Abstract
Maintaining the vibrant color of fruit is a longstanding challenge in fruit and vegetable preservation. Chitosan and selenium, known for their protective and antioxidant properties, have been applied to preserve these produce. This study aimed to investigate the influence of selenium-chitosan treatment (comprising 25 mg L-1 selenium and 1.0% chitosan) on the color of "Red Globe" grapes and to analyze the relative expression of genes associated with anthocyanin synthesis enzymes (VvCHS, VvCHI, VvF3H, VvF3'H, VvF3'5'H, VvDFR, VvLDOX, VvUFGT, VvOMT, Vv5GT, and VvGST) using RT-qPCR. Our goal was to uncover the regulatory mechanisms governing grape color. Comparing various treatments, we observed that selenium-chitosan treatment had a significant effect in reducing decay, maintaining the soluble solids content of grape flesh, and preserving the vivid color of grape. This research indicated that selenium-chitosan treatment slowed down browning and prevented the reduction in total phenolic, flavonoids, and anthocyanin in the grape. Moreover, gene expression analysis revealed that selenium-chitosan treatment increased the expression of VvCHS, VvF3H, VvF'3'H, VvLDOX, and Vv5GT, while also stabilized the expression of VvCHI, VvF3'H, and VvDFR in grape skins. These findings shed light on the potential mechanism by which selenium-chitosan impacts grape color. This study established a theoretical foundation for investigating the molecular mechanisms behind selenium-chitosan's ability to slow down grape browning and provides a novel approach to enhancing fruit and vegetable preservation techniques.

Abstract
Bananas are a typical climacteric fruit with high respiration and ethylene production rates after harvest, and they show rapid ripening-senescence phenotypes. Here, we demonstrate that carboxymethylcellulose nanofibers (CM-CNFs) and red cabbage extracts (RCE) can be used as a unique film coating formulation for enhancement of the shelf-life of fruit. A CM-CNF suspension solution is created through a process involving chemical modification, followed by mechanical grinding. It has a high aspect ratio that allows for the creation of a thin and transparent film on the surface of bananas. The cross-linked CM-CNF hydrogel forms a dense film layer on the banana surface during dehydration and prevents respiration and weight loss. RCE contains polyphenols acting as antioxidants, which prevent the appearance of black dots on the banana peels. It serves to mitigate the browning of banana skins and also hinders the respiration process, consequently slowing the aging of bananas.

Abstract
Fresh and fresh-cut fruits and vegetables have been associated in several foodborne illness outbreaks. Although investigations from those outbreaks reported that the contamination with pathogenic microorganisms may occur at any point in the farm to fork continuum, effective control strategies are still being widely investigated. In that direction, the concept of hurdle technology involving a sequence of different interventions have been widely explored. Among those interventions, ultraviolet (UV) light alone or in combination with other treatments such as use of organic acids or sanitizer solutions, has found to be a promising approach to maintain the microbiological safety and quality of fresh and fresh-cut produce. Recent advances in using UV as a part of hurdle technology on the safety of fresh produce at different stages are presented here. Furthermore, this review discusses the mechanism of UV induced antimicrobial activity, factors that influence antimicrobial efficacy and its effect on produce. In addition, the challenges, and prospects of using UV irradiation as an intervention treatment were also discussed.

Abstract
Amongst the surface treatment technologies to emerge in the last few decades, UV-C radiation surface treatment is widely used in food process industries for the purpose of shelf life elongation, bacterial inactivation, and stimulation. However, the short wave application is highly dose-dependent and induces different properties of the product during exposure. Mechanical properties of the agricultural products and their derivatives represent the key indicator of acceptability by the end-user. This paper surveys the recent findings of the influence of UV-C on the stress response and physiological change concerning the mechanical and textural properties of miscellaneous agricultural products with a specific focus on a potato tuber. This paper also reviewed the hormetic effect of UV-C triggered at a different classification of doses studied so far on the amount of phenolic content, antioxidants, and other chemicals responsible for the stimulation process. The combined technologies with UV-C for product quality improvement are also highlighted. The review work draws the current challenges as well as future perspectives. Moreover, a way forward in the key areas of improvement of UV-C treatment technologies is suggested that can induce a favorable stress, enabling the product to achieve self-defense mechanisms against wound, impact, and mechanical damage.

