Abstract
For many years, pig production has focused on maximizing performance by selecting for maximal muscle growth and feeding diets that allow the animals to express their genetic potential. However, it is unclear whether this selection for muscle deposition has affected the capacity of pigs to cope with by-product-based diets, which rely on fat as the primary energy source instead of starches and sugars. Therefore, an experiment was set up to investigate if different types of boars affect how their progeny cope with alternative ingredients in the diet, with a possible need for adapted breeding schemes. Two types of boars within the Piétrain sire line were used based on either a high or low estimated breeding value for daily feed intake (HFI: high feed intake, low feed intake). When their progeny reached 14 weeks of age, two dietary strategies were compared: a control (CON) vs a by-product-based diet high in fat and fiber (HFF). The CON diet was mainly based on cereals (corn, wheat, barley) and soybean meal. The HFF diet was formulated to contain the same net energy, CP and digestible amino acid levels without any cereals or soybean meal. In total 192 animals were included in the experiment (48 animals/type of boar/diet) and performance, digestibility, carcass and meat quality were compared. None of the parameters showed a significant interaction (P < 0.05) between the type of boar and diet, suggesting that shifting to diets that are less prone to feed-food competition is equally feasible in different types of pigs. Type of boar did affect performance, carcass quality and intramuscular fat content. HFI pigs showed higher daily feed intake (DFI) and daily gain (P < 0.001), with no significant difference in feed conversion ratio (P = 0.205), lower carcass quality (P < 0.001) and higher intramuscular fat content (P = 0.030). For both boar types, pigs fed the CON diet performed better, with a higher daily gain (P = 0.028), DFI (P = 0.011) and dressing yield (P = 0.009) and better digestibility (P < 0.001), but without differences in feed conversion ratio or meat quality. In conclusion, there was no indication that pigs differing in feed intake capacity cope differently with a high-fat, high-fiber diet based on by-products. Different types of pigs may cope well with diets that are less prone to feed-food competition.

Abstract
Carcass and pork traits have traditionally been considered of prime importance in pig breeding programmes. However, the changing conditions in modern farming, coupled with antimicrobial resistance issues, are raising the importance of health and robustness-related traits. Here, we explore the genetic architecture of carcass and pork traits and their relationship with immunity phenotypes in a commercial Duroc pig population. A total of nine traits related to fatness, lean content and meat pH were measured at slaughter (∼190 d of age) in 378 pigs previously phenotyped (∼70 d of age) for 36 immunity-related traits, including plasma concentrations of immunoglobulins, acute-phase proteins, leukocytes subpopulations and phagocytosis. Our study showed medium to high heritabilities and strong genetic correlations between fatness, lean content and meat pH at 24 h postmortem. Genetic correlations were found between carcass and pork traits and white blood cells. pH showed strong positive genetic correlations with leukocytes and eosinophils, and strong negative genetic correlations with haemoglobin, haematocrit and cytotoxic T cell proportion. In addition, genome-wide association studies (GWASs) pointed out four significantly associated genomic regions for lean meat percentages in different muscles, ham fat, backfat thickness, and semimembranosus pH at 24 h. The functional annotation of genes located in these regions reported a total of 14 candidate genes, with BGN, DPP10, LEPR, LEPROT, PDE4B and SLC6A8 being the strongest candidates. After performing an expression GWAS for the expression of these genes in muscle, two signals were detected in cis for the BGN and SLC6A8 genes. Our results indicate a genetic relationship between carcass fatness, lean content and meat pH with a variety of immunity-related traits that should be considered to improve immunocompetence without impairing production traits.

Abstract
Warner-Bratzler Shear Force (WBSF) is a quantitative measurement of meat toughness that has great impact on the consumer acceptability of meat. This study was conducted to evaluate growth performance, carcass and meat quality characteristics, and fatty acids profile of longissimus lumborum (LL) intramuscular fat (IMF) of pigs that are genetically divergent for WBSF. Based on WBSF values of the LL from a previous study, 12 immunocastrated male pigs selected from 96 pigs were divided into two groups with high WBSF (53.28 to 42.50 N) and low WBSF (37.27 to 27.79 N). Although high-WBSF pigs tended to have improved (P = 0.08) gain-to-feed ratio, overall performance was similar between WBSF groups. High-WBSF pigs also tended to have higher (P = 0.09) cooling loss and lean percentage as well as decreased (P = 0.08) 10th-rib backfat depth than low-WBSF pigs. Loins from high-WBSF pigs tended to have lower (P = 0.07) IMF content and higher (P = 0.09) cooking loss than low-WBSF pigs. Compared to low-WBSF pigs, IMF of the LL from high-WBSF pigs had lower (P = 0.05) percentage of oleic acid and tended to have a decreased (P = 0.07) percentage of total monounsaturated fatty acids. Loins from pigs with high WBSF tended to have increased (P = 0.09) total polyunsaturated fatty acids (PUFA) content and had higher (P = 0.03) PUFA: saturated fatty acid ratio than low-WBSF pigs. Selecting pigs for pork tenderness could potentially conflict with lean growth efficiency and a healthier fatty acids profile for human consumption.

