Abstract
This study focuses on the chemical, physical, and biological hazards that pose food contamination risks during the processing of food in facilities using open food processing equipment through a review of published literature from 2015 to 2023. Ten main pathways for food contamination were developed and a list of chemical, physical, and biological food hazards, along with descriptions of process parameters and inputs that can contribute to food contamination, and prevention strategies associated with each pathway were compiled. The paper briefly discusses the relation between food contamination and the sustainable development goals (SDGs). The presented overview of contamination pathways and their associated food hazards can provide insights for food safety management plans, food processing equipment design, food processing facility layout, HACCP programs, and further studies on hygienic monitoring methods.

Abstract
The Atrato River basin was protected by Colombian law due to anthropogenic impacts, mainly from illegal gold mining, which triggered a critical environmental health problem. In this study we quantified mercury (Hg), methylmercury (MeHg) and arsenic (As) concentrations in aquatic environmental matrices, and explored for the first-time nuclear degenerations in fish from the Atrato River. The median concentrations (μg/kg) for T-Hg, MeHg and As in fish were 195.0, 175.5, and 30.0; in sediments (μg/kg) 165.5, 13.8 and 3.1; and in water (ng/L), 154.7 for T-Hg and 2.1 for As. A 38% and 10% of the fish exceeded the WHO limit for the protection of populations at risk (200 μg Hg/kg) and for human consumption (500 μg Hg/kg); while As concentrations were below the international standard (1000 μg/kg) in all fish. The percentage of MeHg was 89.7% and the highest accumulation was observed in carnivorous fish (336.3 ± 245.6 μg/kg, p < 0.05) of high consumption, indicating risk to human health. In water, T-Hg concentrations exceeded the threshold effect value of 12 ng/L, whereas As concentrations were below the threshold of 10,000 ng/L, established by USEPA. On the contrary, 33% of the sediments exceeded the quality standard of 200 μg/kg for Hg. We found that Prochilodus magdalenae was the species with the highest susceptibility to nuclear alterations in its order, nuclear bud (CNB, 3.7 ± 5.4%), micronuclei (MN, 1.6 ± 2.5%) and binucleated cells (BC, 1.6 ± 2.3%). These results indicate that the species appears to be a good predictor of genotoxicity in the Atrato River. Fulton's condition factor (K) indicated that 31.7% of the fishes had poor growth condition, suggesting that the Atrato River basin needs to be monitored and restored in accordance with the agreements reached in the Minamata Convention on Mercury.

Abstract
Sauced chicken is popular food worldwide. However, the elemental pollution of poultry industrialization has led to an increasing health risk concern. In this study, four typical toxic elements, including chromium (Cr), arsenic (As), lead (Pb), and cadmium (Cd), were selected and detected in whole industry chains of sauced chicken preparation by inductively coupled plasma-mass spectrometry. The detection method was optimized and verified with an average recovery of 93.96% to 107.0%. Cr has the highest proportion among the elements during the three stages, while the content of Cd was the least. In the feeding stages, elements were at the highest level in the starter broiler, and the grower broiler was considered to have a good metabolic capacity of them. In addition, the elements were mainly distributed in the chicken kidney, gizzard, liver, leg, wing, and lung. In the processing stage, the elements continued to accumulate from the scalding to the sterilization process. The elements were mainly distributed in the chicken wing, leg, head, and breast. In the storage stage, the elements almost kept constant in the polyamide and polyethylene packaging, while it showed irregular small-range fluctuations in the other two packages. This study provides beneficial references for the toxic element risk management in the whole industry chain.

Experimental Design and Multiple Response Optimization for the Extraction and Quantitation of Thirty-Four Priority Organic Micropollutants in Tomatoes through the QuEChERS Approach. SEPARATIONS 2023. Abstract
The chemical contamination in fruit and vegetables represents a challenging analytical issue, with tomatoes deserving to be investigated as they are fundamental components of the Mediterranean diet. Polychlorinated biphenyls (PCBs), polycyclic aromatic hydrocarbons (PAHs) and nitro-PAHs contamination is of serious concern, due to particulate deposition and to uptake from contaminated soils and water. However, time-consuming, non-simultaneous and/or non-eco-friendly extraction procedures are typically used to investigate organic contamination in tomatoes, with nitro-PAHs that have not yet been studied. Based on these premises, this work reports the development of a QuEChERS-based approach, coupled with gas chromatography/mass spectrometry, for the simultaneous determination of 16 PAHs, 14 PCBs and 4 nitro-PAHs in three tomato cultivars. The effect of dichloromethane, cyclohexane and acetone, as well as of four clean-up phases were studied through the advanced combination of full factorial experimental design and multiple response optimization approaches. The final protocol, based on cyclohexane extraction followed by a double purification step with primary secondary amine and octadecyl silica and a sulfuric acid oxidation, led to 60–120% recoveries (RSD% < 15%). Good repeatability (inter-day precision <15%) and negligible matrix effect (<16%) were confirmed and the protocol was applied to the analysis of real tomato samples purchased in a local market.

