Abstract
There are massive sources of lactic acid bacteria (LAB) in traditional dairy products. Some of these indigenous strains could be novel probiotics with applications in human health and supply the growing needs of the probiotic industry. In this work, were analyzed the probiotic and technological properties of three Lactobacilli strains isolated from traditional Brazilian cheeses. In vitro tests showed that the three strains are safe and have probiotic features. They presented antimicrobial activity against pathogenic bacteria, auto-aggregation values around 60%, high biofilm formation properties, and a survivor of more than 65% to simulated acid conditions and more than 100% to bile salts. The three strains were used as adjunct cultures separately in a pilot-scale production of Prato cheese. After 45 days of ripening, the lactobacilli counts in the cheeses were close to 8 Log CFU/g, and was observed a reduction in the lactococci counts (around -3 Log CFU/g) in a strain-dependent manner. Cheese primary and secondary proteolysis were unaffected by the probiotic candidates during the ripening, and the strains showed no lipolytic effect, as no changes in the fatty acid profile of cheeses were observed. Thus, our findings suggest that the three strains evaluated have probiotic properties and have potential as adjunct non-starter lactic acid bacteria (NSLAB) to improve the quality and functionality of short-aged cheeses.

Abstract
Background and Aim Dietary supplements play pivotal roles in promoting productive and reproductive performance in ruminant animals. The aims of the present study were to evaluate the effects of extruded flaxseed and Salmate® (Ballard Group, Inc, OH, USA) inclusion in diets on milk yield and composition, ruminal degradation and fermentation, and flow of fluids and digesta in lactating cattle. Materials and Methods Six rumen-fistulated Holstein lactating cows were distributed to a 6 × 6 design of Latin square (L.S.). The groups were assorted into a control group fed a basal control diet and two treated groups fed diets containing extruded flaxseed (7.0%) or Salmate® (25 g/head/day). The basal control, extruded flaxseed, and Salmate® diets were formulated as isonitrogenous and isoenergetic. Each L.S. period of the group comprised 21 days, including 10 days for adaptation to the diet and 11 days for data sampling and recording. Results Feed intake did not differ among the control, extruded flaxseed, and Salmate® groups. Milk yield (kg) and protein and fat composition (%) were improved on feeding the extruded flaxseed diet compared with the Salmate® and control diets. Extruded flaxseed or Salmate® diet had no effect on the values of ruminal pH, ammonia, and volatile fatty acids except isobutyrate, which decreased in the Salmate® group. Degradable efficiency and ruminal digestibility were significantly decreased with the inclusion of extruded flaxseed and/or Salmate® in the diets. The extruded flaxseed and Salmate® groups had a greater digesta passage rate than the control group. The extruded flaxseed and control groups had a greater liquid passage rate than the Salmate® group. Conclusion The inclusion of extruded flaxseed in the diet improved (p < 0.05) milk yield, milk composition, and milk Omega-6: Omega-3 ratio with no changes in ruminal fermentation, notable negative effects on degradable efficiency and ruminal digestibility.

Abstract
Individual variation in milk fatty acid (FA) composition has been partially attributed to stearoyl-CoA desaturase 1 (SCD1) gene polymorphisms in taurine breeds, but much less is known for Zebu breeds. This study investigated the phenotypic variation in milk FA composition, and the influence of SCD1 variants on this trait and on milk fat desaturase indices (DI) in Gir cows. The functional impact of SCD1 variants was predicted using bioinformatics tools. Milk and blood samples were collected from 312 cows distributed in 10 herds from five states of Brazil. SCD1 variants were identified through target sequencing, and milk FA composition was determined by gas chromatography. Phenotypic variation in milk FA composition fell within the range reported for taurine breeds, with SCD18 index showing the lowest variation among the DI. Fourteen SCD1 variants were identified, six of which not previously described. Regarding the A293V polymorphism, all cows were homozygous for the C allele (coding for alanine), whereas all genotypes were detected for the second SNP affecting the 293 codon (G > A), with compelling evidence for functional effects. Significant associations (based on raw p-values) were found between this SNP and C12:0, cis-9, trans-11 CLA and short-chain FA, and between another SNP (rs523411937) and C15:0 and odd-chain linear FA. A new SNP on Chr26:21277069 was associated with trans-11 C18:1, cis-9, trans-11 CLA, C18:3 n-3 and n-3 FA. These findings indicate that SCD1 polymorphisms also contributes to the phenotypic variation in milk FA composition of Gir cows, with potential use in their breeding programmes.

