Abstract
This review paper exhibits the underexplored realm of heavy metal contamination and associated risks in sea cucumbers (SCs), which hold significant importance in traditional Asian marine diets and are globally harvested for the Asian market. The assessment focuses on heavy metals (HMs) presence in various SC species, revealing a global trend in HMs concentrations across anatomical parts: Fe > Zn > As > Cu > Hg > Pb > Mn > Cr > Ni > Cd. Specific species, such as Eupentacta fraudatrix, Holothuria mammata, Holothuria polii, Holothuria tubulosa, and Holothuria atra, exhibit heightened arsenic levels, while Stichopus herrmanni raises concerns with mercury levels, notably reaching 3.75 mg/kg in some instances, posing potential risks, particularly for children. The study sheds light on anthropogenic activities such as cultivation, fishing, and shipping, releasing HMs into marine ecosystems and thereby threatening ocean and coastal environments due to the accumulation and toxicity of these elements. In response to these findings, the paper suggests SCs as promising bioindicator species for assessing metal pollution in marine environments. It underscores the adverse effects of human actions on sediment composition and advocates for ongoing monitoring efforts both at sea and along coastlines.

Abstract
Low trophic species are often mentioned as additional food sources to achieve broader and more sustainable utilisation of the ocean. The aim of this study was to map the food potential of Norwegian orange-footed sea cucumber (Cucumaria frondosa). C. frondosa contained 7% protein, 1% lipids with a high proportion of polyunsaturated fatty acids, and a variety of micronutrients. The nutrient density scores (NDS) of C. frondosa were above average compared towards daily recommended intakes (DRI) for men and women (age 31-60) but below when capped at 100% of DRI. The concentrations of persistent organic pollutants and trace elements were in general low, except for inorganic arsenic (iAs) (0.73 mg per kg) which exceeded the limits deemed safe by food authorities. However, the small number of samples analysed for iAs lowers the ability to draw a firm conclusion. The carbon footprint from a value chain with a dredge fishery, processing in Norway and retail in Asia was assessed to 8 kg carbon dioxide equivalent (CO2eq.) per kg C. frondosa, the fishery causing 90%. Although, C. frondosa has some nutritional benefits, the carbon footprint or possible content of iAs may restrict the consumption.

Abstract
The global production of sea cucumbers was 245 thousand tons in 2020. Sea cucumbers are important food items in Asian and Pacific cuisines, the highest proportion being consumed in China as "bêche-de-mer" dried, gutted, boiled and salted body wall. However, consumption of sea cucumbers is expanding in China and globally, and the high demand has led to decline in populations of sea cucumbers, due to overexploitation. Aquaculture, together with novel fisheries on new species in new regions is easing the demand. Thus, an assessment of food safety is warranted. A literature search on food hazards was performed. A high proportion of the selected papers concerned heavy metals and metalloid hazards, such as mercury (Hg), cadmium (Cd), lead (Pb), and arsenic (As). No specific maximum limits (MLs) have been set for contents of these in sea cucumbers. Thus, the contents were compared with maximum limits set for aquatic animals in general or bivalve molluscs if available. With regard to Hg and Cd levels, none of the samples exceeded limits set by the European Commission or the National Standard of China, while for Pb, samples from highly industrialised areas exceeded the limits. Surprisingly, data on contaminants such as POPs, including dioxins and dl-PCB, PAH and PFAS as well as microbial hazards were scarce. The availability of fresh sea cucumber has increased due to aquaculture. To preserve the original flavour some consumers are reported to prefer to eat raw sea cucumber products, sashimi and sushi, which inevitably causes challenges from the microbial food safety perspective. Altogether, this paper highlights specific needs for knowledge, in particular when harvesting new species of sea cucumbers or in industrialized regions. Systematic monitoring activities, appropriate guidelines and regulations are highly warranted to guide the utilization of sea cucumbers.