Abstract
Sixty Chinchilla rabbits (28 days old) were divided into three equal groups (n = 20). Rabbits in MOL0 (control) were fed pellets containing 700 g cowpea hay/kg pellet as forage source, whereas rabbits in MOL700 and MOL950 were fed pellets containing 700 and 950 g moringa leaves/kg feed pellets, respectively. Average daily gain and feed conversion ratio was comparable in MOL700 and MOL0, however, it was higher in MOL950. Among the carcass traits, dressing percent was higher while, chilling loss was lower in MOL700 treatment. The Longissimus thoracis muscle of rabbits fed moringa leaves containing pellets (MOL700 and MOL950) had lower saturated fatty acid content, higher C18:3n-3 and total n-3 fatty acids along with lower thrombogenic index value. Hence, incorporating moringa leaves at 70% level is beneficial in terms of improved growth performance and functional attributes of meat than diet- containing sole moringa leaves.

Abstract
Our study aimed to evaluate the frame size as a genetic selection criterion as well as the association of scores with carcass characteristics measured via ultrasound to the genetic improvement of carcass quality in Nellore cattle. The variance components were estimated using the restricted maximum likelihood method for the thoracic perimeter (TP), frame size score (FRAME), yearling weight (YW), visual scores of body structure (BS), muscularity (MUSC), and precocity (PREC). The carcass traits included loin eye area (REA), backfat thickness (BF), rump fat (FR), and intramuscular fat (IF). The estimated heritabilities ranged from moderate to high. The FRAME showed a positive genetic correlation with YW (0.82 ± 0.07), TP (0.58 ± 0.09), and BS score (0.62 ± 0.07), but it had a negative correlation with the MUSC and PREC visual scores (- 0.34 ± 0.09 and - 0.50 ± 0.08, respectively). The genetic correlation between FRAME and REA was positive (0.26 ± 0.09). However, FRAME presented a correlation close to zero with BF, RF, and IF. TP had a positive genetic correlation with body size traits such as YW (0.76 ± 0.05) and BS score (0.55 ± 0.08) and with muscularity traits such as REA (0.44 ± 0.01). Frame size has the potential to be used as a parameter in the selection of precocious beef cattle, but a study of its use is necessary to determine the ideal biotype for each production system.

Abstract
The aim of the present study was to estimate the chemical composition (water, lipid, protein, mineral, and energy contents) of carcasses measured postmortem using dual-energy X-ray absorptiometry (DXA) scans of cold half-carcass or 11th rib cut. One hundred and twenty beef-on-dairy (dam: Swiss Brown, sire: Angus, Limousin, or Simmental) bulls (n = 66), heifers (n = 42), and steers (n = 12) were included in the study. The reference carcass composition measured after grinding, homogenization, and chemical analyses was estimated from DXA variables using simple or multiple linear regressions with model training on 70% (n = 84) and validation on 30% (n = 36) of the observations. In the validation step, the estimates of water and protein masses from the half-carcass (R2 = 0.998 and 0.997; root mean square error of prediction [RMSEP], 1.0 and 0.5 kg, respectively) and 11th rib DXA scans (R2 = 0.997 and 0.996; RMSEP, 1.5 and 0.5 kg, respectively) were precise. Lipid mass was estimated precisely from the half-carcass DXA scan (R2 = 0.990; RMSEP = 1.0 kg) with a slightly lower precision from the 11th rib DXA scan (R2 = 0.968; RMSEP = 1.7 kg). Mineral mass was estimated from half-carcass (R² = 0.975 and RMSEP = 0.3 kg) and 11th rib DXA scans (R2 = 0.947 and RMSEP = 0.4 kg). For the energy content, the R2 values ranged from 0.989 (11th rib DXA scan) to 0.996 (half-carcass DXA scan), and the RMSEP ranged from 36 (half-carcass) to 55 MJ (11th rib). The proportions of water, lipids, and energy in the carcasses were also precisely estimated (R2 ≥ 0.882) using either the half-carcass (RMSEP ≤ 1.0%) or 11th rib-cut DXA scans (RMSEP ≤ 1.3%). Precision was lower for the protein and mineral proportions (R2 ≤ 0.794, RMSEP ≤ 0.5%). The cattle category (sex and breed of sire) effect was observed only in some estimative models for proportions from the 11th rib cut. In conclusion, DXA imaging of either a cold half-carcass or 11th rib cut is a precise method for estimating the chemical composition of carcasses from beef-on-dairy cattle.

Abstract
This study compares performance, body and carcass composition among castrated (CM), immunocastrated (IM) and entire males (EM), and females (FE) at 30, 70, 100 and 120 kg of body weight (total of n = 92; 20-24/sex type). Overall, IM had similar growth and feed intake to CM and greater than EM and FE. At each slaughter stage, IM had a lower killing-out percentage than CM and FE, in line with their heavier liver and kidneys. Flare fat proportion and backfat thickness on the ham and at the last rib level were similar for IM, EM and FE, and these were lower than CM. In EM and FE, backfat between the 3rd and 4th last ribs was lower and carcass lean content was higher than in CM, whereas IM were intermediate and not different to the other sexes. Females showed the largest ham proportion, this cut being leaner and less fatty than in CM. Belly proportion was higher in CM than in EM.

