Recent concerns about stunning and slaughter

Comparison of recovery of sheep, goats, and calves from reversible electrical head-only and head-to-body stunning for halal meat production

AIMS

To compare the recovery of lambs, goats, and calves from head-only (HO) or high-frequency head-to-body stunning and evaluate the complementary use of behaviour and electroencephalography (EEG) to assess return to consciousness after electrical stunning in these species.

METHODS

Six-month-old lambs, adult goats and calves (< 7 days old) were subjected to reversible head-only stunning (50 Hz, 1 A, 2 seconds) or reversible high-frequency head-to-body stunning (RHTB: HO followed by 2,000 Hz, 2 A, 4-second stun to body). Following stunning, behavioural recovery was assessed in 21 lambs, 22 goats, and 20 calves. Latencies to first perform behaviours (end of convulsions, head lift, attempt to right, successful righting, attempt to stand, successful standing) after stunning were scored from video recordings. Recovery of electrical brain activity indicative of consciousness was assessed using EEG in a separate cohort of minimally-anaesthetised lambs, goats and calves (n = 20 per species). EEG traces collected before and after stunning were classified as normal, epileptiform, isoelectric, or transitional activity. Following stunning, the duration of epileptiform and isoelectric activity combined (states of brain activity incompatible with conscious awareness) was calculated, as was latency to return of normal (pre-stun) EEG.

RESULTS

The RHTB stun was reversible in all three species, although one sheep failed to recover and was euthanised. Both methods caused tonic and clonic convulsions in all species. Behavioural recovery of sheep and calves was similar for both methods while goats took longer to recover from RHTB than HO stunning. There was no evidence of differences between methods in the duration of EEG incompatible with consciousness or the latency to recovery of normal EEG.

CONCLUSIONS

Head-to-body stunning as applied here produced a reversible electrical stun in lambs, adult goats and young calves, although the benefits in terms of meat quality and operator safety are uncertain. Goats took longer to recover behaviourally from head-to-body stunning, possibly due to disrupted motor function, but there was no indication that post-stun unconsciousness lasted longer than following head-only stunning in any species. The normal behaviour for the animals' developmental age should be considered when deciding on behavioural indicators of recovery. The minimal anaesthesia model provided excellent quality EEG data that was valuable for interpretation of the behavioural responses.

CLINICAL RELEVANCE

For the purposes of pre-slaughter stunning of sheep, goats and young calves, recovery appears comparable between the two methods, with all but 1/63 animals in the behaviour study recovering normal function.

The use of a penetrative captive bolt device during the killing of farmed saltwater crocodiles (Crocodylus porosus)

Killing of farmed saltwater crocodiles involve stunning with a penetrative captive bolt device, followed by a cut across the nape of the neck and physical destruction of the brain to ensure death. This study was a welfare-based assessment of the use of a penetrative captive bolt device in saltwater crocodiles, to determine whether it satisfies the criteria of a humane stunning method and can be regarded as a direct killing method without the need for the application of an adjunct method. Methods used were electroencephalogram (EEG), observation of post-stun behavior, and postmortem examination of gross pathology of the cranium and brain. 30 of 30 animals, demonstrated immediate and irreversible loss of consciousness. There was extensive damage to the brain in all animals, deemed to be inconsistent with cortical function and possible recovery. The CASH Special 0.22 penetrative captive bolt pistol (1.25 grain cartridge), applied to the top of the cranial plate, produced immediate and irreversible unconsciousness in all the animals studied. This method satisfies animal welfare expectations, providing crocodile processors with a technique that contributes to a humane killing process.

Traditional halal meat production without stunning versus commercial slaughter with electrical stunning of slow-growing broiler chicken: impact on meat quality and proteome changes

Impact of traditional halal meat production without stunning (NST) and commercial slaughter with electrical stunning (ST) of 100 slow-growing broiler chicken on blood plasma and different biochemical, enzymatic, hormonal, meat quality, and proteomic changes was evaluated. The results revealed lower (P < 0.05) postmortem pH values and higher redness (a*) scores for ST samples relative to NST group. Myofibrillar fragmentation index and bleeding efficiency (%) were lower (P < 0.05) in ST compared to NST samples. The ST group had higher (P < 0.05) creatinine, total protein, alanine aminotransferase (ALT), and triiodothyronine (T3) than NST group, however, no difference (P > 0.05) in blood glucose, lactate dehydrogenase (LDH), creatine kinase (CK), thyroxine (T4), cortisol, and aspartate aminotransferase (AST) was observed relative to NST samples. The 2-dimensional gel electrophoresis (2-DE) coupled to MALDI-TOF MS of meat samples has identified 14 differentially abundant proteins between 2 groups. Proteins demonstrating positive correlation with stress namely adenylate kinase isoenzyme-1, Rho guanine nucleotide exchange factor (NST), and apolipoprotein A-I (ST) were overabundant. From the current study, it is concluded that electrical stunning of broilers prior to slaughter or traditional halal slaughter without stunning does not adversely affect the meat quality.

Stunning Compliance in Halal Slaughter: A Review of Current Scientific Knowledge

Muslim scholars are not unanimous on the issue of the application of stunning in the halal slaughtering of animals. Appropriate stunning makes animals unconscious instantaneously, thus avoiding unnecessary pain and stress during the slaughtering of animals. The present review comprehensively summarizes the available scientific literature on stunning methods in view of their halal compliance during the slaughter of animals. The issue of maximum blood loss, reversibility of consciousness, and animals remaining alive during the halal cut are the key determinants of approval of stunning in the halal slaughter. Further, missed stuns due to poor maintenance of equipment, improper applications, and poor restraining necessitates additional stunning attempts, which further aggravates pain and stress in animals. Scientific findings suggest that halal-compliant stunning technologies are reversible, do not kill animals prior to the halal cut, and do not obstruct blood loss. There is a need to carry out further research on the refinement of available stunning technologies and their application, proper restraints, proper identification of the death status of animals, and assurance of animal welfare in commercial halal meat production.

Are spiritual, ethical, and eating qualities of poultry meat influenced by current and frequency during electrical water bath stunning?

