea). The most common forages (reported and/or observed) were fruits (Quercus, fleshy fruits), grasses (Agrostis, Glyceria), herbs (Ranunculus ficaria, Circaea), nutritious 'roots' (Carex spp., Iris), young shrub leaves (Crataegus, Carpinus) and 'tame' plants growing in the sun (Persicaria dubia, Erigeron annuus). Traditional, now extinct pig breeds were reported as less selective and more 'knowledgeable' about plants, as they received less additional fodder. Svinjars learnt their knowledge since childhood, from community members, but long-term personal observations and everyday encounters with pigs were also important sources of knowledge.

CONCLUSIONS

A deeper understanding of pig foraging could contribute to using pigs in nature conservation management, resource management and organic farming, and to a better understanding of wild boar foraging. The knowledge of svinjars is a disappearing intangible cultural heritage of European importance. Knowledge holders deserve recognition, and legal and financial support to continue this tradition.

Performance and carcass quality traits of Iberian × Duroc crossbred pig subject to gender and age at the beginning of the free-range finishing phase

The traditional production of the Iberian breed pig involves a long production cycle. It might be shortened by using Iberian pigs crossed with Duroc and by reducing the growing phase, but the age-related changes on productive performance and carcass quality should be addressed. Thus, productive performance, live measurements and carcass and primal cut traits were evaluated on Iberian × Duroc 50:50 crossed pigs according to animal age at the beginning of the free-range finishing phase (Montanera): 10, 12 and 14 months old (IBxD10 (n = 15), IBxD12 (n = 17) and IBxD14 (n = 18) animal batches, respectively) and gender (immunologically castrated female -consisted of the Improvac® vaccination- and surgically castrated males). During the growing period, animals were fed with restrictions; 1.49, 1.29 and 1.20 ± 0.023 (mean ± SEM) kg/day of commercial feeds to start Montanera with similar BW; 103.9, 102.9 and 102.1 ± 0.22 kg, for IBxD10, IBxD12 and IBxD14, respectively. IBxD14 animals yielded the highest average daily gain (ADG) and BW after Montanera, as well as larger rump height and croup width. In contrast, these animals had the lowest carcass yield. Although animals from IBxD10 yielded hams of inferior size, this could be of interest to the sector, as there is a certain segment of the market that demands hams of smaller size and, generally, this is difficult to obtain with the traditional Montanera production system. The gender had no major effects on performance and carcass and primal cut traits, so both immunologically castrated female and surgically castrated males are suitable for finishing in Montanera.

Exploring Sustainable Food Choices Factors and Purchasing Behavior in the Sustainable Development Goals Era in Spain

The aim of the present study was (1) to investigate what consumers include within the concept of food sustainability and its link with sustainable consumption, by identifying meaningful consumer typologies from the concept of food sustainability and food choice factors framed by SDG 12, and (2) to know how different farm systems attributes affecting purchase behavior are associated with such typologies. Consumers from two Spanish regions (n = 403) answered a paper questionnaire to know their degree of knowledge of sustainability, and beliefs, behavior, attitudes and preferences towards food sustainability, and the importance given to product characteristics and shopping practices. A principal component analysis was conducted to identify groups with similar answers, to average some of the questions before the final analysis of variance, which includes demographic classes as fixed effects. A cluster analysis using the most representative questions identified two clusters. cluster 1 (68.4%) responded to more sustainability-related attributes, and cluster 2 (31.5%) presented a less-expanded concept of sustainability. The origin of the product and quality certification (local, organic) was important for food purchase practices. The place of residence and gender differences of the consumers were the most influential factors. In the conjoint study, regarding the purchase of Iberian pork, cluster 1 remained unwilling to sacrifice outdoor systems and local breed at the expense of the price, in the case of the Iberian pig production. The most important demographic differentiator was the region of residence of the consumer. In conclusion, consumers are not aware of the wider aspects included in the sustainability concept. Moreover, the concept of sustainability elicits different meanings to the segments of the consumers identified.