Abstract
AbstractAs a widely consumed foodstuff, milk and dairy products are increasingly studied over the years. At the present time, milk profiling is used as a benchmark to assess the properties of milk. Modern biomolecular mass spectrometers have become invaluable to fully characterize the milk composition. This review reports the analysis of milk and its components using liquid chromatography coupled with mass spectrometry (LC–MS). LC–MS analysis as a whole will be discussed subdivided into the major constituents of milk, namely, lipids, proteins, sugars and the mineral fraction.

Abstract
We evaluated the performance, milk composition, and milk fatty acid profile of cows fed diets composed of cactus cladodes (Opuntia stricta [Haw.] Haw), sugarcane bagasse and increasing levels of full-fat corn germ (FFCG). We hypothesized that ground corn can be effectively replaced by FFCG when cactus cladodes and sugarcane bagasse are used as forage sources. The cows were randomly distributed into two 5 × 5 Latin Squares and fed five diets in which ground corn was progressively replaced with full-fat corn germ (FFCG; 0%, 25%, 50%, 75%, or 100% of substitution). Adding FFCG to the diet increased milk production and milk fat content and reduced milk protein content. Overall, FFCG reduced the proportion of saturated FAs and increased mono- and polyunsaturated FAs in milk, including CLA isomers. In addition, activity indices of stearoyl-CoA desaturase were reduced by increasing levels of FFCG. We conclude that the substitution of corn for FFCG in diets based on cactus cladodes and sugarcane bagasse positively modifies the FA profile of milk and could add commercial value to milk products (e.g., CLA-enriched milk). In addition, the milk fat response indicates that the basal diet was favorable to the rumen environment, preventing the trans-10 shift commonly associated with milk fat depression.

Abstract
Simple Summary The effect of replacing human-edible feed ingredients with byproducts on the performance and net food production of high-producing Holstein dairy cows was investigated. Feeding byproduct-based concentrate instead of human-edible feed ingredients increased net food production and improved the performance of high-producing Holstein cows. Abstract The effect of feeding greater amounts of byproducts (BP) as a replacement for human-edible (HE) feed ingredients on nutrient intake, chewing activity, rumen fermentation, production performance, human-edible feed conversion efficiency (HeFCE) and net food production (NFP) of high-producing Holstein cows was evaluated. Twelve multiparous Holstein cows (BW = 673 ± 44, DIM = 112 ± 8 d; 48 ± 2.25 kg/d of milk; mean ± SE) were used in a replicated 3 × 3 Latin square design with 28-d periods. Each period consisted of 21 d of adaptation followed by 7 d of data collection. Treatments diets were (DM basis): (1) concentrate containing 26% byproducts (BP26; control); (2) concentrate containing 60% byproducts (BP60); and (3) concentrate containing 95% byproducts (BP95). Alfalfa hay (20% dietary DM) and corn silage (20% dietary DM) were included in all diets. Dietary concentrations of neutral detergent fiber (NDF), non-fiber carbohydrates (NFC), starch and ether extract (EE) were 32.1, 41.0, 26.14 and 3.4% (BP 26); 35.3, 36.0, 22.05 and 4.7% (BP60); and 38.2, 32.0, 17.96 and 6.1% (BP95), respectively (DM basis). Dry matter (22.07 kg/d) and NEL (35.16 Mcal/d) intakes did not differ among treatments. However, ether extract and NDF intakes increased, whereas starch intake decreased linearly as BP ingredients increasingly replaced HE feed ingredients. Eating time was not affected by dietary treatment, but ruminating and total chewing time tended to increase with increasing amounts of BP. Replacing HE with BP ingredients did not affect rumen pH. An increased proportion of BP ingredients in the diet linearly decreased propionate, isobutyrate, isovalerate and valerate concentrations in the rumen and increased acetate concentration and the acetate to propionate ratio. Replacing HE with BP ingredients did not affect milk yield. The yield of 3.5% FCM (39.12, 40.14 and 41.33 kg/d for BP26, BP60 and BP95, respectively) and fat content (2.95, 2.99 and 3.13 % for BP26, BP60 and BP95, respectively) linearly increased. Substituting BP ingredients for HE feed ingredients increased unsaturated fatty acids, monounsaturated fatty acids, polyunsaturated fatty acids, stearic acid, oleic acid and preformed fatty acids but decreased saturated fatty acids, palmitic acid, de novo and mixed fatty acids. Replacing HE with BP feed ingredients increased human-edible efficiency (HeFCE) for crude protein (1.06, 1.66 and 4.14 kg/kg edible for BP26, BP60 and BP95, respectively) and for energy (2.27, 3.62 and 9.22 MJ/MJ edible for BP26, BP60 and BP95, respectively) and also net food production (NFP) for crude protein (0.064, 0.52, and 1.00 kg/d for BP26, BP60, and BP95, respectively) and energy (62.8, 83.0 and 104.7 MJ/d for BP26, BP60 and BP95, respectively). Feeding byproduct-based concentrates instead of human-edible feed ingredients increase human-edible feed conversion efficiency (HeFCE), net food production (NFP) and improved the performance of high-producing Holstein cows.