With the continuous rise of Muslim and Jewish populations and their increasing preference for ritually slaughtered poultry meat, the industry is forced to redefine its existing product-centric quality standard toward a new consumer-centric dimension of quality. The new dimension is mainly attributed to ensuring animal welfare and ethical treatment (ethical quality), spiritual quality (such as halal status, cleanliness), and eating quality standards set by religion. To meet consumer quality requirements while maintaining high production performance, the industry has incorporated newer technologies that are compatible with religious regulations such as stunning methods like electrical water bath stunning. However, the introduction of new techniques such as electrical water bath stunning has been met with mixed reactions. Some religious scholars have banned the use of any stunning methods in religious slaughter, as halal status is believed to be compromised in cases where birds have been stunned to death before slaughter. Nevertheless, some studies have shown the positive side of the electrical water bath stunning procedure in terms of preserving eating, ethical, and spiritual quality. Therefore, the present study aims to critically analyze the application of various aspects of electrical water bath stunning such as current intensity and frequency on various quality attributes, namely, ethical, spiritual, and eating quality of poultry meat.

Islam and Veterinary Science: Rethinking Animal Suffering Through Islamic Animal Ethics and the Evolving Definition of Halal Slaughter

In the midst of recent European activism against religious slaughter, the idea that religious slaughter is cruel to animals is often seen as commonsense, and the mandatory pre-slaughter stunning is often portrayed as the moral technology that assures animal welfare. Nevertheless, this portrayal seems to blur the fact that the current notion of animal welfare itself is built upon a changing selection of value assumptions, which are not without problems or academic debates. It also ignores the fact that contemporary veterinary scientists and Muslim scholars have been working together for four decades to learn more about farm animals and their suffering. Despite stereotypes, the idea of animal ethics is not foreign to Islam. In Islam, animals represent God's wisdom and wonder, and humans are obliged to attend to their health and living conditions. When killing animals for food is conducted, the slaughter must be done in the name of God as a sacred ritual in order to assure that the life of the animal is not taken lightly and that the slaughter is not a sign of hostility toward the universe. Before the act of sacrifice, the animal must be healthy, and no harm should be forced upon it. Accordingly, the requirement of pre-slaughter stunning has posed a question to Muslim scholars: Does stunning kill the animal or cause harm? What defines harm, and whose definition counts? This paper reconstructs a socio-technological history of halal slaughter through scientific research on animal suffering since the 1980s. On the basis of archival research of New Zealand veterinary scientists' works and in-depth interviews with Malaysian veterinary scientists, this article outlines three phases of the evolution of halal slaughter that aims to fulfill multiple sets of moral obligations toward farm animals, and demonstrates how veterinary scientists establish common ground between secular and Islamic animal ethics. In this vein, I am envisioning a possibility of veterinary anthropology that recognizes the field's trans-cultural characteristics, and continues to challenge the rigid binaries between the West and the Rest, and between science and culture.

Influence of Post Mortem Muscle Activity on Turkey Meat Quality

Wing flapping and body movement can occur during the slaughter of poultry. Wing movement and flapping are driven primarily by the breast muscles (Pectoralis major and minor), and this muscle activity may have implications for meat quality. The objective of this study was to evaluate turkey post mortem activity during slaughter at a commercial poultry processing plant. Post mortem activity (during bleeding) was scored on 5,441 male turkeys, from six different genetic lines, using a 1–4 scale from none to severe wing flapping. Meat quality was measured on these birds in terms of pH (initial, ultimate, delta or change), color (L^*, a^*, b^*), and physiochemical traits (drip loss, cooking loss, shear force). Linear mixed models were used to analyze the effect of activity (score 1–4), genetic line (A–F), and season (summer vs. autumn) on the nine meat quality traits. Post mortem activity influenced a^*, drip loss, and shear force although the magnitude of the effects was small. There was an effect (P < 0.05) of genetic line on all the meat quality traits except for L^*, cooking loss, and shear force. In general, larger, faster-growing lines had higher pH, but the relationship between the lines for the other traits is not as clear. Season affected all the meat quality traits, except for pH_delta, with meat having a higher pH, L^*, b^*, drip loss, cooking loss, and shear force in the summer. This study provides an exploratory assessment of post mortem activity in turkeys and identifies meat quality traits which are most affected while also accounting for the effects of genetic line and season. Although identified effect sizes are small, the cumulative effect on turkey meat quality may be more substantial.

Epidemiological survey, general blood biochemistry, and histological examination of slaughtered heavy horse breeds with hemorrhage in the adipose tissue in the crest of the neck

Fifty-four slaughtered horses were classified into groups having adipose tissue in the crest of the neck with or without hemorrhage (AH and NH groups, respectively). Blood biochemical tests (Alb, TP, T-bil, GOT, GPT, LDH, T-cho, and BUN) and an epidemiological survey (age, gender, weight, origin, breed, BCS, CNS, and hoof disease) were performed. T-bil tended to be high, while the other parameters were normal. Weight, BCS, and CNS were higher in the AH group (P<0.05). GOT was lower in the AH group (P<0.05). It was suspected that the horses in the AH group had lipomatosis. It was assumed that the adipose tissue of the horses in the AH group contained damaged capillaries, and inflammation was confirmed based on evidence of macrophages and lymphocytes.

The occurrence of technological damage in slaughtered cattle, pigs, sheep and goats in the Czech Republic

The occurrence of technological damage in cattle, pigs, sheep and goats reared and slaughtered in the Czech Republic was monitored by evaluation and analyzing results of post mortem inspections of official veterinarians from slaughterhouses in the period from 2010 to 2019. We found that technological damage was the most common in pigs, and less common in cattle, sheep and goats. Compared to other species, pigs have statistically the highest occurrence of lung congestion (51.9%–19.3%, in the order: sows, finishing pigs, piglets), insufficient technology processing (0.200%–0.018%, in the order: sows, finishing pigs, piglets), delayed evisceration (0.04%–0.02%, in the order: finishing pigs, sows, piglets), muscle spoilage (0.033%–0.004%, in the order: piglets, finishing pigs, sows) and over-scalding (0.028%–0.013%, in the order: finishing pigs, piglets, sows). Compared to other species, cattle have statistically the highest incidence of different sensory deviations (7.42%–0.33%, in the order: calves, dairy cows, heifers, bulls) and insufficient bleeding (4.4%–2.9%, in the order: bulls, heifers, dairy cows, calves). In all monitored animal species, a similar level of the occurrence of contamination during the carcass processing was recorded (0.37%–0.00%). In sheep and goats, technological damage is generally lower than in pigs and cattle.