Abstract
Genetics and nutrition drive herd productivity due to significant impacts on all components of the beef cattle production cycle. In northern Australia, the beef production system is largely extensive and relies heavily on tropical cattle grazing low quality, phosphorus-deficient pastures with seasonal variations in nutritive value. The existing feedlots are predominantly grain-based; providing high-energy rations, faster turn-off and finishing of backgrounded cattle to meet market specifications. This review focusses on the beef cattle production cycle components of maternal nutrition, foetal development, bull fertility, post-natal to weaning, backgrounding, feedlotting, rumen microbes and carcass quality as influenced by genetics and nutrition. This student-driven review identified the following knowledge gaps in the published literature on northern Australian beef cattle production cycle: 1. Long-term benefits and effects of maternal supplementation to alter foetal enzymes on the performance and productivity of beef cattle; 2. Exogenous fibrolytic enzymes to increase nutrient availability from the cell wall and better utilisation of fibrous and phosphorus deficient pasture feedbase during backgrounding; 3. Supplementation with novel encapsulated calcium butyrate and probiotics to stimulate the early development of rumen papillae and enhance early weaning of calves; 4. The use of single nucleotide polymorphisms as genetic markers for the early selection of tropical beef cattle for carcass and meat eating quality traits prior to feedlotting; The review concludes by recommending future research in whole genome sequencing to target specific genes associated with meat quality characteristics in order to explore the development of breeds with superior genes more suited to the North Australian beef industry. Further research into diverse nutritional strategies of phosphorus supplementation and fortifying tropically adapted grasses with protein-rich legumes and forages for backgrounding and supplementing lot-fed beef cattle with omega-3 oil of plant origin will ensure sustainable production of beef with a healthy composition, tenderness, taste and eating quality.

Abstract
Palm oil is a natural energy source ingredient in poultry diets that offers a broad range of beneficial effects on the performance of broiler chickens. This review was conducted to highlight the impact of palm oil as a feed ingredient on growth performance and carcass quality, as well as the biochemical, antioxidant activity and tissue fatty acids (FA) composition of broiler chickens. Palm oil inclusion in broiler chickens' rations contributes significantly to the high metabolisable energy (ME) of feed formulation, increases feed palatability and decreases digesta passage rate in the intestine. The reviewed literature indicated that dietary palm oil has a beneficial effect on broiler chickens' overall growth performance traits. The addition of palm oil can also improve the heat tolerance of chickens reared in high ambient temperature conditions. Regardless of breed and breeding conditions, palm oil exhibits good oxidative stability in broiler chickens due to the presence of prevalent phytonutrient elements in this oil. The inclusion of palm oil increased palmitic (C16:0) and oleic (C18:1) acids in tissue deposits, which improves meat stability and quality. Moreover, molecular studies have revealed that higher mRNA expression of several lipid-related hepatic genes in broiler chickens fed palm oil. Nonetheless, dietary palm oil can influence FA deposition in tissues, modulate lipoprotein and triglycerides (TG) levels, and cytokine contents in the blood serum of broiler chickens.

Abstract
INTRODUCTION Smaller scale, alternative, chicken production systems are gaining popularity globally. However, this brings public health and market confidence concerns, especially where there are no established standards of production. The aim of this study was to carry out a microbiological analysis of chicken carcasses from the commercial, backyard and semi-backyard production systems, slaughtered in the same slaughterhouse. METHODOLOGY Samples of 102 chicken carcasses were taken in two steps of the slaughter (A: after bleeding; and B: after chiller tank) and were subjected to aerobic mesophilic, coliforms at 35 °C and coliforms at 45 °C counts, and Salmonella spp. detection. Salmonella spp. isolates were subjected to antimicrobial resistance analysis. RESULTS At slaughter step A, carcasses from the backyard system had less contamination than carcasses from the commercial system, with a difference of 0.7 log10 CFU/mL. Salmonella was identified in carcasses of all production systems and in both slaughter steps. Nine chicken carcasses were positive for Salmonella and no significant difference was observed in the occurrence of Salmonella amongst the carcasses from different production systems. Two Salmonella isolates, that presented the highest resistance profiles (one isolate was resistant to eight and the other to six out of ten tested antibiotics), were identified on carcasses from the semi-backyard system. CONCLUSIONS Carcasses from the backyard system had a lower microbial count at the initial step of the slaughter process than the commercial production system. In addition, greater resistance to antimicrobials was observed in Salmonella isolates from semi-backyard system.

