Survival behaviour of Salmonella enterica in fish and shrimp at different conditions of storage

Assessing microbiological and heavy metal pollution in surface waters associated with potential human health risk assessment at fish ingestion exposure

Fish represent a significant source of nutrients but also cause negative health effects due to their bioaccumulation capacity for pollutants. The aim of this study was to examine the transfer of metals from the water of several rivers (Somes, Tisa, Sasar, Lapus, Lăpusel) to fish (Caras sp) tissue (subcutaneous fat, muscles, liver, intestines, kidneys, gills, brain, and eyes) and to identify and assess the carcinogenic and non-carcinogenic health risks of Arsenic (As), Cadmium (Cd), Nickel (Ni), Manganese (Mn), Cooper (Cu), Lead (Pb), Chromium (Cr) and Zinc (Zn) through the ingestion of fish (muscles and subcutaneous fat tissues). The obtained results indicated that a diet consisting of fish is particularly vulnerable, particularly in children compared to adults. The risk assessment results were below the threshold limit, although the fish samples contained heavy metals, with values exceeding the permitted limits of Fe (4.41-1604 mg/kg), Cr (727-4155 µg/kg), Zn (4.72-147 mg/kg), and Ni (333-2194 µg/kg). The studied surface waters are characterized by low and high degrees of pollution with heavy metals, as indicated by the heavy metal pollution index scores (HPI: 12.4-86.4) and the heavy metal evaluation index scores (HEI: 1.06-17.6). The considerable pollution levels are attributed to the high Mn content (0.61-49.7 µg/kg), which exceeded the limit up to fifty times. A consistent set of physico-chemical analysis (pH, electrical conductivity, total hardness, turbidity, chloride, sulphate, nitrate, nitrite, ammonium, Ca, Mg, Na, K) was analysed in water samples as well. Considering the water quality index scores (WQI: 16.0-25.2), the surface waters exhibited good quality. Microbiological results indicated the presence of Listeria monocytogenes and atypical colonies of coagulase-positive staphylococcus in fish. In contrast, the surface waters from which fish samples were collected were positive for Escherichia coli, and coliform bacteria intestinal Enterococci. Based on the study's results, it is recommended to exercise caution in the case of children related to the consumption of fish and using the waters for drinking purposes. This study provides important data of considerable novelty to the riparian population, researchers, and even policy makers on the quality status and potential levels of contamination of river waters, fish and the bioaccumulation of heavy metals in fish that may cause adverse effects on human health if consumed, and similarly the heavy metal pollution degree of waters and the non-carcinogenic risk of heavy metals through ingestion and skin absorption of water in children and adults (the study area is a significant source of fisheries).

Comprehensive analysis of predominant pathogenic bacteria and viruses in seafood products

Given the growing global demand for seafood, it is imperative to conduct a comprehensive study on the prevalence and persistence patterns of pathogenic bacteria and viruses associated with specific seafood varieties. This assessment thoroughly examines the safety of seafood products, considering the diverse processing methods employed in the industry. The importance of understanding the behavior of foodborne pathogens, such as Salmonella typhimurium, Vibrio parahaemolyticus, Clostridium botulinum, Listeria monocytogenes, human norovirus, and hepatitis A virus, is emphasized by recent cases of gastroenteritis outbreaks linked to contaminated seafood. This analysis examines outbreaks linked to seafood in the United States and globally, with a particular emphasis on the health concerns posed by pathogenic bacteria and viruses to consumers. Ensuring the safety of seafood is crucial since it directly relates to consumer preferences on sustainability, food safety, provenance, and availability. The review focuses on assessing the frequency, growth, and durability of infections that arise during the processing of seafood. It utilizes next-generation sequencing to identify the bacteria responsible for these illnesses. Additionally, it analyzes methods for preventing and intervening of infections while also considering the forthcoming challenges in ensuring the microbiological safety of seafood products. This evaluation emphasizes the significance of the seafood processing industry in promptly responding to evolving consumer preferences by offering current information on seafood hazards and future consumption patterns. To ensure the continuous safety and sustainable future of seafood products, it is crucial to identify and address possible threats.

Emerging challenges in maintaining marine food-fish availability and food safety

The marine finfish and crustaceans contribute immensely to human nutrition. Harvesting marine food-fish to meet the global demand has become a challenge due to reduction of the fishery areas and food safety hazards associated with increased pre-harvest and post-harvest contaminations. The causes of low fish availability and contaminations were reviewed following the published literature from 2000 to 2023. The marine fish yields are stressed due to spread of contaminants triggered by rising sea temperatures, transport of microorganisms by marine vessels across the oceans, anthropogenic activities leading to increase in the toxic microorganisms, and the entry of toxic chemicals and antibiotic residues into the seawater through rivers or directly. Processing adds pyrogenic chemicals to foods. The hazardous materials may accumulate in the food-fish, beyond tolerance limits permitted for human foods. While the research and control measures focus on minimizing the hazards due to pathogenic microorganisms and chemicals in market fish, there is less discussion on the unhealthy changes occurring in the oceans affecting the quantity and quality of food-fish, and the origins of microbial and chemical contaminations. This review examines the factors affecting availability of wild food-fish and increased contaminations. It aims to bridge the knowledge gaps between the spread of hazardous agents in the marine environment, and their effects on the food-fish. Meeting the future human food security and safety through marine fish and fish products may need marine cage farming, introduction of genetically modified high yielding food-fish, and cultured contaminant free finless fish muscles as options.

Guidance on date marking and related food information: part 2 (food information)

A risk‐based approach was used to develop guidance to be followed by food business operators (FBOs) when deciding on food information relating to storage conditions and/or time limits for consumption after opening a food package and thawing of frozen foods. After opening the package, contamination may occur, introducing new pathogens into the food and the intrinsic (e.g. pH and a_w), extrinsic (e.g. temperature and gas atmosphere) and implicit (e.g. interactions with competing background microbiota) factors may change, affecting microbiological food safety. Setting a time limit for consumption after opening the package (secondary shelf‐life) is complex in view of the many influencing factors and information gaps. A decision tree (DT) was developed to assist FBOs in deciding whether the time limit for consumption after opening, due to safety reasons, is potentially shorter than the initial ‘best before’ or ‘use by’ date of the product in its unopened package. For products where opening the package leads to a change of the type of pathogenic microorganisms present in the food and/or factors increasing their growth compared to the unopened product, a shorter time limit for consumption after opening would be appropriate. Freezing prevents the growth of pathogens, however, most pathogenic microorganisms may survive frozen storage, recover during thawing and then grow and/or produce toxins in the food, if conditions are favourable. Moreover, additional contamination may occur from hands, contact surfaces or contamination from other foods and utensils. Good practices for thawing should, from a food safety point of view, minimise growth of and contamination by pathogens between the food being thawed and other foods and/or contact surfaces, especially when removing the food from the package during thawing. Best practices for thawing foods are presented to support FBOs.
