Abstract
During the last decades, Alnus viridis has expanded over former montane pastures and meadows, due to land use and abandonment. This nitrogen-fixing woody species has triggered negative agro-environmental impacts, such as nitrogen (N) leaching, soil acidification and a reduced biodiversity. The aim of this study was to estimate the N translocation from A. viridis-encroached areas to adjacent open pastures by Highland cattle. In 2019 and 2020, Highland cattle herds equipped with GPS collars were placed in four A. viridis-encroached paddocks across Italy and Switzerland. The N content was measured in A. viridis leaves, herbaceous vegetation, and cattle dung pats, which were collected throughout the grazing season. Using GPS locations and collar activity sensors, livestock activity phases were discriminated. The N ingested by cattle was estimated through the N content of herbaceous vegetation and A. viridis leaves of vegetation patches visited by cattle during 24 h before dung sampling (N24H). The N content of herbaceous vegetation significantly increased with increasing A. viridis cover. The average N content in dung pats (31.2 ± 3.4 g.kg-1 DM) was higher than average values from literature on grazing cattle. Moreover, it was positively related to the N24H. Most of this N (29.5 ± 10.3 kg ha-1 yr-1) was translocated towards resting areas, which generally occurred on flat open pastures. Our results highlight the potential of Highland cattle to effectively translocate part of the ingested N from A. viridis-encroached towards targeted open areas, thus bringing new perspective for forage yield and quality improvement in the long-term. Effects of Dietary Tannins’ Supplementation on Growth Performance, Rumen Fermentation, and Enteric Methane Emissions in Beef Cattle: A Meta-Analysis. SUSTAINABILITY 2021. Abstract
The environmental sustainability of beef production is a significant concern within the food production system. Tannins (TANs) can be used to minimize the environmental impact of ruminant production because they can improve ruminal fermentation and ruminants’ lifetime performances and mitigate methane (CH4) emissions. The objective of this study was to evaluate the effects of dietary supplementation with TANs as sustainable natural alternative to reduce the environmental impact on growth performance, rumen fermentation, enteric CH4 emissions, and nitrogen (N) use efficiency of beef cattle through a meta-analysis. A comprehensive search of studies published in scientific journals that investigated the effects of TANs’ supplementation on the variables of interest was performed using the Scopus, Web of Science, and PubMed databases. The data analyzed were extracted from 32 peer-reviewed publications. The effects of TANs were assessed using random-effects statistical models to examine the standardized mean difference (SMD) between TANs’ treatments and control (non-TANs). The heterogeneity was explored by meta-regression and subgroup analysis was performed for the covariates that were significant. TANs’ supplementation did not affect weight gain, feed consumption, feed efficiency, or N use efficiency (p > 0.05). However, it reduced the concentration of ammonia nitrogen in rumen (SMD = −0.508, p < 0.001), CH4 emissions per day (SMD = −0.474, p < 0.01) and per unit dry matter intake (SMD = −0.408, p < 0.01), urinary N excretion (SMD = −0.338, p < 0.05), and dry matter digestibility (SMD = −0.589, p < 0.001). Ruminal propionate (SMD = 0.250) and butyrate (SMD = 0.198) concentrations and fecal N excretion (SMD = 0.860) improved in response to TANs’ supplementation (p < 0.05). In conclusion, it is possible to use TANs as a CH4 mitigation strategy without affecting cattle growth rate. In addition, the shift from urinary to fecal N may be beneficial for environment preservation, as urinary N induces more harmful emissions than fecal N. Therefore, the addition of tannins in the diet of beef cattle could be used as a sustainable natural alternative to reduce the environmental impact of beef production.