Abstract
This study evaluated the effects of dietary inclusion of cracked babassu coconut (CBC) in the supplement on nutrient utilization, performance, and milk fatty acid (FA) composition of dairy cows grazing Megathyrsus maximus cv. Mombasa. Five multiparous Holstein × Zebu mid-lactation cows (125 ± 16.5 days in milk) were assigned to five dietary treatments (replacement of 0%, 20%, 40%, 60%, and 80% of ground corn with CBC, on a dry matter (DM) basis) in a 5 × 5 Latin square design. The intake of DM from the supplement, crude protein (CP), non-fiber carbohydrate (NFC), fat (ether extract (EE)), and total digestible nutrients (TDNs) decreased linearly (P < 0.05), while the intake of DM from forage increased linearly (P < 0.05), with the increase in CBC inclusion in the supplement. Conversely, total DM intake was unaffected (P > 0.05). The DM, NFC, EE, and TDN digestibility decreased linearly (P < 0.05), while organic matter (OM) digestibility decreased in a quadratic fashion (P < 0.05), as CBC inclusion in the supplement increased. Nevertheless, digestibility of CP was unaffected (P > 0.05). Milk yield and composition (lactose, fat, protein, casein, and majority of FA) showed a linearly decreasing pattern (P < 0.05) with the increasing of CBC inclusion. However, proportions of trans-vaccenic acid, rumenic acid, total monounsaturated FA, and odd- and branched-chain FAs increased linearly (P < 0.05). On the opposite, total saturated FA (SFA) and the n-6:n-3 FA ratio in milk fat decreased linearly (P < 0.01). Hence, replacement of corn meal with CBC up to 80% in the supplement decreases nutrient intake and digestibility, as well as milk yield response in grazing dairy cows. However, CBC inclusion may enhance the nutritional properties of milk fat.

Abstract
Based on low 18:0 contents observed in milk fat of cows fed cactus cladodes (CC), we hypothesized that including Opuntia stricta cladodes in a soybean oil (SO)-supplemented diet would promote incomplete rumen biohydrogenation of supplemental PUFA, leading to increased trans-11 18:1 and cis-9, trans-11 CLA contents in milk. Twelve Holstein cows were used in a two-period study: (a) Baseline: all cows received a total mixed ration (TMR) composed of sorghum silage (SS) and a concentrate containing no SO for 14 days; (b) Treatment: cows received one of the following SO-supplemented diets for 21 days: (1) SS-TMR: a TMR composed of SS and a SO-enriched concentrate, (2) CC-TMR: a TMR containing CC as a partial substitute for SS plus the SO-enriched concentrate, and (3) CC-PMR: same diet as in treatment 2, but CC were mixed with the SO-enriched concentrate and fed as a partial mixed ration (PMR). Both CC diets increased relative abundances of trans-11 18:1, cis-9, trans-11 CLA, and 18:2 n-6 in milk fat, whereas opposite effects were observed on 18:0 and cis-9 18:1. Proportion of 18:2 n-6 increased, and cis-9, trans-11 CLA tended to increase with CC-PMR as compared to CC-TMR, whereas 18:3 n-3 was higher with CC-PMR than with SS-TMR. Proportions of several odd- and branched-chain fatty acids, certain 18:1 isomers, and trans-9, cis-11 CLA changed with CC diets, notably with CC-PMR. Milk yield and intake of most nutrients (except fibre) increased or tended to increase with the CC diets, whereas gross milk composition was unaltered. Stearoyl-CoA desaturase-1 index for C18 (SCD18 ) was higher with CC-PMR than with SS-TMR, and milk n-6:n-3 FA ratio and apparent transfer of 18:2 n-6 to milk increased with CC diets. These results indicate that Opuntia stricta cladodes can be a valuable feed ingredient for improving the nutraceutical value of milk fat.

