The kinetic behavior of antioxidant activity and the stability of aqueous and organic polyphenol extracts from navel orange peel

Enhancing physicochemical, rheological properties, and in vitro rumen fermentation of starch with Melastoma candidum D. Don fruit extract

The utilization of polyphenol-modified starch in ruminants has not undergone extensive exploration. This study aimed to investigate the impact of the complex formed between starch and Melastoma candidum D. Don fruit extract on physicochemical properties, phenol release kinetics in various buffers simulating the gastrointestinal tract, methane production, and post-rumen digestibility. The interaction between starch and M. candidum D. Don fruit extract significantly (p < 0.001) increased resistant starch and particle size diameter. The maximum phenolic release from complex between starch and M. candidum D. Don fruit extract, due to gastrointestinal tract-simulated buffers, ranged from 22.96 to 34.60 mg/100 mg tannic acid equivalent. However, rumen and abomasum-simulated buffers released more phenolic content, whereas the intestine-simulated buffer showed higher antioxidant activity (ferric ion-reducing antioxidant power). Furthermore, complex between starch and M. candidum D. Don fruit extract significantly decreased dry matter rumen digestibility (p < 0.001) and maximum methane gas production (p < 0.001).

The Stability of Phenolic Compounds in Fruit, Berry, and Vegetable Purees Based on Accelerated Shelf-Life Testing Methodology

Evaluating the stability of polyphenols in fruit, berry, and vegetable purees helps to assess the quality of these products during storage. This study aimed to (1) monitor the stability of total phenolic content (TPC) in four-grain puree with banana and blueberry (FGBB), mango-carrot-sea buckthorn puree (MCB), and fruit and yogurt puree with biscuit (FYB); (2) study the effect of aluminum-layered vs. aluminum-free packaging on the changes in TPC; and (3) assess the suitability of accelerated shelf-life testing (ASLT) methodology to evaluate the stability of polyphenols. The samples were stored at 23 °C for 182, 274, 365, and 427 days. The corresponding time points during ASLT at 40 °C were 28, 42, 56, and 66 days, calculated using Q₁₀ = 3. The TPC was determined with Folin-Ciocalteu method. The results revealed that the biggest decrease in TPC took place with high-pH FGBB, which contained fewer ingredients with bioactive compounds. Minor changes were seen in FYB and MCB, which had lower pH values, and contained a larger amount of ingredients that include polyphenols. In addition, the choice of packaging material did not affect the TPC decrease in each puree. Finally, it was concluded that the ASLT methodology is suitable for studying the TPC changes in such purees, but the corresponding Q₁₀ factors may vary and should be determined based on the chemical profile and ingredient list of the product.

Valorization of Waste Orange Peels: Aqueous Antioxidant Polyphenol Extraction as Affected by Organic Acid Addition

Waste orange peels (WOP) are a food processing residue rich in bioactive polyphenols. However, data on aqueous extraction processes for efficient polyphenol recovery are rather limited. The present study dealt with the optimization of WOP polyphenols, using a batch stirred-tank mode and water as solvent. After a preliminary single-factor examination, the implementation of response surface methodology revealed that optimum extraction time and temperature were 60 min and 55 °C, respectively. Under these conditions, the extraction afforded a total polyphenol yield of 26.13 ± 0.78 mg gallic acid equivalents per g dry mass. The use of aqueous solutions of citric, tartaric and lactic acid showed that total polyphenol yield may be significantly increased with 1% tartaric acid or equally with 2.5% citric acid. However, the effect on individual polyphenolic constituents was rather negligible, as determined by high-performance liquid chromatography. The discrepancies observed in the antioxidant properties of the extracts produced with water and acidified water were putatively attributed to some differences in the polyphenolic composition. The extraction methodology proposed is environmentally green and of low cost, and it could certainly be used as an effective means of recovering WOP polyphenols.
