Abstract
Food analysis plays a critical role in assessing human health risks and monitoring food quality and safety. Currently, there is a pressing need for a reliable, portable, and quick recognition element for point-of-care testing (POCT) to better serve the demands of on-site food analysis. Aptamer-modified paper-based analytical devices (Apt-PADs) have excellent characteristics of high portability, high sensitivity, high specificity, and on-site detection, which have been widely used and concerned in the field of food safety. The article reviews the basic components and working principles of Apt-PADs, and introduces their representative applications detecting food hazards. Finally, the advantages, challenges, and future directions of Apt-PADs-based sensing performance are discussed, to provide new directions and insights for researchers to select appropriate Apt-PADs according to specific applications.

Abstract
As a common raw material of industrial products, bisphenol A (BPA) is widely used in the production of food contact materials, and there is a high risk of exposure in food. However, BPA is a well-known endocrine disruptor and poses a serious threat to human health. Herein, a fluorescent sensing platform of BPA based on enzymatic oxidation-mediated fluorescence quenching of silicon nanoparticles (SiNPs) is established and used to the detection of BPA in food species. The SiNPs are prepared with a facile one-step synthesis and emit bright green fluorescence. BPA can be oxidized by horseradish peroxidase (HRP) and hydrogen peroxide (H2O2) to form a product which can quench the fluorescence of SiNPs through electron transfer. There is a good linear relationship between the fluorescence intensity and BPA concentration in the range of 1-100 μM. Therefore, a fluorometry of BPA is established with a low limit of detection (LOD) of 0.69 μM. This method has been applied to the determination of BPA in mineral drinking water, orange juice, and milk with satisfactory results. The fluorescent sensor of BPA based on SiNPs has favorable application foreground in the field of food safety analysis.

Abstract
The misuse of chemicals in agricultural systems and food production leads to an increase in contaminants in food, which ultimately has adverse effects on human health. This situation has prompted a demand for sophisticated detection technologies with rapid and sensitive features, as concerns over food safety and quality have grown around the globe. The rare earth ion-doped upconversion nanoparticle (UCNP)-based sensor has emerged as an innovative and promising approach for detecting and analyzing food contaminants due to its superior photophysical properties, including low autofluorescence background, deep penetration of light, low toxicity, and minimal photodamage to the biological samples. The aim of this review was to discuss an outline of the applications of UCNPs to detect contaminants in food matrices, with particular attention on the determination of heavy metals, pesticides, pathogenic bacteria, mycotoxins, and antibiotics. The review briefly discusses the mechanism of upconversion (UC) luminescence, the synthesis, modification, functionality of UCNPs, as well as the detection principles for the design of UC biosensors. Furthermore, because current UCNP research on food safety detection is still at an early stage, this review identifies several bottlenecks that must be overcome in UCNPs and discusses the future prospects for its application in the field of food analysis.

Abstract
Nitrite (NO2-) is extensively found in the daily dietary environment. However, consuming too much NO2- can pose serious health risks. Thus, we designed a NO2--activated ratiometric upconversion luminescence (UCL) nanosensor which could realize NO2- detection via the inner filter effect (IFE) between NO2--sensitive carbon dots (CDs) and upconversion nanoparticles (UCNPs). Due to the exceptional optical properties of UCNPs and the remarkable selectivity of CDs, the UCL nanosensor exhibited a good response to NO2-. By taking advantage of NIR excitation and ratiometric detection signal, the UCL nanosensor could eliminate the autofluorescence thereby increasing the detection accuracy effectively. Additionally, the UCL nanosensor proved successful in detecting NO2- quantitatively in actual samples. The UCL nanosensor provides a simple as well as sensitive sensing strategy for NO2- detection and analysis, which is anticipated to extend the utilization of upconversion detection in food safety.

Abstract
Engineering efficient dual-mode portable sensor with built-in cross reference correction is of great significance for onsite reliable and precise detection of organophosphorus pesticides (OPs) and evading the false-positive outputs, especially in emergency case. Currently, most nanozyme-based sensors for OPs monitoring primarily replied on the peroxidase-like activity, which involved unstable and toxic H2O2. In this scenario, a hybrid oxidase-like 2D fluorescence nanozyme (PtPdNPs@g-C3N4) was yielded by in situ growing PtPdNPs in the ultrathin two-dimensional (2D) graphitic carbon nitride (g-C3N4) nanosheet. When acetylcholinesterase (AChE) hydrolyzed acetylthiocholine (ATCh) to thiocholine (TCh), it ablated O2-• from the dissolved O2 catalyzed by PtPdNPs@g-C3N4's oxidase-like activity, hampering the oxidation of o-phenylenediamine (OPD) into 2,3-diaminophenothiazine (DAP). Consequently, with the increasing concentration of OPs which inhibited the blocking effect by inactivating AChE, the produced DAP caused an apparent color change and a dual-color ratiometric fluorescence change in the response system. Through integrating into a smartphone, a H2O2-free 2D nanozyme-based onsite colorimetric and fluorescence dual-mode visual imaging sensor for OPs was proposed with acceptable results in real samples, which holds vast promise for further development of commercial point-of-care testing platform in early warning and controlling of OPs pollution for safeguarding environmental health and food safety.