Abstract
This experiment evaluated the effect of a blend of essential oils (BEO) on intake, lactation performance, diet digestibility, ruminal fermentation profile, eating behavior, body thermoregulation, blood acid-base balance, and milk fatty acid profile of lactating cows. Twenty-eight Holstein cows were individually fed a standard diet for 14 d and treatments control or BEO (a microencapsulated blend of pepper extract containing capsaicin and pure forms of carvacrol, cinnamaldehyde, and eugenol; 150 mg/kg of diet dry matter) for 56 d. Significance was declared at P ≤ 0.05 and trends at 0.05 < P ≤ 0.10. Dry matter intake (DMI) was reduced (19.5 vs. 20.1 kg/d) and milk yield was increased (30.1 vs. 30.8 kg/d) by BEO, inducing improved milk to DMI ratio (1.53 vs. 1.62). Milk fat concentration tended to be increased by BEO, but total solids yield did not differ. There was a trend for increased total tract non-neutral detergent fiber organic matter digestibility with BEO. The molar proportion of acetate in ruminal fluid was reduced (51.4 vs. 57.8%) and that of propionate was increased (26.1 vs. 31.3%) by BEO. Ruminal microbial yield and total protozoa count in ruminal fluid did not differ. Cows fed BEO ingested a greater proportion of the daily intake in the morning (30.6 vs. 36.6%) and tended to ingest a lower proportion at night, tended to have longer meals, and had fewer meals per day (11.9 vs. 13.7) and larger meal size (1.5 vs. 1.7 kg of dry matter per meal). Blood urea-N and glucose concentrations did not differ. The BEO increased jugular blood oxygenation. The sweating rate on a hot and dry day was increased (160 vs. 221 g/m2/h) by BEO. The mean rectal and skin temperatures and respiration rate did not differ, but the proportion of rectal temperature measurements ≥39.2 °C was reduced by BEO at 1400 h (17.8 vs. 28.5%) and 2000 h (23.2 vs. 34.8%). The BEO increased the secretion (g/d) of 18:2 trans-10, cis-12 and the concentration of 18:0 iso fatty acids in milk fat. When one sample of milk from BEO cows was offered with two samples of milk from control, 59% of regular consumers of milk (n = 63) identified the odd sample correctly. The gain in feed efficiency induced by BEO was associated with reduced acetate-to-propionate ratio in ruminal fluid, altered eating behavior, lower frequency of high rectal temperature, and increased blood oxygenation. Essential oils had positive effects on ruminal fermentation and systemic variables of dairy cows.

Abstract
Milk and its derivatives are important foods that contribute to daily nutrient requirements and improve consumers' health. This study evaluated the effects of supplementing the diet of lactating dairy cows with sunflower oil (SFO), selenium, and vitamin E on the milk's fatty acid profile and fat oxidative stability as well as the acceptability of the milk by consumers. For this purpose, 32 Jersey dairy cows were allocated to four treatment groups for 60 days, as follows: C (control diet); A (3.5 mg/kg DM (dry matter) organic selenium + 2000 IU vitamin E/cow per day); O (4% SFO DM); OA (equal doses of A and O treatments). The inclusion of SFO decreased the contents of 10:0, 10:1, 11:0, 12:0, 12:1, 14:0, and 9c-14:1 fatty acids as well as odd- and branched-chain fatty acids (13:0, iso 13:0, anteiso 13:0, 15:0, iso 15:0, and 17:0). There was also a tendency for 8:0 and 16:0 fatty acid concentrations to decrease when SFO was included in the cows´ diet. SFO decreased the concentration of 10:0 to 15:0 fatty acids in milk. The sum of the conjugated linoleic acids (CLAs), conjugated alpha-linolenic acid intermediates (CLnAs; 18:3 ω6 + 18:3 ω3), and 22:0 fatty acids in milk tended to increase, and there were significant increases in 18:0 and 9c11t-18:2 with SFO. In terms of the effects of SFO on the health-related lipid indices, the atherogenicity index tended to decrease and h/H tended to increase. When cows were supplemented with antioxidants, the concentration of 20:2 fatty acids decreased, the 6 + 7 + 8 + 9t-18:1, 16t-18:1, 20:0, 22:2, and 24:0 fatty acid concentrations increased, and there was a trend for the 22:1 ω9 fatty acid concentration to increase with antioxidants plus oil. There was a tendency for ω6 fatty acids and ω6/ω3 to increase with milk treated with antioxidants plus oil. The oxidative stability of milk was not influenced by the presence of SFO or antioxidants in the diet of dairy cows. Consumers desired the color and mouthfeel of the milk that was treated with SFO. Cows fed with 4% sunflower oil produced milk with an improved fatty acid profile for human nutrition, containing a higher CLA content and an improved ratio of hypocholesterolemic and hypercholesterolemic fatty acids, without increasing the milk's susceptibility to oxidation. The milk was also rated as being more acceptable by consumers.

