Abstract
This study investigated the effect of the inclusion of extruded linseed and hazelnut skin on fatty acid (FA) metabolism in finishing lambs. Forty lambs were divided into 4 groups and fed for 60 d with: a conventional cereal-based diet, or the same diet with 8% of extruded linseed, or 15% of hazelnut skin, or 4% of linseed plus 7.5% of hazelnut skin as partial replacement of maize. Dietary treatments did not affect growth performances, carcass traits, and ruminal fermentation. The combined effect of linseed and hazelnut skin enriched the intramuscular fat with health promoting FA. Particularly, increases in α-linolenic acid (3.75-fold), and very long-chain n-3 poly-unsaturated FA (+ 40%) were attributed to the supplementation with linseed, rich in α-linolenic acid. In addition, increases in rumenic (+ 33%), and vaccenic (+ 59%) acids were attributed to hazelnut skin tannins modulating ruminal biohydrogenation and accumulating intermediate metabolites. The simultaneous inclusion of linseed and hazelnut skin can be a profitable strategy for enriching the intramuscular fat of lambs with health promoting FA, without adverse effects on ruminal fermentation and animal performance.

Abstract
Two groups of ten barrows received a conventional- (CTRL) or an experimental- (HZL) finishing diet containing 11% of hazelnut skin. From each barrow, two types of salami (namely, NITR, and PHEN) were obtained. NITR salami was added with E250 and E252. The latter were replaced by a phenolic concentrated extract from olive-milling wastewaters in PHEN salami. Salami fatty acids (FA), antioxidant capacity, lipid and color stability during refrigerated storage were assessed. A consumer test was also performed. Feeding strategy minimally affected the investigated parameters. PHEN salami had lower TBARS than NITR salami (P-value <0.001) during refrigerated storage despite comparable antioxidant capacity and similar PUFA content. Moreover, within CTRL group, lipid oxidation was lower in PHEN than NITR salami (P-value = 0.040). At the blind taste, dietary treatment did not affect salami sensorial properties nor consumer acceptance, whereas NITR salami showed better color (P-value = 0.036). Interestingly, HZL and PHEN salami showed improved sensorial properties and consumer acceptance after that consumers received information on salami origin.

Abstract
This study was conducted to evaluate the potential effects of dietary grape residue levels on the slaughter indicators, meat quality, meat shelf-life, unsaturated fatty acid content, and expression of fatty acid deposition genes in the muscle of lambs. Sixty 30-month-old male Dorper and Small-Tailed Han F1 hybrid lambs were assigned to a single factor complete randomized trial design and fed with four different diets including 0%, 8%, 16%, and 24% grape dregs, respectively. The findings regarding meat production efficacy in the lambs revealed substantial differences. The control group showed notably lower dressing percentage, carcass weight, net meat weight, meat percentage concerning carcass, meat-to-bone ratio, relative visceral and kidney fat mass, and rib eye area compared to the other groups (p < 0.05). Additionally, the meat shearing force of lambs fed a diet with 16% grape pomace (GP) was significantly higher than that of the 24% GP group (p < 0.05), while the 24 h meat color parameter a* value of the control group was notably higher than that of the 8% GP group (p < 0.05). In addition, compared to the control group, lambs fed with a diet containing 16% GP had higher levels of oleic acid (C18:1n-9c), linoleic acid (C18:2n-6c), behenic acid (C22:0), tricosanoic acid (C23:0), lignoceric acid (C24:0), and conjugated linoleic acid (CLA), at a ratio of ∑CLA/TFA, ∑n-6, ∑MUFA, and ∑PUFA in the longissimus dorsi muscle (p < 0.05), but the reverse case was applicable for Total Volatile Basic Nitrogen (TVB-N) content (p < 0.05). GP supplementation did not substantially affect the expression of stearoyl-CoA desaturase (SCD), peroxisome proliferator activated receptor alpha (PPARα), and peroxisome proliferator-activated receptor gamma (PPARγ) genes (p > 0.05). The findings indicated that incorporating grape dregs in the diets of fattening lambs leads to notable enhancements in meat production and the antioxidant capacity of lamb meat, and effectively extends the shelf life of the meat.

