Abstract
We set out to determine the impact of moderate heat load on the plasma concentrations of a suite of hormones involved in regulating energy metabolism and feed intake. The responses of the thermally challenged (TC) feedlot steers were compared to those of feed restricted thermoneutral (FRTN) steers. Two sequential cohorts of twelve 518 ± 23 kg Black Angus steers on finisher grain ration were housed in climate-controlled rooms (CCR) for 18 days and returned to outdoor pens for 40 days. The TC group was subjected to a diurnal range of 28-35 °C for 7 days (Challenge) but held in thermoneutral conditions beforehand (PreChallenge), and in Recovery (after Challenge). The FRTN group was held in thermoneutral conditions and feed restricted throughout. Blood was collected over the three periods in CCR and two periods in outdoor pens for 40 days (PENS and Late PENS). Plasma concentrations of prolactin, thyroid stimulating hormone, insulin, leptin, adiponectin and thyroxine (T4) were determined during the five periods. Whilst the pituitary hormones were relatively stable, there were differences in plasma leptin, adiponectin and T4 between the two groups during Challenge and Recovery, and occasionally in PENS. The interaction of the plasma hormone concentrations and rumen temperature and DMI were also investigated. Whilst the positive relationship between DMI and leptin was confirmed, we found a strong negative relationship between adiponectin and rumen temperature, and a strong positive relationship between adiponectin and dry matter intake (DMI) in the TC steers only.

Abstract
There is evidence of a relationship between increased energy intake and the development of metabolic inflammation and insulin resistance (IR), and between the aforementioned metabolic state and impaired tolerance to heat stress. Based on the anti-inflammatory properties and mitigating effects on IR and stress of n-3 polyunsaturated fatty acids (n-3 PUFA), an experiment was performed to evaluate the effect of n-3 PUFA supplementation to feedlot-finished steers during summer on animal performance, physiological and biochemical variables associated with glucose metabolism, heat and preslaughter-induced stress, and meat quality. A total of 48 Angus steers (388 ± 2 kg) were fed one of three corn-based finishing diets containing (dry matter basis) 0% added oil (CON; negative control), or 1.90% of sunflower oil-calcium salt (SUN; positive control), or 1.92% of linseed oil-calcium salt (LIN). There was a trend (P = 0.08) for greater dry matter intake (DMI) and greater (P = 0.02) average daily gain (ADG) in LIN-fed animals compared with the average between those that received the CON or SUN diets, whereas no differences (P ≥ 0.34) were observed between the latter. No other performance, physiological, or carcass variables were affected (P ≥ 0.12) by treatment. Blood glucose and insulin were similar (P ≥ 0.14), though the homeostatic model assessment (HOMA) which gauges IR tended (P = 0.06) to be reduced for LIN-fed animals compared with the average between those that received the CON or SUN diets. Blood insulin and HOMA increased linearly (P ≤ 0.01) with days on feed. An interaction between the study phase (feeding period or slaughter) and treatment was observed (P ≤ 0.05) for glucose and cortisol. While the magnitude of glucose increase (P < 0.01) from the end of the feeding period to slaughter was greater for CON- and SUN-fed animals compared with LIN-fed ones, cortisol increased (P < 0.05) only in animals that received CON or SUN diets. Meat quality attributes were not affected (P ≥ 0.16) by treatment. The concentration of n-3 PUFA was greater (P < 0.01) and n-6:n-3 ratio was lesser (P < 0.01) in meat from LIN-fed animals compared with that resulting from the average between the animals that received the negative (CON) or positive (SUN) control diets. Results suggest that n-3 PUFA supplementation mitigated metabolic alterations associated with IR and preslaughter-related stress. It may have also improved tolerance to heat, resulting in greater DMI and ADG of steers fed a high-energy diet during summer. Results also indicate that glucose metabolism and heat stress tolerance worsen with time when feeding concentrate-based diets.

Abstract
This study aimed to analyze the effect of including increasing levels of distiller grains (DG) in beef cattle feeding diets on meat quality from an integral approach. To this end, we analyzed the meat from 36 yearling steers fed with four dietary treatments: 0DG (control corn-based diet), 15DG, 30DG, and 45DG (containing 15%, 30%, or 45% of DG on DM basis). Crude protein, ash, and fat contents of diets increased with DG level. The fatty acid profile of DG diets was reflected in the fatty acid profile of plasma samples. Feeding diets with DG had no effect on the biochemical parameters analyzed in plasma. In addition, it did not influence the water holding capacity, the muscle or fat color at 72 h post mortem or at retail display, or the contents of SFAs, MUFAs, and PUFAs in beef. The DG diets led to lower values of cooking loss. Meat from 15DG and 30DG showed greater percentage of troponin C and fragments of 30 to 27 kDa than meat from 45DG. Also, meat from 30DG showed the lowest values of Warner-Bratzler shear force. Hence, including up to 30% corn DG in beef cattle feeding diets had positive effects on meat quality.