Abstract
Milk and dairy products are relevant components of daily diet and are part of dietary recommendation in many countries due to their content of key nutrients. However, the relatively high content of saturated fat of the milk and its extensive usage for every age group raises concerns about its potential negative health effects. Therefore, in the last years, several researchers dedicated their attention to milk production and quality. Milk fatty acids profile depend on cow feeding and in particular on the type of forage and concentrate and forage/concentrate ratio. It was demonstrated that feeding dairy cows with a 70/30 forage/concentrate ratio yields milk with a low ω6:ω3 ratio and high CLA levels. In this work, we demonstrated that the supplementation of rats diet with this high forage milk (HFM) results, in the skeletal muscle of these animals, in a reduced lipid content and inflammation levels, and an improved mitochondrial lipid oxidation, and redox status through modulation of AMPK activity.

Abstract
The purpose of this study was to evaluate the effects of two isoproteic total mixed rations containing either red clover (Trifolium pratense L.; RC diet) or lucerne (Medicago sativa L.; LU diet) silage as the major forage source on milk yield, milk composition, and milk fatty acid (FA) profile in dairy ewes. Sixteen dairy ewes were housed individually to receive the drawn diet (eight ewes eating each diet) and milked twice a day (0700 and 1500). Total dry matter intake, milk yield, milk composition, and nitrogen use efficiency were unaffected by treatments. The n-6/n-3 FA ratio tended to decrease, whereas the total polyunsaturated fatty acids (PUFAs) and PUFAs/saturated fatty acids ratio increased in the milk fat of ewes fed the RC diet compared with ewes fed the LU diet. The presence of α-linolenic (C18:3n-3) and linoleic (C18:2n-6) acids in the milk fat was 22% higher in ewes fed the RC diet than in those fed the LU diet. Compared with the LU diet, the RC diet had no effect on milk yield and composition, but improved the milk FA profile in dairy ewes due to an increased proportion of PUFAs (in particular C18:3n-3 and, to a lesser extent, C18:2n-6) and a decreased n-6/n-3 FA ratio.

Abstract
This work aims to characterize Thymus capitatus essential oil and to investigate its preservative effects on raw milk quality alone or combined to pasteurization heat treatment. To study its preservative effect, 1 mg l-1 of T. capitatus essential oil, characterized by GC-MS, was added to pasteurized or raw milk. The evaluation of milk quality was made by consulting samples total acidities, peroxide values and their total microbial counts, as compared to control milks. Assays were made immediately and after every 48 h of incubation at room temperature throughout 6 days. Results showed that the incorporation of T. capitatus EO to pasteurized milk was the most efficient treatment that inhibited milk deterioration. Combining pasteurization to EO incorporation into raw milk inhibited completely the contaminant bacterial growth to the second day of incubation. Moreover, until the fourth day, no statistical differences have been recorded on the total acidity of incorporated and pasteurized milk samples, while raw milk acidity exceeded 55 g of lactic acid equivalent l-1. Considering milk fat oxidation, adding T. capitatus EO to pasteurized milk has significantly retarded milk peroxide production to day 4. In conclusion, Thymus capitatus essential oil, combined to pasteurization, presents an interesting potency to act as milk stabilizer.

