Interdroplet Interactions and Rheology of Concentrated Nanoemulsions for Templating Porous Polymers

Rheological study of nanoemulsions with repulsive and attractive interdroplet interactions

Nanoemulsions have adjustable transparency, tunable rheology, high stability, and low sensitivity to changes in pH and temperature, which make them interesting for applications such as low-fat and low-calorie foods. In this research, we study model concentrated nanoemulsions which are stabilized by sodium dodecyl sulfate (SDS). To prepare samples in different structural states, semi-dilute nanoemulsions are prepared at 25% droplet volume fraction (φ), after which evaporating the continuous phase at room temperature leads to concentrated nanoemulsions up to 60% volume fraction. Surfactant concentration is also tuned to induce different interdroplet interactions so that concentrated nanoemulsions in repulsive glass, attractive glass, and gel states are achieved. Rheological properties of nanoemulsions with different structural states are comprehensively studied over a volume fraction range. Utilizing the existing predictive models for (nano)emulsion rheology reveals a more satisfactory prediction for repulsive systems than systems with attractive interactions. In addition, a master curve is constructed for storage and loss moduli of nanoemulsions with different interdroplet interactions. The present work offers control over physicochemical properties of nanoemulsions for design of new food products with enhanced quality and functionality.

Enhanced stability, formulations, and rheological properties of nanoemulsions produced with microfludization for eco-friendly process

HYPOTHESIS

Eco-friendly processes that are emerging around the world require mass production of low-energy, low-cost nanoemulsions. The process involving the high-concentrated nanoemulsions and diluting them with a large amount of solvent can certainly save the cost; however, not much detailed research has been conducted on the stability mechanism and rheological characteristics of high-concentrated nanoemulsions.

EXPERIMENTS

In this study, we produced nanoemulsions via the microfluidization (MF) process, comparing their dispersion stability and rheological characteristics with macroemulsions across various oil and surfactant concentrations. Droplet mobility and dispersion stability depended on these concentrations, with Asakura-Osawa-type attractive depletion considering interparticle interaction's role in stability changes. We investigated nanoemulsions' long-term stability based on turbidity and droplet size changes over four weeks, proposing a stability diagram showing four different states depending on emulsification conditions.

FINDINGS

We explored the microstructure of emulsions under varying mixing conditions, observing their effects on droplet mobility and rheological properties. We monitored changes in rheology, turbidity, and droplet size over 4 weeks, establishing stability diagrams for macro- and nanoemulsions. The stability diagrams revealed that the stability of emulsions are sensitively dependent on the droplet size, concentrations, surfactant cocentrations and the strcture of coexistent phases in case of macroscopic segregation are significantly different depending on the droplet sizes. We identified their respective stability mechanisms and discovered the relationship between stability and rheological properties for highly concentrated nanoemulsion.

Glassy and compressed nanoemulsions stabilized with sodium dodecyl sulfate in the presence of poly(ethylene glycol)-diacrylate

The rheology of concentrated nanoemulsions is critical for their formulation in various applications, such as pharmaceuticals, foods, cosmetics, and templating advanced materials. The rheological properties of nanoemulsions depend on interdroplet interactions, Laplace pressure, dispersed phase volume fraction, and continuous phase properties. The interdroplet forces can be tuned by background electrolytes (i.e., charge screening), surfactant type, the excess surfactant micelle concentration, and depletant molecules such as polymer chains. In the current research, we study the effect of varying the content of poly(ethylene glycol)-diacrylate (PEGDA) on the interfacial tension of the water-oil phase and rheological properties of concentrated nanoemulsions with 50% and 60% volume fractions. Sodium dodecyl sulfate (SDS) is used as the ionic surfactant. The final concentrated nanoemulsions are repulsive according to overall interaction potentials and are in the glass and compressed states based on the effective volume fraction estimation. They contain nearly same SDS concentration on the droplet surface and also in the bulk, but a different amount of PEGDA. The scaled rheological properties of the glassy nanoemulsions show a higher dependency on the PEGDA content and the possible effect of polymer-surfactant complexations compared to those of the compressed ones. This dependency is more pronounced in small strain amplitudes but not in large strains in the non-linear regime. These results provide insights into formulating concentrated nanoemulsions with controlled rheology for expanded application areas.

Porous Hydrogels: Present Challenges and Future Opportunities

In this feature article, we critically review the physical properties of porous hydrogels and their production methods. Our main focus is nondense hydrogels that have physical pores besides the space available between adjacent cross-links in the polymer network. After reviewing theories on the kinetics of swelling, equilibrium swelling, the structure-stiffness relationship, and solute diffusion in dense hydrogels, we propose future directions to develop models for porous hydrogels. The aim is to show how porous hydrogels can be designed and produced for studies leading to the modeling of physical properties. Additionally, different methods that are used for making hydrogels with physically incorporated pores are briefly reviewed while discussing the potentials, challenges, and future directions for each method. Among kinetic methods, we discuss bubble generation approaches including reactions, gas injection, phase separation, electrospinning, and freeze-drying. Templating approaches discussed are solid-phase, self-assembled amphiphiles, emulsion, and foam methods.

Modeling colloidal interactions that predict equilibrium and non-equilibrium states

Modulating the interaction potential between colloids suspended in a fluid can trigger equilibrium phase transitions as well as formation of non-equilibrium 'arrested states' such as gels and glasses. Faithful representation of such interactions are essential for using simulation to interrogate the microscopic details of non-equilibrium behavior, and for extrapolating observations to new regions of phase space that are difficult to explore in experiment. Although the extended law of corresponding states predicts equilibrium phases for systems with short-ranged interactions, it proves inadequate for equilibrium predictions of systems with longer-ranged interactions, and for predicting non-equilibrium phenomena in systems with either short-ranged or long-ranged interactions. These shortcomings highlight the need for new approaches to represent and disambiguate interaction potentials that replicate both equilibrium and non-equilibrium phase behavior. In this work, we use experiments and simulations to study a system with long-ranged thermoresponsive colloidal interactions and explore whether a resolution to this challenge can be found in regions of the phase diagram where temporal effects influence material state. We demonstrate that the conditions for non-equilibrium arrest by colloidal gelation are sensitive to both the shape of the interaction potential and the thermal quench rate. We exploit this sensitivity to propose a kinetics-based algorithm to extract distinct arrest conditions for candidate potentials that accurately selects between potentials that differ in shape but share the same predicted equilibrium structure. The method reveals that each potential has a quantitatively distinct arrest line, providing insight into how the shape of longer-ranged potentials influences the conditions for colloidal gelation.
