Abstract
The incorporation of nanostructures loaded with bioactive compounds into food matrices is a promising approach to develop new functional foods with improved nutritional, health profiles and good sensorial properties. The rheological and tribological properties of yogurt enriched with curcumin-loaded solid lipid nanoparticles (SLN) were evaluated. Also, the TCA solubility index, the bioaccessibility of curcumin and cell viability were assessed after dynamic in vitro digestion. The presence of SLN in yogurt did not affect its rheological properties; however, SLN addition increased the lubrication capability of yogurt. After in vitro digestion, yogurt with added SLN (yogurt_SLN) presented a lower TCA solubility index (22 %) than the plain yogurt (39 %). The bioaccessibility and stability of curcumin were statistically similar for yogurt_SLN (30 % and 42 %, respectively) and SLN alone (20 % and 39 %, respectively). Regarding cell viability results, the intestinal digesta filtrates of both controls (i.e., SLN alone and plain yogurt) did not affect significantly the cell viability, while the yogurt_SLN presented a possible cytotoxic effect at the concentrations tested. In general, the incorporation of SLN into yogurt seemed to promote the mouthfeel of the yogurt and did not adversely affect the bioaccessibility of curcumin. However, the interaction of SLN and yogurt matrix seemed to have a cytotoxic effect after in vitro digestion, which should be further investigated. Despite that, SLN has a high potential to be used as nanostructure in a functional food as a strategy to increase the bioactive compounds' bioaccessibility.

Abstract
Antioxidant nutraceuticals can be found in several dietary sources and have been utilized for various medical benefits including health promotion, disease prevention, and support for treatment of acute and/or chronic diseases. Nonetheless, there are some limitations in delivering antioxidants via oral administration such as low solubility and permeability, pH and enzyme degradation, and instability of the compounds along the gastrointestinal tract leading to low bioavailability. In order to tackle these challenges, the utilization of lipid nanoparticles has numerous advantages to the escalating delivery system of antioxidants in nutraceuticals across the gastrointestinal tract barrier. Nowadays, several types of lipid nanoparticles can be used in antioxidant nutraceutical delivery systems through the oral route, namely solid lipid nanoparticles and nanostructured lipid carriers. This review article aims to provide notable information on the importance and applications of lipid nanoparticles in antioxidant delivery systems from nutraceuticals by an oral route. The mechanism in enhancing antioxidant compound transport across the gastrointestinal tract can occur by elevating loading capacity, improving chemical and physical stability, and increasing its bioavailability. To date, lipid nanoparticle vehicles have been developed to improve the delivery of antioxidant compounds to enhance bioavailability via oral routes. Lipid nanoparticles have remarkable benefits in delivering antioxidant nutraceuticals via oral administration. Hence, scale-up and commercialization of antioxidant nutraceutical-loaded lipid nanoparticles have been a potential technology in recent years. Subsequently, several vegetable and natural oils with antioxidant activity can also be utilized for nanoparticle formulation lipid components to increase nutraceuticals' antioxidant properties and bioavailability.

Abstract
Common to all biological systems and living organisms are molecular interactions, which may lead to specific physiological events. Most often, a cascade of events occurs, establishing an equilibrium between possibly competing and/or synergistic processes. Biochemical pathways that sustain life depend on multiple intrinsic and extrinsic factors contributing to aging and/or diseases. This article deals with food antioxidants and human proteins from the circulation, their interaction, their effect on the structure, properties, and function of antioxidant-bound proteins, and the possible impact of complex formation on antioxidants. An overview of studies examining interactions between individual antioxidant compounds and major blood proteins is presented with findings. Investigating antioxidant/protein interactions at the level of the human organism and determining antioxidant distribution between proteins and involvement in the particular physiological role is a very complex and challenging task. However, by knowing the role of a particular protein in certain pathology or aging, and the effect exerted by a particular antioxidant bound to it, it is possible to recommend specific food intake or resistance to it to improve the condition or slow down the process.