Abstract
Plant extracts have been proposed as substitutes for chemical feed additives due to their potential as rumen fermentation modifiers and because of their antimicrobial and antioxidant activities, possibly reducing methane emissions. This study aimed to evaluate the use of oregano (OR), green tea extracts (GT), and their association as feed additives on the performance and methane emissions from dairy between 28 and 87 d of lactation. Thirty-two lactating dairy cows, blocked into 2 genetic groups: 16 Holstein cows and 16 crossbred Holstein-Gir, with 522.6 ± 58.3 kg of body weight, 57.2 ± 20.9 d in lactation, producing 27.5 ± 5.0 kg/cow of milk and with 3.1 ± 1.8 lactations were evaluated (means ± standard error of the means). Cows were allocated into 4 treatments: control (CON), without plant extracts in the diet; oregano extract (OR), with the addition of 0.056% of oregano extract in the dry matter (DM) of the diet; green tea (GT), with the addition of 0.028% of green tea extract in the DM of the diet; and mixture, with the addition of 0.056% oregano extract and 0.028% green tea extract in the DM of the diet. The forage-to-concentrate ratio was 60:40. Forage was composed of corn silage (94%) and Tifton hay (6%); concentrate was based on ground corn and soybean meal. Plant extracts were supplied as powder, which was previously added and homogenized into 1 kg of concentrate in natural matter, top-dressed onto the total mixed diet. No treatment by day interaction was observed for any of the evaluated variables, but some block by treatment interactions were significant. In Holstein cows, the mixture treatment decreased gross energy and tended to decrease the total-tract apparent digestibility coefficient for crude protein and total digestible nutrients when compared with OR. During the gas measurement period, GT and OR increased the digestible fraction of the ingested DM and decreased CH4 expressed in grams per kilogram of digestible DMI compared with CON. The use of extracts did not change rumen pH, total volatile fatty acid concentration, milk yield, or most milk traits. Compared with CON, oregano addition decreased fat concentration in milk. The use of plant extracts altered some milk fatty acids but did not change milk fatty acids grouped according to chain length (short or long), saturation (unsaturated or saturated), total conjugated linoleic acids, and n-3 and n-6 contents. Green tea and oregano fed separately reduced gas emission in cows during the first third of lactation and have potential to be used as feed additives for dairy cows.

Abstract
Bison meat is prone to rapid discoloration under traditional aerobic retail packaging conditions. The aim of this study was to determine if the color stability of bison steaks and burger patties could be improved through packaging meat with a vacuum-sealed film containing embedded sodium nitrite. Bison bulls (n = 40) were slaughtered and the longissimus lumborum (LL) and rhomboideus (RH) were removed. Following a postmortem aging period of 6, 13, or 20 d steaks were obtained from the LL. RH muscles aged 6 d were ground (85:15 lean to fat) and formed into 140 g patties. One steak and two burger patties from each carcass side were placed into either a polystyrene tray overwrapped with oxygen permeable polyvinyl chloride film (CONT) or a polyethylene tray vacuum sealed with film coated in sodium nitrite (113 mg × m–2; NIT); meat was placed under simulated retail conditions for 4 d. A 3-way interaction was observed between packaging type, whole muscle aging and time in retail display for objective (L*, Chroma, and Hue) and subjective (lean color score and proportion of surface discoloration) color measures from steaks (P < 0.0001). The CONT packaged meat showed an increased area of discoloration and in metmyoglobin after 4 d in retail display (P < 0.0001); NIT meats did not show a higher area of discoloration or metmyoglobin after retail display. Additionally, NIT packaged steaks and burger patties lightened (higher L*) and became redder over the course of the retail display period. Thiobarbituric acid reactive substances (products of lipid peroxidation) did not increase in NIT packaged burger patties after 4 d under retail conditions, however, there was a significant increase observed for CONT packaged burger patties (P < 0.0001). NIT packaging appears to effectively improve the color stability of bison meat under retail conditions, making this packaging strategy well suited to address the issue of rapid discoloration.

