Abstract
The quality of meat can differ between grazing and feedlot yaks. The present study examined whether spectral fingerprints by visible and near-infrared (Vis-NIR) spectroscopy and chemo-metrics could be employed to identify the meat of grazing and feedlot yaks. Thirty-six 3.5-year-old castrated male yaks (164 ± 8.38 kg) were divided into grazing and feedlot yaks. After 5 months on treatment, liveweight, carcass weight, and dressing percentage were greater in the feedlot than in grazing yaks. The grazing yaks had greater protein content but lesser fat content than feedlot yaks. Principal component analysis (PCA) was able to identify the meat of the two groups to a great extent. Using either partial least squares discriminant analysis (PLS-DA) or the soft independent modeling of class analogies (SIMCA) classification, the meat could be differentiated between the groups. Both the original and processed spectral data had a high discrimination percentage, especially the PLS-DA classification algorithm, with 100% discrimination in the 400-2500 nm band. The spectral preprocessing methods can improve the discrimination percentage, especially for the SIMCA classification. It was concluded that the method can be employed to identify meat from grazing or feedlot yaks. The unerring consistency across different wavelengths and data treatments highlights the model's robustness and the potential use of NIR spectroscopy combined with chemometric techniques for meat classification. PLS-DA's accurate classification model is crucial for the unique evaluation of yak meat in the meat industry, ensuring product traceability and meeting consumer expectations for the authenticity and quality of yak meat raised in different ways.

Abstract
Simple Summary The milk production systems in goats are mainly intensive and semi-extensive. In the former, the goats are housed and are fed a total mixed ration with vitamin supplementation. In the latter, the feeding of the goats is based on grazing, although with some supplementation with compound feed. Retinol and α-tocopherol that appear in these animals come from the feeding regime, since the animal cannot synthesize them. The objective of this study was to verify if the vitamins provided in different management systems of Payoya lactating goats are good markers of the production system. For this purpose, the content of carotenoids, retinol and α-tocopherol in the milk and plasma of the goats was quantified. Results showed an inverse relationship of the amount of these vitamins between milk and plasma. On the other hand, the metabolism of different vitamins depends on their origin (natural/synthetic), with natural α-tocopherol and synthetic retinol showing the highest amount in milk. Finally, it was found that these compounds can be good traceability tools which allows to guaranty to the consumer the origin of the products derived from these animals. Abstract The retinol and α-tocopherol concentrations were quantified (μg/mL) using high-performance liquid chromatography (HPLC) in both plasma and milk of goats from three management systems. The aim was to investigate if the compounds pass from feed to animals’ fluids and to evaluate their potential use as feeding regime biomarkers. A total of 45 Payoya dams were distributed in three groups according to management system during the first month of lactation: mountain grazing (MG), cultivated meadow (CM) and total mixed ration (TMR). TMR group had higher concentrations of retinol in both plasma (25.92 ± 3.61 at 30 days postpartum) and milk (8.26 ± 0.79 at 10 days postpartum), and they were also the unique animals whose milk contained detectable concentrations of α-tocopherol (3.15 ± 0.19 at parturition). However, MG and CM goats showed higher plasma concentrations of α-tocopherol (64.26 ± 14.56 and 44.65 ± 5.75 at 30 days postpartum, respectively). These results could imply differences in the bioavailability of supplemented vitamin A and natural β-carotene and between the natural/synthetic forms of α-tocopherol. An inverse relationship between the fluids (plasma/milk) in the contents of α-tocopherol and retinol was observed as lactation progressed. Since 80% of the animals were correctly classified using a discriminant analysis based on these vitamins, these compounds could be used as traceability biomarkers of feeding system, but further studies are necessary to know the possible passage to kid meat.

Abstract
This study evaluated visible and near-infrared spectroscopy (Vis-NIRS) to authenticate barley-finished beef using different discrimination approaches. Dietary grain source (barley, corn, or blend-50% barley/50% corn) did not affect (P > 0.05) meat quality but influenced (P < 0.05) fatty acid profiles. The longissimus thoracis (LT) from barley-fed steers had lower n-6 fatty acid content and n-6/n-3 ratio compared to LT from corn and blended grain-fed steers. Vis-NIRS coupled with partial least square discriminant analysis (PLS-DA) and support vector machine in the linear (L-SVM) kernel classified with approximately 70% overall accuracy subcutaneous fat and intact LT samples, respectively, from barley, corn, and blended-fed cattle. When only barley and corn samples were considered, fat and intact LT samples were correctly classified with overall accuracy >94% with PLS-DA and radial/L-SVM, and approximately 90% with PLS-DA and L-SVM, respectively. Ground LT samples were classified with ≤70% overall accuracy. Vis-NIRS measurements on fat and intact LT have potential to discriminate between corn and barley-fed beef.