Abstract
This review provides an update of ecologically relevant phytochemicals for ruminant production, focusing on their contribution to advancing nutrition. Phytochemicals embody a broad spectrum of chemical components that influence resource competence and biological advantage in determining plant species' distribution and density in different ecosystems. These natural compounds also often act as plant defensive chemicals against predatorial microbes, insects, and herbivores. They may modulate or exacerbate microbial transactions in the gastrointestinal tract and physiological responses in ruminant microbiomes. To harness their production-enhancing characteristics, phytochemicals have been actively researched as feed additives to manipulate ruminal fermentation and establish other phytochemoprophylactic (prevent animal diseases) and phytochemotherapeutic (treat animal diseases) roles. However, phytochemical-host interactions, the exact mechanism of action, and their effects require more profound elucidation to provide definitive recommendations for ruminant production. The majority of phytochemicals of nutritional and pharmacological interest are typically classified as flavonoids (9%), terpenoids (55%), and alkaloids (36%). Within flavonoids, polyphenolics (e.g., hydrolyzable and condensed tannins) have many benefits to ruminants, including reducing methane (CH4) emission, gastrointestinal nematode parasitism, and ruminal proteolysis. Within terpenoids, saponins and essential oils also mitigate CH4 emission, but triterpenoid saponins have rich biochemical structures with many clinical benefits in humans. The anti-methanogenic property in ruminants is variable because of the simultaneous targeting of several physiological pathways. This may explain saponin-containing forages' relative safety for long-term use and describe associated molecular interactions on all ruminant metabolism phases. Alkaloids are N-containing compounds with vast pharmacological properties currently used to treat humans, but their phytochemical usage as feed additives in ruminants has yet to be exploited as they may act as ghost compounds alongside other phytochemicals of known importance. We discussed strategic recommendations for phytochemicals to support sustainable ruminant production, such as replacements for antibiotics and anthelmintics. Topics that merit further examination are discussed and include the role of fresh forages vis-à-vis processed feeds in confined ruminant operations. Applications and benefits of phytochemicals to humankind are yet to be fully understood or utilized. Scientific explorations have provided promising results, pending thorough vetting before primetime use, such that academic and commercial interests in the technology are fully adopted.

Abstract
Despite the importance of atmospheric methane as a potent greenhouse gas and the significant contribution from ruminant enteric fermentation on methane emissions at a global scale, little effort has been made to consider the influence that different plant-based natural diets have on methane emissions in grazing systems. Heathland is an ericaceous dwarf-shrub-dominated habitat widespread across the northern hemisphere, in Europe, provides valuable ecosystem services in areas with poor soils, such as water flow regulation, land-based carbon skin, energy reservoir and habitat of key game species. We (i) measured methane emissions from red deer (Cervus elaphus) and sheep (Ovis aries) fed mixed diets of natural grass plus ericaceous species (either Calluna vulgaris or Vaccinium myrtillus) using open-circuit respiration chambers; and (ii) modelled the results to estimate methane emissions from red deer and sheep populations inhabiting heathland habitats across Europe under different scenarios of grass-based mixed diets with varying proportions of ericaceous species. Our results indicated that methane emissions per unit of digestible organic matter intake decreased as the proportion of ericaceous species in diet increased, but this relationship was complex because of the significant interaction between the proportion of ericaceous species in the diet and digestible organic matter intake. According to our estimates red deer and sheep populations across European heathlands produce 129.7 kt·y-1 methane (se = 1.79) based on a hypothetical grass-ericaceous species mixed diet containing 30% of ericaceous species; this is 0.5% of total methane emissions from human activity across Europe (24,755 kt·y-1), and a reduction in methane emissions of 63.8 kt·y-1 against the same deer and sheep populations, if assumed to consume a grass-only diet. We suggest the implementation of carbon credits as a measure to value the relevance of heathland systems to promote biodiversity and its potential contribution to reduce methane emissions in ruminant grazing systems.