Quality Traits of Montanera Iberian Dry-Cured lomito as Affected by Pre-Cure Freezing Practice

The seasonality to which dry-cured products from Iberian breed pigs finished in Montanera (free-range rearing system with feed based exclusively on ad libitum consumption of natural resources; acorns and grass) are subjected could be overcome by pre-cure freezing. Three sets of Montanera Iberian presas (Serratus ventralis muscle)(n = 15) were established to assess the impact of frozen storage -0, or non-frozen, 3 and 6 months-previous to the technological process of curing-on the quality traits of the dry-cured product Montanera Iberian dry-cured lomito. Similar seasoning and curing processing conditions were applied to all sets. Lower productive performance due to higher weight loss during curing, and lower colour intensity were observed in pre-frozen dry-cured lomitos. The fatty acid profile was more saturated, and the oxidative status increased as a result of pre-cure freezing. On the matter of texture, all parameters were modified, highlighting the higher values of hardness and shear force of pre-frozen dry-cured lomitos. The time that raw material was frozen exerted a slight, thus helping manufacturers to better address the gap between industry and consumer demand with minimal effect on quality traits.

African swine fever and outdoor farming of pigs

This opinion describes outdoor farming of pigs in the EU, assesses the risk of African swine fewer (ASF) introduction and spread associated with outdoor pig farms and proposes biosecurity and control measures for outdoor pig farms in ASF-affected areas of the EU. Evidence was collected from Member States (MSs) veterinary authorities, farmers' associations, literature and legislative documents. An Expert knowledge elicitation (EKE) was carried out to group outdoor pig farms according to their risk of introduction and spread of ASF, to rank biosecurity measures regarding their effectiveness with regard to ASF and propose improvements of biosecurity for outdoor pig farming and accompanying control measures. Outdoor pig farming is common and various farm types are present throughout the EU. As there is no legislation at European level for categorising outdoor pig farms in the EU, information is limited, not harmonised and needs to be interpreted with care. The baseline risk of outdoor pig farms for ASFV introduction and its spread is high but with considerable uncertainty. The Panel is 66-90% certain that, if single solid or double fences were fully and properly implemented on all outdoor pig farms in areas of the EU where ASF is present in wild boar and in domestic pigs in indoor farms and outdoor farms (worst case scenario not considering different restriction zones or particular situations), without requiring any other outdoor-specific biosecurity measures or control measures, this would reduce the number of new ASF outbreaks occurring in these farms within a year by more than 50% compared to the baseline risk. The Panel concludes that the regular implementation of independent and objective on-farm biosecurity assessments using comprehensive standard protocols and approving outdoor pig farms on the basis of their biosecurity risk in an official system managed by competent authorities will further reduce the risk of ASF introduction and spread related to outdoor pig farms.

Can Hydrolysable Tannins in Diet of Entire Male Pigs Affect Carcass, Pork Quality Traits, Amino and Fatty Acid Profiles, and Boar Taint, Skatole and Androstenone Levels?

The slaughtering of entire males increases the probability of incidence of tainted pork due to the presence two main compounds-androstenone and skatole. If a surgical castration of young entire male pigs is stopped in the EU countries, fattening of boars is likely to become one of the most commonly used systems in pig farming. Since skatole production and accumulation in fat tissue can be controlled by dietary approaches, several studies have investigated various feed additives to reduce this compound of boar taint. Ones of the most promising is tannins. The aim of this study was to determine the effect of different dietary tannin level supplementation on carcass, pork quality, chemical, amino and fatty acid composition. as well as perception of boar taint and accumulation of skatole and androstenone in adipose tissue. Eighty entire males were randomly distributed to control (T0) and four experimental groups. Control pigs received standard feed mixture (16.8% CP, 13.9 MJ ME) without any tannin supplementation. Experimental pigs received the same diet with administration of 1% (T1), 2% (T2), 3% (T3) and 4% (T4)-sweet chestnut extract rich in hydrolysable tannins for 40 days (from average live weight of 80 kg until slaughter at average weight 122.28 kg ± 5.63 kg). Dietary tannins supplementation did not show any significant effect on chemical composition, cholesterol content, and amino acid composition of muscle as well as fatty acid composition and androstenone accumulation in adipose tissue. A slight or small effect was observed on carcass and meat quality, respectively. Pigs in groups T4 and/or T3-T4 had higher electrical conductivity in semimembranosus muscle and cooking loss value compared to T1, T2 or T0, T1, and T2 groups (p < 0.05). Tannins in the pig's diet greatly affected fatty acid profile in meat of entire males. The highest tannin levels (4%) increased concentrations of lauric, myristic, vaccenic, linoleic, total PUFA, and n-6 PUFA in muscle compared to the control. Similar results were found in group T3 except for vaccenic, linoleic, and total PUFA. On the contrary, concentrations of heptadecanoic and oleic acids in groups T3 and T4 were lower than those in T1 and T2 groups. Perception of boar taint using "hot iron" method (insertion a hot iron tip of soldering iron into adipose tissue) tended to decrease in T2 group compared with control. Skatole accumulation in fat tissue was reduced in groups T2-T4 at significance level (p = 0.052-0.055) compared to the control pigs. In summary, tannins supplementation had no effect on chemical and amino acid composition as well as fatty acid profile in adipose tissue, and only slight on carcass value. However, 4% concentration of tannins significantly increased content of some fatty acids compared to control group.

