Abstract
Numerous natural antioxidants commonly found in our daily diet have demonstrated significant benefits for human health and various diseases by counteracting the impact of reactive oxygen and nitrogen species. Their chemical properties enable a range of biological actions, including antihypertensive, antimicrobial, anti-inflammatory, anti-fibrotic, and anticancer effects. Despite promising outcomes from preclinical studies, ongoing debate persists regarding their reproducibility in human clinical models. This controversy largely stems from a lack of understanding of the pharmacokinetic properties of these compounds, coupled with the predominant focus on monotherapies in research, neglecting potential synergistic effects arising from combining different antioxidants. This study aims to provide an updated overview of natural antioxidants, operating under the hypothesis that a multitherapeutic approach surpasses monotherapy in efficacy. Additionally, this study underscores the importance of integrating these antioxidants into the daily diet, as they have the potential to prevent the onset and progression of various diseases. To reinforce this perspective, clinical findings pertaining to the treatment and prevention of non-alcoholic fatty liver disease and conditions associated with ischemia and reperfusion phenomena, including myocardial infarction, postoperative atrial fibrillation, and stroke, are presented as key references.

Abstract
Background Glucosinolates (GSLs) constitute a characteristic group of secondary metabolites present in the Brassica genus. These compounds confer resistance to pests and diseases. Moreover, they show allelopathic and anticarcinogenic effects. All those effects are dependent on the chemical structure of the GSL. The modification of the content of specific GSLs would allow obtaining varieties with enhanced resistance and/or improved health benefits. Moreover, the attainment of varieties with the same genetic background but with divergent GSLs concentration will prompt the undertaking of studies on their biological effects. Objective and Methods The objective of this study was to evaluate the efficacy of two divergent mass selection programs to modify GSL content in the leaves of two Brassica species: nabicol (Brassica napus L.), selected by glucobrassicanapin (GBN), and nabiza (Brassica rapa L.), selected by gluconapin (GNA) through several selection cycles using cromatographic analysis. Results The response to selection fitted a linear regression model with no signs of variability depletion for GSL modification in either direction, but with higher efficiency in reducing the selected GSL than in the increasing. The selection was also effective in other parts of the plant, suggesting that there is a GSL translocation in the plant or a modification in their synthesis pathway that is not-organ specific. There was an indirect response of selection in other GSL; thus this information should be considered when designing breeding programs. Finally, populations obtained by selection have the same agronomic performance or even better than the original population. Conclusion Therefore, mass selection seems to be a good method to modify the content of specific GSL in Brassica crops.

Abstract
The aim of this study was to analyze glucosinolates (GSLs) in germplasm that are currently conserved at the RDA-Genebank. The analysis focused on the glucosinolate diversity among the analyzed germplasms, with the goal of identifying those that would be most useful for future breeding efforts to produce nutritionally rich Choy sum plants. In total, 23 accessions of Choy sums that possessed ample background passport information were selected. On analyzing the glucosinolate content for 17 different glucosinolates, we observed aliphatic GSLs to be the most common (89.45%) and aromatic GSLs to be the least common (6.94%) of the total glucosinolates detected. Among the highly represented aliphatic GSLs, gluconapin and glucobrassicanapin were found to contribute the most (>20%), and sinalbin, glucoraphanin, glucoraphasatin, and glucoiberin were detected the least (less than 0.05%). We identified one of the accessions, IT228140, to synthesize high quantities of glucobrassicanapin and progoitrin, which have been reported to contain several therapeutic applications. These conserved germplasms are potential bioresources for breeders, and the availability of information, including therapeutically important glucosinolate content, can help produce plant varieties that can naturally impact public health.