Abstract
The health risk and burden of disease induced by exposure to inorganic arsenic (iAs) through drinking water and foodstuffs in Iran were assessed. The iAs levels in drinking water and foodstuffs (15 food groups) in the country were determined through systematic review of three international databases (PubMed, Scopus, and Web of Science) and meta-analysis. Based on the results of the systematic review and meta-analysis, the average iAs levels in drinking water and all the food groups at the national level were lower than the maximum permissible levels. The total average non-carcinogenic risk of dietary exposure to iAs in terms of hazard index (HI) was 3.4. The average incremental lifetime cancer risk (ILCR) values of dietary exposure to iAs were determined to be 1.5 × 10-3 for skin cancer, 1.0 × 10-3 for lung cancer, and 4.0 × 10-4 for bladder cancer. Over two-thirds of the non-carcinogenic and carcinogenic risk of dietary exposure to iAs was attributed to bread and cereals, drinking water, and rice. The total annual cancer incidence, deaths, disability-adjusted life years (DALYs), death rate, and DALY rate (per 100,000 people) were assessed to be 3347 (95 % uncertainty interval: 1791 to 5999), 1302 (697 to 2336), 72,606 (38,833 to 130,228), 1.6 (0.87 to 2.9), and 91 (49 to 160). The contribution of mortality in the attributable burden of disease was 95.1 %. The contributions of the causes in the attributable burden of disease were 72 % for lung cancer, 16 % for bladder cancer, and 12 % for skin cancer. Due to the significant attributable burden of disease, national and subnational action plans consisting of multi-disciplinary approaches for risk management of dietary exposure to iAs, especially for the higher arsenic-affected areas and high-risk population groups in the country are recommended.

Abstract
It is well known that food safety has aroused extensive attentions from governments to researchers and to food industries. As a versatile technology based on molecular interactions, aptamer sensors which could specifically identify a wide range of food contaminants have been extensively studied in recent years. Surface-enhanced Raman spectroscopy integrated aptamer combines the advantages of both technologies, not only in the ability to specifically identify a wide range of food contaminants, but also in the ultra-high sensitivity, simplicity, portable and speed. To provide beneficial insights into the evaluation techniques in the field of food safety, we offer a comprehensive review on the design strategies for aptamer-SERS sensors in different scenarios, including non-nucleic acid amplification methods ("on/off" mode, sandwich mode, competition model and catalytic model) and nucleic acid amplification methods (hybridization chain reaction, rolling circle amplification, catalytic hairpin assembly). Meanwhile, a special attention is paid to the application of aptamer-SERS sensors in biological (foodborne pathogenic, bacteria and mycotoxins) and chemical contamination (drug residues, metal ions, and food additives) of food matrix. Finally, the challenges and prospects of developing reliable aptamer-SERS sensors for food safety were discussed, which are expected to offer a strong guidance for further development and extended applications.

Characterization and Antifungal Activity of Pullulan Edible Films Enriched with Propolis Extract for Active Packaging. Foods 2022; 11:foods11152319. Abstract
Active pullulan films with the addition of 3, 5 or 10% propolis extract produced by the casting method were tested in the study. Propolis extracts from Bochnia County, Siedlce County and Ełk County (Poland) were used. The appearance of the films was characterized, as well as physical parameters (thickness, moisture content, water solubility), tensile strength (TS), elongation at break (EB), optical characteristics (light transparency, UV barrier, color) and antifungal properties. The antifungal activity of the films was tested by the disc diffusion method against yeast (Candida albicans, C. krusei, Saccharomyces cerevisiae, Rhodotorula mucilaginosa) and mold (Alternaria solani, Fusarium solani, Rhizopus stolonifer, Colletotrichum gloeosporioides, C. cladosporioides, Aspergillus niger, A. ochraceus, Mucor mucedo, Penicillium expansum, P. chrysogenum). The origin of propolis influenced the color and water solubility of the films. The addition of increasing concentrations of propolis extract increased the film thickness and the intensity of the yellow color, extended the water dissolution time of the film and reduced the values of TS and EB. The addition of propolis extract in the pullulan film improved UV radiation protection but decreased light transparency. The antifungal activity increased significantly with the increasing concentration of propolis extract in the film, regardless of the origin of propolis. Molds showed greater sensitivity to pullulan films containing propolis extract than yeasts. In general, films made of pullulan with the addition of propolis extract can be considered as natural active packaging to protect against the growth of fungi in food.