Abstract
Condensed tannins (CT) might improve animal and system-level efficiency due to enhanced protein efficiency and reduced CH4. This study evaluated the impact of quebracho tannin (QT) extract fed at 0%, 1.5%, 3%, and 4.5% of dry matter (DM), within a roughage-based diet on apparent digestibility of DM, organic matter (OM), fibrous fractions, and N retention and energy partitioning of growing steers (236 ± 16 kg BW). A Latin rectangle design with eight animals and four periods was used to determine the whole-animal exchange of CO2, O2, and CH4 as well as the collection of total feces and urine over a 48-h period, using two open-circuit, indirect calorimetry respiration chambers. Following the removal of steers from respiration chambers, rumen inoculum was collected to determine ruminal parameter, including volatile fatty acids (VFA) and ammonia. Animals were fed a 56.5% roughage diet at 1.7% BW (dry matter basis). Dry matter and gross energy intakes were influenced by the level of QT inclusion (P ≤ 0.036). Digestibility of DM, OM, and N was reduced with QT inclusion (P < 0.001), and fiber digestibility was slightly impacted (P > 0.123). QTs altered the N excretion route, average fecal N-to-total N ratio excreted increased 14%, and fecal N-to-urinary N ratio increased 38% (P < 0.001) without altering the retained N. Increased fecal energy with QT provision resulted in reduced dietary digestible energy (DE) concentration (Mcal/kg DM; P = 0.024). There were no differences in urinary energy (P = 0.491), but CH4 energy decreased drastically (P = 0.007) as QT inclusion increased. Total ruminal VFA concentration did not differ across treatments, but VFA concentration increased linearly with QT inclusion (P = 0.049). Metabolizable energy (ME) was not affected by the QT rate, and the conversion efficiency of DE-to-ME did not differ. Heat energy decreased (P = 0.013) with increased QT provision likely due to changes in the DE intake, but there was no difference in retained energy. There were no differences for retained energy or N per CO2 equivalent emission produced (P = 0.774 and 0.962, respectively), but improved efficiency for energy retention occurred for 3% QT. We concluded that QT provided up to 4.5% of dry matter intake (about 3.51% of CT, dry matter basis) does not affect N and energy retention within the current setting. Feeding QT reduced energy losses in the form of CH4 and heat, but the route of energy loss appears to be influenced by the rate of QT inclusion.

Abstract
Fermentation of a variety of feedstuffs by the ruminal microbiome is the distinctive feature of the ruminant digestive tract. The host derives energy and nutrients from microbiome activity; these organisms are essential to survival. Advances in DNA sequencing and bioinformatics have redefined the rumen microbial community. Current research seeks to connect our understanding of the rumen microbiome with nutritional strategies in ruminant livestock systems and their associated digestive disorders. These efforts align with a growing number of products designed to improve ruminal fermentation to benefit the overall efficiency of ruminant livestock production and health.

Abstract
A study with finishing lambs assessed the effect of dietary inclusion of Prosopis laevigata pods (PLPs) on performance, carcass characteristics, meat traits and fatty acid profile of subcutaneous fat. Twenty-one Rambouillet lambs (27.0 ± 3.0 kg BW) were assigned to one of three experimental diets with 0, 150 and 300 g PLP/kg DM. Evaluation of growth performance lasted 49 days. The experimental design was completely randomized and analysed with a mixed model. Lambs fed diets with 0, 150 and 300 g PLP had similar growth performance. Lambs fed diets with 300 g PLP/kg DM had better (p < 0.05) carcass yield and classification, less (p < 0.05) fat deposition and lower lightness (L*) value (p < 0.05) in meat than lambs fed diets with 0 and 150 g PLP/kg DM. Saturated fatty acids (palmitic and stearic) decreased (p < 0.05) and unsaturated fatty acids (oleic and linoleic) increased (p < 0.05) in subcutaneous fat of lambs fed diets with 150 and 300 g pods as compared with lambs not fed PLP. Prosopis laevigata pods are a safe feedstuff that can replace a third of conventional ingredients and reduce feed costs in growing lambs. Addition of PLP reduced (p < 0.05) total feed cost by 21%.
