Abstract
This article summarizes the applications of biosensors and biomimetic sensors in the detection of residues in dairy products. Biosensors utilize biological molecules such as enzymes or antibodies to detect residual substances in dairy products, demonstrating high specificity and sensitivity. Biomimetic sensors, inspired by biosensors, use synthetic materials to mimic biological sensing mechanisms, enhancing stability and reproducibility. Both sensor types have achieved significant success in detecting pesticide residues, veterinary drugs, bacteria, and other contaminants in dairy products. The applications of biological and biomimetic sensors not only improve the efficiency of residue detection in dairy products but also have the potential to reduce the time and cost of traditional methods. Their specificity and high sensitivity make them powerful tools in the dairy industry, thus contributing to ensuring the quality and safety of dairy products and meeting the growing consumer demands for health and food safety.

Abstract
Small molecules are significant risk factors for causing food safety issues, posing serious threats to human health. Sensitive screening for hazards is beneficial for enhancing public security. However, traditional detection methods are unable to meet the requirements for the field screening of small molecules. Therefore, it is necessary to develop applicable methods with high levels of sensitivity and specificity to identify the small molecules. Aptamers are short-chain nucleic acids that can specifically bind to small molecules. By utilizing aptamers to enhance the performance of recognition technology, it is possible to achieve high selectivity and sensitivity levels when detecting small molecules. There have been several varieties of aptamer target recognition techniques developed to improve the ability to detect small molecules in recent years. This review focuses on the principles of detection platforms, classifies the conjugating methods between small molecules and aptamers, summarizes advancements in aptamer-based conjugate recognition techniques for the detection of small molecules in food, and seeks to provide emerging powerful tools in the field of point-of-care diagnostics.

Abstract
Mycotoxins, highly toxic and carcinogenic secondary metabolites produced by certain fungi, pose significant health risks as they contaminate food and feed products globally. Current mycotoxin detection methods have limitations in real-time detection capabilities. Aptasensors, incorporating aptamers as specific recognition elements, are crucial for mycotoxin detection due to their remarkable sensitivity and selectivity in identifying target mycotoxins. The sensitivity of aptasensors can be improved by using upconversion nanoparticles (UCNPs). UCNPs consist of lanthanide ions in ceramic host, and their ladder-like energy levels at f-orbitals have unique photophysical properties, including converting low-energy photons to high-energy emissions by a series of complex processes and offering sharp, low-noise, and sensitive near-infrared to visible detection strategy to enhance the efficacy of aptasensors for novel mycotoxin detection. This article aims to review recent reports on the scope of the potential of UCNPs in mycotoxin detection, focusing on their integration with aptasensors to give readers clear insight. We briefly describe the upconversion photoluminescence (UCPL) mechanism and relevant energy transfer processes influencing UCNP design and optimization. Furthermore, recent studies and advancements in UCNP-based aptasensors will be reviewed. We then discuss the potential impact of UCNP-modified aptasensors on food safety and present an outlook on future directions and challenges in this field. This review article comprehensively explains the current state-of-the-art UCNP-based aptasensors for mycotoxin detection. It provides insights into potential applications by addressing technical and practical challenges for practical implementation.

Abstract
A novel ratiometric electrochemical aptasensor based on split aptamer and Au-reduced graphene oxide (Au-rGO) nanomaterials was proposed to detect aflatoxin M1 (AFM1). In this work, Au-rGO nanomaterials were coated on the electrode through the electrodeposition method to increase the aptamer enrichment. We split the aptamer of AFM1 into 2 sequences (S1 and S2), where S1 was immobilized on the electrode due to the Au-S bond, and S2 was tagged with methylene blue (MB) and acted as a response signal. A complementary strand to S1 (CS1) labeled with ferrocene (Fc) was introduced as another reporter. In the presence of AFM1, CS1 was released from the electrode surface due to the formation of the S1-AFM1-S2 complex, leading to a decrease in Fc and an increase in the MB signal. The developed ratiometric aptasensor exhibited a linear range of 0.03 μg L-1 to 2.00 μg L-1, with a detection limit of 0.015 μg L-1 for AFM1 detection. The ratiometric aptasensor also showed a linear relationship from 0.2 μg L-1 to 1.00 μg L-1, with a detection limit of 0.05 μg L-1 in natural milk after sample pretreatment, indicating the successful application of the developed ratiometric aptasensor. Our proposed strategy provides a new way to construct aptasensors with high sensitivity and selectivity.

Abstract
Plastic waste is a pernicious environmental pollutant that threatens ecosystems and human health by releasing contaminants including di(2-ethylhexyl) phthalate (DEHP) and bisphenol A (BPA). Therefore, a machine-learning (ML)-powered electrochemical aptasensor was developed in this study for simultaneously detecting DEHP and BPA in river waters, particularly to minimize the electrochemical signal errors caused by varying pH levels. The aptasensor leverages a straightforward and effective surface modification strategy featuring gold nanoflowers to achieve low detection limits for DEHP and BPA (0.58 and 0.59 pg/mL, respectively), excellent specificity, and stability. The least-squares boosting (LSBoost) algorithm was introduced to reliably monitor the targets regardless of pH; it employs a layer that adjusts the number of multi-indexes and the parallel learning structure of an ensemble model to accurately predict concentrations by preventing overfitting and enhancing the learning effect. The ML-powered aptasensor successfully detected targets in 12 river sites with diverse pH values, exhibiting higher accuracy and reliability. To our knowledge, the platform proposed in this study is the first attempt to utilize ML for the simultaneous assessment of DEHP and BPA. This breakthrough allows for comprehensive investigations into the effects of contamination originating from diverse plastics by eliminating external interferent-caused influences.