Abstract
Brassicaceae edible plants are rich in bioactive compounds and promote health benefits. However, there is less interest in expanding knowledge about the Brassica cultivars to date. In particular, underutilized species and local cultivars could constitute a source of agrodiversity in adapting to the territory with likely higher contents of nutraceutical compounds. In this context, Bróquil (Brassica oleracea var. italica) is a traditional Brassicaceae crop grown in the Spanish region of Aragón. Currently, it is cultivated mainly in family orchards for autoconsumption and, in minority, in small farms for local markets. This study evaluates a collection of 13 bróquil landraces from the Spanish Vegetable Genebank of the Agrifood Research and Technology Center of Zaragoza (BGHZ-CITA), describing their mineral contents, bioactive compounds, and antioxidant activities, including a broccoli commercial variety "Parthenon" as the control. The study reports data on the health-promoting nutrients and antioxidants of bróquil for the first time. Under our experimental conditions, we found that bróquil has a great variability for these compounds that showed on average similar or higher levels than the broccoli control. The different bróquil landraces also revealed variability in both intraccessions and interaccessions due to the lack of a formal breeding selection. Despite this variability, we highlight accession HB5 that corresponds to Headed Bróquil BGHZ6685. In particular, we can stand out its antioxidant activity of 87.07 ± 0.81%I, total phenolic content of 13.21 ± 0.53 mg GAE g-1 dw, total flavonoid content of 14.50 ± 1.29 mg QE g-1 dw, total glucosinolate content of 43.70 ± 1.09 mg SnE g-1 dw, and vitamin C content of 7.21 ± 0.13 mg AA g-1 dw. Regarding bróquil mineral composition, K was the highest macroelement (22.66-33.62 mg g-1 dw), followed by Ca, P, and S whose values were relatively lower compared to K. Mg and Na showed the lowest values. Among the microelements evaluated (Mn, Zn, and Fe), iron was the most abundant detected, higher in all bróquil accessions than in broccoli, except for one accession. Therefore, the results reported for bróquil landraces show promising nutritional quality. This could lead to an increase in agrobiodiversity and contribute to a more diversified and healthy diet.

Abstract
Nowadays, the popularity of snack foods is increasing due to the fast-paced lifestyle of society. Thanks to the prevailing trends related to a healthy lifestyle and organic food, the need to create new products is increasing, but also more and more attention is being paid to high nutritional value. The aim of the study has been to evaluate the energy, nutritional, and health-promoting value of freeze-dried vegetable-based products with hydrocolloids as structure forming additives. The research included mathematical estimation of the energy and nutrients content, as well as selected health-promoting components, such as vitamins and micro- and macro-nutrients. The calculation was based on tabular data of the nutritional values each components of the products. In addition, the quality of the bars has been assessed by means of the daily requirement and the nutritional quality index. The bars have proven to be characterized by high energy and nutritional and health-promoting value. The Index Nutritional Quality (INQ) indicator has shown that the tested products are incorrectly adjusted in terms of the content of nutrients in relation to the energy supplied. The broccoli bar has turned out to be the best option because it has the highest content of protein, fat, and all the relevant vitamins and minerals. Obtained results verified that tested snacks were not enough to cover daily intake of specific nutrients, but introducing such products to balanced diet may have beneficial influence on human health and well-being.

Abstract
Radish (Raphanus sativus) is a Brassica vegetable important for human nutrition and health because it is rich in diverse metabolites. Although previous studies have evaluated various metabolites, few studies have comprehensively profiled the primary and secondary metabolites in the roots of white- and green-colored radishes. Thus, this study aimed to provide information about the contents of metabolites beneficial for human health in both cultivars and to investigate the relationships between the various metabolites detected. In particular, among the 55 metabolites detected in radish roots, the levels of most amino acids and phenolic acids, vital to nutrition and health, were higher in green radish roots, while slightly higher levels of glucosinolates were observed in white radish roots—information which can be used to develop an effective strategy to promote vegetable consumption. Furthermore, glutamic acid, as a metabolic precursor of amino acids and chlorophylls, was positively correlated with other amino acids (cysteine, tryptophan, asparagine, alanine, serine, phenylalanine, valine, isoleucine, proline, leucine, beta-alanine, lysine, and GABA), and chlorophylls (chlorophyll a and chlorophyll b) detected in radish roots and phenylalanine, a metabolic precursor of phenolic compounds, were positively correlated with kaempferol, 4-hydroxybenzoate, and catechin. In addition, strong positive correlations between carbohydrates (sucrose and glucose) and phenolics were observed in this study, indicating that sucrose and glucose function as energy sources for phenolic compounds.