Abstract
The aim of this experiment was to study the effect of total replacement of oat hay by rosemary distillation residues (RR) on growth, carcass characteristics and meat quality of Barbarine lambs. A total of 21 lambs were divided into three groups. The control group (C) was offered 600 g of oat hay; the RR87 and RR60 groups received 600 g of pellets containing 87% and 60% of RR, respectively. The CP content was 9% and 14% for RR87 and RR60, respectively. All animals were supplemented by 600 g of concentrate. After 77 days of fattening, lambs were slaughtered. The DM and CP intakes were significantly increased with RR diets. The average daily gain was higher (P<0.001), while the feed conversion rate was lower for RR60 and RR87 than C group. The dressing percentage was similar for all groups. The tissular (muscle, fat and bone) and the regional (leg, shoulder, etc.) carcass composition did not differ among groups. The bony organs and gut weights were similar among groups, while functional ones (skin, liver, kidney and testicles) were significantly heavier for both RR groups than control. The ultimate pH, water cooking loss and color variables were similar among groups and the chemical composition (protein, fat, myoglobin, collagen and iron) did not differ also among groups. These results revealed the opportunity of RR use in fattening lambs without adverse effects on carcass and meat characteristics. Moreover, 9% CP in RR pellets are enough given the same growth performance recorded as that of RR with 14% CP.

Abstract
Since consumers are showing increased interest in the origin and method of production of their food, it is important to be able to authenticate dietary history of animals by rapid and robust methods used in the ruminant products. Promising breakthroughs have been made in the use of spectroscopic methods on fat to discriminate pasture-fed and concentrate-fed lambs. However, questions remained on their discriminatory ability in more complex feeding conditions, such as concentrate-finishing after pasture-feeding. We compared the ability of visible reflectance spectroscopy (Vis RS, wavelength range: 400 to 700 nm) with that of visible-near-infrared reflectance spectroscopy (Vis-NIR RS, wavelength range: 400 to 2500 nm) to differentiate between carcasses of lambs reared with three feeding regimes, using partial least square discriminant analysis (PLS-DA) as a classification method. The sample set comprised perirenal fat of Romane male lambs fattened at pasture (P, n = 69), stall-fattened indoors on commercial concentrate and straw (S, n = 55) and finished indoors with concentrate and straw for 28 days after pasture-feeding (PS, n = 65). The overall correct classification rate was better for Vis-NIR RS than for Vis RS (99.0% v. 95.1%, P < 0.05). Vis-NIR RS allowed a correct classification rate of 98.6%, 100.0% and 98.5% for P, S and PS lambs, respectively, whereas Vis RS allowed a correct classification rate of 98.6%, 94.5% and 92.3% for P, S and PS lambs, respectively. This study suggests the likely implication of molecules absorbing light in the non-visible part of the Vis-NIR spectra (possibly fatty acids), together with carotenoid and haem pigments, in the discrimination of the three feeding regimes.

Abstract
This work aimed to identify a combination of isotopic and molecular biomarkers in bovine muscle and adipose tissue for authentication of the diet of beef cattle. Muscle and adipose tissue samples were collected from animals one of four dietary treatments fed over a 1 year period : pasture (P), barley-based concentrate (C), silage followed by pasture (SiP) or silage followed by pasture with concentrate (SiPC). In total, 83 variables were studied including volatile compounds, colour and reflectance measurements, stable isotope ratios, fatty acids, β-carotene, lutein and α-tocopherol. Chemometric models were created for each dietary treatment using the entire and an attenuated variable set. Meat from each dietary treatment was identified with a high level of accuracy (correct classification between 90.8% and 100%) using a discriminant approach. After elimination of insignificant variables, accuracy was maintained or marginally improved. SIMCA class-modelling performed moderately well, especially with the reduced variable set (76.1-100% correct classification).