Abstract
Heat stress (HS) causes oxidative stress, which compromises broiler performance and meat quality. The aim of this study was to determine whether dietary antioxidants could be used as an amelioration strategy. Seventy-two day-old-male Ross-308 chicks were exposed to either thermoneutral or cyclical heat stress conditions. Diets were either control commercial diet (CON), CON plus betaine (BET), or with a combination of betaine, selenized yeast, and vitamin E (BET + AOX). Heat stress increased the rectal temperature (p < 0.001), respiration rate (p < 0.001), decreased blood pCO2 (p = 0.002), and increased blood pH (p = 0.02), which indicated the HS broilers had respiratory alkalosis. Final body weight was decreased by HS (p < 0.001), whereas it was improved with BET (p = 0.05). Heat stress reduced cooking loss (p = 0.007) and no effect on drip loss, while BET decreased the drip loss (p = 0.01). Heat stress reduced the myofibril fragmentation index (p < 0.001) and increased thiobarbituric acid reactive substances (p < 0.001), while these were improved with the combination of BET + AOX (p = 0.003). In conclusion, BET overall improved growth rates and product quality in this small university study, whereas some additional benefits were provided by AOX on product quality in both TN and HS broilers.

Abstract
Heat stress (HS) exacerbates the body weight loss of lactating sows and reduces litter weight gain. Selenium (Se), vitamin E (VE), chromium (Cr) and betaine have been shown to ameliorate symptoms of HS, and yeast nucleotides and mannan oligosaccharides have been reported to improve lactational performance and immune response in pigs. Therefore, a combination of these nutrients may improve lactational performance of sows in summer. The effects of two nutritionally enhanced diets on lactational performance of sows in summer were investigated in two experiments. In experiment 1, we compared the effects of a nutritionally fortified diet (0.4 ppm Se, 95 IU/kg VE, 0.4 ppm Cr and 0.2% betaine; named as SVCB diet) with the NRC 2012 standard diet (0.15 ppm Se, 44 IU/kg VE) on lactational performance of sows in summer. Results showed that the SVCB diet reduced body weight loss (P = 0.039) and tended to reduce backfat loss (P = 0.075) of sows without affecting feed intake, while litter weight gain was not influenced. In experiment 2, we further enhanced the nutrients in the SVCB diet (0.8 ppm Se, 1% yeast nucleotides, and 0.1% mannan oligosaccharides; named as SNM diet). Results showed that the SNM diet did not improve feed intake of sows, farrowing performance, or litter weight gain compared with the SVCB diet, but increased body weight loss of the third parity sows (P = 0.037). Overall, a combined supplementation of Se, VE, Cr, and betaine above the NRC recommended levels can reduce mobilisation of body reserve of lactating sows in summer.

Abstract
In pasture-based dairy systems, supplementary feeds are used to increase dry matter intake and milk production. Historically, supplementation involved the provision of the same amount of feed (usually a grain-based concentrate feed) to each cow in the herd during milking (i.e., flat-rate feeding). The increasing availability of computerized feeding and milk monitoring technology in milking parlors, however, has led to increased interest in the potential benefits of feeding individual cows (i.e., individualized or differential feeding) different amounts and types of supplements according to one or more parameters (e.g., breeding value for milk yield, current milk yield, days in milk, body condition score, reproduction status, parity). In this review, we consider the likely benefits of individualized supplementary feeding strategies for pasture-based dairy cows fed supplements in the bail during milking. A unique feature of our review compared with earlier publications is the focus on individualized feeding strategies under practical grazing management. Previous reviews focused primarily on research undertaken in situations where cows were offered ad libitum forage, whereas we consider the likely benefits of individualized supplementary feeding strategies under rotational grazing management, wherein pasture is often restricted to all or part of a herd. The review provides compelling evidence that between-cow differences in response to concentrate supplements support the concept of individualized supplementary feeding.

Abstract
Pigs are comparatively less heat tolerant than other species of production animals, which poses challenges for stock productivity and management during seasonal heat waves that occur in summer. The issues surrounding heat and pig production are predicted to increase, based on the actions of climate change increasing the intensity, frequency and duration of heat waves. Furthermore, future growth areas of pig production are going to be in tropical regions such as South-east Asia and Latin America. Efforts by the pig to dissipate excess body heat come at a cost to health and divert energy away from growth, compromising efficient pig production. Management of heat stress requires multiple strategies, and recent research is improving the understanding of the application of nutritional strategies to ameliorate the effects of heat stress. In particular the use of feed additives is an important, flexible and economical method to alleviate heat stress and the intensive nature of pig production lends itself to the use of additives. Some specific examples include antioxidants, betaine and chromium, which have been proved effective or being tested in mitigating some certain impacts of heat stress in pigs. The aim of this review is to summarise recent advances in the nutritional management of heat stress in pigs.

