Abstract
Berries have been widely assessed for their beneficial health effects, predominately due to their high (poly)phenol content of anthocyanins and ellagitannins. After ellagitannins and ellagic acid are metabolized by the gut microbiome, a class of compounds known as urolithins are produced, which exert potential advantageous health effects. Anthocyanins, on the other hand, undergo a complex metabolic pathway after their interaction with microbial and endogenous enzymes, forming a broad range of metabolites and catabolic products. In most cases, in vitro models and cell lines are used to generate metabolites, whereas their assessment in vivo is currently limited. Thus far, several analytical methods have been developed for the qualitative and quantitative analysis of phenolic metabolites in berries, including liquid chromatography, mass spectrometry, and other hyphenated techniques, and have been undoubtedly valuable tools for the detailed metabolite characterization and profiling. In this review, a compilation of studies providing information on the qualitative and quantitative analysis of (poly)phenol metabolites in blackberries and raspberries after the utilization of in vitro and in vivo methods is presented. The different analytical techniques employed are assessed, focusing on the fate of the produced metabolic compounds in order to provide evidence on their characteristics, formation, and beneficial effects.

Abstract
The creation and analysis of a large variety of existing methods for the evaluation of integrated antioxidant properties are quite relevant in connection with a range of biological mechanisms of the antioxidants (AO) action. In this work, the existing methods are correlated with mechanisms of antioxidant action. It is shown that the results obtained by various methods are mainly incomparable. This can be connected with the implementation of various mechanisms of antioxidant action in methods. The analysis of the literature data presented in this review indicates the difficulty of creating a universal method and the feasibility of using integrated approaches based on the use of several methods that implement and combine various mechanisms of the chemical conversion of antioxidants. This review describes methods for studying the chelating ability of antioxidants, except for methods based on electron and hydrogen atom transfer reactions, which are currently not widely covered in modern literature. With the description of each mechanism, special attention is paid to electrochemical methods, as the interaction of active oxygen metabolites of radical and non-radical nature with antioxidants has an electron/proton/donor-acceptor nature, which corresponds to the nature of electrochemical methods and suggests that they can be used to study the interaction.

Abstract
Caffeic acid may be accurately detected in food supplements by using cyclic voltammetry and carbon screen-printed sensors modified with various nanomaterials. Sensor characterization by cyclic voltammetry in reference solutions has shown that carbon nanotubes or carbon nanofibers significantly improve the sensor response in terms of sensitivity and reversibility. Screen-printed sensors were then used in order to study the electrochemical behavior of caffeic acid in aqueous solution at pH 3.6. A redox process was observed in all cases, which corresponds to a reversible redox process involving the transfer of two electrons and two protons. The role of nanomaterials in the increment of sensor performance characteristics was evidenced. Calibration curves were developed for each sensor, and the detection (LOD) and quantification (LOQ) limits were calculated. Low LOD and LOQ values were obtained, in the 10−7 to 10−9 M range, which demonstrates that the method is feasible for quantification of caffeic acid in real samples. Caffeic acid was quantitatively determined in three food supplements using the most sensitive sensor, namely the carbon nanofiber sensor. The Folin–Ciocalteu spectrophotometric assay was used to validate the results obtained with the sensor. The results obtained by using the voltammetric method were consistent with those obtained by using the spectrophotometric method, with no statistically significant differences between the results obtained at 95% confidence level.

Abstract
Ginger (Zingiber officinale) is widely consumed as an important spice or a common condiment in food and beverages. This study focuses on the determination of pungent and bioactive components in ginger and their antioxidant activity using voltammetric and spectroscopic methods. Gas chromatography-mass spectroscopy analysis revealed that the major components of the pungent compounds were zingerone, shogaols, gingerols, paradols, wikstromol, and carinol. Using spectroscopic methods, the antioxidant capacity of ginger aqueous extract was found to be 16.0 μmol gallic acid equivalent (GAE) per gram of ginger extract, and the total phenolic and flavonoid content was estimated to be 7.8 mg GAE/g ginger extract and 15.4 mg Quercetin equivalent (QE) per gram of ginger extract, respectively. Electroanalytical quantification estimated the antioxidant capacity of the ginger infusion to be 23.5 μmol GAE/g ginger extract, which is slightly higher than that estimated using chemical assay. The results may provide useful information for the development of ginger processing and utilization as a flavoring agent, and for our understanding of ginger as a source of natural antioxidants.