Welfare of sheep and goats at slaughter

The killing of sheep and goats for human consumption (slaughtering) can take place in a slaughterhouse or on-farm. The processes of slaughtering that were assessed for welfare, from the arrival of sheep and goats until their death (including slaughtering without stunning), were grouped into three main phases: pre-stunning (including arrival, unloading from the truck, lairage, handling and moving of sheep and goats); stunning (including restraint); and bleeding. Stunning methods were grouped into two categories: mechanical and electrical. Twelve welfare consequences that sheep and goats may experience during slaughter were identified: heat stress, cold stress, fatigue, prolonged thirst, prolonged hunger, impeded movement, restriction of movements, resting problems, social stress, pain, fear and distress. These welfare consequences and their relevant animal-based measures are described in detail in this Scientific Opinion. In total, 40 welfare hazards that could occur during slaughter were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 39 hazards, which were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Measures to prevent and correct hazards were identified, and structural and managerial measures were identified as those with a crucial role in prevention. Outcome tables linking hazards, welfare consequences, animal-based measures, origin of hazards and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences are proposed.

Pros and cons of different stunning methods from a Halal perspective: a review

There has always been a debate about the acceptability of stunning methods for preparing Halal slaughtered meat. Throughout the last few decades, stunning methods have become acceptable for Halal slaughtering due to an increasing majority of Muslim countries issuing Fatwas (religious rulings) that approve of stunning methods for the Halal slaughtering of food animals. With an increasing Muslim population worldwide, Halal meat provision is important for Muslims both economically and ethically. Moreover, there have been concerns regarding traditional Halal slaughter without the use of stunning from the standpoint of the animal's welfare. This article reviews the different stunning methods available and the associated processing practices, addressing their pros and cons in the commercial production of Halal meat.

Effects of Slaughter Positions on Catecholamine, Blood Biochemical and Electroencephalogram Changes in Cattle Restrained Using a Modified Mark IV Box

The proper slaughter positioning of animals is among the most crucial factors in animal welfare. The lateral position in Halal slaughter is a technique used around the world by Muslims, with a few practicing the upright position. The literature on the effects of slaughter in upright versus lateral positions on pain and stress is scarce. Thus, this study was designed to evaluate the effects of slaughter positions on blood biochemical parameters, plasma catecholamines, and electroencephalographic (EEG) responses. Twenty Brahman crossbred steers were subjected to slaughter in either lateral recumbency (LP) (n = 10) or an upright position (UP) (n = 10). There was a significant increase in adrenaline (p < 0.0001) and noradrenaline (p < 0.05) at T2 compared to T1 in the animals of both groups. A significant difference (p < 0.0001) was observed in the median frequency (MF) and total power (Ptot) of EEG, parameters for pain and stress, between the animals slaughtered in the upright and the lateral position. However, MF and delta waves were significantly higher (p < 0.05) after slaughter in the UP group than in the LP group. The results demonstrate a lesser amount of stress and pain responses among the LP group.

Potential predisposing factors for ecchymosis in the intercostal muscles of sheep carcases in South Australia

Context Ecchymosis is an undesirable appearance in meat caused by small bleeds from capillaries broken during the slaughter process. These lesions are heavily trimmed during processing, incurring labour costs and yield losses. Aims To estimate the prevalence of ecchymosis in a South Australian abattoir and investigate potential predisposing factors. Methods A generalised linear mixed model estimated the effects of breed, age, slaughter shift (morning or afternoon), kill date, direct or market consignment, hot standard carcase weight (HSCW, kg), deviation from lot average carcase weight (ZHSCW, standard units), palpated fat score (mm) and time in lairage (h) on the prevalence of ecchymosis. Over 7 days, 12286 lamb and 3802 mutton carcases from 82 properties were scored (0, 1) for ecchymosis. Key results Lambs had a higher prevalence of ecchymosis (14%) than did mutton (1%; P &lt; 0.001), with significant variation between lines of lambs (P &lt; 0.001). Considering lambs only, kill date (P &lt; 0.01), time in lairage (P &lt; 0.001), and the quadratic terms of HSCW (P &lt; 0.001) and ZHSCW (P &lt; 0.01) affected the prevalence of ecchymosis. Conclusions Ecchymosis had a significant prevalence in lambs only. The time lambs spend in lairage and their bodyweight may be predisposing factors for ecchymosis before slaughter and warrant further investigation. Implications The interaction of size and weight extremeness appeared to predispose lambs to developing ecchymosis at slaughter. Farm of origin was another identified risk factor (management group). Whether it was size and extremeness influencing body composition or other mechanisms involved in vascular integrity, is not known. Further research is required to identify these mechanisms so as to establish breeding and management guidelines that will decrease the likelihood and cost of ecchymosis in lambs. Ecchymosis remains poorly understood, but fractured capillaries indicate a weakness in vascular tissue. Given the present study included over 12000 observations in 7 days, ecchymosis in lambs could be used as a model to study vascular weakness in humans.

Livestock Handling at the Abattoir: Effects on Welfare and Meat Quality

Low-stress handling that uses behavioral principles can help reduce bruises and improve meat quality in cattle, pigs, and sheep. Short-term stressors before stunning, such as electric prod use or jamming in the race, may increase Pale, Soft, Exudative meat in pork and reduce tenderness in beef. Longer term stresses may increase Dark, Firm and Dry meat. Continuous assessment of livestock handling practices is recommended. Handlers should be trained to move small groups of livestock. They also need to understand behavioral principles. The most important ones are flight zone and the point of balance at the shoulder. Calm animals will be easier to handle. Simple economical improvements in races and lairages can help facilitate animal movement through the facility. The movement of livestock can often be improved by (1) installation of a light at a dark stun box entrance, (2) moving lamps to reduce reflections on shiny metal, (3) installation of solid shields to prevent incoming animals from seeing people on moving conveyors, (4) redirection of air flow at the stun box entrance, or (5) in elevated conveyor restrainers, use of a false floor to prevent entering animals from seeing the “visual cliff ” effect. Continuous assessment and supervision are required to maintain low-stress handling methods.