Abstract
Twenty-four Tan sheep were randomly assigned into 4 groups to study the capability of tannin supplementation (0.5% in dietary DM) to lower blood lipid levels mediated through the gut microbiota. The control (NC) group was offered a basic diet, while the 3 treatment groups were the TA group, which received supplementary tannic acid (TA); GSPE group, which received supplementary procyanidins (GSPE); and the TA + GSPE group, which received supplementary TA and GSPE, besides being supplied with the basic diet for 8 weeks feeding. At the end of the experiment, the serum glucose, insulin, lipids, and cytokines were measured, and the short-chain fatty acids (SCFAs) in the colon were tested by GC/MS. Moreover, the jejunal and colonic microbiota were detected by 16S rRNA sequencing. Significant reductions in serum triacylglycerol, cholesterol, and high density lipoprotein were found in all treatments. The total SCFAs decreased, while the iso-acids were significantly increased in the TA and TA + GSPE groups. The sheep showed noticeably lower MCP-1 and higher COX-2 levels in the GSPE group than that in the NC group. IL-6 was increased in the sheep fed with TA. The tannins still caused a noticeable shift in the colonic microbiota, with significant increases in the abundances of Adlercreutzia and Oscillospira. Ultimately, it was found that the diet with low levels of tannin could reduce blood triacylglycerol and cholesterol in sheep significantly by affecting the composition of the gut microbiota.

Abstract
This study evaluated the effect of the dietary inclusion of whole pomegranate by-product (WPB) on lamb flavour. Seventeen Comisana male lambs (body weight 14.82 kg ± 2 kg) were assigned to 2 treatments. During 36-day feeding trial, the control group (n = 8) received a conventional concentrate diet; the other group (n = 9) received a concentrate diet containing 200 g/kg (dry matter) of WPB, replacing part of barley and corn. After slaughter, fatty acids were determined in raw meat, while volatile organic compounds, SMart nose, and sensory traits were analysed in cooked meat. The concentrations of total polyunsaturated fatty acids, vaccenic and rumenic acid were higher in WPB meat. Most of volatile compounds that arise from lipid degradation (i.e., aldehydes, alcohols, ketones, and hydrocarbons) were found at higher concentrations in the WPB meat than in the control, except for 2-pentanone that was greater in control meat. Although SMart nose clearly discriminated between dietary treatments, consumer panel did not detect differences in meat flavour.

Abstract
The hypothesis tested is that the association of soybean grain and yerba mate as an antioxidant source can increase the concentration of polyunsaturated fatty acids (PUFA) with lower oxidation of milk from lactating ewes reared in tropical pastures. Sixteen ewes were randomly distributed in a 2x2 factorial scheme (with or without yerba mate at 110 g / kg of dry matter (DM); with or without soybean grain at 210 g/kg of DM). Yerba mate intake reduced DM intake, and concentrations of ether extract (EE), protein, lactose, defatted dry extract, density, omega-3 concentrations, and the ratio between saturated/monounsaturated fatty acids (FA), but increased the concentration of monounsaturated FA and the sequestering power of free radicals by DPPH without altering the concentrations of conjugated dienes and the concentrations of substances reactive to thiobarbituric acid in milk. Supplementation with soybean grain decreased the birth weight of the lambs and increased the concentrations of conjugated linoleic acid (CLA), PUFA, omega - 6, omega ratio - 6/omega - 3, and total blood cholesterol. The addition of yerba mate did not influence the oxidative profile of milk. Supplementation with soybean grain improved the FA profile of milk, increasing the concentrations of CLA and PUFA. The results suggest that the association of yerba mate and soybean grain helps to improve the fat quality of milk from ewes raised in tropical pastures, as shown by the enhanced antioxidant activity, although it does not help prevent oxidation of milk rich in PUFA.

Abstract
Almond hulls (AH) were fed to lambs to study effects on performance and meat quality. Thirty Sarda lambs were allotted to three experimental groups and fed for 40 days either a cereal-based concentrate diet (control) or diets in which cereals were replaced with 15% (AH15) or 30% (AH30) almond hulls on a DM basis. Diets did not affect final body weight, dry matter intake, average daily gain, feed conversion ratio or carcass weight. Replacing part of the cereal mix (i.e., barley and maize) with AH did not affect meat fatty acid profiles. After 5 and 7 days of refrigerated storage respectively for cooked and raw meat, AH15 and AH30 treatments reduced meat lipid oxidation (P < 0.001). Our results suggest feeding almond hulls up to 30% in fattening lamb diets can improve meat oxidative stability without compromising growth performance.