Abstract
Curcumin belongs to the group of so-called phytocompounds, biologically active molecules produced by plants exerting a beneficial effect on health. Curcumin shows a wide spectrum of different properties, being an anti-inflammatory, antioxidant, antimicrobial and antimutagenic molecule. The purpose of the review is to examine what literature reported on the characteristics of curcumin, particularly, on the beneficial and controversial aspects of this molecule, aiming for a better therapeutic management of retinal diseases. The retina is a constant target of oxidative stress, this tissue being characterized by cells rich in mitochondria and by vessels and being, obviously, continuously reached from photons affecting its layers. Particularly, the retinal ganglion cells and the photoreceptors are extremely sensitive to oxidative stress damage and it is well known that an imbalance in reactive oxygen species is often involved in several retinal diseases, such as uveitis, age-related macular degeneration, diabetic retinopathy, central serous chorioretinopathy, macular edema, retinal ischemia-reperfusion injury, proliferative vitreoretinopathy, hereditary tapeto-retinal degenerations, and retinal and choroidal tumors. To date, several studies suggest that oral treatment with curcumin is generally well tolerated in humans and, in addition, it seems to have no negative effects: therefore, curcumin is a promising candidate as a retinal disease therapy. Unfortunately, the primary limitation of curcumin is represented by its poor bioavailability, in fact only a minimal fraction of this substance can reach the blood stream in the form of a biologically active compound. However, many steps have been made in several fields. In the future, it is expected that the strategies developed until now to allow curcumin to reach the target tissues in adequate concentrations could be ameliorated and, above all, large in vivo studies on humans are needed to demonstrate the total safety of these compounds and their effectiveness in different eye diseases.

Abstract
The chemical kinetic (CK) method, which involves the reduction of 4-hexadecylbenzenediazonium ions (16-ArN2 +) by antioxidants (in the present case, TBHQ) occurring exclusively at the interface of the association colloids, was employed to establish the changes in the chemical reactivity of anionic surface-active ionic liquids (SAILs) as a function of the concentration and the composition in their mixed states. We used sodium dodecyl sulfate and different SAILs based on the dodecylsulfate surfactant containing 1-alkyl-3-methylimidazolium cations as counterions having a varying alkyl chain length of 4 (bmim), 8 (omim), and 12 (ddmim) carbon atoms. The structural transitions of aggregates of the SAILs from the micellar to vesicular form were observed as a function of concentration in single surfactant systems and as a function of composition in mixed surfactant systems. Results of the reduction kinetics of 16-ArN2 + at the interface of such aggregates, which depends on the acid/base equilibria at the interface, gave an insight into the changes in the interfacial H+ ions with the change in the hydrophobicity of the counterions of SAILs and the morphological changes from micelles to vesicles as a function of concentration or composition. These changes in the interfacial pH correlate very well with the stability of curcumin within these self-assemblies, which exclusively depends on the pH of the medium and highlights the importance of the results obtained from the CK method in selecting the appropriate medium/conditions for the stabilization of the bioactive molecules.

Abstract
Curcumin (CUR) is a phenolic compound present in some herbs, including Curcuma longa Linn. (turmeric rhizome), with a high bioactive capacity and characteristic yellow color. It is mainly used as a spice, although it has been found that CUR has interesting pharmaceutical properties, acting as a natural antioxidant, anti-inflammatory, antimicrobial, and antitumoral agent. Nonetheless, CUR is a hydrophobic compound with low water solubility, poor chemical stability, and fast metabolism, limiting its use as a pharmacological compound. Smart drug delivery systems (DDS) have been used to overcome its low bioavailability and improve its stability. The current work overviews the literature from the past 10 years on the encapsulation of CUR in nanostructured systems, such as micelles, liposomes, niosomes, nanoemulsions, hydrogels, and nanocomplexes, emphasizing its use and ability in cancer therapy. The studies highlighted in this review have shown that these nanoformulations achieved higher solubility, improved tumor cytotoxicity, prolonged CUR release, and reduced side effects, among other interesting advantages.