Abstract
Currently, 1.3 billion tonnes of food are thrown away each year, most of which are incinerated or landfilled causing large environmental, social, and economic issues. Therefore, the utilisation of food waste as biofertilisers, such as composts and digestates, is a solution to reduce the problems created by incineration and landfilling whilst simultaneously amending soils. The improper disposal of food wastes and bulking materials can contribute to high levels of contaminants within the end-product. Moreover, the food waste and bulking materials, themselves, may contain trace amounts of contaminants. These contaminants tend to have long half-lives, are easily mobile within soil and plants, can accumulate within the food supply chain, and have moderate to high levels of toxicity. This review aims to examine the current and emerging contaminants of high concern that impact the quality of food-waste fertilisers. The paper presents the volume of current and emerging contaminants of plastics, other physical (particulate) contaminants, heavy metals, pesticides, polychlorinated biphenyls (PCBs), polycyclic aromatic hydrocarbons (PAHs), per- and polyfluoroalkyl substances (PFAS), and pathogens within food-waste composts and digestates. Due to the large extent of organic chemical contaminants and the unknown level of toxicity and persistence, the risk assessment of organic chemical contaminants in the food-supply chain remains largely unknown. This study has presented available data from literature of various contaminants found in food waste, and composts and digestates derived from food waste, and evaluated the data with current regulations globally. Overall, to reduce contaminants in composts and digestates, more studies are required on the implementation of proper disposal separation, effective composting and digestion practices, increased screening of physical contaminants, development of compostable plastics, and increased regulatory policies on emerging, problematic contaminants. Moreover, examination of emerging contaminants in food-waste composts and digestates is needed to ensure food security and reduce future human-health risks.

Abstract
Biomagnification of trace elements is increasingly evident in aquatic ecosystems. In this review we investigate the drivers of biomagnification of mercury (Hg), arsenic (As) and selenium (Se) in aquatic food webs. Despite Hg, As and Se biomagnify in food webs, the biomagnification potential of Hg is much higher than that of As and Se. The slope of trophic increase of Hg is consistent between temperate (0.20), tropical (0.22) and Arctic (0.22) ecosystems. Se exerts a mitigating role against Hg toxicity but desired maximum and minimum concentrations are unknown. Environmental (e.g. latitude, temperature and physicochemical characteristics) and ecological factors (e.g. trophic structure composition and food zone) can substantially influence the biomagnification process these metal (oids). Besides the level of bioaccumulated concentration, biomagnification depends on the biology, ecology and physiology of the organisms that play a key role in this process. However, it may be necessary to determine strictly biological, physiological and environmental factors that could modulate the concentrations of As and Se in particular. The information presented here should provide clues for research that include under-researched variables. Finally, we suggest that biomagnification be incorporated into environmental management policies, mainly in risk assessment, monitoring and environmental protection methods.

Abstract
Amyotrophic lateral sclerosis (ALS) is a fatal disease related to upper and lower motor neurons degeneration. Although the environmental and genetic causes of this disease are still unclear, some factors involved in ALS onset such as oxidative stress may be influenced by diet. A higher risk of ALS has been correlated with a high fat and glutamate intake and β-methylamino-L-alanine. On the contrary, a diet based on antioxidant and anti-inflammatory compounds, such as curcumin, creatine, coenzyme Q10, vitamin E, vitamin A, vitamin C, and phytochemicals could reduce the risk of ALS. However, data are controversial as there is a discrepancy among different studies due to a limited number of samples and the many variables that are involved. In addition, an improper diet could lead to an altered microbiota and consequently to an altered metabolism that could predispose to the ALS onset. In this review we summarized some research that involve aspects related to ALS such as the epidemiology, the diet, the eating behaviour, the microbiota, and the metabolic diseases. Further research is needed to better comprehend the role of diet and the metabolic diseases in the mechanisms leading to ALS onset and progression.