Animal welfare in the U.S. slaughter industry-a focus on fed cattle

Animal welfare within the U.S. slaughter industry continues to prevail as one of the top priorities for livestock producers, businesses, and consumers alike. There are federal regulations that enforce the humane transport, handling, and slaughter of cattle. The journey that cattle must make to the slaughter facility is comprised of many environmental and human factors that can positively or negatively affect animal welfare. Cattle may be exposed to multiple stressors, such as noise, unfamiliar animals and humans, temperature extremes, temporary food/water deprivation, variable transport distances and experiences, and new pen conditions. The animal caretakers involved in these processes attempt to minimize stress and discomfort for the animals, but research is needed to focus on the gaps in knowledge and to support the implementation of strategies known to enhance the human-animal interactions that occur from farm to slaughter. This literature review will provide a summary of fed cattle welfare topics, research, and industry tools that span across the beef animal's journey from the farm/feedlot through the slaughter process. In addition, areas that have had little research focus are identified to highlight the need for future work and development of industry tools. Some of these topics include examining trailer design, the use of trailer slats during weather extremes, the welfare aspects of cattle destined for salvage slaughter, multiple preslaughter factors and interactions, abnormal mobility and nonambulatory cattle, lairage environmental conditions, new stunning methods, and the impact of a well-trained, motivated, and stable workforce on cattle and people welfare. The authors conducted a survey at the 2019 North American Meat Institute Animal Care and Handling Conference, which comprised of stakeholders within the meat packing industry, packing plant employees, and food company employees, educators, and auditors. The survey responses identified training/education and communication as areas of need in animal welfare, whereas the majority of survey responses focused on the aspects of the human-animal interaction as the top challenges for the industry. By continuously identifying, measuring, monitoring, and managing animal welfare challenges within the beef cattle slaughter industry, prioritization and execution of programs and training that improve the welfare of cattle can be achieved as animals move through this final stage of the meat production system.

Effects of Slaughter Knife Sharpness on Blood Biochemical and Electroencephalogram Changes in Cattle

Simple Summary

The role of knife sharpness in slaughtering animals, from the perspective of animal welfare, is likely subconsciously ignored by the masses involved in the abattoir industry. This might be due to the difficulty in objectively quantifying the sharpness of a knife. Furthermore, a small incremental improvement in sharpness might result in a huge productivity trade-off at the abattoir when the slaughterman needs to dedicate more time to sharpen their blades in between slaughters. This study attempts to assess the effects of sharp and commercial sharp knives on the pain and stress levels of animals. After objectively measuring the sharpness of knives with an ANAGO^® sharpness tester, animals were slaughtered with commercial sharp and sharp knives. The results obtained from blood and brain activities related to pain and stress revealed that the two sharpness levels had different effects on the stress and pain level in animals, suggesting that the sharp knife produced the least amount of stress and pain in animals compared to those slaughtered using a commercial sharp knife.

Abstract

The sharpness of the knife used for slaughter is of the utmost importance from an animal welfare perspective. The quantification of knife sharpness is almost impossible in abattoirs. The sharpness of the knife blade used to slaughter an animal, as well as its effects on animals’ pain and stress levels, is an important area of investigation that needs to be addressed. The objective of this study was to evaluate the effects of knife sharpness on blood biochemical parameters, plasma catecholamines, and electroencephalographic (EEG) responses. Twenty Brahman crossbred steers were either subjected to slaughter with a sharp knife (n = 10) or a commercial sharp knife (n = 10); knife sharpness was measured with the ANAGO^® sharpness tester. There was significant increase in adrenaline (p < 0.0001), glucose (p = 0.0167), creatinine kinase (p = 0.0123) and lactate dehydrogenase (p = 0.0151) at post-slaughter compared to pre-slaughter in commercial sharp knife group than in thesharp knife group. A significant increase was observed in the median frequency (p < 0.0001) and total power (p < 0.0001) of the EEG, the parameters for pain and stress, in the animals slaughtered with the commercial sharp knife than those slaughtered with the sharp knife. Thus, EEG results also supported the hormonal and biochemical results. From the results, it is concluded that animals slaughtered with a sharp knife experienced the least amount of pain and stress compared to those slaughtered with a commercial sharp knife.

Brain Tissue Pulmonary Embolism Due to Severe Blunt Force Head Trauma in a Dog

A 9-week-old male puppy was submitted for necropsy examination after a reported history of developing acute melaena and vomiting blood before death. Grossly, the animal had multiple skull fractures, mostly affecting the occipital region and cranial floor, associated with extensive regions of subcutaneous, periosteal and subdural haemorrhages, as well as petechial haemorrhages within the right middle and caudal lung lobes. Histopathology of the brain revealed multifocal acute meningeal and parenchymal haemorrhage with laceration of the cerebellar folia. In the lung, multiple small- and medium-calibre branches of pulmonary arteries were occluded by aggregates of brain tissue, which exhibited weak immunoreactivity for glial fibrillary acidic protein and strong labelling for neuron specific enolase on immunohistochemistry. These findings were consistent with brain tissue pulmonary embolism, an infrequent phenomenon following severe head trauma. To the best of the authors' knowledge, this is the first reported case of canine brain tissue pulmonary embolism.

Effect of Indigenous Slaughter Methods on the Behavioural Response, Bleeding Efficiency and Cardiac Arrest of Nguni Goats

Simple Summary

Resource-limited farmers under communal farming environments slaughter goats for cultural beliefs and meat consumption using indigenous slaughter methods. These methods include transverse neck incision (TNI), piercing with a short spear on the suprasternal notch targeting the heart (SNP), and piercing with a short spear under-shoulder-blade chest-floor point-of-elbow (CFP) targeting the heart to induce insensibility and death. Unsatisfied animal welfare institutes consider these slaughter methods as cruel because goats are slaughtered while sensible; therefore, experiencing pain and suffering before death. In this study, we slaughtered castrates using the above-mentioned methods and collected behavioural responses before slaughter and while bleeding, the total blood expelled during bleeding, the time it took for the blood to be expelled, the time it took the goats to lose sensibility, and time to lose heartbeat. We found that goats slaughtered using CFP lost sensibility faster. We concluded that goats slaughtered using the CFP method experienced less pain and suffering during slaughter and died faster.

Abstract

Resource-limited farmers slaughter goats without stunning. The objective of the current study was to assess the influence of indigenous slaughter methods used by resource-limited households on slaughter stress-related behaviour, bleeding efficiency, and time to post-slaughter trauma of goats. Thirty clinically healthy castrated Nguni goats aged between 15 to 18 months old with body condition score of three were randomly assigned to three non-stunning informal slaughter methods, (1) transverse neck incision (TNI); (2) suprasternal notch piercing in the direction of the heart (SNP); and (3) under-shoulder-blade chest-floor point-of-elbow (CFP) sticking in the direction of the heart. Ten goats were slaughtered using each method. Slaughter method had no effect (p < 0.05) on stress-related behaviour. Rate of bleeding efficiency was highest (p < 0.05) for SNP slaughtered goats. Time to lose sensibility was lowest (p < 0.05) for goats slaughtered using the CFP (55 s) when compared to SNP (68 s) and TNI (75 s) slaughter methods. Time to post-slaughter trauma was highest (p < 0.05) for SNP (247 s) and lowest for TNI (195 s). These findings suggest that goats slaughtered with SNP experienced rapid death when compared to TNI and SNP slaughter methods. It was concluded that the SNP slaughter method is the most effective slaughter technique because it is associated with higher bleeding efficiency and lower time to lose sensibility before death.