Root-Zone Amendments of Biochar-Based Fertilizers: Yield Increases of White Cabbage in Temperate Climate. HORTICULTURAE 2022. Abstract
The use of biochar is an important tool to improve soil fertility, reduce the negative environmental impacts of agriculture, and build up terrestrial carbon sinks. However, crop yield increases by biochar amendment were not shown consistently for fertile soils under temperate climate. Recent studies show that biochar is more likely to increase crop yields when applied in combination with nutrients to prepare biochar-based fertilizers. Here, we focused on the root-zone amendment of biochar combined with mineral fertilizers in a greenhouse trial with white cabbage (Brassica oleracea convar. Capitata var. Alba) cultivated in a nutrient-rich silt loam soil originating from the temperate climate zone (Bavaria, Germany). Biochar was applied at a low dosage (1.3 t ha−1). The biochar was placed either as a concentrated hotspot below the seedling or it was mixed into the soil in the root zone representing a mixture of biochar and soil in the planting basin. The nitrogen fertilizer (ammonium nitrate or urea) was either applied on the soil surface or loaded onto the biochar representing a nitrogen-enhanced biochar. On average, a 12% yield increase in dry cabbage heads was achieved with biochar plus fertilizer compared to the fertilized control without biochar. Most consistent positive yield responses were observed with a hotspot root-zone application of nitrogen-enhanced biochar, showing a maximum 21% dry cabbage-head yield increase. Belowground biomass and root-architecture suggested a decrease in the fine root content in these treatments compared to treatments without biochar and with soil-mixed biochar. We conclude that the hotspot amendment of a nitrogen-enhanced biochar in the root zone can optimize the growth of white cabbage by providing a nutrient depot in close proximity to the plant, enabling efficient nutrient supply. The amendment of low doses in the root zone of annual crops could become an economically interesting application option for biochar in the temperate climate zone.

Abstract
Ascorbic acid, widely known as vtamin C, is an essential nutrient for animals such as poultry. Ascorbic acid in poultry feed improves animal health and thus increases the growth performance of birds. Ascorbic acid can be used in the form of synthetic products or can be naturally obtained from fruits and plants. It is soluble in water and can be easily administered in drinking water and the diet. Poultry can synthesize ascorbic acid in the body. However, the performance of the animals can be improved by adding ascorbic acid to their diet. In addition, ascorbic acid is called an antioxidant and an anti-inflammatory. This increases their resistance to disease during the transition season. Ascorbic acid supplementation positively affects the stress response, especially during the dry season in tropical countries. Furthermore, supplementing ascorbic acid in the poultry’s diet improves resistance to diseases, regulates stress, and helps in the body’s oxidation process. Ultimately, this enhances the laying rate, egg hatch performance, and higher poultry productivity. For layers at the end of the laying period, it helps increase the quality of the eggshell and reduces the proportion of broken eggs. Ascorbic acid has a strong relationship with other vitamins such as vitamin E and other substances such as zinc, safflower oil, folic acid, and a fibrous diet. This review aims to synthesize all the information of ascorbic acid in the poultry’s diet, thereby providing the general role of ascorbic acid for the poultry industry.

Abstract
For 10 days before harvest, supplemental 50 μmol m-2 s-1 blue light (430 nm) was applied in greenhouse conditions in order to evaluate the influences of pre-harvest supplemental blue light on both antioxidants and nutrition of the flower stalk of Chinese kale during storage. The weight loss of the flower stalk of Chinese kale treated with supplemental blue light was generally lower than control during storage. Higher antioxidant activity was maintained during storage by supplemental blue light. Meanwhile, supplemental blue light derived higher contents of vitamin C, soluble protein, free amino acids, and chlorophyll at harvest. The samples exposed to supplemental blue light possessed both higher nutrition and antioxidant values. Thus, pre-harvest supplemental blue light treatment might be a promising strategy to enhance the antioxidant activity and nutritional values and extend the shelf-life of the flower stalk of Chinese kale.

Abstract
Dysphagia is an underlying symptom of many health issues affecting a person's ability to swallow. Being unable to swallow correctly may limit food intake and subsequently micronutrient status. The elderly may be the most at risk group of suffering dysphagia as well as most likely to be deficient in micronutrients. The use of texture-modified meals is a common approach to increasing dysphagia sufferer's food intake. The modification of food may affect the micronutrient content and currently there is a limited number of studies focusing on micronutrient content of texture-modified meals. This review considers the prevalence of dysphagia within the elderly UK community whilst assessing selected micronutrients. Vitamin B12, C, D, folate, zinc and iron, which are suggested to be most likely deficient in the general elderly UK population, were reviewed. Each micronutrient is considered in terms of prevalence of deficiency, metabolic function, food source and processing stability to provide an overview with respect to elderly dysphagia sufferers.