Abstract
Sustainable food supply has gained considerable consumer concern due to the high percentage of spoilage microorganisms. Food industries need to expand advanced technologies that can maintain the nutritive content of foods, enhance the bio-availability of bioactive compounds, provide environmental and economic sustainability, and fulfill consumers’ requirements of sensory characteristics. Heat treatment negatively affects food samples’ nutritional and sensory properties as bioactives are sensitive to high-temperature processing. The need arises for non-thermal processes to reduce food losses, and sustainable developments in preservation, nutritional security, and food safety are crucial parameters for the upcoming era. Non-thermal processes have been successfully approved because they increase food quality, reduce water utilization, decrease emissions, improve energy efficiency, assure clean labeling, and utilize by-products from waste food. These processes include pulsed electric field (PEF), sonication, high-pressure processing (HPP), cold plasma, and pulsed light. This review describes the use of HPP in various processes for sustainable food processing. The influence of this technique on microbial, physicochemical, and nutritional properties of foods for sustainable food supply is discussed. This approach also emphasizes the limitations of this emerging technique. HPP has been successfully analyzed to meet the global requirements. A limited global food source must have a balanced approach to the raw content, water, energy, and nutrient content. HPP showed positive results in reducing microbial spoilage and, at the same time, retains the nutritional value. HPP technology meets the essential requirements for sustainable and clean labeled food production. It requires limited resources to produce nutritionally suitable foods for consumers’ health.

Abstract
Pistachio shell powder supported nano-zerovalent copper (ZVC@PS) material prepared by borohydride reduction was characterized using SEM, FTIR, XRD, TGA/DTA, BET, and XPS. SEM, XRD, and XPS revealed the nano-zerovalent copper to consist of a core-shell structure with CuO shell and Cu(0) core with a particle size of 40-100 nm and spherical morphology aggregated on PS biomass. ZVC@PS was found to contain 39% (w/w %) Cu onto the pistachio shell biomass. Batch sorption of Cr(VI) from the aqueous using ZVC@PS was studied and was optimized for dose (0.1-0.5 g/L), initial Cr(VI) concentration(1-20 mg/L), and pH (2-12). Optimized conditions were 0.1 g/L doses of sorbent and pH=3 for Cr(VI) adsorption. Langmuir and Freundlich adsorption isotherm models fitted well to the adsorption behavior of ZVC@PS for Cr(VI) with a pseudo-second-order kinetic behavior. ZVC@PS (0.1g/L) exhibits qmax for Cr(VI) removal up to 110.9 mg/g. XPS and other spectroscopic evidence suggest the adsorption of Cr(VI) by pistachio shell powder, coupled with reductive conversion of Cr(VI) to Cr(III) by ZVC particles to produce a synergistic effect for the efficient remediation of Cr(VI) from aqueous medium.

Abstract
BACKGROUND AND AIM Salmonella causes most foodborne bacterial illnesses worldwide. It is found in various hosts, including pets, farm animals, and wild animals, as well as the environment. This study aimed to examine the epidemiological relationship between Salmonella isolates from aquatic environments and those from other avian hosts. MATERIALS AND METHODS The study examined 12 water samples, 210 aquatic animals, and 45 migratory aquatic bird samples collected from the protected area of Lake Qarun in El-Fayoum Governorate, Egypt, during migration seasons from different waterfowl migration areas (from October 2018 to January 2019). In addition, 45 fecal samples from domestic chickens were collected from the same geographic location from poultry farms. Bacteriological examination and polymerase chain reaction assay of two virulence genes (i.e., invA and stn) were performed to isolate and identify Salmonella. RESULTS Salmonella was isolated from 58.3% (7/12) of Lake Qarun water samples, 13.3% (6/45) of migratory waterfowl, 6.6% of (3/45) of chickens (Gallus gallus domesticus), and 4.3% (3/70) of fish and pooled brine shrimp. In migratory aquatic bird species that were sampled, Salmonella were isolated from 23.1% (3/13) of Eurasian coot (Fulica atra), 12.5%, (1/8) of green-winged teal (Anas cardolinesis), 10% (2/20) of northern shoveler (Spatula clypeata), and 0% (0/4) of mallard duck (Anas platyrhynchos). In 35 Tilapia, Salmonella was isolated by (8.6%) 5.7% of external surfaces, 2.85% from the intestine, and 0% from the muscle. No Salmonella was isolated from the 175 brine shrimp samples. Phylogenetic analysis using the stn genes of Salmonella isolated from the aquatic environment, migratory aquatic birds, and chicken showed a strong association between these isolates. In addition, a higher nucleotide identity percentage was observed between the sequences recovered from migratory aquatic birds and Lake Qarun water samples. CONCLUSION Salmonella distribution was confirmed through migratory aquatic birds, based on our phylogeny tree analysis, Salmonella considered a likely carrier of zoonotic bacterial pathogens. Furthermore, the close relationship between chicken and fish sequences highlights the scenarios of using chicken manure in fish farms and its public health implications. The presence of Salmonella in different environmental sources spotlights the urgent need to control and break down its epidemiological cycle.