Abstract
This study examined the impact of using total mixed ration (TMR) and concentrate
on feed intake, daily gain, carcass yield grade, and carcass quality grade of
Hanwoo steers and its subsequent economic efficiency. Thirty six 7-month-old
Hanwoo steers were assigned to one of the four treatment groups, and each group
was divided into three repeated pens, with each repeated pen comprising three
steers. The treatment groups were: 1) separate feeding with commercial
concentrate and forage (namely, SCF) for the entire experimental period; 2) TMR
feeding for a growing period followed by SCF for the early and late fattening
period (namely, TMRGSCF); 3) TMR feeding for growing and an early fattening
period followed by SCF for the late fattening period (namely, TMREFSCF); and 4)
TMR feeding for the entire experimental period (namely, TMRW). The results
showed that the SCF treatment had significantly (p <
0.05) higher feed intake during the growing period than other treatments. In
contrast, the total feed intake had little difference during early and late
fattening as well as the whole period regardless of feeding strategies. Daily
gain showed no difference during the growing period. However, it was
significantly higher in SCF and TMREFSCF treatments for the early and late
fattening period, respectively (p < 0.05). The daily
gain during the total raising period is in the order of TMREFSCF >
TMRGSCF > SCF > TMRW. Carcass characteristics, including carcass
weight, loin eye muscle area, and carcass yield grade, did not significantly
differ among different treatments. However, TMRW treatment, wherein TMR was fed
for a long time, showed that the cold carcass weight was less compared with
other treatments, but carcass yield grade was higher with thinner backfat.
Backfat thickness was in the order of SCF > TMRGSCF > TMREFSCF
> TMRW, showing that the thickness reduced with longer TMR feeding
(p < 0.05). TMRGSCF, which numerically had a higher
carcass quality grade, showed higher economic efficiency, whereas SCF showed low
economic efficiency. In conclusion, it was more feasible to apply TMR strategy
in the growing and early fattening period and then SCF for the early or late
fattening period to improve carcass yield, quality grade, and economic
efficiency.

Abstract
BACKGROUND The role of the microbiome in livestock production has been highlighted in recent research. Currently, little is known about the microbiome's impact across different systems of production in swine, particularly between selection nucleus and commercial populations. In this paper, we investigated fecal microbial composition in nucleus versus commercial systems at different time points. RESULTS We identified microbial OTUs associated with growth and carcass composition in each of the two populations, as well as the subset common to both. The two systems were represented by individuals with sizeable microbial diversity at weaning. At later times microbial composition varied between commercial and nucleus, with species of the genus Lactobacillus more prominent in the nucleus population. In the commercial populations, OTUs of the genera Lactobacillus and Peptococcus were associated with an increase in both growth rate and fatness. In the nucleus population, members of the genus Succinivibrio were negatively correlated with all growth and carcass traits, while OTUs of the genus Roseburia had a positive association with growth parameters. Lactobacillus and Peptococcus OTUs showed consistent effects for fat deposition and daily gain in both nucleus and commercial populations. Similarly, OTUs of the Blautia genus were positively associated with daily gain and fat deposition. In contrast, an increase in the abundance of the Bacteroides genus was negatively associated with growth performance parameters. CONCLUSIONS The current study provides a first characterization of microbial communities' value throughout the pork production systems. It also provides information for incorporating microbial composition into the selection process in the quest for affordable and sustainable protein production in swine.

Abstract
Background Although Beef Quality Assurance guidelines do not recommend use of darting methods to deliver drugs, cattle in the US may be raised on farms and ranches without restraint facilities, and reports from the field suggest that dart guns are being used to deliver antimicrobial drugs. Few studies report whether this route of administration results in altered drug disposition or carcass quality. Methods Forty steers were blocked by sire and then randomly assigned to treatment with saline, ceftiofur crystalline free acid, tildipirosin, or tulathromycin delivered via dart gun. To assess drug disposition, eight ceftiofur, six tulathromycin, and six tildipirosin-treated calves were selected to measure plasma concentrations of drugs up to 10 days after drug administration. Steers were then fed a balanced ration for approximately 6.5 months and slaughtered. To evaluate carcass quality, tenderness of steaks from darted-side and non-darted sides was evaluated via Warner-Bratzler shear force testing. Due to the prohibition of extralabel routes of administration for ceftiofur in the U.S., animals treated with this drug did not enter the food supply. Results Ceftiofur disposition differed from published reports with lower mean Cmax but similar mean apparent elimination half-life. Tildipirosin disposition differed from published reports with lower Cmax and shorter apparent elimination half-life. Tulathromycin was similar to previous published reports but Cmax and apparent elimination half-life was highly variable. All steaks (from darted and non-darted sides) from cattle treated with ceftiofur and saline were more tender than from cattle treated with tulathromycin or tildipirosin (P = 0.003). There was a trend toward more tenderness in steaks from the non-darted compared to the darted side. Steaks from the darted side for one treatment, tildipirosin, were less tender than the non-darted side. Conclusions Pharmacokinetic parameters of ceftiofur crystalline free acid, tildipirosin, and tulathromycin to cattle using pressure-adjustable pneumatic gas-powered dart gun were estimated in this study. Delivery of tildipirosin and tulathromycin to cattle with dart gun may also result in detectable decreases in tenderness of harvested steaks.