Muscle Transcriptome Analysis Reveals Molecular Pathways Related to Oxidative Phosphorylation, Antioxidant Defense, Fatness and Growth in Mangalitsa and Moravka Pigs

This work was aimed at evaluating loin transcriptome and metabolic pathway differences between the two main Serbian local pig breeds with divergent characteristics regarding muscle growth and fatness, as well as exploring nutrigenomic effects of tannin supplementation in Mangalitsa (MA) pigs. The study comprised 24 Mangalitsa and 10 Moravka (MO) males, which were kept under identical management conditions. Mangalitsa animals were divided in two nutritional groups (n = 12) receiving a standard (control) or tannin-supplemented diet (1.5%; MAT). Moravka pigs were fed the standard mixture. All animals were slaughtered at a similar age; 120 kg of average live weight (LW) and loin tissue was used for RNA-seq analysis. Results showed 306 differentially expressed genes (DEGs) according to breed, enriched in genes involved in growth, lipid metabolism, protein metabolism and muscle development, such as PDK4, FABP4, MYOD1 and STAT3, as well as a relevant number of genes involved in mitochondrial respiratory activity (MT-NDs, NDUFAs among others). Oxidative phosphorylation was the most significantly affected pathway, activated in Mangalitsa muscle, revealing the basis of a different muscle metabolism. Also, many other relevant pathways were affected by breed and involved in oxidative stress response, fat accumulation and development of skeletal muscle. Results also allowed the identification of potential regulators and causal networks such as those controlled by FLCN, PPARGC1A or PRKAB1 with relevant regulatory roles on DEGs involved in mitochondrial and lipid metabolism, or IL3 and TRAF2 potentially controlling DEGs involved in muscle development. The Tannin effect on transcriptome was small, with only 23 DEGs, but included interesting ones involved in lipid deposition such as PPARGC1B. The results indicate a significant effect of the breed on muscle tissue gene expression, affecting relevant biological pathways and allowing the identification of strong regulatory candidate genes to underlie the gene expression and phenotypic differences between the compared groups.

The Quality and Health-Promoting Value of Meat from Pigs of the Native Breed as the Effect of Extensive Feeding with Acorns

Modern society is paying more attention to the quality of meat and its production system. Therefore, in this study, we analyzed the possibility of using a native pig breed—Złotnicka Spotted. This breed’s popularity has increased in Poland as it may be a good source of valuable meat. Compared to the meat frompigs of the same breed following intensive fattening, the meat from free-range pigs extensively fed on silage and small amounts of acorns is characterized by a higher content of fat, which acts as a carrier for flavor and, indirectly, juiciness. Moreover, rearing systems with traditional feeding, e.g., with the use of acorns, may have a positive effect on meat quality, dietetic value, and, therefore, consumer acceptance of the product.