Abstract
Measurement of antioxidant capacity represents an analytical major challenge in terms of accuracy, efficiency, rapid response, or low cost of detection methods. Quantification of antioxidant capacity of food samples using disposable screen-printed microelectrodes (SPMEs) was based on cyclic voltammetry versus open-circuit potential (CV vs OCP) and differential pulse voltammetry (DPV) as compared with spectrophotometric measurement of the CUPRAC reaction with 6-hydroxy-2,5,7,8-tetramethylchroman-2-carboxylic acid (trolox). The SPMEs are organic-resistant electrodes and thus compatible with food samples and organic solvents used to dissolve trolox. A micropipette was used to release a drop of 50 μL sample on the spotted surface of the SPME sensor/working electrode that was time programmed to function according to the working protocol. The SPME response was linearly correlated with trolox content. This preliminary demonstration was focused on the analysis of tea infusions, due to the simplicity and reproducibility of the samples' preparations involved. Analytical results of the antioxidant capacity (expressed as mol·L-1 trolox equivalents) of the tea samples showed a good agreement in the case of spectrophotometry and differential pulse voltammetry (R 2 > 0.998). DPV with SPME based on CUPRAC reactions was proven to be a promising approach for the characterization of antioxidant capacity of tea samples with rapid response, cost-effectiveness, and simplicity of operation.

Abstract
We have investigated the in-vitro antioxidant activity and electrochemical redox properties of a number of natural compounds (carnosol, carnosic acid, 7-ethoxyrosmanol, ursolic acid, rosmanol and ladanein) isolated from the methanolic extract of Salvia chamelaeagnea collected from the Cape floristic region, South Africa. The results from trolox equivalent antioxidant capacity (TEAC), ferric-ion reducing antioxidant parameter (FRAP) oxygen radical absorbance capacity (ORAC), as well as the inhibition of Fe2+-induced lipid peroxidation showed strong antioxidant capacities for carnosol and rosmanol. A structural analysis of the compounds suggests that multiple OH substitution, conjugation and lactone ring in carnosol and rosmanol are important determinants of the free radical scavenging activity and electrochemical behavior. Pharmacophore generated demonstrates H-donor/acceptor capabilities of the most active compounds. Rosmanol, when compared to other compounds, exhibits the lowest oxidation potential value with an anodic peak potential (Epa) value of 0.11 V, indicating that rosmanol has the highest antioxidant power, which is in good agreement with ORAC and lipid peroxidation experiments. The lipophilic nature of carnosol, carnosic acid and rosmanol enhanced their absorption and activity against oxidative stress related to the treatment of age-related diseases. These results confirm the first report on the in-vitro antioxidant and electrochemical activities of S. chamelaeagnea constituents and underline the medicinal uses of this plant as natural preservatives for skin ageing or in pharmaceutical applications.

Abstract
The issue of foodborne related illnesses due to additives and contaminants poses a significant challenge to food processing industries. The efficient, economical and rapid analysis of food additives and contaminants is therefore necessary in order to minimize the risk of public health issues. Electrochemistry offers facile and robust analytical methods, which are desirable for food safety and quality assessment over conventional analytical techniques. The development of a wide array of nanomaterials has paved the way for their applicability in the design of high-performance electrochemical sensing devices for medical diagnostics and environment and food safety. The design of nanomaterial based electrochemical sensors has garnered enormous attention due to their high sensitivity and selectivity, real-time monitoring and ease of use. This review article focuses predominantly on the synthesis and applications of different nanomaterials for the electrochemical determination of some common additives and contaminants, including hydrazine (N2H4), malachite green (MG), bisphenol A (BPA), ascorbic acid (AA), caffeine, caffeic acid (CA), sulfite (SO32-) and nitrite (NO2-), which are widely found in food and beverages. Important aspects, such as the design, fabrication and characterization of graphene-based materials, gold nanoparticles, mono- and bimetallic nanoparticles and metal nanocomposites, sensitivity and selectivity for electrochemical sensor development are addressed. High-performance nanomaterial based electrochemical sensors have and will continue to have myriad prospects in the research and development of advanced analytical devices for the safety and quality control of food and beverages.