The Physiological Aspects, Technique and Monitoring of Slaughter Procedures and their Effects on Meat Quality – A Review

The aim of the paper was a review of the scientific achievements in physiological stunning and slaughtering mechanisms, control methods of consciousness and their effect on meat quality. Special attention was paid to neurophysiological phenomena that accompany the process of depriving consciousness before animal deaths using mechanical, electrical and gas stunning methods. These mechanisms are associated with cerebral hypoxia or ischemia or depolarization, acidification and the destruction of cerebral neurons. Such effects can be caused by shock waves, bleeding, electric fields, reduction or arrest of the circulation of blood in the brain, high CO2 level or low O2 level in inhaled air or by the mechanical damage of neurons. Some of the stunning methods cause immediate and some gradual consciousness loss. An important factor in the animals’ slaughtering process is the estimation of their consciousness level before bleeding. The indicators of consciousness during mechanical, electrical and gas stunning are discussed within this paper. It is pointed out that at least 2 indicators should be used when estimating animals’ consciousness after stunning, e.g. phonic and clonic limb movements and lack of breathing. Ten indicators to control the consciousness were described. The effect of stunning on meat quality is also discussed. It was found that the impact of this process on the quality is not clear. However, the prevailing view is that electric stunning causes effusions and blood haemorrhages in meat. Whereas gas stunning with a CO2 mixture diminishes the risk of PSE meat. Despite numerous scientific research on the slaughter process there is still deficiency in knowledge on losing consciousness mechanisms and feeling pain. It might be useful to extend the knowledge concerning neurotransmitters and use of magnetic resonance in future studies.

Halal Criteria Versus Conventional Slaughter Technology

Simple Summary

While legislation can be implemented, amended or revoked according to the requirements of a given time period, this is very difficult or even impossible with religious laws due to their sanctity. Faithful Muslims believe in the sanctity of the main Islamic laws (Quran and Hadiths) because, according to them, they originated from heavenly and divine sources (God and his prophet Muhammad). The technological means of the meat industry are constantly evolving to meet the requirements of the present day and may sometimes be inconsistent with ancient religious norms. Recently, greater attention has been paid to the halal meat industry due to the increased size of the Muslim community in Europe; the opportunity of producing and exporting meat and meat products to the Islamic world; and the ease of delivery, trade and transport. The purpose of this study is to highlight some of the controversial aspects of modern technological means and the principles of the halal meat industry. The controversial aspects that this study deals with include the practices of modern slaughter (animal fasting prior to slaughter, the animal’s body position during slaughter, the location of the incision during bleeding, stunning and mechanical slaughtering). This review may contribute to raising awareness among producers and consumers and to finding means of technology compatible with halal criteria.

Abstract

The halal meat industry is today a reality in many regions of the world, including the European Union. The main religious laws in the area of halal meat production were legislated in ancient times and may be unchangeable due to their sanctity perceived by faithful Muslims, while the modern technology used in the meat industry is constantly evolving and being updated. The objective of this study is to highlight the points of controversy between the principles of halal and the technological means currently used in the meat industry. Modern slaughter practices, including animal fasting prior to slaughter, animal body position, the location of the incision during slaughter, stunning and mechanical slaughter, are reviewed. The purpose of preslaughter feed availability according to halal criteria could be to ensure greater welfare for animals, though feed withdrawal is necessary today. Although there is no clear unified opinion among the Islamic sects, reversible stunning of animals is generally accepted. A neck cut at a higher position than the conventional low cut in cattle may reduce the compromise in welfare (the onset of unconsciousness), minimise false aneurysm and be compatible with halal criteria. This study may contribute towards consideration being given to technology that is not in conflict with the religious legislation, while at the same time meeting the requirements of the modern meat industry.

Animal-Based Welfare Assessment of Cattle and Water Buffalo in Bangladeshi Slaughterhouses

This study quantified the welfare of 423 cattle and water buffalo in four Bangladeshi slaughterhouses to identify facility and species-specific factors that influence welfare. The majority of animals arrived at the slaughterhouse with injuries, signs of dehydration and oculo-nasal discharge. During slaughter, buffalo experienced more stabbing at the throat (21%), compared to local cattle (10%, P = 0.011), and significantly more cuts to the neck during slaughter (5.1 ± 1) than Hariana (3.9 ± 1) or local cattle (3.6 ± 1.1; P < 0.001). These results indicated that welfare compromise is common to all species, but that the risk to buffalo was greater. Partial severing of carotid arteries was common and affected time to unconsciousness. There was a statistical interaction between facility and species on the time taken for animals to reach unconsciousness, suggesting that welfare within a location could be improved; however, animal welfare was compromised at all facilities. Immediate welfare improvements could be made by training for effective halal slaughter, and future welfare improvements could be gained by improved facility infrastructure for restraint and halal approved pre-slaughter stunning.

Stress Effects on Meat Quality: A Mechanistic Perspective

Stress inevitably occurs from the farm to abattoir in modern livestock husbandry. The effects of stress on the behavioral and physiological status and ultimate meat quality have been well documented. However, reports on the mechanism of stress effects on physiological and biochemical changes and their consequent effects on meat quality attributes have been somewhat disjointed and limited. Furthermore, the causes of variability in meat quality traits among different animal species, muscle fibers within an animal, and even positions within a piece of meat in response to stress are still not entirely clear. This review 1st summarizes the primary stress factors, including heat stress, preslaughter handling stress, oxidative stress, and other stress factors affecting animal welfare; carcass quality; and eating quality. This review further delineates potential stress-induced pathways or mediators, including AMP-activated protein kinase-mediated energy metabolism, crosstalk among calcium signaling pathways and reactive oxygen species, protein modification, apoptosis, calpain and cathepsin proteolytic systems, and heat shock proteins that exert effects that cause biochemical changes during the early postmortem period and affect the subsequent meat quality. To obtain meat of high quality, further studies are needed to unravel the intricate mechanisms involving the aforementioned signaling pathways or mediators and their crosstalk.

