Structural change kinetics, drying characteristics, antioxidant properties, and the correlation between quality parameters of dried duckweed (Wolffia arrhiza (L.) Wimm) affected by different levels of microwave power

BACKGROUND

Duckweed is considered as a future food material due to its fast growth, high yield, high nutritional value, and low impact on land use. However, in its fresh form, it has high moisture content (95% wet basis), resulting in a short shelf life. In this study, microwave drying (MWD) was conducted to produce a shelf-stable duckweed with minimal loss of quality. Drying characteristics and quality aspects of dried duckweed were assessed. Reaction order kinetics, including zero and first order, was applied to describe structural changes during drying process. Hierarchical cluster analysis (HCA) was used to select the appropriate drying conditions.

RESULTS

Of five drying models, the Midilli-Kucuk model was the one that best described the drying process. Drying at high microwave power could reduce energy consumption and increase energy efficiency. Increasing both microwave power and drying time increased the structural shrinkage rate as described by first-order reaction kinetics. High correlations among quality parameters were observed using Pearson's correlation. Drying treatments were differentiated into two main clusters by HCA and the results showed that MWD at 720 and 900 W provided samples that were closer in terms of quality to a freeze dried sample (the positive control) than samples that had been subjected to MWD at 450 W.

CONCLUSION

Drying behaviors of duckweed were well-described by the Midilli-Kucuk model. Microwave drying at 900 W gave the lowest energy consumption and displayed the most efficient use of energy. The first-order equation could be used effectively to describe the structural changes in the duckweed. Microwave drying at 720 and 900 W was the appropriate drying condition according to the HCA classification. © 2023 Society of Chemical Industry.

The endosperm microstructure, physical, thermal properties and specific milling energy of spelt (Triticum aestivum ssp. spelta) grain and flour

Previous research has shown that the endosperm microstructure and physical properties of grain have significance in grain processing and in the development of processing machines. The aim of our study was to analyze the endosperm microstructure, physical, thermal properties, and specific milling energy of organic spelt (Triticum aestivum ssp. spelta) grain and flour. Image analysis combined with fractal analysis was used to describe the microstructural differences of the endosperm of spelt grain. The endosperm morphology of spelt kernels was monofractal, isotropic, and complex. A higher proportion of Type-A starch granules resulted in an increased proportion of voids and interphase boundaries in the endosperm. Changes in the fractal dimension were correlated with kernel hardness, specific milling energy, the particle size distribution of flour, and the starch damage rate. Spelt cultivars varied in size and shape of the kernels. Kernel hardness was a property that differentiated specific milling energy, particle size distribution of flour, and starch damage rate. Fractal analysis may be considered as a useful tool for evaluating milling processes in the future.

Moisture migration analysis of Chinese naked oat during different storage conditions by sorption isotherm model and low-field NMR

Moisture migration is considered to be one of the most important influencer on crop quality during storage, which is easily affected by storage conditions, such as ambient humidity and temperature. The aim of this work was to determine the effect of storage condition on moisture content of Chinese naked oat by simulating 9 equilibrium relative humidity (ERH) and 5 temperatures. The equilibrium moisture content (EMC) of dry sample was achieved by adsorption, while EMC of wet one was achieved by desorption. EMC of oat increased with the increase in ERH and decreased when temperature increased. The sorption isotherm was a typical “S” shape and fitted using current EMC/ERH models. Modified Chung–Pfost (MCPE) model was the most suitable for describing the dynamic sorption process of Chinese naked oat during storage with a ERH range from 10% to 90%. There was an obvious hysteresis between adsorption and desorption isotherms, whose range decreased with the increase of temperature. High temperature accelerated moisture migration by increasing the hydrophilicity of oat surface. Moreover, dynamic moisture migration was imaged by low‐field nuclear magnetic resonance (NMR), showing that moisture migrated between ambient environment and oat mainly through endosperm where most moisture accumulated. During sorption, free water migrated firstly, followed by bound water and the change in content of bound water was more stable than that of free water. The results of this study can provide a useful information for future work on quality control of oat during storage.