Abstract
Food contaminants represent possible threats to humans and animals as severe food safety hazards. Prolonged exposure to contaminated food often leads to chronic diseases such as cancer, kidney or liver failure, immunosuppression, or genotoxicity. Aflatoxins are naturally produced by strains of the fungi species Aspergillus, which is one of the most critical and poisonous food contaminants worldwide. Given the high percentage of contaminated food products, traditional detection methods often prove inadequate. Thus, it becomes imperative to develop fast, accurate, and easy-to-use analytical methods to enable safe food products and good practices policies. Focusing on the recent progress (2018-2023) of electrochemical aptasensors for aflatoxin B1 (AFB1) detection in food and beverage samples, without pretending to be exhaustive, we present an overview of the most important label-free and labeled sensing strategies. Simultaneous and competitive aptamer-based strategies are also discussed. The aptasensors are summarized in tabular format according to the detection mode. Sample treatments performed prior analysis are discussed. Emphasis was placed on the nanomaterials used in the aptasensors' design for aptamer-tailored immobilization and/or signal amplification. The advantages and limitations of AFB1 electrochemical aptasensors for field detection are presented.

Abstract
Herein, a sensitive and selective electrochemical sensor based on aptamer folding was constructed to detect aflatoxin B1 (AFB1) in peanuts. Specifically, polyethylenimine-functionalized multiwalled carbon nanotubes modified with molybdenum disulfide (MoS2@MWCNTs-PEI) were used as the electrode matrix to enable a large specific surface area, which were characterized by the Randles-Sevcik equation. Additionally, AuNPs were used to immobilize the aptamer via the Au-S covalent bond and provide a favorable microenvironment for signal enhancement. Methylene blue (MB) was modified at the proximal 3' termini of the aptamer as the capture probe, while the signal transduction of the sensor was obtained through changes in conformation and position of MB induced by the binding between AFB1 and the probe. Changes in spatial conformation could be recorded by electrochemical methods more readily. This electrochemical aptasensor demonstrated remarkable sensitivity to AFB1 with an extensive detection range (1 pg/mL to 100 ng/mL) and a lower limit detection (1.0 × 10-3 ng/mL). Moreover, using the constructed aptasensor, AFB1 was identified successfully in peanut samples, with recoveries ranging from 95.83 to 107.53%, illustrating its potential use in determining AFB1 in food.

Abstract
Aptamers with strong affinity to heavy metal ions (HMIs) allow fabrication of electrochemical sensors with high selectivity and sensitivity, while controllable regulation of aptamer-HMI recognition at the sensing interface, which is vital for better analytical performance, remains challenging. Here, an electric field-based strategy for engineering an aptasensing interface was proposed to realize the specific preconcentration and accurate detection of mercury (Hg2+) and lead (Pb2+) ions with a ratiometric electrochemical sensor. The working principle is to apply an electric field to drive HMIs to approach the aptamer and retain the orientation of the DNA structure. Anthraquinone-2-carboxylic acid (AQ)-labeled complementary DNA was designed to simultaneously bind a ferrocene (Fc)-labeled aptamer for Hg2+ and a methylene blue (MB)-labeled aptamer for Pb2+, and the sensing interface was fabricated with this presynthesized DNA structure. For preconcentration, an electric field of 3.0 V pushed HMIs to approach the aptamer and retained the orientation of DNA to favor the following recognition; for detection, the oriented DNA in 2.5 V electric field offered a stable current of AQ as a reference. In this way, currents of AQ, Fc and MB were used to produce ratiometric signals of IAQ/IFc and IAQ/IMB for Hg2+ and Pb2+, respectively. Such a strategy allowed the simultaneous detection of Hg2+ and Pb2+ within 30 min with detection limits of 0.69 pM and 0.093 pM, respectively. The aptasensor was applied for soil, water, and crayfish analysis in paddy fields. The electric field-enabled strategy offers a new way to fabricate high-performance electrochemical aptasensor for HMIs detection.

Abstract
AFB1 (Aflatoxin B1) contamination is becoming a global concern issue due to its extraordinary occurrence, severe toxicity, as well as the great influence on the economic losses, food safety and environment. Therefore, it is desirable to develop novel analytical techniques for simple, rapid, accurate, and even point-of-care testing of AFB1. Fortunately, aptamer, considered as a new generation bioreceptor and even superior to classic antibody and enzyme, has been emerged remarkable application in food hazards detection. Correspondingly, aptasensors have been well-established toward AFB1 determination with outstanding performance. In this article, we first discuss and summarize the recent progress in optical and electrochemical aptasensors to monitor AFB1 over the past three years. In particular, the embedding of advanced nanomaterials for their improved analytical performance is highlighted. Furthermore, the critical analysis on various signal transduction strategies for aptasensors construction is discussed. Finally, we reveal the challenges and provide our opinion in future opportunities for aptasensor development.