Abstract
The aim of this research was to evaluate the effect of grape probiotic fermented beverages made of goat milk, with or without added grape pomace on gut microbiota in a Simulator of Human Intestinal Microbial Ecosystem (SHIME®). SHIME® model was used to investigate to assess changes in microbial composition and fermentation metabolites (short- and branched-chain fatty acids and ammonium), as well as under the antioxidant capacity. The results demonstrated that the beverages formulated, with or without grape pomace extract, exhibited high dietary fiber, oleic acid, phenolic compounds content and antioxidant activity. Both beverages also kept L. rhamnosus and S. thermophilus viable during their passage through the intestinal tract and had a positive effect on gut microbiota metabolism, increasing the antioxidant capacity and the production of short-chain fatty acids, and decreasing the ammonium concentration. Therefore, the multifunctional beverages formulated in this study can offer a new perspective for the production of foods with positive potential effects on human health.

Abstract
In the present study, we determined the effects of maternal dietary fat and the type of fat on plasma fatty acids and the expression of placental fatty acid transporter genes. In Experiment 1, Holstein cows in the last 35 days of gestation received diets containing sunflower seed (n = 8; high in linoleic acid (LA)), canola seed (n = 7; high in oleic acid (OLA)) or no oilseed (n = 7; control). Fatty acids were quantified in dam and neonate plasma at calving. In Experiment 2, placental cotyledons were collected (LA: n = 4; OLA: n = 4; control: n = 5) to quantify gene expression. Maternal long-chain polyunsaturated fatty acids, neonatal total n-3 fatty acids and eicosapentaenoic acid (EPA) declined, whereas docosahexaenoic acid (DHA) and total fat tended to decline following fat supplementation prepartum. Feeding of LA versus OLA prepartum tended to increase peroxisome proliferator-activated receptor α (PPARA) expression, whereas peroxisome proliferator-activated receptor δ (PPARD) and peroxisome proliferator-activated receptor γ (PPARG) expression tended to be higher in OLA- than LA-fed cows. Expression of fatty acid transporter protein 4 (FATP4) and fatty acid translocase (FAT/CD36) expression was lower in placental tissue of cows fed fat compared with control cows. Reduced total n-3 fatty acids, EPA and DHA in neonates born of dams fed fat prepartum is likely due to changes in PPARs and reduced expression of placental FATP4 and FAT/CD36.

Abstract
The objective of the present article was to summarise the effects of five common dietary fatty acids (C16:0, C18:0, C18:1, C18:2 and C18:3) on the major milk fat groups (<C16, C16 and C18). Forty published papers were reviewed to evaluate the effect of adding free fat or oil supplements rich in C16 and C18 fatty acids on the response of milk fat secretion and composition. From those 40 studies, 21 were used to investigate the effect of total dietary concentration of C16:0, C18:0, C18:1, C18:2 and C18:3 on milk secretion or concentrations of milk <C16, C16 and C18 fatty acid groups. The results indicated that C16 supplementation increased total milk fatty acids, mainly by increasing milk C16 yield, without affecting milk <C16 and C18 yield. Supplements rich in unsaturated fatty acid decreased total milk fatty acid by inhibiting secretion of milk fatty acids shorter than C18, with linoleic acid being the most inhibitory. Mixtures of feed fatty acid (C16:0 + C18:0 and C16:0 + C18:1) did not significantly affect total milk fatty acid yield. According to regression of milk C16 yield on dietary fatty acid, endogenous C16 contributes ~80% of total milk C16, but this proportion varies with the level and type of dietary fatty acid fed. Milk mid-infrared analysis can be used to routinely measure the presence of milk <C16 fatty acid, the concentration of which provides a good indicator of inhibition of milk fatty acid secretion. In contrast, measurement of total milk fat content is less effective as a diagnostic tool due to the masking effect of the exogenous supply of C16 and C18 dietary fatty acids.

