Quality changes in chicken livers during cooking

Raw chicken livers are often contaminated with Campylobacter and Salmonella. Cooking is considered the last defense of pathogen control for meals containing chicken livers. However, consumers' preference for pink color and a creamy texture as desired attributes in preparing liver pâté may lead to inadequate cooking, thereby increasing the risk of foodborne illness. This study aimed to investigate the effects of different cooking conditions (60-90°C, 0-65 min) on quality changes in frozen and fresh chicken livers and develop cooking recommendations to produce safe liver products with desired qualities. Frozen storage reduced the water holding capacity of raw chicken livers and led to more cooking loss (reduction in the weight of liver pieces during cooking) and area shrinkage after heating. The cooking loss and area shrinkage increased with increasing heating time and temperature, following the first-order fractional model. Compared with fresh livers, the shear resistance for cutting through the cooked livers increased after heating at 73.9°C to 90°C and decreased at 60°C, whereas the livers heated at 70°C had shear resistance (~4.5 N/g) similar to the fresh liver, regardless of the heating times used in this study. Heating resulted in color changes in livers, shifting from red hue (0°) toward yellow hue (90°), as characterized by the increased hue angles after heating. Cooking livers to an internal temperature of 70°C to 73.9°C and hold for 101 to 26 s is recommended for food processing plants or restaurants to prepare ready-to-eat meals containing chicken livers to achieve microbial safety with respect to Salmonella and provide cooked livers with desired texture and pink color.

Effect of some factors used to the chicken meat preservation and processing on the protease activity

The obtained results indicated that the cathepsin activity was higher by about 60% in the extract from thigh than from breast muscles. Freezing and defrosting (not stored) of chicken meat did not influence the breast muscle cathepsin activity while they caused a decrease of activity of about 20% in the case of thigh muscles. The increase in cathepsin activity was noticed in both kinds of muscles during storage at -20 degrees C up to 4 months (45.6% and 19.4% for thigh and breast muscles respectively). The activity of cathepsin in extract from 5 months stored meat reached 80% in case of breast muscles and 83% in case of thigh muscles in relation to control sample respectively. The cathepsin activity significantly increased during heating of breast muscles up to 60 degrees C, but in case of thigh muscles it was slightly higher than at 50 degrees C. The heating of cured chicken breast muscles up to 60 degrees C caused a non significant growth in cathepsin activity opposite to raw muscles. The cathepsin activity from all cured samples heated up to 70 degrees C were several times lower in relation to control samples. The cathepsin activity of both thigh and breast muscles were resistant to gamma radiation. The investigated factors caused changes in the activity of cathepsin but none of them caused its total inactivation. The changes of cathepsin activity depended on the kind of muscles and the kind and the value of acting factors.

Mechanisms for controlling enzymatic reactions in foods

Enzymes, as biocatalysts, are capable of specific manipulation of all the major biomolecules found in foods, and a wide variety of enzymes are therefore used as supplements for various food processing operations. There are, however, certain enzymes whose activities result in a rapid deterioration of food quality to be controlled in order to maintain quality and to extend product shelf-life. Various mechanisms and techniques for controlling the undesirable activities of such enzymes in foods have been developed ingeniously over the years by food scientists. These include traditional methods like low- and high-temperature treatment, chemical treatments, and control of water activity involving dehydration and salting. These techniques, however, have certain limitations, such as (1) changing the prime quality of certain foods, (2) health risks associated with certain chemical treatments, and (3) consumer preference for certain foods to be raw and "natural". Novel and potentially viable techniques such as pressurization, use of enzymes ("killer enzymes"), ionizing radiation, chemical modification of enzymes, and other naturally occurring protein inhibitors have therefore been developed to help alleviate some of these problems.
