Abstract
Introduction It is a growing concern that pathogenic bacteria can be found in poultry meat, and an additional problem is the ongoing rise in food-derived bacteria's resistance to antibiotics. Methods A cross-sectional study was conducted from February 2021 to March 2023. This study aimed to isolate, identify and analyze E. coli in poultry meat collected from slaughterhouses in Addis Ababa. A total of 499 samples were collected from fecal content, carcass, hand and knife swab samples by using purposive and systematic random sampling methods. Results An overall 5.2% Escherichia coli (E. coli O157:H7) prevalence was found in this study. On average, antimicrobial susceptibility tests revealed that the sensitivities of (Escherichia coli) E. coli O157:H7 isolates from carcass swabs, fecal content, manuals, knife swabs and water samples were 62.3%, 52.5%, 53%, 60% and 60%, respectively. Discussion However, few (Escherichia coli) E. coli O157:H7 isolates have developed multidrug resistance to some antibiotics, for an overall rate of 13.8%. Knowledge and attitude assessment of the slaughterhouse workers showed that 44.2% had no wash their hands at all and that 125.6% had washed their hands before slaughter commencement. Conclusion The detection of (Escherichia coli) E. coli O157:H7 isolates from all sample types had a slight prevalence of serious public health concerns. It is important to monitor antibiotic use for both human and animal health in order to make sure that it is safe and effective.

Abstract
In Sub-Saharan Africa (SSA), both crop production and the hidden hunger index (HHI, a combination of zinc, iron, and vitamin A deficiency), continue to be worse than the rest of the world. Currently, 31 out of 36 countries of SSA show the highest HHI. At the same time, several studies show climate change as a major constraint to agriculture productivity and a significant threat to SSA food security without significant action regarding adaptation. The food security of SSA is dependent on a few major crops, with many of them providing largely only an energy source in the diet. To address this, crop diversification and climate-resilient crops that have adaptation to climate change can be used and one route toward this is promoting the cultivation of African orphan (neglected or underutilized) crops. These crops, particularly legumes, have the potential to improve food and nutrition security in SSA due to their cultural linkage with the regional food habits of the communities, nutritionally rich food, untapped genetic diversity, and adaptation to harsh climate conditions and poor marginal soils. Despite the wide distribution of orphan legumes across the landscape of SSA, these important crop species are characterized by low yield and decreasing utilization due in part to a lack of improved varieties and a lack of adequate research attention. Genomic-assisted breeding (GAB) can contribute to developing improved varieties that yield more, have improved resilience, and high nutritional value. The availability of large and diverse collections of germplasm is an essential resource for crop improvement. In the Genetic Resources Center of the International Institute of Tropical Agriculture, the collections of orphan legumes, particularly the Bambara groundnut, African yambean, and Kersting's groundnut, have been characterized and evaluated for their key traits, and new collections are being undertaken to fill gaps and to widen the genetic diversity available to underpin breeding that can be further utilized with GAB tools to develop faster and cost-effective climate-resilient cultivars with a high nutrition value for SSA farmers. However, a greater investment of resources is required for applying modern breeding to orphan legume crops if their full potential is to be realized.

Abstract
To increase the chicken's productivity and performance it is imperative to exploit underutilized oil crops such as linseed meal as protein source. This study evaluated the effect of replacing soybean meal with graded levels of linseed meal on feed intake, growth performance and carcass parameters of broiler chickens. A total of 180 day-old Cobb500 broilers were distributed to five treatment diets in a completely randomized design replicated three times with 12 chicks each. Isocaloric and isonitrogenous treatment diets formulated were T1 (0%, diet with no linseed meal), T2 (25%), T3 (50%), T4 (75%) and T5 (100%, soybean meal in the diet was replaced by linseed meal). The feeding experiment lasted for 44 days. The total feed intake, mortality rate and feed conversion ratio (FCR) during starter phase were similar (P > 0.05) among treatments. High (P < 0.05) starter phase body weight was recorded for T3 compared to T1, T2, T4 and T5 treatments but T2, T4 and T5 had similar average daily gain. The feed intake, body weight change, FCR and mortality during finisher phase and entire period were similar (P > 0.05) among treatment groups. The weight of most carcasses were similar (P > 0.05) among treatment except the weight of kidney, heart, breast, liver and abdominal fat. Kidney weight for T1 and T3 were higher (P < 0.05) than for T2, T4 and T5. The weight of heart for T3 was higher than T2 and T5 while T1, T3 and T4 were similar (P > 0.05). High (P < 0.05) breast weight were observed for T3 than T2 and T4. Liver weight for T3 was greater (P < 0.05) than T2 and T5. The total feed cost decreased with increasing levels of linseed meal. High net return was obtained from T3 followed by T4 and T2. The results showed that although linseed meal can replace 100% soybean meal in the ration without detrimental effect on the health, replacement at 50% (T3) is recommended for better performance of broilers.