Abstract
Aim of study was to investigate the relationship of EUROP carcass fatness and conformation classes with carcass and meat quality characteristics in thin-tailed (Kivircik) and a fat-tailed (Kangal Akkaraman) lambs. A total of 96 lamb carcasses (48 Kivircik and 48 Kangal Akkaraman breed) were examined. Distribution of carcasses in conformation and fatness classes were more limited in Kangal Akkaraman carcasses. More accurate predictions were obtained in Kivircik lambs compared to Kangal Akkaraman lambs in terms of backfat thickness, kidney knob and channel fat percentage, longissimus thoracis muscle area, weights of high-value carcass joints, weights of tissues in the hind limb and muscle/bone ratio. EUROP classification system was not appropriate for predicting meat quality in thin-tailed and fat-tailed lambs. The combination of EUROP fatness and conformation classes with cold carcass weight can be used to predict weights of high-value carcass joints and weights of hind limb tissues.

Abstract
A total of 160 pigs, in groups of 8 pigs of mixed genders, were fed four finishing feeding strategies with the aim to reduce muscle glycolytic potential and improve meat quality. Pigs were fed a control diet (C; fat = 5.0%, ADF = 3.0%, NDF = 8.8%), a high-fat and high-fiber diet (HFF; fat = 11.2%, ADF = 9.1%, NDF = 19.5%), a blend of 50-50% C and HFF diets (fat = 8.2%, ADF = 6.7%, NDF = 14.2%) or the C diet and transferred to the HFF diet after a diet transition. Dietary treatments alone or in interaction with gender had no effect on pig growth performance, carcass quality traits, Longissimus and Semimembranosus muscle glycolytic potential and meat quality (P > 0.10). The inefficiency of the dietary treatments applied in this study may be due to the low ratio between fat and digestible carbohydrate in the diets combined with the mild pre-slaughter stress conditions pigs were exposed to.

Abstract
This experiment was performed to determine the nutrient content of yeast (Saccharomyces cerevisiae) and effect on carcass characteristics, relative internal organ weights, digesta pH, and lengths and weights of the different segments of the gastrointestinal tract (GIT) of indigenous Boschveld chickens. Six hundred-day-old unsexed Boschveld chicks were divided into six groups of 100 birds with each group replicated five times. Birds were fed broiler starter from 1 to 49 days and grower diet from 50 to 91 days. Each group was allotted to commercial broiler mash diet supplemented with yeast designated 0 g kg-1 feed (T0), 2.5 g kg-1 feed (T1), 5.0 g kg-1 feed (T2), 7.5 g kg-1 feed (T3), 10.0 g kg-1 feed (T4) and 12.5 g kg-1 feed (T5) in a completely randomised design. Proximate composition of yeast was assessed using the standard method. Live weight, carcass characteristics, organ weights, digesta pH and the lengths and weights of the different segments of the digestive tract were measured and analysed statistically. Probiotic-yeast levels for optimal productivity were determined using a quadratic optimisation model. Results revealed that probiotic-yeast is rich in crude protein (496.0 g kg-1), ash (61.60 g kg-1) and moderate in crude fibre (29.0 g kg-1). Birds in groups fed with diets supplemented with yeast at 7.5 and 10.0 g kg-1 feed gave the best (p < 0.05) carcass characteristics, organ weights, length and weight of the different sections of the digestive system in Boschveld chickens. The optimal inclusion rates of probiotic-yeast that gave the best live weight, carcass characteristics, organ weights and linear measurement of the GIT were found 6.9 and 8.5 g kg-1 feed, suggesting that no single inclusion level optimised all the parameters measured in Boschveld chickens in the present study. In conclusion, yeast is suitable for use as a feed additive and for optimal productivity; it should be included at the rates of 7.5 and 10.0 g kg-1 feed in Boschveld chicken diet. It is recommended that yeast supplementation level beyond 10.0 g kg-1 feed may not be well-tolerated by the Boschveld chickens for best live weight, carcass characteristics, organ weights and linear measurement of the GIT.

This study aimed to compare growth and slaughter performance of layer-type slow-growing Rhode Island Red male chickens grown with and without access to an area with vegetation in the tropics. Raised until 115 days of age, a total of 156, 1-day-old birds were randomly allocated to two treatments: total confinement (TC) and partial confinement (PC), with 6 replicates of 13 birds each. Birds grown under TC conditions reached a live weight of 2016.68 g while those raised with access to outdoors attained 1981.07 g, without statistical differences. Feed intake and daily feed intake were higher (P < 0.05) in birds farmed with TC management, during the last 17 days of the trial. Treatments did not significantly (P > 0.05) affect bird's other productive parameters and carcass traits. Results from this study suggested that slow-growing Rhode Island Red males may be raised with access to outdoors without any adverse effect on productive performance and carcass quality in the Mexican Tropic. Based on the results of this study, a rearing period of 84 days of age is recommended for Rhode Island Red male chickens raised in both TC and PC production systems.