Abstract
Vitamin C (L-ascorbic acid) has been known as an antioxidant for most people. However, its physiological role is much larger and encompasses very different processes ranging from facilitation of iron absorption through involvement in hormones and carnitine synthesis for important roles in epigenetic processes. Contrarily, high doses act as a pro-oxidant than an anti-oxidant. This may also be the reason why plasma levels are meticulously regulated on the level of absorption and excretion in the kidney. Interestingly, most cells contain vitamin C in millimolar concentrations, which is much higher than its plasma concentrations, and compared to other vitamins. The role of vitamin C is well demonstrated by miscellaneous symptoms of its absence—scurvy. The only clinically well-documented indication for vitamin C is scurvy. The effects of vitamin C administration on cancer, cardiovascular diseases, and infections are rather minor or even debatable in the general population. Vitamin C is relatively safe, but caution should be given to the administration of high doses, which can cause overt side effects in some susceptible patients (e.g., oxalate renal stones). Lastly, analytical methods for its determination with advantages and pitfalls are also discussed in this review.

Abstract
Mizuna (Brassica rapa L. var. japonica), a member of the family Brassicaceae, is rich in various health-beneficial phytochemicals, such as glucosinolates, phenolics, and anthocyanins. However, few studies have been conducted on genes associated with metabolic traits in mizuna. Thus, this study provides a better insight into the metabolic differences between green and red mizuna via the integration of transcriptome and metabolome analyses. A mizuna RNAseq analysis dataset showed 257 differentially expressed unigenes (DEGs) with a false discovery rate (FDR) of <0.05. These DEGs included the biosynthesis genes of secondary metabolites, such as anthocyanins, glucosinolates, and phenolics. Particularly, the expression of aliphatic glucosinolate biosynthetic genes was higher in the green cultivar. In contrast, the expression of most genes related to indolic glucosinolates, phenylpropanoids, and flavonoids was higher in the red cultivar. Furthermore, the metabolic analysis showed that 14 glucosinolates, 12 anthocyanins, five phenolics, and two organic acids were detected in both cultivars. The anthocyanin levels were higher in red than in green mizuna, while the glucosinolate levels were higher in green than in red mizuna. Consistent with the results of phytochemical analyses, the transcriptome data revealed that the expression levels of the phenylpropanoid and flavonoid biosynthesis genes were significantly higher in red mizuna, while those of the glucosinolate biosynthetic genes were significantly upregulated in green mizuna. A total of 43 metabolites, such as amino acids, carbohydrates, tricarboxylic acid (TCA) cycle intermediates, organic acids, and amines, was identified and quantified in both cultivars using gas chromatography coupled with time-of-flight mass spectrometry (GC-TOFMS). Among the identified metabolites, sucrose was positively correlated with anthocyanins, as previously reported.

Abstract
The study of nutritional properties in landrace products and the general context of its cultivation site are crucial to designing a sustainable on-farm strategy for landrace conservation. The present study describes the main nutritional aspects of two Brassica rapa subspecies rapa landraces collected in Puglia, Italy along with agroecological and socioeconomical traits where they are cultivated. The two B. rapa landraces (‘Cima di rapa dalla testa’ and ‘Cima di rapa antica’) are only found in sites at 700–800 m asl and in two landscape units (the Southern Daunian Mountains (SDM) and the Umbra Forest (UF), respectively) of the Foggia province. These rare landraces were selected by farmers to produce turnip greens/tops from ancient root turnip crops. They are named and consumed by local people in the same way as turnip tops of Brassica rapa subspecies sylvestris (‘Cima di rapa’), which are widely cultivated in Puglia. Compared to the most common ‘Cima di rapa’, the two highlighted landraces have a better nutritional profile linked to an improved content in antioxidant compounds—i.e., vitamin C (458 mg kg−1 FW), total phenols (347 mg ac. gallic equivalent kg−1 FW)—in glucosinolate (741 µmol kg FW−1, in ‘Cima di rapa antica’) and in minerals, such as K. Both landraces are deemed as having a high risk of erosion. Few exemplars are cultivated in marginal lands and urban/peri-urban areas (SDM), or in isolated sites within the UF, which is a special protection zone within Gargano National Park. However, natural, cultural, and recreational tourism are the main economic activities in both landscape units.