CT venography and pathological characterization of crus haemorrhage in Pekin ducks

The crus haemorrhage is one of the main causes of carcass defects in Pekin duck processing houses. However, its pathologic features are currently unclear. In order to examine the injury to the hind limb veins and illustrate the pathologic characteristics of crus haemorrhage in Pekin ducks, a total of 68 Pekin ducks with crus haemorrhage (test group) and 10 unaffected ducks (control group) were collected in this study. Five ducks randomly selected from each group were examined by computed tomographic venography with 2.0 mm thickness, 120 kVp, and 90 mA. Pathological changes were observed macroscopically, and under a microscope and electron microscope. The computed tomographic venography results showed no differences in the main hind limb veins between Pekin ducks with crus haemorrhage and the control. Macroscopic results demonstrated that the haemorrhage only occurred in crural muscles, most frequently in musculus gastrocnemius and musculus tibialis cranialis. In severe cases, muscular rupture and multiple intermuscular blood clots could be observed. Histological analysis showed rupture of myofibers and massive red blood cells between muscle bundles. Besides, infiltration of connective tissues and inflammatory lesions could be seen. However, no differences were observed in other organs between these two groups. The main ultrastructural characteristics were myofibrillar rupture and split, accompanied by mitochondrial membrane disintegration and vacuolization. All these results indicate that the haemorrhage in crus is a focal myopathy with the characteristics of bleeding, rupture, and inflammatory lesions. Research highlights CTV was a feasible method to evaluate the hind limb veins in Pekin ducks. The focal myopathy presented here only affected crural muscles. The focal myopathy was characterized by bleeding, rupture and inflammatory lesions.

Determination of Shelf Life Model of Pork Cutlet and Pork Lard during Accelerated Storage Conditions

This study was carried out to establish shelf life for pork cutlet of ground meat and pork lard by using various quality indicators and to understand how quality changes in these products are accelerated by temperature. The samples were selected and purchased from markets in Korea, and the chosen quality indicators were total aerobic counts and coliform group in microbiological analyses, thiobarbituric acid reactive substances assay, volatile basic nitrogen, pH, acid value, and peroxide value in physical chemical analyses, and sensory evaluation. The pork cutlet samples were stored at -18℃, -6℃, and -1℃, whereas pork lard samples were stored at 10℃, 25℃, 35℃, and 45℃. These temperature conditions were set to real distribution conditions. The samples were then analyzed using various models including of reaction orders, arrhenius equation, and Q10 value. The quality limits for each sample were calculated, and shelf life was estimated. The results of this experiment highlighted the importance of temperature control during the distribution process of these products and revealed that temperature is a useful parameter for the establishment of a basic database for shelf life.

Halal slaughtering, welfare, and empathy in farm animals: a review

Pre-slaughter and slaughter stressors are considered major concerns in animal welfare. Halal slaughtering method is considered one of the slaughtering stressors in livestock. This method seems to cause fear followed by stress in animals mainly due to inhuman handling. In this review, empathy and animal welfare are discussed in light of Islamic sharia and has further linked with animal's physiology and behavioral responses during slaughtering. Islam as a religion forbids slaughtering an animal in front of another animal as through optic, olfactory, and cochlear senses animals can perceive the stress state of conspecifics. This suggests and strengthens the hypothesis that animals being slaughtered in front of each other may produce stress in them. This argument further leads to a claim that animals can experience empathy of each other through olfaction of semiochemicals (stress pheromones) emitted from animals slaughtered in the stressful condition that can be detected by other animals in abattoirs. Hence, research is needed to find out these specific stress pheromones and legislation needs to be adopted in slaughterhouses to isolate the areas of butchery from slaughtering lines to ensure proper guidelines of Halal slaughtering in slaughterhouses.

The Use of a Mechanical Non-Penetrating Captive Bolt Device for the Euthanasia of Neonate Lambs

A non-penetrating captive bolt device, powered by a 1-grain 0.22″ cartridge delivering a calculated kinetic energy of 47 Joules was tested as a euthanasia method on 200 neonate lambs (Ovis aries) of 4.464 kg (SD (Standard deviation) ± 1.056) mean dead weight, to assess effectiveness and shot position. Every lamb (n = 200) was effectively stunned when the weapon was applied powered by a brown, 1-grain cartridge but 10/200 (5%) of the lambs displayed rhythmic or agonal breathing and were subsequently euthanased using euthatal (Merial, UK, GTIN: 03661103015550). Evaluation of the method was conducted using behavioural indicators of brain dysfunction followed by post-mortem examination of the heads. A second trial was conducted using a higher velocity 1.25-grain cartridge and a specific shot position on 48 lambs (mean dead weight = 6.21 kg, SD ± 1.24) averaging 5 days old. One hundred percent of the lambs in the second trial were immediately stun-killed. Given this complete kill rate and the sample size of the study, the study provides a statistical 95% confidence interval of 92.6% to 100%. The use of the Accles & Shelvoke “CASH“ Small Animal Tool (Birmingham, UK) can therefore be recommended for the euthanasia of neonate lambs with a 1.25-grain cartridge and a specific shooting position.

Energy loss and impact of various stunning devices used for the slaughtering of water buffaloes

Stock management of the Swiss water buffalo livestock results in the slaughtering of about 350 animals per year. As the stunning of water buffaloes still is an unresolved issue, we investigated the terminal ballistics of currently used perforating stunning devices. Cartridge fired captive bolt devices, handguns and a bullet casing gun were tested in a shooting steep by firing on bisected heads, forehead plates and soap blocks. Energy loss of captive bolts confirmed their inadequacy when used for heavy water buffaloes, notably adult males. As for the free projectiles, ballistics revealed that beyond the impact energy, bullet deformation has a strong impact on the outcome. Light 9mm Luger or .38 Spl bullets as well as large deformable .44 Rem. Magnum bullets should be avoided in favor of heavier .357 Magnum deformation ammunition. These data have been translated into the development of a new stunning device for water buffaloes meeting both animal welfare and occupational safety requirements.