Abstract
The public health problem caused by mycotoxins contamination has received a great deal of attention worldwide. Mycotoxins produced by filamentous fungi widely distributed in foodstuffs can cause adverse impacts on humans and livestock, posing serious health threats. Particularly worth mentioning is that mycotoxins can accumulate in organisms and be enriched through the food chain. Improving early trace detection and control from the source is a more desirable approach than the contaminated food disposal process to ensure food safety. Conventional sensors are susceptible to interference from various components in intricate food matrices when detecting trace mycotoxins. The application of ratiometric sensors avoids signal fluctuations, and reduce background influences, which casts new light on developing sensors with superior performance. This work is the first to provide an overview of the recent progress of ratiometric sensors in the detection of mycotoxins in intricate food matrices, and highlight the output types of ratiometric signal with respect to accurate quantitative analysis. The prospects of this field are also included in this paper and are intended to have key ramifications on the development of sensing detection conducive to food safety.

Abstract
An AFB1-responsive aptamer-cross-linked hydrogel sensor was successfully constructed. Dual signal amplification strategy with Encapsulation of enzymesand exonuclease I. This method has great potential for AFB1 detection in peanut oil. The accuracy and consistency repeatability of this method are close to those of UPLC-HRMS.
For the on-site detection of aflatoxin B1 (AFB1), a DNA hydrogel was prepared as a biosensor substrate, while an AFB1 aptamer was used as the recognition element. An AFB1-responsive aptamer-cross-linked hydrogel sensor was constructed using an enzyme-linked signal amplification strategy; AFB1 binds competitively to the aptamer, causing the hydrogel to undergo cleavage and release horseradish peroxidase (HRP). The addition of exonuclease I (ExoI) to the hydrogel causes the release of AFB1 from the aptamer, promoting additional hydrogel cleavage to release more HRP, ultimately catalysing the reaction between 3,3′,5,5′-tetramethylbenzidine and H2O2. The hydrogel sensor exhibited an outstanding sensitivity (limit of detection, 4.93 nM; dynamic range, 0–500 nM), and its selectivity towards seven other mycotoxins was confirmed. The feasibility and reliability were verified by measuring the AFB1 levels in peanut oil (recoveries, 89.59–95.66 %; relative standard deviation, <7%); the obtained results were comparable to those obtained by UPLC-HRMS.

Abstract
Accepting the fact that there is a huge number of virus particles in food that lead to several infectious diseases, eliminating of the foodborne virus from food is tangible. In 2020, the appearance of new SARS-CoV-2 variants had remarked the importance of food safety in our lives. Detection virus is a dynamic domain. Recently, many papers have tried to detect several foodborne viruses by using conventional sensing platforms including ELISA (enzyme-linked immunosorbent assay), PCR (polymerase chain reaction-based methods) and NASBA (nucleic acid sequence-based amplification). However, small sizes, low infective doses and discrete distribution of the foodborne virus have converted these microorganisms into the most challengeable pathogen in the food samples matrix. Foodborne virus detection exploiting aptamer-based biosensors has attracted considerable attention toward the numerous benefits of sourcing from aptamers in which a variety of viruses could be detected by conjugation of aptamer-virus. The development of multiple sensing methodologies and platforms in terms of aptasensor application in real food and environment samples has demonstrated promising results. In this review, we present the latest developments in myriad types of aptasensors (including electrochemical, optical and piezoelectric aptasensor) for the quantification of foodborne viruses. Working strategies, benefits and disadvantages of these platforms are argued.

Abstract
Aflatoxin B1 (AFB1), one of the most common mycotoxins in food matrixes, has been identified as the most toxic contaminant with mutagenic, teratogenic, immunosuppressive, and carcinogenic effects. In this study, an electrochemical aptamer sensor was developed for the on-site detection of AFB1. Carboxylated graphene oxide (COOH–GO) and carboxylated multi-walled carbon nanotubes (COOH–MWNT) nanocomposites, dopamine polymers (pDA) and gold nanoparticles (AuNPs) were used to enhance the electrochemical activity and the biocompatibility of the screen-printed electrodes (SPE). Once AFB1 was captured by the aptamer immobilized on the electrode surface, the redox current of [Fe(CN)6]3−/4− decreased. Therefore, the binding of aptamer (Apt) and AFB1 can be reflected by the change of the peak current. The as-prepared sensor showed a wide detection range of 0.1 fg ml−1–100 pg ml−1 and a low detection limit of 15.16 ag ml−1. It is also simple and low-cost, which shows great potential in practical application. A novel COOH–GO–COOH–MWNT/pDA/AuNPs based electrochemical aptasensor was developed for detection of AFB1.![]()