Abstract

The popularity of meat from animals of native breeds is growing all over the world, due to consumer belief regarding its higher quality compared to meat from industrial farm animals. In addition, the living conditions (welfare) are of great importance for consumers. We observed the effect of different ways of keeping and feeding pigs of the same conservative breed on the quality of meat and its health benefits. The aim of the study was to compare the meat quality from pigs of the native Złotnicka Spotted breed, fattened intensively or extensively (with conventional farm-produced compound feed and acorns). The meat from free-range pigs extensively fed on silage and small amounts of acorns was characterized by a higher content of fat, which acts as a carrier for flavor and juiciness, as well as higher monounsaturated fatty acid (MUFA) content (p ≤ 0.05) and lower atherogenic, thrombogenic, and peroxidability indices (p ≤ 0.05). It may be stated that the meat quality of the native pig breed is significantly dependent on the housing and feeding method. A more beneficial effect on the quality of meat and its dietetic value, as well as its susceptibility to rancidity, can be obtained throughextensive pig feeding with roughage and the addition of acorns.

A Comparison of Stocking Methods for Pasture-Based Growing-Finishing Pig Production Systems

A sustainable pasture-based production system should provide benefits to the vegetation, soil and animals while providing means of economic support for the household that operates the system. If best management practices are implemented, this would allow the development of resilience for the pasture system and ameliorate the natural resources for present and future generations. Pasture-based pig production represents a production alternative for small scale or limited-resources farmers, offering them the possibility to brand their products. The implementation of best management practices would allow managers to reach productive and conservation goals. This study was conducted to compare the effects of continuous, rotational and strip-grazing stocking methods for growing-finishing pigs on tall fescue pastures. Stocking methods had effect on soil bulk density and some soil nutrients, vegetative ground cover, animal weight gain and feed use efficiency. The rotational and strip grazing stocking methods offer potential to improve the sustainability of pasture-based pig systems.

Abstract

Two alternative stocking methods (rotational and strip-grazing) were compared to continuous stocking at a stocking rate of 47 pigs ha⁻¹ in tall fescue pastures. The research was conducted during two twelve-weeks grazing periods in North Carolina (USA). In total 144 (females and castrated males, 17.5 and 29.1 kg initial body weight) crossbred Yorkshire X Berkshire, Yorkshire/Landrace X Hampshire and Yorkshire/Landrace X Duroc pigs without nose rings were used. Greater soil bulk density and soil concentrations of NO₃⁻, P, K, Mn, Zn and Cu were observed in paddocks managed continuously, while greater final ground cover (+22%) was recorded in paddocks managed with rotational and strip-grazing stocking methods. No differences were detected in botanical composition of the paddocks. Greater weight gains (+8.5%) were registered for rotationally managed pigs. Feed efficiency was better (+8%) for rotationally than for continuously stocked pigs, while strip-grazed pigs presented intermediate values. The results indicated the potential of both alternative stocking methods to be implemented in sustainable pasture-based pig production systems.

Effect of Free-Range and Low-Protein Concentrated Diets on Growth Performance, Carcass Traits, and Meat Composition of Iberian Pig

It is generally assumed in the Iberian pig sector that substitution of traditional free-range rearing, with acorns and grass, by mixed diets affects intramuscular fat content and fatty-acid composition, among others, causing a decrease in meat quality. As mixed diets are usually formulated with higher protein contents than those supplied by natural resources consumed by Iberian pig fed extensively, we hypothesized that the use of a low-protein diet in the final fattening period of pig could be a suitable strategy to improve meat and dry-cured product quality. However, it is also necessary to evaluate the effect of this strategy on performance and carcass traits of pigs. In this study, we found that Iberian pigs fed on low-protein diets had higher intramuscular fat content and different meat composition compared to pigs fed on concentrates with standard protein levels, which could be a suitable way of improving the Iberian pig meat and dry-cured product quality.