Abstract
This study was conducted to investigate the pattern of plasma carotenoid concentration (PCC) in lambs switching from a low to a high dietary carotenoid level. A total of 12 Romane lambs were individually penned indoors and fed a low dietary carotenoid level for 23 days (period 1) and then a high dietary carotenoid level for 15 days (period 2). At the beginning of period 2, the lambs were 15 weeks old and weighed 29.9 kg (s.d. 2.7) on average. Lambs were fed daily (dry matter) 0.558 kg alfalfa pellets, 0.181 kg straw and 0.181 kg barley. Plasma content of total carotenoids was measured daily in period 2 by spectrophotometry. PCC (μg/l) varied with the animal (P < 0.001) and with time elapsed since the beginning of alfalfa distribution (P < 0.001). Mean PCC was 8 μg/l (s.d. 3.3) at the beginning of period 2, then increased curvilinearly with the time elapsed since the beginning of alfalfa distribution. As early as 24 h on the alfalfa diet, PCC was already higher than before the switch (P < 0.001). Mean PCC continued to increase until day 6 on average and reached a plateau thereafter. We propose a monomolecular function to model this pattern, the equation obtained on the mean data being: PCC = 97 (s.e. 2.2) × (1-exp(-0.3378 (s.e. 0.0282)×d)), where r2 = 0.997, r.s.d. = 4.47, n = 15 and d = day. The percentage of variance explained by the model ranged between 95.9% and 99.2%, depending on the animal. The parameters of the monomolecular function varied among animals, confirming the interindividual variability in animal response. Plateau for PCC was reached slightly earlier for the six lambs with the lowest values of the asymptote than for the six lambs with the highest values of the asymptote.

Abstract
The development of analytical methods to verify the production system of meat products requires the identification of biomarkers that can trace the product's origin, and secondly the factors that govern the deposition of these markers in animal tissue need to be defined. In this study, 2,3-octanedione, skatole and terpenes were selected as biomarkers, and their deposition was investigated in bull calves reared under three different strategies. All of the animals were reared indoors until approximately 150 days of age. They were suckled twice a day by their mothers, and both calves and cows had free access to cocksfoot hay. Then the first two groups of animals were kept indoors, suckled by their mothers twice a day and received either cocksfoot hay (HL) or freshly cut-green herbage (GL) and a limited quantity of concentrate. The third group of calves (PH) was kept on pasture with their mothers and offered concentrate ad libitum. The pasture supporting the PH animals was highly diversified, containing several terpene-rich plant species, whereas the herbage for the GL animals contained no species known to be aromatic. Perirenal and subcutaneous adipose tissues were analysed for volatile compounds. The perirenal fat was found to be more responsive to the treatment and a more reliable substrate than the subcutaneous adipose tissue. Higher levels of 2,3-octanedione (P < 0.05) were found in PH and GL than in HL fat (6.56, 6.51 and 5.77 area arbitrary units, respectively, in perirenal fat), confirming the ability of this molecule to trace green herbage feeding. Skatole was detected in the perirenal and subcutaneous fat of all the animals. Animals receiving high concentrate level (PH group) presented lower (P < 0.05) skatole values (5.83 area arbitrary units in perirenal fat) than animals receiving low concentrate level (HL and GL groups, 6.23 and 6.71 area arbitrary units, respectively, in perirenal fat). Terpenoids, and especially sesquiterpenes, were found at higher levels and diversities in the PH than in the GL and HL animals. Two monoterpenoids allowed group discrimination considering perirenal or subcutaneous fat without distinction, whereas 11 and 5 sesquiterpenoids from perirenal and subcutaneous fat, respectively, allowed it.

Abstract
This study investigated the changes in fat reflectance spectrum characteristics and color in lambs switched from a low to a high dietary carotenoid level for various durations before slaughter. Six treatments, feeding a high dietary carotenoid level for 0, 15, 30, 45, 60 or 75 days before slaughter, were compared in individually indoor penned lambs. Each treatment used 10 Romane lambs; feeding management ensured similar growth pattern and carcass weight for all the treatment groups. There was a change in reflectance spectrum characteristics and yellowness of subcutaneous fat as early as 15 days after the switch. Mean concentration of carotenoid pigments and yellowness of subcutaneous fat increased linearly with the duration of the high dietary carotenoid level. In perirenal fat, the change in reflectance spectrum characteristics was observed as early as 15 days after the switch, but the response to the duration of the high dietary carotenoid level was curvilinear.