Abstract
Chromium (Cr) is an essential mineral element and has been used in pig diets to improve growth performance, insulin sensitivity, immune response and carcase traits and to reduce heat or other stress responses. The aims of thiss study were to determine the impact of nano-sized chromium tripicolinate (nCrPic) on growth performance, feed efficiency and carcase characteristics of finisher gilts during the summer period. A total of 60 finisher Large White x Landrace gilts were stratified on initial weight and then within strata randomly allocated into two treatment groups in three replicates during mid-summer for 28 days. All pigs were housed in individual pens and had ad libitum access to feed and water. Pigs were fed either a control finisher diet (wheat-based diet containing 13.8 MJ digestible energy (DE) per kilogram and 0.56 g available lysine/MJ DE) or a control diet containing 400 ppb Cr as nCrPic. Dietary nCrPic supplementation increased feed intake by 6 % over the entire study (P = 0.05). In particular, dietary nCrPic increased average daily feed intake (ADFI) by 8 % (P = 0.02) during the final 2 weeks of the study. Moreover, dietary nCrPic tended to improve average daily feed (ADFI) over the entire study (P = 0.09). However, there were no significant effects of nCrPic on feed conversion ratio (FCR), final weight, hot standard carcase weight (HCWT), P2 depth or dressing percentage. Plasma cortisol was decreased by 25 % (P = 0.06) by dietary nCrPic supplementation. However, there were no effects of nCrPic on plasma glucose, insulin and nonesterified fatty acids (NEFA), might because of the higher feed intake. In conclusion, this study demonstrates that dietary nCrPic supplementation at 400 ppb can increase feed intake in finisher gilts during mid-summer, suggesting that nCrPic can ameliorate some of the negative effects of heat stress in pigs, possibly via decreased of circulating cortisol.

Abstract
Beef carcasses undergoing rapid pH fall while the loin muscle temperature is still high are described as heat-shortened, heat-toughened or ‘high rigor temperature’ carcasses, with subsequent negative effects on quality traits. The aim of the study was to quantify the occurrence of high rigor temperature in beef carcasses across Australia and to identify the causative factors. Data was collected over 4–5 days at each of seven beef processing plants from 1512 beef carcasses. The beef carcasses were from both grass- and grain-fed cattle ranging in days on grain feeding from 0 (grass-fed) to 350 days and the category of cattle ranged from veal to ox and cow. Data collected on the day of slaughter included the duration of electrical inputs at the immobiliser, electrical stimulation and hide puller, longissimus muscle pH and temperature decline, hot carcass weight and P8 fat depth. At grading, ultimate pH, eye muscle area, wetness of the loin surface and colour score were also collected. The temperature at pH 6 was calculated and if it was >35°C, the carcass was defined as ‘high rigor temperature’. Modelling of the data was conducted using GLMM and REML. The occurrence of high rigor temperature across all seven beef processing plants was 74.6% ranging from 56 to 94% between beef processing plants. Increasing days in the feedlot and heavier carcass weights were highly correlated and both caused an increase in the predicted temperature at pH 6 and in the % high rigor temperature (P < 0.05 for both). Longer duration of electrical inputs at the hide puller, fatter grass-fed cattle and fatter male (castrate) carcasses had a higher temperature at pH 6 and higher % high rigor temperature. Modelling showed that if the time to reach pH 6 in the longissimus muscle was 65 v. 105 min, the % high rigor temperature carcasses reduced from 98 to 19% in grain-fed cattle and 93 to 7% in grass-fed cattle. Higher plasma insulin levels at slaughter were associated with a higher temperature at pH 6 (rigor temperature) (P < 0.001). In conclusion, in order to reduce the incidence of high rigor temperature in grain-fed beef carcasses, methods for identifying high rigor temperature carcasses will be required and while some management strategies can be implemented now, others require further research.

Abstract
An increasing number of Australian slaughter plants were found not to meet the Meat Standards Australia (MSA) pH–temperature window, due to high rigor temperatures, particularly at plants where grain-fed animals were slaughtered. Hence, the red meat processing industry in Australia supported a research program focused on resolving this issue, as carcasses that do not meet the MSA pH–temperature window are excluded from MSA grading. This special issue of Animal Production Science describes the outcomes of a major program identifying ante- and post-mortem factors related to heat-induced toughening in both beef and sheep meat through literature reviews and targeted research to find interventions to prevent the impact of high rigor temperature on meat quality, particularly tenderness. This paper provides an overview of the outcomes of the research program, some of which require further research before implementation. It is suggested that an entire supply-chain approach be applied to establish the most efficient and cost-effective way of reducing the incidence of high rigor temperature.

Abstract
A review of the literature was conducted on the effects of high temperature and low pH (HTLP) on meat quality, with a focus on interventions that increase the rate of cooling post slaughter. HTLP can potentially change meat tenderness, water-holding capacity and colour due primarily to protein denaturation during the first 5 h post mortem. Deep muscles in large carcasses are susceptible to HTLP when cooled conventionally. Ante mortem and post mortem solutions that increase the rate of carcass cooling are discussed. Ante mortem solutions include access to feed and water, showering with water and provision of shade. Post mortem solutions included vascular flushing, hot fat trimming, opening seams, hot boning, spray chilling, blast chilling, immersion cooling, and very fast chilling. Accelerating rigor with electrical stimulation before HTLP remains controversial. Combinations of different techniques, that suit the specific requirements of a particular processing plant, is the likely best solution to HTLP, but further development of commercial solutions is suggested.