Abstract
Near-infrared-excited upconversion nanoparticles (UCNPs) have multicolor emissions, a low auto-fluorescence background, a high chemical stability, and a long fluorescence lifetime. The fluorescent probes based on UCNPs have achieved great success in the analysis of different samples. Here, we presented the research results of UCNPs probes utilized in analytical applications including environment, biology, food and medicine in the last five years; we also introduced the design and construction of upconversion optical sensing platforms. Future trends and challenges of the UCNPs used in the analytical field have also been discussed with particular emphasis.

Abstract
An innovative strategy with target-triggered cascade fluorescence recovery of a dual-nanoquencher system was developed to detect ascorbic acid (AA). Herein, manganese dioxide (MnO2) nanosheets and gold nanoparticles (AuNPs) were used as nanoquenchers simultaneously. Owing to their synergistic effects, the fluorescence of 2,3-diaminophenazine (DAP) was decreased efficiently, thus minimizing the background fluorescence. The introduction of AA triggered the decomposition of MnO2 into Mn2+, which induced the aggregation of AuNPs. Both the decomposed MnO2 and aggregated AuNPs possess weak quenching abilities towards DAP. Such a cascade amplification strategy enhanced the detection sensitivity for AA with a LOD as low as 6.7 nM, which was two orders of magnitude lower than that of MnO2-based fluorescence assay. Furthermore, this amplification strategy was successfully applied to detect AA in food samples.

Abstract
Tea is an important economic crop and health beverage in China. The presence of heavy metal ions in tea poses a significant threat to public health. Here, we prepared an aptamer biosensor labelled with AIEgen nanospheres to detect Pb2+ in tea. The dsDNA modified by amino and phosphoric acid was combined with the carboxylated AIEgen NPs to form AIEgen-DNA with a fluorescence group, which was then fixed to the surface of Zr-MOFs to quench the fluorescence of AIEgen NPs. At the same time, PEG was added to remove nonspecific adsorption. Then Pb2+ was added to cut the DNA sequences containing the cutting sites, and AIEgen NPs and part of the DNA sequences were separated from the Zr-MOFs surface to recover the fluorescence. By comparing the fluorescence changes before and after adding Pb2+, the detection limit of Pb2+ can reach 1.70 nM. The fluorescence sensor was applied to detect Pb2+ in tea, and the detection results showed that the tea purchased on the market did not contain the concentration of Pb2+ within the detection range. This study provides new insights into monitoring food and agriculture-related pollutants based on fluorescent biosensors.

Abstract
A new method that simultaneously alters multicolor upconversion luminescence (UCL) and improves overall UCL intensity, predominantly in red-emission bands, is presented here. Remarkedly enhanced temperature sensitivity at ultralow temperatures was also observed in Yb/Cu co-doped NaErF4 through transition metal Cu2+-doping. Varying the dopant (Cu2+) concentration in NaErF4:Yb effectively controlled the structure, allowing for blue, green, and red UCL output. Large enhancement across the entire UCL spectrum was observed for Cu2+-doped upconversion nanoparticles (UCNPs) compared to UCNPs not doped with Cu2+, resulting from non-radiative energy transfer between Cu2+ and Er3+. The rapid response of the NaErF4:Yb/Cu complex allowed for bioimaging of heart tissue within 1 h. Moreover, the relative sensitivity of UCNPs increased from 0.91% K-1 to 1.48% K-1 with metal Cu2+ doping at an ultralow temperature, which significantly impacts biomarker dependence on UCNPs.

Abstract
The irrational use of tetracycline (TC) poses a serious threat to human health, which calls for the development of efficient and reliable detection methods. Herein, an ideal sensor based on luminescence resonance energy transfer (LRET) between aptamer modified up-conversion nanoparticles as signal probes (donors) and manganese dioxide (MnO2) nanosheets (acceptors) was developed for TC detection in food samples. As a result of van der Waals forces between the nucleobases of the aptamer and the basal plane of MnO2 nanosheets, the distance of the donors and acceptors was shortened. The emission spectrum of the signal probes and the absorption spectrum of MnO2 nanosheets overlapped, resulting in LRET, and quenching of up-conversion luminescence. The TC-specific aptamer could fold into a complex conformational structure to provide recognition sites for TC. In the presence of TC, the aptamer was found to preferentially combine with TC due to the stacking of planar moieties, hydrogen bonding interactions and molecular shape complementarity, causing the separation of signal probes and nanosheets, and luminescence recovery. Consequently, a low detection limit of 0.0085 ng/mL was achieved with a wide detection range of 0.01-100 ng/mL. Moreover, the ability of the sensor to detect TC was confirmed in actual food samples and compared with the traditional ELISA with satisfactory results (p > 0.05).

Abstract
Owing to the excellent performances of high sensitivity, high specificity, on-site detection, and multiplexing capability, surface-enhanced Raman scattering (SERS)-based aptasensors have performed prosperous applications and gained impressive progress in food safety. Herein, we reviewed the SERS-based aptasensors from the principles to specific applications in food safety. First, the sensor-working principles, SERS label design and preparation are introduced. Then, the popular platforms in the aptasensors are summarized with their advantages and disadvantages, followed by their representative applications. Further, the specific applications of developing SERS-based aptasensors in food safety are systematically provided. Moreover, the multiplex analysis using SERS labels are highlighted. Finally, challenges and perspectives for improving the SERS-based aptasensor performance are also discussed, aiming to give some proposes for researchers to choose suitable SERS-based aptasensors according to specific applications.