Abstract
Eighteen Parda de Montaña steers (366 kg liveweight, 10 months of age) received diets of either forage (F; lucerne hay + straw) or forage and concentrate (FC; lucerne hay + straw + barley) during the winter feeding period, which lasted 118 days. Thereafter, steers continuously grazed in meadows in a dry mountain area until the end of the grazing period in September (160–167 days) and received 4.1 kg DM barley per head for the final 103–110 days of the grazing season. The steers that received the FC winter diet were heavier (491 vs 457 kg, respectively; P < 0.05) and had deposited more fat (7.2 vs 5.8 mm, P < 0.05) and muscle (63 vs 54 mm, P < 0.05) at the end of the winter than the steers that received the F winter diet. During the grazing period, the steers from both groups had similar weight gains (0.728 and 0.756 kg/day for FC and F diet, respectively). At slaughter, the steers from both groups were of similar age (590 vs 599 days, for FC and F diet, respectively) and had similar liveweights (560 vs 539 kg), muscle depths (54 vs 63 mm) and subcutaneous fat thicknesses (7.3 vs 7.2 mm). The serum leptin concentration differed only at the end of the winter period, when steers on the FC diet had higher leptin concentrations than did steers on the F diet (P < 0.05), reflecting differences in fatness. The carotenoid concentration in the plasma during the winter feeding period was higher in steers on the F than on the FC winter diet, but this difference was not seen during the grazing period. Carcasses from steers on the FC winter diet were heavier (324 vs 300 kg; P < 0.05) and had a higher dressing percentage (57.3% vs 56.1%, P < 0.05) than those reared on the F winter diet, but the fatness and conformation scores were similar between the groups. The percentages of fat, muscle and bone in the commercial dissection and 10th rib dissection did not differ between the winter diet groups. In conclusion, the differences resulting from the winter feeding period disappeared after the grazing period, and the carcass quality did not differ between the diets. Therefore, both strategies are equally technically advisable.

Abstract
Three fattening systems were evaluated from weaning to slaughter in order to find alternatives to grain feeding in young bulls, and to test the reliability of carcass subcutaneous fat colour to discriminate among them. After weaning (224 kg), one group of animals was fed concentrates and straw until they reached the target slaughter weight (450 kg; Feedlot), another group grazed rotationally on lucerne supplemented with 1.8 kg DM/day barley until slaughter (LUC), and the third group had the same management as LUC animals for 3 months (period 1) and thereafter was finished on concentrates and straw until slaughter (period 2; LUC + Feedlot). Animals were weighed weekly and sampled monthly for serum IGF-I and leptin, and plasma non-esterified fatty acids and carotenoid pigment concentration analyses. Carcass characteristics and subcutaneous fat colour were recorded after slaughter. In period 1, Feedlot animals had slightly greater weight gains than their grazing counterparts (P < 0.10), and at the end of period 1 they had 66% greater IGF-I and 35% greater leptin concentration (P < 0.01). Plasma carotenoid pigments were undetectable in Feedlot animals, but increased during grazing in LUC and LUC + Feedlot treatments. In period 2, weight gains were lowest for LUC, intermediate for Feedlot and greatest for LUC + Feedlot animals (P < 0.001), conditioning the time taken to reach slaughter weight (73, 58 and 47 days, respectively; P < 0.05). Leptin and IGF-I concentrations increased in all management systems during period 2. Plasma carotenoid pigment concentration reached its maximum at the end of period 2 in LUC animals, but it decreased sharply in LUC + Feedlot animals in this period. Management did not affect carcass traits except for subcutaneous fat colour. Yellowness, Chroma (C*) and the value of the integral of the translated reflectance spectrum (SUM), estimator of carotenoid pigment content in fat, were higher in LUC than in LUC + Feedlot and Feedlot animals (P < 0.001). Two logistic regressions were obtained to discriminate carcasses from LUC treatment: P (LUC) = (1 + e(18.8-5.6 × lightness-36.9 × redness + 0.3 × SUM + 29.8 × C*))(-1) and LUC + Feedlot treatment: P (LUC + Feedlot)=(1 + e(833.7-11.8 × lightness + 4.7 × redness + 0.2 × SUM-2.5 × C*))(-1). The economic margin, calculated as income achieved minus costs, was greatest for LUC, intermediate for LUC + Feedlot and lowest for Feedlot treatment. Therefore, grazing lucerne supplemented with barley was an interesting alternative for fattening young bulls in these conditions, producing carcasses of similar quality, which could be accurately traced by measuring subcutaneous fat colour.