Abstract
The phytochemical and antioxidant properties of mature (head stage) Chinese cabbage (Brassica rapa ssp. pekinensis) are known; however, data on the phenolic profile, vitamin C (L-ascorbic acid) content and antioxidant capacity of its fresh sprouts are lacking. Since the human consumption of fresh cruciferous sprouts has significantly increased in recent years, their nutritional characterization has become a somewhat urgent matter. Therefore, in this study the contents of total phenolics, flavonols and hydroxycinnamic acids were measured spectrophotometrically, whereas individual flavonoids, phenolic acids and vitamin C were identified and quantified using a newly-developed high performance liquid chromatography method. Also, the antioxidant capacity of five Chinese cabbage sprout growth stages was determined. These stages contained either cotyledons only (seedlings), cotyledons and two leaves, four leaves, six leaves, or ten leaves. Principal component analysis (PCA) and hierarchical clustering (HC) were implemented in order to visualize the classification trend between the stages. Seedlings contained more sinapic acid and vitamin C than older plants. Plants containing six or ten leaves had more ferulic acid and isorhamnetin than younger ones. Total phenolics, flavonols, hydroxycinnamic acids, quercetin and antioxidant capacity did not statistically differ between seedlings and stages with six or ten leaves and their concentrations were significantly higher than in stages with two or four leaves. PCA and HC confirmed the higher phytochemical similarity between seedlings and plants with six or ten leaves than plants with two or four leaves. Therefore, Chinese cabbage seedlings and plants with six or ten leaves should be preferred over plants with two or four leaves, which were ultimately shown to be of lesser nutritional quality.

Abstract
Vitamin C is an antioxidant that may scavenge reactive oxygen species preventing DNA damage and other effects important in cancer transformation. Dietary vitamin C from natural sources is taken with other compounds affecting its bioavailability and biological effects. High pharmacological doses of vitamin C may induce prooxidant effects, detrimental for cancer cells. An oxidized form of vitamin C, dehydroascorbate, is transported through glucose transporters, and cancer cells switch from oxidative phosphorylation to glycolysis in energy production so an excess of vitamin C may limit glucose transport and ATP production resulting in energetic crisis and cell death. Vitamin C may change the metabolomic and epigenetic profiles of cancer cells, and activation of ten-eleven translocation (TET) proteins and downregulation of pluripotency factors by the vitamin may eradicate cancer stem cells. Metastasis, the main reason of cancer-related deaths, requires breakage of anatomical barriers containing collagen, whose synthesis is promoted by vitamin C. Vitamin C induces degradation of hypoxia-inducible factor, HIF-1, essential for the survival of tumor cells in hypoxic conditions. Dietary vitamin C may stimulate the immune system through activation of NK and T cells and monocytes. Pharmacological doses of vitamin C may inhibit cancer transformation in several pathways, but further studies are needed to address both mechanistic and clinical aspects of this effect.

Abstract
The effects of long-term freezer storage and different defrosting methods on the retention of glucosinolates, vitamin C, and total phenols in frozen broccoli florets were investigated in the present study. Frozen broccoli florets were stored in a freezer at -20 °C for 165 days or subjected to defrosting by three different house-hold thawing methods (water, air, and refrigerator defrosting). Results showed that all glucosinolates were well preserved, while vitamin C and total phenols were reduced by less than 12% and 19% of the control, respectively, during the storage. Besides, refrigerator and air defrosting were better than water defrosting in glucosinolates retention, and refrigerator defrosting was the best in vitamin C preservation. No difference was observed in reserving phenolic compounds among the three methods. In conclusion, long-term freezer storage is an excellent way to preserve broccoli florets, and refrigerator defrosting is the best way to maintain the nutritional compounds in frozen broccoli florets.

Abstract
Bovine mastitis affects dairy cattle worldwide and, despite the existing therapeutic measures, is not totally under control, leading to the need to develop alternative strategies. Brassica oleracea is a phytochemical commonly used in the control and prevention of human and animal diseases. The use of this plant in the treatment of infectious bovine mastitis has been little referenced in the literature and its molecular mechanism of action in this disease has not been clarified yet. This study aimed to reveal, through bioinformatic analysis, the molecular mechanism of action of Brassica oleracea in bovine mastitis. We investigated genes expressed in the signaling pathways of bovine mastitis and Brassica oleracea performance and elaborated the Venn diagram. A gene network was developed using the STRING 10 database. Leader genes were identified by calculating the weighted number of links (WNL). The NetworkAnalyzer plugin for Cytoscape software was used to characterize network topology. For the visualization of highly interconnected regions in the network, the MCODE was used. The BINGO and GFD-Net plugins were used to perform the ontological analysis. The TP53 and MTOR leader genes were identified in the sub-networks of the bovine mastitis signaling pathway and Brassica oleracea performance, respectively. Topological analysis confirmed the leader condition of the genes. Although the overlap of genes in the Venn diagram was not observed, the leader genes were found to be interconnected (confidence = 0.9). In the network that interconnected the leader genes two molecular complexes were detected and the ontological analysis revealed biological processes, cellular components and important molecular functions. It was concluded that Brassica oleracea may be a promising candidate to be included in a mammalian herbal cocktail against infectious bovine mastitis by interfering in the mechanisms of action of genes such as MTOR and TP53.

