Genetic parameters associated with meat quality of Nellore cattle at different anatomical points of longissimus: Brazilian standards

Lambs supplemented with Amazonian oilseed co-products: Meat quality and fatty acid profile

The Amazon has a wide variety of oilseeds that generate a huge amount of co-products with potential for use in animal nutrition. The objective was to use alternative resources (oilseed cakes) in the feeding of lambs to assign a sustainable destination to this biomass, and evaluate its influence on the quality and fatty acid (FA) profile of the meat. Twenty-four lambs, male, castrated, crossbred Dorper × Santa Inês, weighing 30 ± 1.3 kg of initial body weight, were distributed in a completely randomized design in 4 treatments (diets) with six replications (animals). The control diet (Control) contained corn and soybean meal as main ingredients, which were partially replaced in the other diets by cupuassu cake diet (Cup), palm kernel cake diet (Palm) and tucuma cake diet (Tuc). The inclusion of Amazon cakes influences the lipid (P = 0.02) and protein (P < 0.01) composition of meat (longissimus lumborum); reduces cooking losses (P < 0.01); influences the colors (L, a, b), chroma, and Hue Angle (P < 0.01); promotes changes in total FA composition and FA profile (P < 0.05); reduces hypocholesterolemic FA (h) (P = 0.01), but does not influence hypercholesterolemic (H) and indices h:H, AI and TI (P > 0.05). The inclusion of oilseed cakes influences the chemical composition, physical parameters, composition and fatty acid profile of the meat, but does not influence the indicators of atherogenicity, thrombogenicity and cholesterolemia.

Weighted genomic prediction for growth and carcass-related traits in Nelore cattle

This study aimed to assess the impact of differential weighting in genomic regions harboring candidate causal loci on the genomic prediction accuracy and dispersion for growth and carcass-related traits in Nelore cattle. The dataset contained 168 793 phenotypic records for adjusted weight at 450 days of age (W450), 83 624 for rib eye area (REA), 24 480 for marbling (MAR) and 82 981 for subcutaneous backfat thickness (BFT) and rump fat thickness (RFT). The pedigree harbored information from 244 254 animals born between 1977 and 2016, including 6283 sires and 50 742 dams. Animals (n = 7769) were genotyped with the low-density panel (Clarifide® Nelore 3.0), and the genotypes were imputed to a panel containing 735 044 markers. A linear animal model was applied to estimate the genetic parameters and to perform the weighted single-step genome-wide association study (WssGWAS). A total of seven models for genomic prediction were evaluated combining the SNP weights obtained in the iterations of the WssGWAS and the candidate QTL. The heritability estimated for W450 (0.35) was moderate, and for carcass-related traits, the estimates were moderate for REA (0.27), MAR (0.28) and RFT (0.28), and low for BFT (0.18). The prediction accuracy for W450 incorporating reported QTL previously described in the literature along with different SNPs weights was like those described for the default ssGBLUP model. The use of the ssGWAS to weight the SNP effects displayed limited advantages for the REA prediction accuracy. Comparing the ssGBLUP with the BLUP model, a meaningful improvement in the prediction accuracy from 0.09 to 0.63 (700%) was observed for MAR. The highest prediction accuracy was obtained for BFT and RFT in all evaluated models. The application of information obtained from the WssGWAS is an alternative to reduce the genomic prediction dispersion for growth and carcass-related traits, except for MAR. Furthermore, the results obtained herein pointed out that is possible to improve the prediction accuracy and reduce the genomic prediction dispersion for growth and carcass-related traits in young animals.