Abstract
This study was aimed at determining whether isotopic ratio mass spectrometry (IRMS) enables us to discriminate between lambs fed herbage or concentrate, both obtained from C(3) plants, and those fed a concentrate obtained from C(4) plants. Thirty-four Comisana male lambs (age 45 days) were assigned to three feeding treatments. Fourteen lambs were fed vetch (Vicia sativa) ad libitum. Another fourteen lambs received a barley-based concentrate. The remaining six lambs were fed a maize-based concentrate. After 60 days of experimental treatment the animals were slaughtered and the wool, perirenal fat and muscle longissimus dorsi were sampled. The delta(13)C and delta(15)N values of the muscle, wool and feed were measured by continuous flow elemental analysis (CF-EA)-IRMS. The delta(13)C of the fat was determined likewise. The isotopic composition of the tissues reflected that of the three diets. For the lambs which were fed herbage the muscle delta(13)C values were higher (P < 0.0005) and delta(15)N values were lower (P < 0.0005) than those of the lambs receiving concentrates. The delta(15)N and delta(13)C values in the muscle and delta(13)C values in the adipose tissue allowed perfect discrimination between the lambs fed the three different diets. The regression between the delta(13)C values measured in muscle and in wool of lambs was linear (R(2) = 0.99; P < 0.0005). This result shows that delta(13)C measured in the wool can predict muscle delta(13)C distribution, suggesting that wool is a valuable matrix for meat authentication.

Abstract
This study was conducted to describe the dose-response curve relating the concentration of carotenoid pigments in plasma and reflectance spectrum characteristics of fat to the carotenoid intake level in sheep, and to investigate the extent to which incorporation of dehydrated alfalfa in the diet affects the reliability of the discrimination between concentrate-fed and pasture-fed lambs based on these measurements. In Exp. 1, 6 treatments were compared in individually penned lambs: feeding 0, 250, 500, 750, 1,000, or 1,250 g/d of dehydrated alfalfa for 60 d before slaughter. Each treatment (T0 to T1,250) consisted of 8 male Romanov x Berrichon lambs with an initial average BW of 24.8 kg (SD 2.6). All lambs received straw for ad libitum intake and T0 to T1,000 lambs received a concentrate free of green vegetative matter in amounts to produce similar ADG in all treatments. In Exp. 2, 33 male Romanov x Berrichon lambs grazed a natural pasture maintained in a leafy green vegetative stage for at least 59 d before slaughter. Initial BW when turning out to pasture was 14.2 kg (SD 2.3). Plasma carotenoid concentration was measured at slaughter by spectrophotometry. Reflectance spectrum, lightness, redness, and yellowness were measured after 24 h of shrinkage in subcutaneous caudal and perirenal fat. The spectra were translated to 0 reflectance at 510 nm, and the integral of the translated spectrum was calculated between 450 and 510 nm (i.e., the range of light absorption by carotenoids). Reflectance measurement was replicated 5 times, from which we calculated the absolute value of the mean integral (AVMI). In Exp. 1, plasma carotenoid concentration at slaughter (PCCS) increased linearly with mean daily carotenoid intake (P < 0.01). Both subcutaneous caudal and perirenal fat AVMI increased linearly (P < 0.01) with mean daily carotenoid intake and PCCS, the slopes of the regressions being greater for perirenal than for subcutaneous caudal fat. The mean PCCS was greater for lambs of Exp. 2 than for lambs on any treatment of Exp. 1 (P < 0.01). We established the dose-response curves relating PCCS and AVMI of subcutaneous and perirenal fat to carotenoid intake level. The combined use of PCCS and of perirenal fat AVMI enabled discrimination of pasture-fed lambs of Exp. 2 from the lambs of Exp. 1 that received up to 500 g/d of dehydrated alfalfa.