Abstract
To increase the nutritional value and levels of essential minerals in vegetable food, microgreens are promising targets. The metabolic processes of microgreens can be managed with different cultivation techniques, which include manipulating the properties of light derived by light-emitting diodes (LEDs). In this study Brassicaceae microgreens (kohlrabi Brassica oleracea var. gongylodes, broccoli Brassica oleracea, and mizuna Brassica rapa var. Japonica) were cultivated under different light spectral quality, and the metabolic changes insoluble sugars (hexoses and sucrose), ascorbic acid, β-carotene, and contents of non-heme iron (Fe) and its connection with magnesium (Mg) or calcium (Ca) levels were monitored. Plants grew under the primary LED light spectrum (the combination of blue light at 447 nm, red at 638 and 665 nm, and far-red at 731 nm) or supplemented with LED green light at 520 nm, yellow at 595 nm, or orange at 622 nm. The photoperiod was 16 h, and a total PPFD of 300 µmol m-2 s-1 was maintained. Under supplemental yellow light at 595 nm, the content of soluble carbohydrates increased significantly in mizuna and broccoli. Under all supplemental light components, β-carotene accumulated in mizuna, and ascorbic acid accumulated significantly in kohlrabi. Under supplemental orange light at 622 nm, Fe, Mg, and Ca contents increased significantly in all microgreens. The accumulation of Fe was highly dependent on promoters and inhibitors of Fe absorption, as demonstrated by the very strong positive correlations between Fe and Ca and between Fe and Mg in kohlrabi and broccoli, and the strong negative correlations between Fe and β-carotene and between Fe and soluble carbohydrates in kohlrabi. Thus, the metabolic changes that occurred in treated microgreens led to increases in the contents of essential nutrients. Therefore, selected supplemental LED wavelengths can be used in the cultivation of Brassicaceae microgreens to preserve and increase the contents of specific nutritionally valuable metabolites.

Abstract
Size-controlled azoxystrobin-poly (lactic acid) microspheres (MS) were prepared by an oil/water emulsion solvent evaporation approach. The hydrated mean particle sizes of the MS1, MS2, and MS3 aqueous dispersions were 130.9 nm, 353.4 nm, and 3078.0 nm, respectively. The drug loading and encapsulation efficiency of the azoxystrobin microspheres had a positive relationship with particle size. However, the release rate and percentage of cumulative release were inversely related to particle size. The smaller-sized microspheres had a greater potential to access the target mitochondria. As a result, the more severe oxidative damage of Colletotrichum higginsianum Sacc and higher antagonistic activity were induced by the smaller particle size of azoxystrobin microspheres. The 50% lethal concentrations against Colletotrichum higginsianum Sacc of MS1, MS2, and MS3 were 2.0386 μg/mL, 12.7246 μg/mL, and 21.2905 μg/mL, respectively. These findings reveal that particle size is a critical factor in increasing the bioavailability of insoluble fungicide.

Abstract
The aim of the present study was to investigate the total water intake (TWI) from drinks and foods and to evaluate the correlation between the different types of drinks on energy and antioxidant intake. The cohort comprised 1602 individuals from the city of Catania in Southern Italy. A food frequency questionnaire was administered to assess dietary and water intake. The mean total water intake was 2.7 L; more than about two thirds of the sample met the European recommendations for water intake. Water and espresso coffee were the most consumed drinks. Alcohol beverages contributed about 3.0% of total energy intake, and sugar sweetened beverages contributed about 1.4%. All antioxidant vitamins were significantly correlated with TWI. However, a higher correlation was found for water from food rather than water from beverages, suggesting that major food contributors to antioxidant vitamin intake might be fruits and vegetables, rather than beverages other than water. A mild correlation was found between fruit juices and vitamin C; coffee, tea and alcohol, and niacin and polyphenols; and milk and vitamin B12. The findings from the present study show that our sample population has an adequate intake of TWI and that there is a healthy association between beverages and dietary antioxidants.

Abstract
The beneficial role of the Mediterranean diet in the prevention of chronic diseases, including cardiovascular diseases, diabetes, and obesity, is well-recognized. In this context, Brassicaceae are considered important vegetables due to several evidences of their health promoting effects that are associated to bioactive compounds present in the edible parts of the plants. In this review, the mechanisms of action and the factors regulating the levels of the bioactive compounds in Brassicaceae have been discussed. In addition, the impact of industrial and domestic processing on the amount of these compounds have been considered, in order to identify the best conditions that are able to preserve the functional properties of the Brassicaceae products before consumption. Finally, the main strategies used to increase the content of health-promoting metabolites in Brassica plants through biofortification have been analyzed.