Abstract
In the present study, well-defined one-dimensional (1D) rod-like strontium vanadate (SrV2O6) was prepared by simple hydrothermal method without using any other surfactants/templates. The successful formation of rod-like SrV2O6 was confirmed by various analytical and spectroscopic techniques. Interestingly, for the first time the dual role of as-prepared rod-like SrV2O6 were employed as an electrochemical sensor for the detection of caffeic acid (CA) as well as visible light active photocatalyst for the degradation of metronidazole (MNZ) antibiotic drug. As an electrochemical sensor, the SrV2O6 modified glassy carbon electrode (GCE) demonstrated a superior electrocatalytic activity for the detection of CA by chronoamperometry and cyclic voltammetry (CVs). In addition, the electrochemical sensor exhibited a good current response for CA with excellent selectivity, wide linear response range, lower detection limit and sensitivity of 0.01-207 µM, 4 nM and 2.064 μA μM-1cm-2, respectively. On the other hand, as-synthesized rod-like SrV2O6 showed highly efficient and versatile photocatalytic performances for the degradation of MNZ, which degrades above 98% of MNZ solution under visible light irradiation within 60 min. The obtained results evidenced that the improvement of rod-like SrV2O6 might be a resourceful electrocatalyst and photocatalyst material in the probable applications of environmental and biomedical applications.

Abstract
We reported an electrochemical determination of caffeic acid (CA) based on the nitrogen doped carbon (NDC). The described sensor material was prepared by the flame synthesis method, which gave an excellent platform for the synthesis of carbon nanomaterials with the hetero atom dopant. The synthesized material was confirmed by various physical characterizations and it was further characterized by different electrochemical experiments. The NDC modified glassy carbon electrode (NDC/GCE) shows the superior electrocatalytic performance towards the determination of CA with the wide linear concentration range from 0.01 to 350 μM. It achieves the lowest detection limit of 0.0024 μM and the limit of quantification of 0.004 μM. The NDC/GCE-CA sensor reveals the good selectivity, stability, sensitivity and reproducibility which endorsed that the NDC is promising electrode for the determination of CA. In addition, NDC modified electrode is applied to the determination of CA in red wines and acquired good results.

Abstract
Because there is no widely adopted "total antioxidant parameter" as a nutritional index for labeling food and biological fluids, it is desirable to establish and standardize methods that can measure the total antioxidant capacity (TAC) level directly from plant-based food extracts and biological fluids. In this review, we (i) present and classify the widely used analytical approaches (e.g., in vitro and in vivo, enzymatic and nonenzymatic, electron transfer (ET)- and hydrogen atom transfer (HAT)-based, direct and indirect assays) for evaluating antioxidant capacity/activity; (ii) discuss total antioxidant capacity/activity assays in terms of chemical kinetics and thermodynamics, reaction mechanisms, and analytical performance characteristics, together with advantages and drawbacks; and (iii) critically evaluate ET-based methods for analytical, food chemical, biomedical/clinical, and environmental scientific communities so that they can effectively use these assays in the correct places to meet their needs.

Abstract
A novel differential pulse voltammetric (DPV) method is presented, using a chromogenic oxidizing reagent, cupric neocuproine complex (Cu(Nc)2(2+)), for the assessment of antioxidant capacity of polyphenolic compounds (i.e., flavonoids, simple phenolic acids, and hydroxycinnamic acids), ascorbic acid, and real samples for the first time. The electrochemical behavior of the Cu(Nc)2(2+) complex was studied by cyclic voltammetry at a glassy carbon (GC) electrode. The electroanalytical method was based on the reduction of Cu(Nc)2(2+) to Cu(Nc)2(+) by antioxidants and electrochemical detection of the remaining Cu(II)-Nc (unreacted complex), the difference being correlated to antioxidant capacity of the analytes. The calibration curves of individual compounds comprising polyphenolics and vitamin C were constructed, and their response sensitivities and linear concentration ranges were determined. The reagent on the GC electrode retained its reactivity toward antioxidants, and the measured trolox equivalent antioxidant capacity (TEAC) values of various antioxidants suggested that the reactivity of the Cu(II)-Nc reagent is comparable to that of the solution-based spectrophotometric cupric ion reducing antioxidant capacity (CUPRAC) assay. This electroanalytical method better tolerated sample turbidity and provided higher sensitivity (i.e., lower detection limits) in antioxidant determination than the spectrophotometric assay. The proposed method was successfully applied to the measurement of total antioxidant capacity (TAC) in some herbal tea samples such as green tea, sage, marjoram, and alchemilla. Results demonstrated that the proposed voltammetric method has precision and accuracy comparable to those of the spectrophotometric CUPRAC assay.