Abstract
With the constant quest for new sources of superfoods to supplement the largely nutrient deficient diet of the modern society, sea cucumbers are gaining increasing popularity. Three species of sea cucumbers, Cucumaria frondosa, Apostichopus californicus and Apostichopusjaponicus were collected from three geographical regions, Atlantic and Pacific coast of Canada and Yellow sea/ East China sea in China, respectively. These organisms were sectioned into parts (body wall, tentacles, internal organ, skin and muscle) and analysed for total arsenic (As) by inductively coupled plasma mass spectrometry (ICP-MS) and As species by high-performance liquid chromatography (HPLC) coupled to ICP-MS. Normal and reversed sequential extractions were optimised to address As distribution between lipids (polar and non-polar) and water-extractable fractions. Two extraction methods for water-extractable As were compared in terms of the number and the amount of extracted species. The results revealed that total As concentration and As species distribution varies significantly between sea cucumbers species. Total As in studied body parts ranged between 2.8 ± 0.52 and 7.9 ± 1.2 mg kg-1, with an exception of the muscle tissue of A. californicus, where it reached to 36 ± 3.5 mg kg-1. Arsenobetaine (AsB) was the most abundant As species in A. californicus and A.japonicus, however, inorganic As represented over 70% of total recovered As in the body parts of C. frondosa. Arsenosugars-328 and 482 were found in all studied body parts whereas arsenosugar-408 was only found in the skin of A. californicus. This is the first time that such a variation in As species distribution between sea cucumber species has been shown.

Abstract
The concentrations of eight heavy metals (As, Cd, Cr, Cu, Mn, Ni, Pb and Zn) were measured in the sediment, the isolated microplastics from the sediment and the body wall of sea cucumbers from farms in China. Accordingly, the heavy metal concentrations in the sediment were below the class I upper limit of Chinese sediment quality guidelines. Among heavy metals, the median concentrations of Cd and As were higher in the body wall than in the corresponding sediment. Additionally, the median concentrations of Cd, Pb, and Zn were higher on the microplastics than in the corresponding sediment. Furthermore, there was no significant correlation among heavy metals in sediment, sea cucumber and microplastics. This study contributes to the understanding of the heavy metal accumulation in the sediment, the microplastics and the body wall of the sea cucumber.

Abstract
The aim of the present study was to extract and characterize bioactive components from separate body organs of Holothuria leucospilota. Preliminary qualitative assessment of the crude extracts was positive for phenols, terpenoids, carbohydrates, flavonoids, saponins, glycosides, cardiac glycosides, steroids, phlobatannins, and tannins in all body organs evaluated. Phenolics were the most abundant group of bioactives accounting for approximately 80%. The extraction solvent mixtures that yielded most compounds evaluated were methanol/acetone (3:1, v:v) and methanol/distilled water (3:1, v:v). In other analyses, GC-MS data revealed diverse metabolic and biologically active compounds, where those in high concentrations included 2-Pentanone, 4-hydroxy-4-methyl- among the ketones; phenol- 2,4-bis(1,1-dimethylethyl)-, a phenol group; and 2-Chlorooctane, a hydrocarbon. Among FA and their methyl/ethyl esters, n-hexadecanoic acid, 5,8,11,14-eicosatetraenoic acid ethyl ester (arachidonic acid), and 5,8,11,14,17-eicosapentaenoic acid methyl ester (EPA) were among the most abundant FAMEs accounting for approximately 50% of the subgroups measured. Data from GC-FID analysis revealed methyl laurate (C12:0), methyl myristate (C14:0), methyl palmitate (C16:0), and methyl stearate (18:0) methyl esters as the most abundant saturated FA, whereas cis-9-oleic methyl ester (C18:1) and methyl linoleate (C18:2) were found as the major monounsaturated FA and PUFA FAMEs, respectively, in the body wall of the species. Taken together, the extraction and characterization of different categories of metabolically and biologically active compounds in various organ extracts of H. leucospilota suggest that the species is potentially a rich source of cholesterol-lowering, antioxidant, antimicrobial, and anticancer agents. These substances are known to benefit human health and assist in disease prevention. These findings justify the use of sea cucumbers in traditional folklore medication and the current interest and attention focused on the species to mine for bioactives in new drugs research.

Abstract
Sea cucumbers have long been used as food and traditional medicine in Asian countries with Stichopus hermanni, Thelenota ananas, Thelenota anax, Holothuria fuccogilva, and Actinopyga mauritiana as most highly-valued species. These organisms are potential source of high value-added compounds with therapeutic properties such as triterpene glycosides, carotenoids, bioactive peptides, vitamins, minerals, fatty acids, collagens, gelatins, chondroitin sulfates, amino acids. In the recent years, health benefit effects of sea cucumbers have been validated through scientific research and have shown medicinal value such as wound healing, neuroprotective, antitumor, anticoagulant, antimicrobial, and antioxidant. These functional materials lead to potential development in various foods and biomedicine industries. In this review, we have presented a general view of major medicinal and health benefit effects of functional sea cucumbers from Asia region. The structural significance and the potential application of sea cucumber-derived functional materials as well as their nutritional value are also discussed.