Abstract
Two neutral polysaccharides (BRNP-1, 6.9 kDa; BRNP-2, 4.8 kDa) were purified from the common edible plant Brassica rapa L. via the combined techniques of ion-exchange chromatography and high-performance gel permeation chromatography. Monosaccharide composition analysis showed that BRNP-1 and BRNP-2 were composed of glucosyl residues. Methylation and 1D- and 2D-NMR analyses revealed that both BRNP-1 and BRNP-2 contained a backbone chain that was composed of α-D-(1 → 4)-linked Glcp residues and side chains that were composed of terminally linked Glcp residues attached at the O-6 position of backbone-glycosyl residues. BRNP-1 and BRNP-2, however, differed in branch degree and molecular weight. Bioassay results showed that treatment with the higher dosage (400 μg/mL) of BRNP-1 and BRNP-2 stimulated the proliferation, NO release, and cytokine secretion (IL-6 and TNF-α) of RAW264.7 macrophages. These results suggested that BRNP-1 and BRNP-2 may enhance macrophage-mediated immune responses.

Abstract
The increasing prevalence of obesity over the course of life is a global health challenge because of its strong and positive association with significant health problems such as type 2 diabetes, cardiovascular disease, stroke, and some cancers. The complex causes and drivers of obesity include genetic factors, social, ecological and political influences, food production and supply, and dietary patterns. Public health messages and government food and activity guidelines have little impact; the retail food environment has many low-priced, nutrient-poor, but energy-dense products and there is a gap between what an individual knows and what they do. Public health and education services need legislation to mandate supportive environments and promote food literacy. Two New Zealand case studies of proof-of-principle of positive change are described: Project Energize and Under 5 Energize as exemplars of school environment change, and the development of the Nothing Else™ healthier snack bar as an example of working with the food industry. Changes in food literacy alongside food supply will contribute in the long term to positive effects on the future prevalence of obesity and the onset of non-communicable disease. More cross-disciplinary translational research to inform how to improve the food supply and food literacy will improve the health and wellbeing of the economy and the population.

Abstract
Benefits to health from a high consumption of fruits and vegetables are well established and have been attributed to bioactive secondary metabolites present in edible plants. However, the effects of specific health-related phytochemicals within a complex food matrix are difficult to assess. In an attempt to address this problem, we have used elicitation to improve the nutraceutical content of seedlings of Brassica oleracea grown under controlled conditions. Analysis, by LC-MS, of the glucosinolate, isothiocyanate and phenolic compound content of juices obtained from sprouts indicated that elicitation induces an enrichment of several phenolics, particularly of the anthocyanin fraction. To test the biological activity of basal and enriched juices we took advantage of a recently developed in vitro model of inflamed human intestinal epithelium. Both sprouts' juices protected intestinal barrier integrity in Caco-2 cells exposed to tumor necrosis factor α under marginal zinc deprivation, with the enriched juice showing higher protection. Multivariate regression analysis indicated that the extent of rescue from stress-induced epithelial dysfunction correlated with the composition in bioactive molecules of the juices and, in particular, with a group of phenolic compounds, including several anthocyanins, quercetin-3-Glc, cryptochlorogenic, neochlorogenic and cinnamic acids.