Abstract
Red and white cabbages (Brassica oleracea var. capitata f. alba and rubra, respectively) are two of the most commercially valued vegetables in crucifers, well-recognized for their unique sensory and nutritive attributes in addition to a myriad of health-promoting benefits. The current review addressed the differential qualitative/quantitative phytochemical make-ups for the first time for better utilization as nutraceuticals and to identify potential uses based on the chemical makeup of both cultivars (cvs.). In addition, extraction methods are compared highlighting their advantages and/or limitations with regards to improving yield and stability of cabbage bioactives, especially glucosinolates. Besides, the review recapitulated detailed action mechanism and safety of cabbage bioactives, as well as processing technologies to further improve their effects are posed as future perspectives. White and red cabbage cvs. revealed different GLSs profile which affected by food processing, including enzymatic hydrolysis, thermal breakdown, and leaching. In addition, the red cultivar provides high quality pigment for industrial applications. Moreover, non-conventional modern extraction techniques showed promising techniques for the recovery of their bioactive constituents compared to solvent extraction. All these findings pose white and red cabbages as potential candidates for inclusion in nutraceuticals and/or to be commercialized as functional foods prepared in different culinary forms.

Abstract
A reduction in crop productivity in cultivable land and challenging environmental factors have directed advancement in indoor cultivation systems, such that the yield parameters are higher in outdoor cultivation systems. In wake of this situation, light emitting diode (LED) lighting has proved to be promising in the field of agricultural lighting. Properties such as energy efficiency, long lifetime, photon flux efficacy and flexibility in application make LEDs better suited for future agricultural lighting systems over traditional lighting systems. Different LED spectrums have varied effects on the morphogenesis and photosynthetic responses in plants. LEDs have a profound effect on plant growth and development and also control key physiological processes such as phototropism, the immigration of chloroplasts, day/night period control and the opening/closing of stomata. Moreover, the synthesis of bioactive compounds and antioxidants on exposure to LED spectrum also provides information on the possible regulation of antioxidative defense genes to protect the cells from oxidative damage. Similarly, LEDs are also seen to escalate the nutrient metabolism in plants and flower initiation, thus improving the quality of the crops as well. However, the complete management of the irradiance and wavelength is the key to maximize the economic efficacy of crop production, quality, and the nutrition potential of plants grown in controlled environments. This review aims to summarize the various advancements made in the area of LED technology in agriculture, focusing on key processes such as morphological changes, photosynthetic activity, nutrient metabolism, antioxidant capacity and flowering in plants. Emphasis is also made on the variation in activities of different LED spectra between different plant species. In addition, research gaps and future perspectives are also discussed of this emerging multidisciplinary field of research and its development.

Abstract
Maintaining genomic stability is inevitable for organism survival and it is challenged by mutagenic agents, which include ultraviolet (UV) radiation. Whenever DNA damage occurs, it is sensed by DNA-repairing proteins and thereby performing the DNA-repair mechanism. Specifically, in response to DNA damage, H2AX is a key protein involved in initiating the DNA-repair processes. In this present study, we investigate the effect of UV-C on earthworm, Perionyx excavatus and analyzed the DNA-damage response. Briefly, we expose the worms to different doses of UV-C and find that worms are highly sensitive to UV-C. As a primary response, earthworms produce coelomic fluid followed by autotomy. However, tissue inflammation followed by death is observed when we expose worm to increased doses of UV-C. In particular, UV-C promotes damages in skin layers and on the contrary, it mediates the chloragogen and epithelial outgrowth in intestinal tissues. Furthermore, UV-C promotes DNA damages followed by upregulation of H2AX on dose-dependent manner. Our finding confirms DNA damage caused by UV-C is directly proportional to the expression of H2AX. In short, we conclude that H2AX is present in the invertebrate earthworm, which plays an evolutionarily conserved role in DNA damage event as like that in higher animals.

