Abstract
In this study, we performed a quantitative microbial risk assessment (QMRA) of Salmonella through intake of egg consumption after cooking (dry-heat, moist-heat, and raw consumption). Egg samples (n = 201) from retail markets were analyzed for the presence of Salmonella. In addition, temperature and time were investigated during egg transit, storage, and display. A predictive model was developed to characterize the kinetic behavior of Salmonella in eggs, and data on egg consumption and frequency were collected. Eventually, the data was simulated to estimate egg-related foodborne illnesses. Salmonella was not found in any of the 201 egg samples. Thus, the estimated initial contamination level was -4.0 Log CFU/g. With R2 values of 0.898 and 0.922, the constructed predictive models were adequate for describing the fate of Salmonella in eggs throughout distribution and storage. Eggs were consumed raw (1.5%, 39.2 g), dry-heated (57.5%, 43.0 g), and moist-heated (41%, 36.1 g). The probability of foodborne Salmonella illness from the consumption of cooked eggs was evaluated to be 6.8×10-10. Additionally, the probability of foodborne illness not applied cooking methods was 1.9×10-7, indicating that Salmonella can be reduced by cooking. Therefore, the risk of Salmonella infection through consumption of eggs after cooking might be low in S. Korea.

Antimicrobial Susceptibility of Salmonella Isolated from Chickens and Humans in Wau, South Sudan. Int J Microbiol 2022. Abstract
Background. Salmonella infections are a public health problem across the globe. In South Sudan, there is little information regarding the prevalence and antibiotic resistance patterns of Salmonella. Therefore, this study assessed the prevalence and antimicrobial susceptibility of Salmonella isolates from chickens and humans in South Sudan. Fecal samples were collected and cultured on Xylose Lysine Deoxycholate Agar for the isolation of Salmonella and confirmed using biochemical tests and PCR through the amplification of the invA gene. A total of 417 fecal samples were examined, of which 270 (64.7%) were chicken cloacal swabs while 147 (35.3%) were humans’ stool specimens. Results. Eleven (11) Salmonella isolates were isolated from humans while nine were from chickens. All 11 isolates from humans were susceptible to sulfamethoxazole-trimethoprim, chloramphenicol, streptomycin, cefotaxime, nalidixic acid, and gentamicin. However, 4 (36.7%) isolates showed resistance to ciprofloxacin, 2 (18.9%) to ampicillin, and 1 (9.1%) to tetracycline. All chicken isolates were susceptible to chloramphenicol, streptomycin, sulfamethoxazole-trimethoprim, ciprofloxacin, cefotaxime, nalidixic acid, and gentamicin but showed resistance to tetracycline 2 (22.2%) and ampicillin 1 (11.1%). Conclusion. Antimicrobial resistant isolates were isolated in both chickens and humans. Further, MDR isolates were found in both chicken and human samples, and this is a public health concern. This, therefore, calls for concerted efforts to educate producers and consumers on public health, food safety, food hygiene in food production, and enhancement of surveillance programmes on zoonotic bacteria and antimicrobial susceptibility.

Abstract
ABSTRACT Experiments were performed to assess the survival of Salmonella on whole Brazil nut kernels and pumpkin seeds stored at 8, 23, and 37°C. Brazil nut kernels and pumpkin seeds were inoculated with bacterial inoculum containing 10.4 log CFU/mL Salmonella Enteritidis phage type 30 and aseptically dried at room temperature for 24 h. After the drying step, levels of Salmonella recovered from Brazil nut kernels and pumpkin seeds were 8.67 ± 0.01 and 9.27 ± 0.03 log CFU/g, respectively. The survival of Salmonella and change in water activity was assessed over 413 days. Although Salmonella survived throughout the storage period, significant differences were recorded between the storage temperatures. Results showed that the survival of Salmonella Enteritidis phage type 30 was more enhanced at 8°C compared with storage at 23 and 37°C. Comparing the survival of Salmonella on the two products at different storage temperatures, there was no significant difference between the means of Salmonella counts for the two products. Results show that Salmonella survived longer on pumpkin seeds stored at 8°C (P = 0.53, compared with Brazil nut kernels), and at 23 and 37°C, Salmonella survived longer on Brazil nut kernels (P = 0.12, compared with pumpkin seeds). The highest and lowest survival of Salmonella was observed on pumpkin seeds with decay rates of -0.003 ± 0.001 and -0.015 ± 0.001 log CFU/g/day for pumpkin seeds stored at 8 and 37°C, respectively. The water activity values recorded on days 2 and 413 for Brazil nut kernels stored at 8, 23, and 37°C were 0.424 and 0.434, 0.383 and 0.385, and 0.372 and 0.256, respectively. For pumpkin seeds stored at 8, 23, and 37°C, water activity values recorded on days 2 and 413 were 0.754 and 0.412, 0.627 and 0.350, and 0.787 and 0.205, respectively. The data obtained in this study provide useful insight on the influence of temperature on the survival of Salmonella on the surface of Brazil nut kernels and pumpkin seeds. HIGHLIGHTS