Abstract
Human health is regulated by complex interactions among the genome, the microbiome, and the environment. While extensive research has been conducted on the human genome and microbiome, little is known about the human exposome. The exposome comprises the totality of chemical, biological, and physical exposures that individuals encounter over their lifetimes. Traditional environmental and biological monitoring only targets specific substances, whereas exposomic approaches identify and quantify thousands of substances simultaneously using nontargeted high-throughput and high-resolution analyses. The quantified self (QS) aims at enhancing our understanding of human health and disease through self-tracking. QS measurements are critical in exposome research, as external exposures impact an individual's health, behavior, and biology. This review discusses both the achievements and the shortcomings of current research and methodologies on the QS and the exposome and proposes future research directions.

Abstract
Bacteria entrapped in biofilms are a source of recurring problems in food processing environments. We recently developed a robust, 7-day biofilm microplate protocol for creating biofilms with strongly adherent strains of Listeria monocytogenes, Escherichia coli O157:H7, and Salmonella serovars that could be used to examine the effectiveness of various commercial sanitizers. Listeria monocytogenes 99-38, E.coli O157:H7 F4546, and Salmonella Montevideo FSIS 051 were determined from prior studies to be good biofilm formers and could be recovered and enumerated from biofilms following treatment with trypsin. Extended biofilms were generated by cycles of growth and washing daily, for 7 days, to remove planktonic cells. We examined five different sanitizers (three used at two different concentrations) for efficacy against the three pathogenic biofilms. Quaternary ammonium chloride (QAC) and chlorine-based sanitizers were the least effective, showing partial inhibition of the various biofilms within 2 h (1-2 log reduction). The best performing sanitizer across all three pathogens was a combination of modified QAC, hydrogen peroxide, and diacetin which resulted in ~6-7 log reduction, reaching levels below our limit of detection (LOD) within 1-2.5 min. All treatments were performed in triplicate replication and analyzed by one way repeated measures analysis of variance (RM-ANOVA) to determine significant differences (p < 0.05) in the response to sanitizer treatment over time. Analysis of 7-day biofilms by scanning electron microscopy (SEM) suggests the involvement of extracellular polysaccharides with Salmonella and E. coli, which may make their biofilms more impervious to sanitizers than L. monocytogenes.

Abstract
A fully biodegradable hybrid coffee-cotton aerogel has been successfully developed from spent coffee grounds, 100% cotton fiber and polyvinyl alcohol (PVA) flakes via environmental friendly processes. The cotton fibers in coffee aerogel help to maintain the structure and improve the overall properties of the new hybrid coffee-cotton aerogel. The results show that increasing the concentration of fibers, while keeping the concentration of spent coffee grounds constant, the sinking of coffee ground particles in solution and shrinking effect on the aerogels are minimized and the overall mechanical and oil absorption properties are improved. The developed hybrid aerogels possess high porosity of 92-95% and super-hydrophobicity with an average water contact angle of 139°. Oil absorption capacity achieves 16 g/g with 0.50 wt.% of cotton fibers inside the coffee aerogel. Their thermal conductivity is in the range of 0.037-0.045 W/mK and compressive Young's modulus achieves highest at 15.6 kPa. The properties of the hybrid aerogel indicate it as a potential material in several applications such as thermal insulation, oil absorption and filtration.