Abstract
The multi-target activity of curcumin makes it a promising pharmacological lead for structural modifications focused on the preparation of new better therapeutics with improved bioavailability. A possible modification is to "decompose" the parent curcumin structure into constituent units and to build up curcumin analogues with biphenyl structural moiety. The antioxidant properties of the so-called "monomers" (m1-m3) and "dimers" (d1-d3) are studied experimentally and computationally. Their protective effects as chain-breaking antioxidants are investigated for the individual compounds and in binary/ternary compositions with α-tocopherol (TOH) and ascorbyl palmitate (AscPH). All monomers manifest significant synergism up to 70% in mixtures with TOH. Synergistic effects are found for the ternary compositions of monomeric analogues upon addition to the binary mixture of standard antioxidants (TOH + AscPH). Dimers with biphenyl skeleton manifest a lower potential in compositions under lipid oxidation conditions. DFT computations provide a detailed insight into the structure and antiradical properties of the curcumin analogues and standard antioxidants. PRACTICAL APPLICATIONS: Bioactive compounds in the diet play a crucial role in the prevention of numerous diseases in whose pathogenesis oxidative stress is well known to be involved. Therefore, enhancement of the antioxidant status of the biological target is often helpful. Two of the monomers studied are considered leading agents in the treatment or prophylaxis of smooth muscle disorders and are useful in the maintenance of the normal gut function- as a calmative for the gut and to ease upset stomach. We hypothesized that the presence of a biphenyl scaffold in the parent molecular structure can enhance the biological activity. Equimolar mixtures of TOH with studied compounds have potential application in food chemistry and medicine. A composition comprising the active agent and additional components (strong conventional antioxidants) may be administered in foodstuffs, as a food supplement, beverage supplement, or as a pharmaceutical composition.

Abstract
Curcumin, a natural polyphenolic compound derived from the South Asian turmeric plant (Curcuma longa), has well-characterized antioxidant, anti-inflammatory, anti-protein-aggregate, and anticancer properties. Neuroblastoma (NB) is a cancer of the nervous system that arises primarily in pediatric patients. In order to reduce the multiple disadvantages and side effects of conventional oncologic modalities and to potentially overcome cancer drug resistance, natural substances such as curcumin are examined as complementary and supportive therapies against NB. In NB cell lines, curcumin by itself promotes apoptosis and cell cycle arrest through the suppression of serine–threonine kinase Akt and nuclear factor kappa of activated B-cells (NF-κB) signaling, induction of mitochondrial dysfunction, and upregulation of p53 and caspase signaling. While curcumin demonstrates anti-NB efficacy in vitro, cross-validation between NB cell types is currently lacking for many of its specific mechanistic activities. Furthermore, curcumin’s low bioavailability by oral administration, poor absorption, and relative insolubility in water pose challenges to its clinical introduction. Numerous curcumin formulations, including nanoparticles, nanocarriers, and microemulsions, have been developed, with these having some success in the treatment of NB. In the future, standardization and further basic and preclinical trials will be required to ensure the safety of curcumin formulations. While the administration of curcumin is clinically safe even at high doses, clinical trials are necessary to substantiate the practical efficacy of curcumin in the prevention and treatment of NB.

Abstract
Objectives Being the most common type of oral malignancies, oral squamous cell carcinoma is initiated by epithelial dysplasia, which can be marked by the expression of nuclear factor kappa B and cyclooxygenase 2. Curcumin has been known for its anti-cancer potential. The objective of this study was to evaluate the anti-cancer potential of curcumin on oral squamous cell carcinoma based on the expression of the nuclear factor kappa B and cyclooxygenase 2 during epithelial dysplasia stage. Methods This experimental study was performed on 35 Sprague Dawley rats at the Veterinary Medicine Faculty, Bogor Agricultural Institute, Indonesia. At the beginning of the experiments, all rats were induced by 100 µg 0.5% 7,12-dimethylbenz(a)anthracene every 2 days for the duration of 28 days. Once epithelial dysplasia stage was reached, all rats were then randomly divided into control group (that did not receive curcumin) or the experimental group (the group that received curcumin for the next 4 weeks). After 4 weeks, the histopathological examination of haematoxylin and eosin and immunohistochemistry examination were conducted. Data were gathered and analyzed by using the Wilcoxon-Mann-Whitney test. Results The results of the current study revealed that the experimental group showed significantly less nuclear factor kappa B (p < 0.01) and cyclooxygenase 2 (p = 0.03) expressions compared to the control group. Conclusion The results of the study suggested that curcumin was effective in suppressing nuclear factor kappa B and cyclooxygenase 2 expression in experimentally induced oral squamous cell carcinoma. Future studies investigating curcumin anti-cancer potential in a further stage of oral squamous cell carcinoma, as well as the involvement of other components that might improve curcumin anti-cancer potential, are of importance.