Abstract
OBJECTIVES Renal damage precedes occurrence of stroke in high-sodium/low-potassium-fed stroke-prone spontaneously hypertensive rat (SHRSP). We previously reported a marked suppression of uncoupling protein-2 (UCP2) upon high-salt Japanese-style diet in SHRSP kidneys. Vegetable compounds are known to exert protective effects in cardiovascular diseases. We aimed at evaluating the impact of Brassica oleracea sprouts juice toward renal damage in Japanese diet-fed SHRSP and exploring the role of 5'-adenosine monophosphate-activated protein kinase (AMPK)/NAD-dependent deacetylase sirtuin-1 (SIRT1)/peroxisome proliferator-activated receptor-γ coactivator-1α (PGC1α)/peroxisome proliferator-activated receptor-α (PPARα)/UCP2 axis. METHODS SHRSP received Japanese diet for 4 weeks. A group of SHRSP received Japanese diet and B. oleracea. A third group received Japanese diet, B. oleracea, and PPARα inhibitor (GW6471). A group of SHRSP fed with regular diet served as control. RESULTS Japanese diet induced marked increases of oxidative stress, inflammation, and proteinuria, along with glomerular and tubular damage, as compared with regular diet. A significant suppression of AMPK/UCP2 pathway was observed. Despite Japanese diet feeding, concomitant administration of B. oleracea prevented oxidative stress accumulation, inflammation, renal damage, and proteinuria. All components of the UCP2 regulatory pathway were significantly increased by B. oleracea. Superoxide dismutase 2 and phosphoendothelial nitric oxide synthase were also stimulated. Addition of PPARα inhibitor to B. oleracea and Japanese diet significantly reduced the B. oleracea beneficial effects. SBP levels were comparable among the different groups of rats.In vitro, UCP2 inhibition by genipin offset the antioxidant effect of B. oleracea in renal mesangial and proximal tubular cells. CONCLUSION B. oleracea administration prevented renal damage in salt-loaded SHRSP, independently from SBP, with parallel stimulation of AMPK/SIRT1/PGC1α/PPARα/UCP2 axis. Stimulation of the latter mechanism may provide relevant renal protective effect and play a therapeutic role in target organ damage progression in hypertension.

Abstract
Polygalacturonases (PGs) participate in pectin disassembly of cell wall and belong to one of the largest hydrolase families in plants. In this study, we identified 99 PG genes in Brassica rapa. Comprehensive analysis of phylogeny, gene structures, physico-chemical properties and coding sequence evolution demonstrated that plant PGs should be classified into seven divergent clades and each clade's members had specific sequence and structure characteristics, and/or were under specific selection pressures. Genomic distribution and retention rate analysis implied duplication events and biased retention contributed to PG family's expansion. Promoter divergence analysis using "shared motif method" revealed a significant correlation between regulatory and coding sequence evolution of PGs, and proved Clades A and E were of ancient origin. Quantitative real-time PCR analysis showed that expression patterns of PGs displayed group specificities in B. rapa. Particularly, nearly half of PG family members, especially those of Clades C, D and F, closely relates to reproductive development. Most duplicates showed similar expression profiles, suggesting dosage constraints accounted for preservation after duplication. Promoter-GUS assay further indicated PGs' extensive roles and possible redundancy during reproductive development. This work can provide a scientific classification of plant PGs, dissect the internal relationships between their evolution and expressions, and promote functional researches.

Abstract
Cardiovascular diseases represent a worldwide relevant socioeconomical problem. Cardiovascular disease prevention relies also on lifestyle changes, including dietary habits. The cardioprotective effects of several foods and dietary supplements in both animal models and in humans have been explored. It was found that beneficial effects are mainly dependent on antioxidant and anti-inflammatory properties, also involving modulation of mitochondrial function. Resveratrol is one of the most studied phytochemical compounds and it is provided with several benefits in cardiovascular diseases as well as in other pathological conditions (such as cancer). Other relevant compounds are Brassica oleracea, curcumin, and berberine, and they all exert beneficial effects in several diseases. In the attempt to provide a comprehensive reference tool for both researchers and clinicians, we summarized in the present paper the existing literature on both preclinical and clinical cardioprotective effects of each mentioned phytochemical. We structured the discussion of each compound by analyzing, first, its cellular molecular targets of action, subsequently focusing on results from applications in both ex vivo and in vivo models, finally discussing the relevance of the compound in the context of human diseases.

Abstract
Hibiscus sabdariffa has gained attention for its antioxidant activity. There are many accessions of H. sabdariffa in the world. However, information on the quantification of antioxidant compounds in different accessions is rather limited. In this paper, a liquid chromatography/quadrupole-time-of-flight mass spectrometry (LC-Q-TOF-MS) method for simultaneous determination of five antioxidant compounds (neochlorogenic acid, chlorogenic acid, cryptochlorogenic acid, rutin, and isoquercitrin) in H. sabdariffa leaves was developed. The method was validated for linearity, sensitivity, precision, repeatability and accuracy. The validated method has been successfully applied for determination of the five analytes in eight accessions of H. sabdariffa. The eight accessions of H. sabdariffa were evaluated for their antioxidant activities by DPPH free radical scavenging assay. The investigated accessions of H. sabdariffa were rich in rutin and exhibited strong antioxidant activity. The two accessions showing the highest antioxidant activities were from Cuba (No. 2) and Taiwan (No. 5). The results indicated that H. sabdariffa leaves could be considered as a potential antioxidant source for the food industry. The developed LC-Q-TOF-MS method is helpful for quality control of H. sabdariffa.