Abstract
ABSTRACT The present study aimed to evaluate increasing levels of fish waste oil in diets for laying hens on serum biochemistry profile. 192 Hisex White laying hens at 29 weeks of age were used, with water and food ad libitum. The experimental design was completely randomized consisting of eight treatments corresponding to the inclusion levels of fish waste oil (0, 0.5, 1.0, 1.5, 2.0, 2.5, 3.0 and 3.5%) in the diets, with four replicates of six birds each. Data collected were subjected to polynomial regression at 5% of significance. Significant differences (P<0.05) were observed in triglycerides, glucose, total cholesterol, and uric acid. These parameters presented a decrease when hens fed diets with higher level of fish waste oil. The results of the present study indicated that the inclusion of fish waste oil caused a significant effect in the serum biochemical profile of laying hens, especially in glucose, triglycerides, total cholesterol, and uric acid concentrations. The inclusion level of 3.5% of fish waste oil caused larger disequilibrium in the serum biochemical profile of laying hens.

Abstract
This study evaluated the effect of dietary incorporation of linseed alone or along with dried tomato paste-pepper powder mix on egg physical characteristics, antioxidant profiles, lipid oxidative status, and yolk coloration before and after storage at 4 °C for one month. Sixty Novogen White laying hens, 27 weeks-old, were divided into three groups and given 100 g/hen/day of a standard diet (C), standard diet containing 4.5% of ground linseed (L), linseed diet containing 1% of dried tomato paste and 1% of sweet red pepper (LTP). Linseeds increased (p < 0.05) egg yolk antioxidant capacity but not lipid oxidative stability (p > 0.05). However, dietary inclusion of LTP did not improve fresh egg yolk antioxidant activity and lipid oxidation stability (p > 0.05). With reference to the stored eggs, only antioxidant activity measured by phosphomolybdenum reduction and lipid oxidative stability were influenced (p < 0.05) by the dietary treatment. Fresh egg yolk of hens fed on linseeds tended to have a slightly more yellow, redder, and less light color than the eggs of hens fed with the control diet. Dietary supplementation of LTP increased (p < 0.05) the Roche yolk color fan (RYCF) score and redness (a*) and decreased (p < 0.05) lightness (L*) without affecting (p > 0.05) saturation (C*). Storage of hens’ eggs fed on the control diet did not influence (p > 0.05) yolk color.

Abstract
Several investigations have suggested that fenugreek seeds may have a hypocholesterolemic activity, and thus be efficient in the treatment of egg yolk cholesterol. The objective of the current study was to evaluate the effect of dietary incorporation of 3% of fenugreek seed combined with 3% of linseed, 1% of garlic paste, and 0.078% of copper sulfate on laying performance, egg quality and lipids profile. Forty four, 41 weeks old, Novogen White laying hens received for 42 days 100 g/d of basal diet (control) or experimental diet (CFSGLSCS). With the exception of egg weight, which showed a significant increase for hens fed on CFSGLSCS with 57.99 g compared to 56.34 g for the control group, egg production (90.84% for control compared to 87.89% for experimental diet), egg mass (50.95 g/d for control compared to 50.87 g/d for CFSGLSCS), feed efficiency (1.94 for control compared to 1.98 for CFSGLSCS) were not affected by dietary treatments. The addition of CFSGLSCS reduced (p < 0.05) egg yolk cholesterol by 5.4% and blood cholesterol from 158.42 mg/dL to 122.82 mg/dL for control and CFSGLSCS, respectively. The dietary addition of CFSGLSCS increased (p < 0.05) total lipids from 4.5 g/egg to 5.23 g/egg and didn’t affect (p > 0.05) yolk triglycerides.