Abstract
BACKGROUND Zoonotic food-borne pathogens such as Salmonella spp., which can be hosted by some raw foods, play a crucial role in ranking the public health of a country OBJECTIVES: The present study was conducted to assess the frequency, antibiotic resistance pattern and index of multiple antibiotic resistance (MAR) of Salmonella spp. in chicken meat METHODS: A cross-sectional survey was conducted from October 2017 to March 2018. One-hundred and fifty chicken meat samples were collected from meat stores in Zahedan, southeast of Iran and screened for contamination with Salmonella spp. using the polymerase chain reaction assay targeting the inv-A gene. Antimicrobial susceptibility testing was performed against 11 commonly prescribed antimicrobial agents in the veterinary treatment to calculate the MAR index RESULTS: The contamination rate was 2.7% (4/150). The antimicrobial resistance rate was 100% (n = 4) against penicillin, tylosin, tetracycline, erythromycin and tiamulin, 50% (n = 2) against trimethoprim/sulfamethoxazole, difloxacin and lincomycin/spectinomycin and 25% (n = 1) against flumequine and florfenicol. All isolates were sensitive to fosfomycin. Interestingly, all isolates (n = 4) exhibited different MAR patterns. Furthermore, the MAR index ranged from 0.45 to 0.81 CONCLUSIONS: In addition to the MAR index, which indicated that the isolate originated from a source where antibiotics were used to a great degree and/or in large amounts, the results showed that the chicken meat hosted resistant strains of Salmonella spp. in the study area. Overall, the findings indicated an important public health problem. To reduce this alarming signal, the poultry industry should implement control measures in the study area.

Abstract
Background and Aim: Food poisoning caused by Salmonella is among the most common gastrointestinal discomfort resulted from egg consumption which can produce various syndromes. The present study is a systematic review and meta-analysis investigation on the published studies about the prevalence of Salmonella contamination in the consumed eggs in Iran. Materials and Methods: The data were collected and analyzed from four international search databases, including PubMed, Scopus, Science Direct, and Google Scholar and four Iranian databases comprising SID, MagIran, Civilica, and IranDoc. After searching all the databases, 303 articles were found, from which 31 articles were included in the final analysis. Results: According to the data analysis, the highest rate of contamination was belonged to the industrial eggs (7.49%), however, the prevalence rate was reported 13.61% in the eggshell part. The overall prevalence of Salmonella contamination in consumed eggs of Iran using culture of microbial, molecular, molecular-serological, culture-molecular, culture-serological, and culture -molecular-serological methods was obtained 11.33%, 5.52%, 0.37%, 1.91%, 5.52%, and 0.73%, respectively. Prevalence in the 21 geographical areas, where studies have been conducted, ranged from 0% (Zahedan) to 29.06% (Tabriz). The studies have also showed that eight different serotypes were among the major cause of Salmonella contamination in eggs. The most common Salmonella serotype was Salmonella Enteritidis and the highest diversity in Salmonella contaminant serotypes was recorded in Talesh (including S. Enteritidis, Salmonella Gallinarum, Salmonella Virchow, and Salmonella Newport). Conclusion: Results of this study revealed the high prevalence of Salmonella contamination in eggs, in Iran. Therefore, disinfection and cleaning bed, cleaning of equipment and supplies, and proper maintenance temperature and humidity of the eggs are recommended. In addition, proper personal hygiene and prohibition of consuming raw egg products are essential.

Abstract
Introduction. Due to the trend of avoiding antibiotics and acquiring eco-friendly products, the use of environmentally safe preparations is becoming increasingly relevant in poultry farming.
Study objects and methods. We used Salmonella enteritidis and Campylobacter jejuni isolated from poultry carcasses. At the first in vitro stage, we studied the ability of mannan oligosaccharides, isolated from the cell walls of Saccharomyces cerevisiae yeast, to adsorb bacterial pathogens. At the second stage, we studied the influence of fraction on the activity, colonization and microflora composition of ducklings’ intestines. At the third stage, we determined the antagonistic activity of Bifidobacterium spp. (Bifidobacterium lactis, Bifidobacterium longum, Bifidobacterium bifidum) and Lactobacillus spp. (Lactobacillus fermentun, Lactobacillus salivarius, Lactobacillus acidophilus) against Salmonella enteritidis and Campylobacter jejuni isolates. The experiment was conducted on the ducklings of Star 53 H.Y. cross. Their diet was supplemented with probiotics, prebiotics, and their combination.
Results and discussion. In vitro studies showed the ability of mannan oligosaccharides isolated from the cell walls of Saccharomyces cerevisiae yeast to adsorb Salmonella enteritidis and Campylobacter jejun. In vivo experiment showed the ability of mannan oligosaccharides to prevent colonization of poultry intestines by bacterial pathogens with type I fimbriae.
Conclusion. The reisolation rate of ducks infected with Salmonella enteritidis was 53.6% lower, and those infected with Campylobacter jejuni, 66.2% lower than the control. Mannan oligosaccharides added to the diet did not affect the concentration of lactobacilli, enterococci, and anaerobic bacteria in the ducks’ intestines. A combined use of Bifidobacterium spp. and mannan oligosaccharides improved the preservation of poultry stock by 8.7%, which made it an effective way to prevent poultry salmonellosis.