Abstract
Although fasciolosis is a relatively common disease, the productive and economic losses resulting from cattle with chronic fasciolosis are unclear. This paper aims to investigate the effect of fasciolosis on the parameters of carcass quality and discuss the hypothesis that the effects on weight differ among age ranges of cattle. For this, we analysed abattoir data of 30,151 bovines, from 928 farms, slaughtered in Uruguay in 2016, of which 33.9% (95% confidence interval (CI): 27.3-41.1%) had Fasciola hepatica (liver fluke). A mixed model was built to assess whether the effect of fasciolosis on weight differs depending on the age range, using the interaction term 'age*F. hepatica'. The effect on the carcass parameters was tested using a proportional logistic regression. The interaction of age and F. hepatica was statistically significant (P < 0.001). Differences in carcass weights between infected and non-infected animals were observed mostly at younger ages (up to 30 months), with the highest difference observed in the 23-30 months age range (estimated marginal mean difference of 6.34 kg). Overall, the presence of F. hepatica was positively associated with poor conformations and lower fat scores of carcasses (P < 0.001). The carcasses of cattle infected with F. hepatica had 0.16 times greater odds of having worse conformation scores than carcasses of cattle without F. hepatica (proportional odds ratio (POR) = 1.16; 95% CI: 1.07-1.26). Similarly, carcasses of cattle with F. hepatica had 0.30 times (POR = 1.30, 95% CI: 1.23-1.39) greater odds of having poorer fat scores than carcasses of cattle without F. hepatica. Therefore, infection with F. hepatica is associated with poorer carcass quality parameters and lower weights, and the effect on weight differs across age ranges.

Abstract
Thirty-six lambs were used to evaluate the effect of three levels of Cistus ladanifer condensed tannins (CT; 0, 1.25 and 2.5%) and two ways of CT supply (C. ladanifer aerial parts and C. ladanifer CT extract) on lamb growth performance, carcass composition, meat quality and FA composition of intramuscular and subcutaneous fat. The basal diet was composed of dehydrated lucerne supplemented with 60 g/kg of soybean oil. The highest amount of CT (2.5%) had detrimental effects on growth performance, particularly when the aerial part of C. ladanifer was used. Conversely, 1.25% CT in diets did not affect growth performance and meat quality, and inclusion of C. ladanifer CT extract in diet at this level increased t11-18:1, but not c9,t11-18:2 content in fat. Feeding C. ladanifer CT extract might be a good approach for enhancing the nutritional value of ruminant fat, but further studies are needed to ensure upregulation of endogenous synthesis of c9,t11-18:2.

Abstract
This study compared five commercially available probiotics vis-à-vis antibiotic growth promotant (AGP) supplementation and absence of feed additive based on efficiency, intestinal morphometry, and energy digestibility in improving broiler chicken production. A total of 630 straight run (Cobb) day-old broiler chicks were distributed to seven treatments following a completely randomized design, with ten replicates per treatment and nine birds per replicate per cage. Dietary treatments consisted of basal diet in combination with the following: without probiotics and AGP supplementation (treatment 1); 75 ppm each of chlorotetracycline (CTC) and Zn bacitracin (treatment 2); probiotic A, Bacillus subtilis (treatment 3); probiotic B, Bacillus subtilis (treatment 4); probiotic C, Enterococcus faecium (treatment 5); and probiotic D, Bacillus subtilis (treatment 6); probiotic E, Enterococcus faecium, Bifidobacterium spp., Pediococcus spp., and Lactobacillus spp. (treatment 7). At day 42, energy digestibility was determined by fasting three randomly selected birds from each treatment for 12 h and then subjecting them to their corresponding dietary treatments. Excreta were collected and pooled after 24 h of feeding. Pooled excreta were weighed, oven-dried, and subjected to energy analyses after 3-day collection. Apparent total tract metabolizable energy was then computed. At day 47, three birds were randomly selected per treatment for intestinal morphometry (villi height and crypt depth) of the duodenum, jejunum, and ileum. Dietary supplementation using probiotics showed no significant effect on overall body weight, weight gain, feed consumption, feed efficiency, dressing percentage, mortality, harvest recovery, carcass quality parameters (e.g., meat to bone ratio and abdominal fat content), intestinal morphometry, and energy digestibility. Birds under treatment 7 (basal feed + probiotic E) generated the highest income over feed and chick cost.

Abstract
Improving meat production traits has increased its importance in sheep breeding. We report novel associations of SNP present in genes related to lipid metabolism and growth with several carcass traits in purebred Texel lambs. Expected progeny differences (EPD) predictions from 461 animals from the Central Progeny Testing of Texel breed in Uruguay were used for the association analysis. Live weights at different stages, ultrasound and post-mortem traits were analyzed. Markers in several genes were associated with growth, carcass and meat quality traits. Among others: PPARGC1A with valuable cuts weight, hot carcass weight and carcass fatness; DGAT1 with live weights, fat thickness, rib-eye area and shoulder weight; CAST with birth weight and fat thickness; GHR with birth weight and carcass fatness, and GHRHR with live weights and fat thickness. Genotypic effects ranged from 0.035 to 0.923 (DGAT1 vs. weaning weight) units of phenotypic SD. Most of the associations described are novel in sheep breeding, deserving further analyses.