Abstract
The sea cucumber Stichopus horrens is an important component of near-shore ecosystems, and in the Kingdom of Tonga it also comprises an important commercial and subsistence fishery. To assess the sensitivity of this species to the toxic trace metal cadmium (Cd), adult S. horrens were exposed for 96h to an environmental (15µgL-1) or effect (765µgL-1) concentration of waterborne Cd. The respiratory tree and intestine accumulated higher concentrations of Cd than the muscle and body wall, but there were no effects of Cd on tissue ions (sodium, potassium, magnesium, calcium). For comparison, Cd accumulation was also examined in the Australasian sea cucumber Australostichopus mollis. This species displayed a similar pattern of tissue-specific accumulation to S. horrens, but exhibited lower tissue Cd burdens, likely a consequence of lower experimental temperature. Effects on gonad ion content were also seen in this species. At the highest Cd exposure concentration, S. horrens showed impaired ammonia excretion rates and an increased molar oxygen:nitrogen ratio (O:N), indicative of a decreased reliance on protein metabolism. Overall, this study suggests that S. horrens is relatively tolerant of Cd exposure, but raises concerns regarding the subsistence fishery practice of consuming the viscera of this species.

Abstract
The objective of this study is to investigate the levels, inter-species-specific, locational differences and seasonal variations of vanadium in sea cucumbers and to validate further several potential factors controlling the distribution of metals in sea cucumbers. Vanadium levels were evaluated in samples of edible sea cucumbers and were demonstrated exhibit differences in different seasons, species and sampling sites. High vanadium concentrations were measured in the sea cucumbers, and all of the vanadium detected was in an organic form. Mean vanadium concentrations were considerably higher in the blood (sea cucumber) than in the other studied tissues. The highest concentration of vanadium (2.56 μg g(-1)), as well as a higher degree of organic vanadium (85.5 %), was observed in the Holothuria scabra samples compared with all other samples. Vanadium levels in Apostichopus japonicus from Bohai Bay and Yellow Sea have marked seasonal variations. Average values of 1.09 μg g(-1) of total vanadium and 0.79 μg g(-1) of organic vanadium were obtained in various species of sea cucumbers. Significant positive correlations between vanadium in the seawater and V org in the sea cucumber (r = 81.67 %, p = 0.00), as well as between vanadium in the sediment and V org in the sea cucumber (r = 77.98 %, p = 0.00), were observed. Vanadium concentrations depend on the seasons (salinity, temperature), species, sampling sites and seawater environment (seawater, sediment). Given the adverse toxicological effects of inorganic vanadium and positive roles in controlling the development of diabetes in humans, a regular monitoring programme of vanadium content in edible sea cucumbers can be recommended.

Abstract
The study was undertaken to assess the contents of heavy metals (Cu, Zn, Cr, Pb, Cd, As and Hg) in sea cucumber (Apostichopus japonicus) juveniles from coastal areas of Bohai and Yellow seas in northern China. Sea cucumber juveniles were collected from twenty commercial hatcheries distributed in five coastal cities. The mean concentrations obtained for heavy metals in mg/kg were as follows: Cu (0.179), Zn (2.634), Cr (0.108), Pb (0.065), Cd (0.161), As (0.372), Hg (0.034). All the mean concentrations were below the maximum residual limits set by Chinese legislation, but As in 10 % samples exceeded the safety threshold. Significant differences in contents of Cr, Pb and Hg were found among the five investigated areas. Overall, the heavy metal levels in sea cucumber juveniles were relatively low and more attention should be paid to toxic metals Pb, Cd, As and Hg in future routine monitoring program.

Abstract
Organically produced, harvested, and dried fruit samples bought at organic markets in Kayseri, Turkey have been analyzed for their trace element contents. In the determinations, flame atomic absorption spectrometer (FAAS) was used. This pilot study is the first to be performed for organically produced, harvested, and dried fruit samples from Kayseri, Turkey. The copper, iron, manganese, and zinc concentrations were found to be 1.6-15.5, 10.3-144, 23.0-211, and 23.3-91.6 μg/g, respectively. The cobalt, lead, cadmium, chromium, and nickel concentrations in all analyzed organic fruit samples were below the quantification limits of FAAS. SRM 1570A spinach leaves and SRM 1515 apple leaves were used to check the accuracy of the procedure. The results for the dried fruit samples found in this work were compared with the values from some studies from the world. The results found in the presented work may also be useful for future studies about organically produced, harvested, and dried fruit samples.