Abstract
Phytoestrogens are naturally occurring plant polyphenolic compounds present in high concentrations in soybean products. Phytoestrogens are divided into three classes: lignans, isoflavones, and coumestans. Nine types of glycoside isoflavones and three types of aglycoside isoflavones are reported in soybean. Soy isoflavones can reduce the risk of a certain type of cancer, cardiovascular problems, osteoporosis, and menopausal symptoms. We irradiated the leaves of five cultivars of soybean with UV-C (260 nm) and determined the effect on concentrations of isoflavone compounds using liquid chromatography–mass spectrometry (LC–MS). Isoflavone concentrations were significantly higher following irradiation, particularly in the cultivar Daepung, which was selected as the best cultivar for high isoflavone induction with UV-C irradiation. Further experimentation with the cultivar Daepung revealed that 20 min UV-C irradiation was the best treatment for the induction of aglycone compounds, and 5 min with the dorsal surface facing the UV-C irradiation source was the best treatment for the induction of glycoside isoflavone compounds.

Abstract
Reddish purple Chinese cabbage (RPCC) is a popular variety of Brassica rapa (AA = 20). It is rich in anthocyanins, which have many health benefits. We detected novel anthocyanins including cyanidin 3-(feruloyl) diglucoside-5-(malonoyl) glucoside and pelargonidin 3-(caffeoyl) diglucoside-5-(malonoyl) glucoside in RPCC. Analyses of transcriptome data revealed 32,395 genes including 3345 differentially expressed genes (DEGs) between 3-week-old RPCC and green Chinese cabbage (GCC). The DEGs included 218 transcription factor (TF) genes and some functionally uncharacterized genes. Sixty DEGs identified from the transcriptome data were analyzed in 3-, 6- and 9-week old seedlings by RT-qPCR, and 35 of them had higher transcript levels in RPCC than in GCC. We detected cis-regulatory motifs of MYB, bHLH, WRKY, bZIP and AP2/ERF TFs in anthocyanin biosynthetic gene promoters. A network analysis revealed that MYB75, MYB90, and MYBL2 strongly interact with anthocyanin biosynthetic genes. Our results show that the late biosynthesis genes BrDFR, BrLDOX, BrUF3GT, BrUGT75c1-1, Br5MAT, BrAT-1,BrAT-2, BrTT19-1, and BrTT19-2 and the regulatory MYB genes BrMYB90, BrMYB75, and BrMYBL2-1 are highly expressed in RPCC, indicative of their important roles in anthocyanin biosynthesis, modification, and accumulation. Finally, we propose a model anthocyanin biosynthesis pathway that includes the unique anthocyanin pigments and genes specific to RPCC.

Abstract
Light-emitting diode (LED) lights have recently been applied in controlled environment agriculture toward growing vegetables of various assortments, including microgreens. Spectral qualities of LED light on photosynthesis in microgreens are currently being studied for their ease of spectral optimization and high photosynthetic efficiency. This review aims to summarize the most recent discoveries and advances in specific phytochemical biosyntheses modulated by LED and other conventional lighting, to identify research gaps, and to provide future perspectives in this emerging multidisciplinary field of research and development. Specific emphasis was made on the effect of light spectral qualities on the biosynthesis of phenolics, carotenoids, and glucosinolates, as these phytochemicals are known for their antioxidant, anti-inflammatory effects, and many health benefits. Future perspectives on enhancing biosynthesis of these bioactives using the rapidly progressing LED light technology are further discussed.