Abstract

The feeding system is one of the main factors influencing the Iberian pig meat quality. This experiment was undertaken to evaluate the influence of feeding diets containing different levels of protein on performance, carcass, and meat quality of Iberian pigs. To that aim, 24 castrated male Retinto Iberian pigs with an average weight of 116 kg were fed under free-range conditions with acorns and grass (FR), and on concentrated diets in confinement with standard (SP) and low protein content (LP). The crude protein content in acorns was lower than that in the grass and SP diet, but similar to that in the LP diet. FR pigs needed more time to achieve slaughter weight than LP and SP pigs. Iberian pigs fed on low-protein diet (FR and LP) had a higher intramuscular fat content in the musculus serratus ventralis than SP pigs. The influence of diet on the fatty-acid composition was reflected more markedly in subcutaneous fat than in muscles. FR pigs showed a higher level of C18:1 n-9 and total polyunsaturated fatty acids and lower total saturated fatty acids in subcutaneous fat than LP and SP. It is concluded that diets with low protein levels do not affect Iberian pig productive traits but change the meat composition, rendering them an interesting strategy to improve the quality of Iberian pig meat and dry-cured products.

Life Cycle Assessment of Iberian Traditional Pig Production System in Spain

Traditional Iberian pig production is characterized by outdoor systems that produce animals fed with natural resources. The aim of this study was to assess the environmental impacts of such systems through Life Cycle Assessment. Environmental impacts were analysed per kilogram of live weight at farm gate. Iberian pig production in montanera had the lowest impacts for climate change (CC), acidification (AC), eutrophication (EU) and cumulative energy demand (CED), being 3.4 kg CO2 eq, 0.091 molc H+ eq, 0.046 kg PO43− eq, and 20.7 MJ, respectively, due to the strict use of natural resources (acorns and grass) during the fattening period. As Iberian farms had a greater dependence on compound feed in cebo campo, environmental impacts on CC, AC, EU and CED were 22, 17, 95 and 28% higher, respectively, than with montanera. For land occupation (LO), however, cebo campo had a lower impact (31.6 m2·year) than montanera (43.0 m2·year) system. Traditional Iberian pig production systems have environmental impacts higher than conventional systems studied in literature but are similar to other traditional systems. Based on the present assessment, it is necessary to account for the contribution of emissions resulting from the consumption of natural resources to avoid the underestimation of environmental impacts.

Forage Consumption and Its Effects on the Performance of Growing Swine-Discussed in Relation to European Wild Boar (Sus scrofa L.) in Semi-Extensive Systems: A Review

Outdoor-reared European wild boar (Sus Scrofa L.) is regarded as a delicacy by consumers due to its favourable meat properties and an association with high welfare standards. The rearing of wild boar on pasture has the potential to minimise input costs relative to conventional production systems. However, some pasture production systems have been found to perform poorly due to low growth rates. This review collates the available scientific evidence on pasture-based production of wild boar and domestic pigs, to identify factors that influence feed intake, performance, and behaviour. Factors explored include season/weather, dietary supplementation, grazing management, forage availability, herbage quality, and sward type. For example, the additional feed availability associated with pasture grazing has been shown to be a significant factor that positively correlates with dry matter intake of wild boar. This has been demonstrated to result in better feed conversion efficiency and reduced feed costs without reductions in growth rates compared to animals without access to pasture. Furthermore, the increased availability of favoured species in pasture may also promote dry matter intake. The long-term sustainability of wild boar production is dependent on the economic, social, and environmental viability of the systems. Pasture-based production systems may be one way by which this can be achieved, but only if implemented correctly.

Abstract

Due to its distinct properties, wild boar meat is considered a highly desirable consumer product, in a market that is expanding. Outdoor production is also favoured by consumers who value animal welfare and environmental sustainability when choosing meat products. There is evidence that farms that include pasture for grazing typically have reduced feeding costs. Such production systems can also be more environmentally sustainable as the input (pasture) is inedible to humans, compared to conventional indoor systems, which use human-edible feeds (e.g., soya). However, some wild boar farms have performed poorly compared to those rearing other swine such as hybrid wild boar and domestic pigs. Diet is central to all livestock production and is likely a significant influencing factor of wild boar performance, both in terms of forage consumption and nutritional composition. Other factors may also influence performance, such as weather, behaviour and grazing management. Wild boar production systems hold their own intrinsic value in a growing marketplace. However, information gathered through the study of wild boar has external applications in informing outdoor domestic pig production systems to encourage the use of pasture as part of the habitat of domestic pigs.
