Abstract
In this study, two degraded polysaccharides from Gleditsia sinensis seed were obtained under ultrasonic power treatments of 300 and 450 W. The physicochemical properties, structural characteristics, and antioxidant activities of the degraded and undegraded polysaccharides were studied and compared. Ion exchange chromatography and methylation analysis showed that the polysaccharides had similar basic structural features and were composed of the same monosaccharide units before and after degradation, but the ultrasonic treatment increased the total monosaccharide content and changed the Mannose/Galactose value. Furthermore, with the increase in the ultrasonic power, the molecular weight and intrinsic viscosity of polysaccharides decreased, and the micromorphology became looser. The scavenging capacities for 1,1-diphenyl-2-picrylhydrazyl and hydroxyl free radicals and the reducing ability were significantly increased by the ultrasonic treatment. In conclusion, ultrasonic treatment may be an effective way to improve the antioxidant activities of polysaccharides from G. sinensis seed, and further studies on its antioxidant mechanism are still needed.

Abstract
Carbohydrates are crucial in food as essential biomolecules, serving as natural components, ingredients, or additives. Carbohydrates have numerous applications in the food industry as stabilizers, thickeners, sweeteners, and humectants. The properties and functionality of the carbohydrates undergo alterations when exposed to various thermal or non-thermal treatments. Ultrasonication is a non-thermal method that modifies the structural arrangement of carbohydrate molecules. These structural changes lead to enhanced gelling and viscous nature of the carbohydrates, thus enhancing their scope of application. Ultrasound may improve carbohydrate functionality in an environmentally sustainable way, leaving no chemical residues. The high-energy ultrasound treatments significantly reduce the molecular size of complex carbohydrates. Sonication parameters like treatment intensity, duration of treatment, and energy applied significantly affect the molecular size, depolymerization, viscosity, structural modifications, and functionality of carbohydrate biomolecules. This review provides a comprehensive analysis of ultrasound-assisted modifications in carbohydrates and the changes in functional properties induced by sonication.

Abstract
ἰ-carrageenan is a linear macroalgal polysaccharide that is well known for its antiviral bioactivity. Although it is considered a candidate for antiviral therapeutics, its application is highly limited due to its low solubility and high viscosity, which lower its adsorption efficiency. With the aim of deriving an active ἰ-carrageenan fragment with an improved adsorption capacity, we studied the effects of ultrasonication on structural changes in ἰ-carrageenan with respect to changes in its bioactivity against herpesviruses. An FTIR analysis revealed that ultrasonication increased the hydrophilicity of ἰ-carrageenan without changing its functional groups, and a rheological analysis demonstrated that it gradually decreased the strength of the polysaccharide gel, which completely lost its gel structure and formed small nanoparticles after 30 min of ultrasonication. Concomitantly with these physicochemical changes, a plaque assay revealed that longer ultrasonication increased the antiviral activity of ἰ-carrageenan against two herpesviruses, namely, HSV-1 and VZV. Finally, we separated the 30-min ultrasonicated ἰ-carrageenan into four fractions and found that fractions with a lower molecular weight were significantly less active against both herpesviruses than those with a higher molecular weight. Our findings show that ultrasonication induces physicochemical changes in ἰ-carrageenan that increase its antiviral bioactivity.

Abstract
Natural polymers, such as polysaccharides, cellulose, and starch, have been widely used in the chemical engineering, medicine, food, and cosmetics industries, which had a great many of biological activities. Natural polysaccharides origin from algae, fungi and plants were components of human diet since antique times. Ultrasonication achieved the breakage the polysaccharides reticulum in an ordered fashion. The factors of temperature, ratio of water/material, sonication frequency, time of exposure, pH of the sonication medium influenced the polysaccharide digestion. Sonication improved the enzyme catalysis over its substrate molecule. Positive health promoting slow digestive starch and resistant starch can be prepared quite easily by the sonication process. The aim of this review is to present the current status and scope of natural polymers as well as some emerging polymers with special characteristic. The physiochemical properties and molecular structure of natural carbohydrates under ultrasonic irradiation were also discussed. Moreover, Polysaccharide based films had industrial applications is formed by ultrasonication. Polysaccharide nanoparticles obtained by sonication had efficient water holding capacity. Sonication is an advanced method to improve the food quality. Hence, this review describes the effects of ultrasonication on physical, chemical, and molecular structure of natural polysaccharides.

