Volatile Metabolites to Assess the Onset of Chilling Injury in Fresh-Cut Nectarines

Fresh-cut processing is a good strategy to enhance the commercialization of peaches and nectarines, which easily deteriorate during low-temperature storage mostly due to the occurrence of chilling injury. Although several studies have been performed to improve the shelf-life of fresh-cut stone fruit, the achievement of high-quality fresh-cut peaches and nectarines still constitutes a challenge. The present study aimed to gain insights into the evolution of the postharvest quality of fresh-cut nectarines (Prunus persica L. Batsch) Big Bang, cold-stored at two different storage temperatures (4 and 8 °C) for up to 10 days. Several aspects influencing the quality traits (sensory and postharvest quality parameters; the profile of phenolic and volatile organic compounds (VOCs)) were explored to predict the marketable life of the fresh-cut nectarines. The respiration rate was higher in samples stored at 4 °C, while the browning process was more evident in fruit stored at 8 °C. Partial Least Squares Regression performed on VOCs showed that samples stored at 4 °C and 8 °C presented a different time evolution during the experiment and the trajectories depended on the interaction between time and temperature. Moreover, Multiple Linear Regression analysis discovered that the 17 VOCs affected by the storage conditions seemed to suggest that no chilling injury was detected for nectarines Big Bang. In conclusion, this approach could also be used with other nectarine cultivars and/or different stone fruits.

Recent Approaches to the Formulation, Uses, and Impact of Edible Coatings on Fresh Peach Fruit

Peaches are among the most well-known fruits in the world due to their appealing taste and high nutritional value. Peach fruit, on the other hand, has a variety of postharvest quality issues like chilling injury symptoms, internal breakdown, weight loss, decay, shriveling, and over-ripeness, which makes a challenging environment for industries and researchers to develop sophisticated strategies for fruit quality preservation and extending shelf life. All over the world, consumers prefer excellent-quality, high-nutritional-value, and long-lasting fresh fruits that are free of chemicals. An eco-friendly solution to this issue is the coating and filming of fresh produce with natural edible materials. The edible coating utilization eliminates the adulteration risk, presents fruit hygienically, and improves aesthetics. Coatings are used in a way that combines food chemistry and preservation technology. This review, therefore, examines a variety of natural coatings (proteins, lipids, polysaccharides, and composite) and their effects on the quality aspects of fresh peach fruit, as well as their advantages and mode of action. From this useful information, the processors could benefit in choosing the suitable edible coating material for a variety of fresh peach fruits and their application on a commercial scale. In addition, prospects of the application of natural coatings on peach fruit and gaps observed in the literature are identified.

Dissecting postharvest chilling injuries in pome and stone fruit through integrated omics

Lowering the storage temperature is an effective method to extend the postharvest and shelf life of fruits. Nevertheless, this technique often leads to physiological disorders, commonly known as chilling injuries. Apples and pears are susceptible to chilling injuries, among which superficial scald is the most economically relevant. Superficial scald is due to necrotic lesions of the first layers of hypodermis manifested through skin browning. In peaches and nectarines, chilling injuries are characterized by internal symptoms, such as mealiness. Fruits with these aesthetic or compositional/structural defects are not suitable for fresh consumption. Genetic variation is a key factor in determining fruit susceptibility to chilling injuries; however, physiological, or technical aspects such as harvest maturity and storage conditions also play a role. Multi-omics approaches have been used to provide an integrated explanation of chilling injury development. Metabolomics in pome fruits specifically targets the identification of ethylene, phenols, lipids, and oxidation products. Genomics and transcriptomics have revealed interesting connections with metabolomic datasets, pinpointing specific genes linked to cold stress, wax synthesis, farnesene metabolism, and the metabolic pathways of ascorbate and glutathione. When applied to Prunus species, these cutting-edge approaches have uncovered that the development of mealiness symptoms is linked to ethylene signaling, cell wall synthesis, lipid metabolism, cold stress genes, and increased DNA methylation levels. Emphasizing the findings from multi-omics studies, this review reports how the integration of omics datasets can provide new insights into understanding of chilling injury development. This new information is essential for successfully creating more resilient fruit varieties and developing novel postharvest strategies.

Real-Time Temperature and Humidity Measurements during the Short-Range Distribution of Perishable Food Products as a Tool for Supply-Chain Energy Improvements

Food waste results in an increased need for production to compensate for losses. Increased production is directly related to an increase in the environmental impact of agriculture and in the energy needs associated with it. To reduce food waste, the supply chain should maintain ideal preservation conditions. In horticultural products, temperature, and relative humidity are two of the main parameters to be controlled. Monitoring these parameters can help decision-making in logistics and routes management, as well as to diagnose and timely prevent food losses. In the present work, eighteen wireless traceability devices with temperature and relative humidity sensors monitored crates with horticultural products along a short-range distribution route with five stops (4 h 30 m). Sensor data and a location tag were sent via GSM for real-time monitoring. The results showed fluctuations in temperature and relative humidity that reached up to 7.4 °C and 35.3%, respectively. These fluctuations happened mostly due to frequent door opening, operational procedures, and irregular refrigeration conditions. Furthermore, the results brought attention to a procedure that creates unnecessary temperature fluctuations and energy losses. This study highlights the importance of individual monitorization of goods, for quality control and optimization of energy efficiency along the supply chain.