Farm to abattoir conditions, animal factors and their subsequent effects on cattle behavioural responses and beef quality - A review

The current review seeks to highlight the concerns that have been raised on pre-slaughter stress, contributing factors and its consequent effects on cattle behavioural responses and the quality of beef; inter-linking the activities involved from birth to slaughter. Such information is crucial in light of the consumer concerns on overall animal welfare, quality of meat and food security. Slaughter animals are exposed to different conditions during production and transportation to abattoirs on a daily basis. However; the majority of studies that have been done previously singled out different environments in the meat production chain, while conclusions have been made that the welfare of slaughter animals and the quality of meat harvested from them is dependent on the whole chain. Behaviour is a critical component used to evaluate the animals' wellbeing and it has been reported to have an effect on product quality. Apart from the influence of on-farm, transportation and abattoir conditions, the genetic background of the animal also affects how it perceives and responds to certain encounters. Stress activates the animals' hypothalamic-pituitary-adrenal activity, triggering release of various stress hormones such as catecholamines and cortisol, thus glycogen depletion prior slaughter, elevated ultimate pH and poor muscle-meat conversion. Pre-slaughter stress sometimes results to cattle attaining bruises, resulting to the affected parts of the carcass being trimmed and condemned for human consumption, downgrading of the carcass and thus profit losses.

Efficiency of low versus high airline pressure in stunning cattle with a pneumatically powered penetrating captive bolt gun

The efficiency of stunning cattle was assessed in 443 animals (304 pure Zebu and 139 crossbred cattle), being mainly mature bulls and cows. Cattle were stunned using a Jarvis pneumatically powered penetrating captive bolt gun operating with low (160-175psi, N=82) and high (190psi, N=363) airline pressure, which was within the manufactures specifications. Signs of brain function and the position of the shots on the heads were recorded after stunning. Velocity of the captive bolt and its physical parameters were calculated. Cattle shot with low pressures showed more rhythmic respiration (27 vs. 8%, P<0.001), less tongue protrusion (4 vs. 12%, P=0.03) and less masseter relaxation (22 vs. 48%, P<0.001). There was an increased frequency of shots in the ideal position when cattle were shot with the low compared to high airline pressures (15.3 vs. 3.1%). Bolt velocity and its physical parameters were significantly (P<0.01) higher when using high pressure. Airline pressures below 190psi are inappropriate when shooting adult Zebu beef cattle with pneumatically powered penetrating captive bolt guns.

Assessment of the meat quality of lamb M. longissimus thoracis et lumborum and M. triceps brachii following three different Halal slaughter procedures

A total of fifteen male and fifteen female lambs were allocated to three groups of ten animals and subjected to: traditional Halal slaughter without stunning (TNS); slaughter following electric head-only stunning (EHOS) or; post-cut electric head-only stun (PCEHOS) and their meat quality was determined. Instrumental and sensory analyses were carried out on two muscles; M. longissimus thoracis et lumborum (LTL) and M. triceps brachii (TB). Additionally, the effects of sex and muscle type were also assessed. No differences were found among slaughter methods for pH, drip loss and shear force. TB had a higher pHu and was more tender than LTL. Muscles from EHOS and PCEHOS lambs discoloured more quickly than TNS muscles. There were no differences in the measured sensory attributes, with the exception of EHOS meat being tougher than PCEHOS and TNS meat. This study showed that the three slaughter methods had no substantial effect on lamb meat quality.

Study on the effects of electrical stunning parameters for broilers on biochemical and histological markers of stress and meat quality

This study was designed to investigate physicochemical (pH, peroxides) and histological parameters (glycogen reserve, muscle damages), as pre-slaughter stress markers and quality meat evaluators. Ross commercial broilers was processed, either without stunning (NS Lot), or by combining two current levels of 200 mA, 67 V (HV Lot), and 200 mA, 53 V (MV Lot); with two frequencies of 1000 Hz and 800 Hz, using sinusoidal alternating current. The use of high frequency (800 and 1000 Hz) induced the fastest pH decline, already at 3 h postmortem, in Pectoralis major and Quadriceps femoris of MV and HV Lot carcasses (P < 0.05). Moreover HV carcasses showed a lesser production of superoxide free radicals than the NS Lot and MV Lot carcasses (P < 0.05). Changes in the glycogen reserve and the histological muscle damages did not show significant differences in the analysed Lots. The incidence of individual carcass defects, sufficient to cause downgrading or rejection was generally low in each Lot. To assess animal welfare and quality poultry meat the pH monitoring and measurement of superoxide radical production, as additional and feasible parameters, might be markers easier to use in practice at abattoir.

Characterization of hemorrhages in the ham topsides and tenderloins of slaughter pigs

The aim of the study was to characterize the different types of muscle hemorrhages in the ham and tenderloin of CO₂-stunned slaughter pigs. The distinct types of hemorrhages were characterized according to their distribution and size. The hemorrhages in the ham were multiple, pinpoint hemorrhages predominantly distributed in the caudal part of the muscle. The hemorrhages in the tenderloin were single and circular, located either at the tip or the head. Histologically, three distinct types of hemorrhages were observed. Type 1, which was peracute (<4h old), and present in both the ham and the tenderloin. Type 2, which was acute (>4h old), and restricted to the ham. Type 3 contained bone marrow and cartilage, was peracute (< 4h old) and restricted to the tenderloin.

Assessment of Welfare Issues During Traditional Slaughter of Goats in Pretoria, South Africa

Goats are traditionally slaughtered to celebrate marriages and births, venerate ancestors, address personal problems, or perform a ritual during funerals. The objective of this study was to assess nonhuman animal welfare issues associated with the traditional slaughter of goats in and around Pretoria, South Africa. Participatory research methods were used to interview 105 respondents. Four of those interviewed were visited to observe the slaughter process. The most common method of transport was a vehicle (47%), followed by transport on foot (30%). The distance traveled (68%) was usually less than 10 km, and in all cases, it was less than 50 km. The most common (57%) method of restraining goats during transport was tying all 4 legs together. During slaughter, assistants held the head and legs of the goat (55%). Prior to slaughter, the majority of goats were tied under a tree (66%). In total, 97% of the goats were slaughtered within 24 hr, and no stunning was performed. In this study, animal welfare problems were widespread. Research should be undertaken to find practical ways to address animal welfare issues during traditional slaughter.

Efficient halal bleeding, animal handling, and welfare: A holistic approach for meat quality

Traditional halal slaughter and other forms of religious slaughter are still an issue of debate. Opposing arguments related to pre-slaughter handling, stress and pain associated with restraint, whether the incision is painful or not, and the onset of unconsciousness have been put forward, but no consensus has been achieved. There is a need to strike a balance between halal bleeding in the light of science and animal welfare. There is a paucity of scientific data with respect to animal welfare, particularly the use of restraining devices, animal handling, and efficient halal bleeding. However, this review found that competent handling of animals, proper use of restraining devices, and the efficient bleeding process that follows halal slaughter maintains meat eating quality. In conclusion, halal bleeding, when carried out in accordance with recommended animal welfare procedures, will not only maintain the quality and wholesomeness of meat but could also potentially reduce suffering and pain. Maintained meat quality increases consumer satisfaction and food safety.