Abstract
BACKGROUND Tara gum (TG) is characterized by its high viscosity and medium solubility, which is a result of its high molecular mass. However, for many applications, these characteristics are undesirable, making the use of TG infeasible. The present study aimed to evaluate the effect of high-intensity ultrasound on the depolymerization of aqueous solutions of TG. The effect of ultrasonication was investigated by viscometry analysis as well as Fourier transform infrared spectroscopy (FTIR) and solubility. RESULTS The intrinsic viscosity (η) and the molecular weight (Mw ) of TG decreased after ultrasound, achieving a molecular weight reduction of 13.50 × 105 g mol-1 after 60 min of sonication at 25 °C compared to 22.04 × 105 g mol-1 before treatment. Degradation kinetics were applied to estimate the rate constant of degradation (k). It was found that the k value of TG increased with increasing temperature from 25 to 55 °C. Partially hydrolyzed TG showed greater solubility at the two temperatures investigated (25 and 80 °C). Ultrasonic treatment did not change the chemical structure of the TG molecules according to the structural analysis by FTIR, confirming its action only as breaking the structure of the polymer. CONCLUSION Ultrasound is a simple method for effectively reducing the molecular weight and viscosity and increasing the solubility of TG without using chemical reagents. The synthesis of partially hydrolyzed TG expands its potential for use in food products, including as a soluble dietary fiber. © 2022 Society of Chemical Industry.

Abstract
Bio scaffolds used for cutaneous tissue regeneration is a challenging issue in the healthcare system. To help this problem, we aimed to report on fabrication and characterization of citric acid cross-linked carboxymethyl guar gum (CMGG) nanocomposite films loaded with ciprofloxacin for faster wound healing application. Differential scanning calorimeter (DSC) and attenuated total reflectance Fourier transform infrared (ATR-FTIR) spectroscopy studies, dynamic light scattering (DLS), scanning electron microscopy (SEM) and X-ray diffraction (XRD) were used as analytical techniques for characterization of the nanocomposite film. The morphological characters of nanocomposite film were determined by SEM. The prepared scaffolds were evaluated for the carboxyl content and swelling ratio. Ciprofloxacin was loaded into scaffold and drug release was studied at pH 7.4. The hemolysis assay was used to study the biocompatibility of scaffold films. The formation of ester cross-links between citric acid and CMGG was confirmed by DSC and ATR- FTIR. The total carboxyl content of scaffold was found to be decreased when the amount of CMGG was increased. The swelling of scaffold film was found to be decreased with increase in curing temperature and time. CMGG scaffold films showed high drug loading with non-Fickian release mechanism suggesting controlled release of drug. In vivo wound healing studies were carried out for 5 days. In this study we observed a faster wound healing effect within 5 days by incorporation of ciprofloxacin in the CMGG film and found biocompatible. Hence, these Nanocomposite films show greater potential in treating wounds.

Abstract
The effects that an increase of environmental pH has on the triple helix of scleroglucan (Sclg) and on the Sclg/borax hydrogel are reported. Rheological experiments show that the hydrogel is less sensitive to pH increase than Sclg alone, while at pH = 14 a dramatic viscosity decrease takes place for both systems. This effect is evidenced also by the reduced water uptake and anisotropic elongation detected, at pH = 14, by the swelling behaviour of tablets prepared with the Sclg/borax system. On the opposite, a different behaviour was observed with guar gum and locust bean gum tablets, tested as reference polysaccharides. The effect of pH on the structure of Sclg and Sclg/borax was investigated also by means of spectroscopic approaches based on the interaction between Congo red (CR) and the Sclg triple helix. Obtained results indicated that the CR absorbance maximum is shifted as a function of pH and by the presence of borax. Principal component analysis allowed very precise identification of the pH value at which the Sclg helix collapses. Molecular dynamics simulations of the Sclg/borax–CR complex indicated that, at physiological pH, only a few ordered configurations are populated, according to the induced circular dichroism (CD) spectrum evidence.
