Effect of microwave treatment on the nutritional profile of the citrus mandarin cultivars peels

Evaluation of nutritional profile, phytochemical potential, functional properties and anti-nutritional studies of Citrus limetta peels

The aim of this work was to determine the proximate, mineral, amino acid composition, antioxidant activity, anti-nutritional factors, total dietary fiber, total phenolic content and technological properties of C. limetta peels. Moreover, analytical techniques including FT-IR and SEM were also conducted to study the morphological and structural properties of C. limetta peels. Considering the proximate, mineral, and amino acid composition, C. limetta peels was found to be a good source of ash (3.06 ± 0.20%), crude fiber (10.13 ± 0.30%), carbohydrate (64.08 ± 0.55%), protein (7.56 ± 0.25%), potassium (125.9671 mg/100 g), calcium (112.5861 mg/100 g), magnesium (16.43 mg/100 g), asparagine (2111.06 nmol/mg), glutamic acid (1331.96 nmol/g), and aspartic acid (1162.19 nmol/mg). Furthermore, they contain an appreciable amount of total dietary fiber (48.73 ± 0.45%), total phenolic content (14.30 ± 0.03 mg GAE/g), and antioxidant activity (52.65 ± 0.10%). Moreover, the antinutritional factors present in C. limetta peels were observed to be within the threshold limit. The results of technological properties of peels suggested that they can be potentially utilized as good emulsifying, gelling, foaming, and bulking agents in food industries. Therefore, C. limetta peels can be successfully re-utilized as natural food additive with numerous nutritive and bioactive properties in food sector, thereby achieving zero waste generation.

Comparative study on characteristics of mandarin peel extracts by biological processing

Mandarin peel is a by-product from mandarin canning industry containing multiple functional substances with useful properties such as antibacterial and antioxidant activities. To evaluate the effect of bioprocessing, fresh mandarin peels were fermented by Rhizopus stolonifer JP13 for 4 days and then the peels' antioxidant and antimicrobial activities were tested. The flavonoiuds, hesperidin and VC contents in dry peels were also determined. The data showed that the fermented mandarin peels had promoted antibacterial activity against Escherichia coli, Staphylococcus aureus, Aspergillus flavus, and Candida albicans. An increased scavenging effect on free radicals, with 73.0% of·OH scavenging activities were obtained when compared with fresh mandarin peels. We also observed a significant increase on content of flavonoid (334%) and hesperindin (253.7%), a reduced scavenging effect on O₂^- free radicals (13.94%), and a decrease content of VC (13.7%). The presaging of mandarin peels by Rhizopus stolonifer JP13 strain will promote the functional activities of mandarin peels and accelerate the process of manufacture Citri Reticulatae Pericarpium.

Comparison of ultrasound and microwave assisted extraction of diosgenin from Trigonella foenum graceum seed

From the recent market trend, there is a huge demand for the bioactive compounds from various food matrices that could be capable enough to combat the emerging health effects in day-to-day life. Fenugreek is a well-known spice from ancient times for its medicinal and health benefits. In the present study, two methods of green extraction microwave (MAE) and ultrasound (UAE) assisted were studied in regard of extraction of fenugreek diosgenin. In this study, solvent type (acetone, ethanol, hexane and petroleum ether), solvent concentration (40, 60, 80 and 100%) and treatment time (1.5, 3.0, 4.5 and 6.0 min and 30, 40, 50 and 60 min for MAE and UAE method respectively) was varied to observe the effect of these parameters over extract yield and diosgenin content. The results of this study revealed that treatment time, type of solvent and its concentration and method adopted for extraction of diosgenin has significant effect. In relation with better yield extract and diosgenin content, the yield of fenugreek seed extract was 7.83% with MAE and 21.48% with UAE of fenugreek seed powder at 80% ethanol concentration at 6 and 60 min respectively. The content of diosgenin was observed in fenugreek seed powder extract was 35.50 mg/100 g in MAE and 40.37 mg/100 g in UAE with 80% ethanol concentration at 6 and 60 min respectively. The overall range of yield of fenugreek extract was varied from 1.04% to 32.48% and diosgenin content was 15.82 mg/100 g to 40.37 mg/100 g of fenugreek seed powder including both extraction methods. This study revealed that UAE would impose better ways for preparing fenugreek extract and observing diosgenin content from fenugreek seeds.