Proteomic and metabolomic studies on chilling injury in peach and nectarine

Peaches and nectarines are temperate climate stone fruits, which should be stored at 0°C to prevent the ripening of these climacteric fruits. However, if stored for too long or if stored at a higher temperature (4 or 5°C), they develop chilling injury. Chilling injury damage includes (1) dry, mealy, wooly (lack of juice) fruits, (2) hard-textured fruits with no juice (leatheriness), (3) flesh browning, and (4) flesh bleeding or internal reddening. There are genetic components to these disorders in that early season fruits are generally more resistant than late season fruits, and white-fleshed fruits are more susceptible to internal browning than yellow-fleshed fruits. A recent review covered the recent research in genomic and transcriptomic studies, and this review examines findings from proteomic and metabolomics studies. Proteomic studies found that the ethylene synthesis proteins are decreased in cold compromised fruits, and this affects the processes initiated by ethylene including cell wall and volatile changes. Enzymes in metabolic pathways were both higher and lower in abundance in CI fruits, an indication of an imbalance in energy production. Stress proteins increased in both fruits with or without CI, but were higher in damaged fruits. Metabolomics showed the role of levels of sugars, sucrose, raffinose, galactinol, and glucose-6-phosphate in protection against chilling injury, along with other membrane stabilizers such as polyamines. Amino acid changes were inconsistent among the studies. Lipid species changes during storage could be correlated with sensitivity or resistance to CI, but more studies are needed.

Lean Optimization Techniques for Improvement of Production Flows and Logistics Management: The Case Study of a Fruits Distribution Center

The organizations of horticultural producers and, particularly, those that deal with extremely perishable endogenous fruits, such as peaches and cherries, have a greater need to optimize production flows and processes. A particularity of the horticultural industry is the short shelf life of raw materials and the seasonality of products. In this paper, optimization techniques are used to improve the production flows and the management of cold storage and distribution in a fruit central. The application of Lean tools allowed reducing the cycle time by 4.37 min and the lead time by 7.10 min of the whole process, i.e., a reduction of 35.5% and 10.6% of the cycle time and lead time, respectively, excluding the cold conservation operation. The study shows that it is possible to reduce, or even eliminate, waste throughout the process, reduce unnecessary movement, adapt the layout, maximize workspace, and level stocks, as well as greater supplier involvement in a continuous improvement approach. This approach can be outlined as a good practice for the optimization of productive flows and management logistics that may benefit productivity, energy efficiency, human resources distribution, food quality, and reduce food waste.

Fuzzy Logic Decision Support System to Predict Peaches Marketable Period at Highest Quality

Food waste occurs from harvesting to consumption. Applying procedures and technologies, changing attitudes, and promoting awareness have positive social, economic, and environmental impacts that can contribute to reducing food waste. The paper presents a decision support system (DSS) to predict the quality evolution of fruits and vegetables, particularly of peaches, and estimate its commercialization period at the highest overall perceived quality by consumers, thus contributing to reducing food waste. The Fuzzy Logic DSS predicts the evolution of the physical-chemical parameters of peaches (hardness, soluble solids content, and acidity) depending on the cultivar (Royal Summer and Royal Time), storage time, and temperature. As the range of the values of these physical-chemical parameters of peaches that consumers perceive to be at their highest quality are known, the DSS predicts the marketable period in days. Case studies were developed to analyze the influence of each physical-chemical parameter on the commercialization days (number and time to start). It is concluded that temperature is the most important parameter for fruit conservation. A low value of conservation temperature allows for the significant extension of the time that peaches can be sold at the highest quality. Hardness is used to determine the harvest date since it is an index of fruit ripeness. The same conclusion is obtained for the influence of the soluble solids content. The influence of acidity on marketable days is less than the other physical-chemical parameters. This DSS helps retailers to sell their peaches at the highest quality with benefits for all parties. It also helps in the decision-making concerning the actions to take when fruits are reaching the end of their highest quality by predicting the range of the commercialization days. This formulation can be extended to other fruits and vegetables and in the last instance contribute to the reduction of food loss and waste, consequently promoting social, economic, and environmental aspects of our daily life.

Fostering Awareness on Environmentally Sustainable Technological Solutions for the Post-Harvest Food Supply Chain

This study presents a current status and future trends of innovative and environmentally sustainable technological solutions for the post-harvest food supply chain and the food industry, in terms of ecological packaging, active, and/or intelligent packaging. All these concerns are currently highlighted due to the strong increase in the purchase/sale of products on online platforms, as well as the requirements for stricter food security and safety. Thus, this study aims to increase the global awareness of agro-industrial micro, small, and medium size enterprises for the adoption of innovative food solutions though industry digitalization (Industry 4.0), associated logistics and circular economy, with a concern for cybersecurity and products information, communication and shelf-life extension. The adoption of these guidelines will certainly foster along the complete food chain (from producer to consumer, with all intermediary parties) the awareness on environmentally sustainable technological solutions for the post-harvest food supply chain, and thus, promoting the future food sustainability required by the population increase, the climate change, the exodus of rural population to urban areas, and food loss and waste.