Bleeding Efficiency, Microbiological Quality and Oxidative Stability of Meat from Goats Subjected to Slaughter without Stunning in Comparison with Different Methods of Pre-Slaughter Electrical Stunning

The influence of pre-slaughter electrical stunning techniques and slaughter without stunning on bleeding efficiency and shelf life of chevon during a 14 d postmortem aging were assessed. Thirty two Boer crossbred bucks were randomly assigned to four slaughtering techniques viz slaughter without stunning (SWS), low frequency head-only electrical stunning (LFHO; 1 A for 3 s at a frequency of 50 Hz), low frequency head-to-back electrical stunning (LFHB; 1 A for 3 s at a frequency of 50 Hz) and high frequency head-to-back electrical stunning (HFHB; 1 A for 3 s at a frequency of 850 Hz). The SWS, LFHO and HFHB goats had higher (p<0.05) blood loss and lower residual hemoglobin in muscle compared to LFHB. The LFHB meat had higher (p<0.05) TBARS value than other treatments on d 7 and 14 d postmortem. Slaughtering methods had no effect on protein oxidation. Higher bacterial counts were observed in LFHB meat compared to those from SWS, LFHO and HFHB after 3 d postmortem. Results indicate that the low bleed-out in LFHB lowered the lipid oxidative stability and microbiological quality of chevon during aging.

Consciousness, unconsciousness and death in the context of slaughter. Part I. Neurobiological mechanisms underlying stunning and killing

This review describes the neurobiological mechanisms that are relevant for the stunning and killing process of animals in the abattoir. The mechanisms underlying the loss of consciousness depend on the technique used: mechanical, electrical or gas stunning. Direct exsanguination (without prior stun) causes also a loss of consciousness before inducing death. The underlying mechanisms may involve cerebral anoxia or ischemia, or the depolarisation, acidification and/or the destruction of brain neurons. These effects may be caused by shock waves, electrical fields, the reduction or arrest of the cerebral blood circulation, increased levels of CO2 or low levels of O2 in the inhaled air, or the mechanical destruction of neurons. The targeted brain structures are the reticular formation, the ascending reticular activating system or thalamus, or the cerebral hemispheres in a general manner. Some of the techniques, when properly used, induce an immediate loss of consciousness; other techniques a progressive loss of consciousness.

Effects of transport distance, lairage time and stunning efficiency on cortisol, glucose, HSPA1A and how they relate with meat quality in cattle

This study determined the effects of distance travelled, lairage duration and number of stunning shots on the plasma levels of bovine heat shock protein 70 (HSPA1A), cortisol (CORT) and glucose (GLU) and their relationship with beef quality. There were positive correlations among HSPA1A, GLU, CORT, a*, b* and the HUE angle. Animals that were stunned more than once had the highest HSPA1A (13.61±2.874ng/ml) and CORT (109.36±8.373nmol/L) levels. Animals that travelled for 200<400km had lower HSPA1A expression (8.29±2.026ng/ml) than those that were transported for 400<800km (12.11±2.548ng/ml) and <200km (17.32±2.362ng/ml). Lairage duration affected (P<0.05) the expression of HSPA1A, GLU and CORT levels. Animals stunned more than once had elevated CORT and HSPA1A levels. HSPA1A, CORT and GLU were related to beef quality. Stunning of animals more than once increased the levels of blood CORT and HSPA1A.

Magnetic resonance imaging and computer tomography of brain lesions in water buffaloes and cattle stunned with handguns or captive bolts

Owing to the demand for genuine mozzarella, some 330 water buffaloes are being slaughtered every year in Switzerland albeit a stunning procedure meeting animal welfare and occupational safety requirements remains to be established. To provide a basis for improvements, we sized anatomical specifics in water buffaloes and cattle and we assessed brain lesions after stunning with captive bolts or handguns by diagnostic imaging. In water buffaloes and cattle, the median distance from the frontal skin surface to the inner bone table was 74.0mm (56.0-100.0mm) vs 36.6mm (29.3-44.3mm) and from skin to the thalamus 144.8mm (117.1-172.0mm) vs 102.0 (101.0-121.0mm), respectively. Consequently, customary captive bolt stunners may be inadequate. Free bullets are potentially suitable for stunning buffaloes but involve occupational safety hazards. The results of the present study shall be used to develop a device allowing effective and safe stunning of water buffaloes.

Validation of behavioural indicators used to assess unconsciousness in sheep

The validity of behavioural indicators to assess unconsciousness under different slaughter conditions is under (inter)national debate. The aim of this study was to validate eyelid-, withdrawal-, threat reflex and rhythmic breathing as indicators to assess unconsciousness in sheep. Sheep were monitored during repeated propofol anaesthesia (n=12) and during non-stunned slaughter (n=22). Changes in the EEG and behavioural indices of consciousness/unconsciousness were assessed and compared in sheep. Threat reflex and rhythmic breathing correlated with EEG activity during propofol anaesthesia whilst absence of non-rhythmic breathing or threat reflex indicated unconsciousness. None of the behavioural indicators correlated with EEG activity during non-stunned slaughter. Absence of regular breathing and eyelid reflex was observed 00:27±00:12 min and 00:59±00:17 min (mean±SD) respectively after animals were considered unconscious, indicating that absence of regular breathing and eyelid reflex are distinctly conservative indicators of unconsciousness during non-stunned slaughter in sheep.

The effects of pre-slaughter restraint (for the purpose of cattle identification) on post-slaughter responses and carcass quality following the electrical stun/killing of cattle in a Jarvis Beef stunner

This study compared normal post-Jarvis stun/kill responses and carcass quality with those occurring when crush restraint was not used during pre-slaughter. The carcasses of 1065 cattle slaughtered during one week at a commercial abattoir were evaluated for quality. The post-stun/kill responses of 788 of these animals were also assessed. An additional study of data from the carcasses of 6061 cattle was further evaluated for quality findings. A significant reduction in post-stun/kill limb movement, muscle tone and the expression of brainstem functions was recorded when restraint was not used. Abolishing crush restraint pre-slaughter also produced a significant reduction in the incidence of blood splash. In addition, the study also showed that animal identification post-slaughter could be successfully implemented with no negative consequences to food safety or traceability. It is suggested that abolishing the use of pre-slaughter crush restraint of cattle would enhance animal welfare and operator safety in plants whether electrical, or mechanical stunning was employed.