Genetic parameters for frame size and carcass traits in Nellore cattle

Our study aimed to evaluate the frame size as a genetic selection criterion as well as the association of scores with carcass characteristics measured via ultrasound to the genetic improvement of carcass quality in Nellore cattle. The variance components were estimated using the restricted maximum likelihood method for the thoracic perimeter (TP), frame size score (FRAME), yearling weight (YW), visual scores of body structure (BS), muscularity (MUSC), and precocity (PREC). The carcass traits included loin eye area (REA), backfat thickness (BF), rump fat (FR), and intramuscular fat (IF). The estimated heritabilities ranged from moderate to high. The FRAME showed a positive genetic correlation with YW (0.82 ± 0.07), TP (0.58 ± 0.09), and BS score (0.62 ± 0.07), but it had a negative correlation with the MUSC and PREC visual scores (- 0.34 ± 0.09 and - 0.50 ± 0.08, respectively). The genetic correlation between FRAME and REA was positive (0.26 ± 0.09). However, FRAME presented a correlation close to zero with BF, RF, and IF. TP had a positive genetic correlation with body size traits such as YW (0.76 ± 0.05) and BS score (0.55 ± 0.08) and with muscularity traits such as REA (0.44 ± 0.01). Frame size has the potential to be used as a parameter in the selection of precocious beef cattle, but a study of its use is necessary to determine the ideal biotype for each production system.

Fortification of diets with omega-3 long-chain polyunsaturated fatty acids enhances feedlot performance, intramuscular fat content, fat melting point, and carcass characteristics of Tattykeel Australian White MARGRA lambs

Meat eating quality indices such as intramuscular fat content (IMF) and fat melting point (FMP) of the Longissimus thoracis et lumborum muscle and the feedlot performance, carcass traits, and commercial wholesale cuts of lot-fed Tattykeel Australian White (TAW) MARGRA lambs as a result of dietary fortification of the diet with omega-3 long-chain polyunsaturated fatty acids (n-3 LC-PUFA) were evaluated. A total of 75 TAW MARGRA lambs at 6 months of age with an average liveweight of 30 ± 1.2 kg were used. The lambs were randomly allocated to the following three dietary treatments of 25 lambs each in a 47-day feeding trial using a completely randomized experimental design: (1) control diet of hay plus pellets without omega-3 oil, (2) hay plus commercial whole grain pellets (MSM) without omega-3 oil, and (3) hay plus pellets fortified with omega-3 oil. It was hypothesized that dietary supplementation with omega-3 fortified pellets will improve feedlot performance, meat-eating quality indices of IMF, FMP, and carcass characteristics. Lot-fed lambs on the MSM whole grain had the highest feed intake of 1.69 kg/day, followed by the control at 1.57 kg/day and the lowest in the omega-3 diet at 1.01 kg/day (p = 0.0001). However, the omega-3 diet had the highest average daily gain of 230 g/head/day (p = 0.0001), indicating the greatest feed efficiency since it had the best growth response with minimal feed intake. Post-slaughter evaluation of the Longissimus thoracis et lumborum muscle revealed significant treatment variations in IMF (p = 0.0001), FMP (p = 0.0001), pH (p = 0.0380), and wholesale French rack primal cut (p = 0.0001). Strong correlations (p < 0.05) between liveweight, temperature, pH, FMP, and IMF were observed. Similarly, significant correlations between carcass characteristics of total saleable meat yield, lean trim, fat trims, bones, and leg shank were evident (p < 0.05). However, there were no treatment differences in the final liveweight, GR fat depth, hot standard carcass weight, or dressing percentage. The findings indicate that feedlot performance, meat-eating quality traits such as IMF and FMP, and commercial wholesale French rack cuts can be further improved during feedlot finishing of TAW MARGRA lambs through dietary supplementation with omega-3 oils, and hence the tested hypothesis of improved meat quality attributes is partially confirmed.

Small genetic variation affecting mRNA isoforms associated with marbling and meat color in beef cattle

The aim of this study was to identify mRNA isoforms and small genetic variants that may be affecting marbling and beef color in Nellore cattle. Longissimus thoracis muscle samples from 20 bulls with different phenotypes (out of 80 bulls set) for marbling (moderate (n = 10) and low (n = 10) groups) and beef color (desirable (n = 10) and undesirable (n = 9) group) traits were used to perform transcriptomic analysis using RNA sequencing. Fourteen and 15 mRNA isoforms were detected as differentially expressed (DE) (P-value ≤ 0.001) between divergent groups for marbling and meat color traits, respectively. Some of those DE mRNA isoforms have shown sites of splicing modified by small structural variants as single nucleotide variant (SNV), insertion, and/or deletion. Enrichment analysis identified metabolic pathways, such as O2/CO2 exchange in erythrocytes, tyrosine biosynthesis, and phenylalanine degradation. The results obtained suggest potential key regulatory genes associated with these economically important traits for the beef industry and for the consumer.