Abstract
Background The aim of this study was to determine how maternal undernutrition during pregnancy and offspring birth-weight can affect the postnatal development of offspring under farm conditions, which may lead to consequences in its meat and carcass quality. The current study involved a total of 80 litters from Iberian sows fed a diet fulfilling daily requirements (n = 47; control) or providing 70% daily requirements (n = 33; underfed) from d 38 to d 90 of gestation when fetal tissue development begins. After birth, piglets born live were classified as low birth-weight (LBW; < 1 kg) and normal birth-weight (NBW; ≥1 kg). During the growing phase, 240 control and 230 underfed pigs (50% males and females) distributed by BW category and sex were studied until the slaughter. Results At birth and weaning, there were significant differences in all morphological measures and weight between NBW and LBW piglets as expected (P < 0.0005), but few effects of the gestational feed restriction. During the growing phase, NBW pigs continued with higher weight than LBW pigs on all the days of evaluation (P < 0.05), even though control-LBW-females and LBW-males showed a catch-up growth. However, underfed pigs showed slower growth and higher feed conversion ratio than control pigs (P < 0.0001) at 215 days old. Moreover, the average daily weight gain (ADWG) for the overall period was greater for NBW, male and control pigs than for their LBW, female and underfed pigs (P < 0.0001, P< 0.0005 and P< 0.05, respectively) and NBW pigs were slaughtered at a younger age than LBW pigs (P < 0.0001). After slaughtering, control pigs also had higher carcass yield and backfat depth than underfed pigs (P < 0.0005) and the maternal nutritional effect caused main changes in the polar lipid fraction of liver and loin. The fatty acid composition of loin in control pigs had higher C18:1n-9 and n-3 FA concentrations, as well as lower ∑n-6/∑n-3 ratio, than in underfed pigs (P < 0.005). Conclusions In brief, results showed that the effects of maternal nutritional restriction appeared and increased with offspring age, causing worse developmental patterns for underfed pigs than for control pigs. Abstract
The present study investigates the influence of supplementing Pediococcus acidilactici strain FT28 on serum biochemistry, carcass and physicochemical properties of meat in fattening pigs. A total of 36 piglets (28day) were randomly divided into three groups of four replicates of three animals in each. Each group was fed one of the experimental diet as basal diet alone (Control-T0); basal diet supplemented with Pediococcus acidilactici strain FT28 (swine origin probiotic-T1) and basal diet supplemented with Lactobacillus acidophilus NCDC-15 (dairy origin probiotic-T2). Increased (P<0.05) level of serum total protein and albumin, and decreased (P<0.05) triglyceride were observed with probiotic supplementation either of swine or dairy origin, compared to control. The level globulin and glucose were higher (P<0.05) in T1 group among the dietary groups. Carcass traits remained unaltered except for the weight of ham, kidney and spleen which were higher (P<0.05) in the T1 group. Water holding capacity and TBARS were improved (P<0.05) in the T1 group than control, however comparable to the T2 group. The ether extract, pH and sensory attributes (juiciness and appearance) were improved (P<0.05) in the T1 group among the dietary groups. It is evident from the present study that P. acidilactici FT28 could serve as probiotic for enhancing carcass quality and physicochemical properties of pork without influencing the blood metabolites.

Abstract
Many QTL affecting meat quality and carcass traits have been reported. However, in most of the cases these QTL have been detected in non-commercial populations. Therefore, a family structured population of 457 F2 pigs issued from an inter-cross between 2 commercial sire lines was used to detect QTL affecting meat quality and carcass traits. All animals were genotyped using the Illumina PorcineSNP60 BeadChip platform. Genome-wide association studies were used in combination with linkage disequilibrium-linkage analysis to identify QTL. A total of 32 QTL were detected. Nine of these QTL exceeded the genome-wide 5% significance threshold. We detected 18 QTL affecting carcass composition traits and 16 QTL affecting meat quality traits. Using post-QTL bioinformatics analysis we highlighted 26 functional candidate genes related to fatness, muscle development, meat color and meat pH. Finally, our results shed light on the advantage of using different QTL detection methodologies to get a global overview of the QTL present in the studied population.

Abstract
Veal is widely prized by consumers for its excellent nutritional value. Calf meat is generally obtained from young (immature) bovine animals up to 8months of age, or in some cases from older animals, but no older than 12months. Classification of calf carcasses and specification of cuts are quite well regulated in the European market, in contrast with feeding systems and meat characteristics. There are several calf production systems, but in terms of consumer health the most beneficial meat is obtained from animals reared on pasture with natural suckling. In view of the above, this review is limited in scope to Member States of the European Union and focuses on the main factors influencing the carcass quality, proximate composition, intrinsic properties, cholesterol content, fatty acid composition and mineral composition of veal from calves reared on pasture with their mothers.