The influence of protected fat in supplements on the performance and carcass characteristics of Nellore beef bulls in tropical pasture

The finishing stages for uncastrated Nellore beef cattle on tropical pasture often produce high yielding carcasses with minimal fat cover. This study aimed to evaluate the performance and carcass characteristics of uncastrated Nellore beef bulls fed a diet containing rumen-protected fat during the rainy period for 210 days. Eighty Nellore beef bulls with 28 months of age, and an initial live weight of 416 kg ± 16 kg, were allocated into eight paddocks (7.0 ha), totaling 56 ha, at 10 animals/paddock, in a continuous-grazing system. The pasture characteristics, performance production, loin-eye area (cm²), subcutaneous fat thickness (mm), and rump fat thickness were evaluated. There was no effect (P > 0.05) on the average total weight gain (203.00 kg) and average daily gain (0.98 kg/day). On the other hand, the subcutaneous fat thickness and rump fat thickness were 42.8% and 49.5% greater, respectively, when the animals were fed a diet containing rumen-protected fat inclusion (P < 0.05). Supplementation with rumen-protected fat provided a thicker fat layer in the carcass of Nellore beef bulls grazing on tropical pasture during the rainy period.

Effect of inclusion levels of low-fat dried distillers grains in finishing diets on protein and energy intake and retention and estimation of protein and energy requirements of young Nellore bulls fed with high concentrate diets

The objective was to evaluate the effect of including low-fat dried distillers grains (DDG) in finishing diets on protein and energy intake and retention and to estimate the protein and energy requirement of young Nellore bulls. Thirty-five animals were used: baseline (n = 4), maintenance (n = 4), and ad libitum intake (n = 27). Ad libitum animals were divided into four groups: diets with the inclusion of DDG at the levels of 0, 150, 300, and 450 g/kg (dry matter basis). At the end of the experiment, all animals were slaughtered. There was a linear reduction with increasing DDG levels in the total digestible nutrients intake (p = 0.008), metabolizable energy (ME) intake (p < 0.010), in total retained energy (p = 0.065), and in heat production (p < 0.001). Metabolizable protein (MP) intake increased linearly (p < 0.010) but retained protein did not differ (p = 0.499). Daily net energy and ME requirement for maintenance were 75.9 and 122 kcal/kg^0.75 EBW, respectively. Daily MP for maintenance was 3.6 g/kg^0.75 shrunk body weight. DDG inclusion in finishing diets reduces energy intake and deposition, and we recommend the equations of this study to estimate the requirements of young Nellore bulls.

Tropical Beef: Is There an Axiomatic Basis to Define the Concept?

Cattle production in tropical regions has been estimated to account for just over half of cattle worldwide, yet it has not been demonstrated that sufficient similarities in the cattle exist to describe tropical cattle and, even less so, to characterize the meat from these animals. The aim of this review is to investigate the quality and nutrient composition of meat from cattle raised in the Tropics to determine if there is an axiomatic basis that would allow the definition of a concept of “tropical beef”. Tropical beef is the meat obtained from cattle raised in tropical environments, the population of which remains largely uncharacterized. Production systems in the Tropics are highly diverse but converge on the use of indigenous and Bos indicus breeds or Bos indicus-influenced crossbreeds under pasture feeding regimes. While some systems allow cattle to be slaughtered at ≤2 years of age, most often animals are ≥3 years. These production systems generally produce lean, low-yielding carcasses and tough (>46 N), lean (≤3.6% intramuscular fat) meat with a macronutrient composition otherwise similar to beef from animals raised elsewhere (72–74% moisture and 20–24% protein). Fatty acid profiles depend on the breed and production systems, while mineral content is influenced by the environment. Although lean and tough, tropical beef is highly acceptable to the consumers it serves, is culturally and traditionally relevant and, in many countries, contributes to food security. Consolidating the findings from animal and meat science studies in the Tropics has allowed the demonstration of an axiomatic basis defining “tropical beef” as a concept.