Abstract
The effects on finishing pigs (80–100 kg BW) fed diets supplemented with oil sources containing different ratios of unsaturated to saturated fatty acids (UFA:SFA ratio) were evaluated in 15 barrows and 15 gilts (Duroc × Large White × Landrace). Three experimental diets were evaluated using a randomized complete block design, with broken rice, soybean meal and rice bran as the main feedstuffs in the control diet. Diets 2 and 3 consisted of the control diet supplemented with 3% oil, with UFA:SFA ratios of 2.5:1 and 5:1, respectively. Overall, there was no significant difference (P > 0.05) found in the average daily gain (ADG) of the pigs fed the treatment diets; however, the pigs fed the control diet and diet 3 had better (P < 0.05) feed conversion ratios (FCR) than the pigs fed diet 2. The pigs fed diets 2 and 3, which were supplemented with oil at UFA:SFA ratios of 2.5:1 and 5:1, had greater (P < 0.05) average daily feed intakes (ADFI) than the pigs in the control group. Additionally, it was found that the gender of the pigs had an effect (P < 0.05) on the FCR. Interaction effects between the experimental diets and the gender of the pigs (P < 0.05) were found in the ADFI and FCR. There were no significance differences (P > 0.05) among the treatment groups with regard to the carcass quality of the pigs; however, it was found that the gilts had greater (P < 0.01) loin eye areas than the barrows fed diets 2 and 3 and the loin eye area of pig fed diet 2 was the largest (P < 0.05). In the case of the meat quality parameters, it was clearly found that the pigs fed the control diet had a greater (P < 0.05) lightness (L∗) in the meat colour, and the lowest cooking loss was found in the pigs fed the diet supplemented with fat containing the UFA:SFA ratio of 5:1. Overall, the dietary treatment did not significantly affect the drip loss, thawing loss and shear force of the pork. In conclusion, the supplementation of oil with UFA:SFA ratios of 2.5:1 and 5:1 has the potential to improve pork quality.

Abstract
Lipoprotein lipase (LPL) is considered as an essential enzyme in lipid deposition and tissue metabolism. It has been proposed to be a lead candidate gene for genetic markers of lipid deposition and energy balance. In this paper, polymorphisms in the LPL gene were investigated in 554 Chinese Qinchuan cattle by PCR-RFLP and DNA sequencing. Seven single nucleotide polymorphisms (SNPs) were identified, which included one mutation (g.91C > T) in the 5'untranslated region (UTR), four synonymous mutations (g.17015A > G, g.18362G > A, g.18377T > C and g.19873T > C) and two mutations (g.25225A > G and g.25316T > G) in the 3'UTR. The frequencies of SNP g.18377T > C and g.25316T > G were skewed from Hardy-Weinberg equilibrium in all the samples (chi-square test, P < 0.05). An association analysis showed that five loci (except for g.91C > T and g.18377T > C) were significantly correlated with some growth and carcass quality traits. These results demonstrate that LPL might be a potential candidate gene for marker-assisted selection (MAS).

Abstract
In 54 Puławska pigs and 60 Polish Large White pigs (PLW), slaughtered at 30 and 100 kg body weight, carcass and meat quality of m. longissimus lumborum were studied. Analysis revealed that in both examined body weight groups, hot carcass weight, carcass yield percentage, meat content, and weight of ham and carcass ham percentage were significantly lower and backfat thickness higher for Puławska pigs compared to PLW pigs, while PLW pigs exhibited significantly longer carcasses, greater loin eye area, and, in the case of lighter pigs, smaller proportion of loin in the carcass. Muscles of Puławska pigs, in the lighter group, had higher IMF content and a* value, while in the heavier group they exhibited higher pH(45), pH(24) and a* values, lower L*, drip loss, WHC, and thermal loss compared with PLW pigs. PLW pigs had higher WB and hardness values and more glycolytic muscles characterised by higher TNF.

Abstract
Previous association studies revealed several single nucleotide polymorphisms (SNPs) that explained the observed phenotypic variation for meat tenderness and long-chain omega-3 polyunsaturated fatty acid (PUFA) content of Australian lamb. To confirm the validity of these associated SNPs at predicting meat tenderness and omega-3 PUFA content, an independent validation study was designed. The OvineSNP50 genotypes of these animals were used to impute the 192 SNP Meat Quality Research (MQR) panel genotypes on nearly 6200 animals from the Cooperative Research Centre for Sheep Industry Innovation Information Nucleus Flock and Sheep Genomics Falkiner Memorial Field Station flock. Association analysis revealed numerous SNP from the 192 SNP MQR panel that were associated with carcass quality - fat depth at the C-site and eye muscle depth; shear force at day 1 and day 5 after slaughter (SF1 and SF5); and omega-3 PUFA content at P<0.01. However, 1 SNP was independently validated for SF5 (i.e. CAST_101781475). The magnitude of the effect of each significant SNP and the relative allele frequencies across Merino-, Maternal- and Terminal-sired progeny was determined. The independently validated SNP for SF5 and the associated SNP with omega-3 PUFA content will accelerate efforts to improve these phenotypic traits in Australian lamb.