Abstract
The objective of our study was to investigate the effects of sources of calcium salts of fatty acids (FA) on production, nutrient digestibility, energy balance, and carryover effects of early lactation grazing dairy cows. Treatment diets were offered from 3 to 16 wk postpartum (the treatment period), in which all cows grazed elephantgrass (Pennisetum purpureum 'Cameroon') and treatments were added to a concentrate supplement. The treatments were (1) control (concentrate without supplemental fat); (2) concentrate with calcium salts of soybean FA (CSSO); and (3) concentrate with calcium salts of palm FA (CSPO). From 17 to 42 wk postpartum (the carryover period), all cows received a common diet fed as a total mixed ration. During the treatment period, CSPO increased milk yield, milk fat yield, 3.5% fat-corrected milk, energy-corrected milk, and cumulative milk yield compared with control and CSSO. Treatment CSSO increased the yield of milk but did not affect 3.5% fat-corrected milk or energy-corrected compared with control. Also, CSSO decreased milk fat yield, dry matter intake, neutral detergent fiber digestibility, and body weight and body condition loss. Compared with control, both CSSO and CSPO increased feed efficiency (3.5% fat-corrected milk:dry matter intake), and CSPO increased feed efficiency compared with CSSO. When considering energy partitioning (as % energy intake), CSPO increased energy partitioning toward milk and increased energy mobilized from body reserves compared with control and CSSO. Furthermore, CSSO tended to reduce the mobilization of energy from body reserves compared with control. In the carryover period, no differences in milk composition were observed among treatments. A treatment by time interaction was observed during the carryover period for milk yield because cows on CSPO maintained higher production compared with control and CSSO cows until 30 wk postpartum; CSSO had a lower carryover effect sustaining higher milk yield compared with control until 25 wk postpartum. In conclusion, supplementation with CSPO was an effective strategy to increase energy intake and yields of milk and milk solids and it had a greater carryover effect. Supplementation with CSSO resulted in lower mobilization of reserves and less variation in body weight and body condition throughout lactation.

Abstract
The objective of this study was to examine the effects of Tithonia diversifolia as a supplementary forage on dairy cow performance and methane production. Nine lactating Holstein × Zebu dairy cows (519 ± 53.3 kg of body weight and 66 ± 13.3 d in milk) were paired by milk yield (21.3 ± 2.34 kg/d) and body weight and randomly assigned to three dietary treatments in a Latin square design with 21-d experimental periods (14 d for diet adaptation and 7 d for measurements and sample collection). The dietary treatments included the control diet consisting of fresh sugar cane plus concentrate (44:56, % of diet DM), and two treatment diets containing different levels of fresh T. diversifolia (6.5 and 15.4%, DM basis) which partially replaced both sugarcane and concentrates. Methane production was measured using the sulphur hexafluoride (SF6) technique from d 16 to d 21 of each experimental period. Analysis of the gas samples was performed by gas chromatography. The inclusion of T. diversifolia at 15.4% DM had no effects on DM intake, milk production, nitrogen balance or methane production. There was no effect on the concentrations of total saturated fatty acids (SFA), monounsaturated fatty acids (MUFA), and polyunsaturated fatty acids (PUFA) in milk fat (P ≥ 0.28), though individual milk fatty acids were affected. Serum concentrations of glucose, urea nitrogen (BUN), triglycerides, β-hydroxybutyrate (BHBA), and cholesterol were unaffected by the dietary treatments (P ≥ 0.13). There was a time (2 and 6 h post-feeding) and dietary treatment effect (P < 0.01) on the acetate to propionate ratio in the rumen. A denaturing gradient gel electrophoresis analysis of the archaeal community showed distinct clustering of the archaea populations for control and treatment diets. Taken together, our results indicate the potential of T. diversifolia as a supplementary forage for dairy cattle in the tropics.

Abstract
The main objectives of this study were to determine the influence of diets enriched in α-linolenic, linoleic or oleic acid on the development and transcriptomic profile of embryos collected from dairy cattle. Non-lactating Holstein cows received one of the three diets supplemented with 8% rolled oilseeds: flax (FLX, n = 8), sunflower (SUN, n = 7) or canola (CAN, n = 8). After a minimum 35-day diet adaptation, cows were superovulated, artificially inseminated and ova/embryos recovered non-surgically after 7.5 days. Cows fed FLX had less degenerated embryos and more viable embryos than those fed CAN or SUN. In total, 175 genes were differentially expressed in blastocysts from cows fed FLX than in cows fed CAN or SUN. These differentially expressed genes were mainly involved in cellular growth and proliferation, cellular development, and cell survival and viability. In conclusion, dietary n-3 polyunsaturated fatty acids reduced early embryonic degeneration possibly through improving embryonic cell survival and viability.

Abstract
The objective of this study is to evaluate the effect of either a solution of Thymus capitatus essential oil or its nanoemulsion on the quality of milk contaminated by bacteria. After 24h of S. aureus inoculation, bacterial growth reached 202×10(3)CFU/ml in the presence of the essential oil while it was limited to 132×10(3)CFU/ml when treated with nanoemulsion. The reduction of antioxidant capacity of milk treated with essential oil was higher when treated with nanoemulsion. Moreover, free essential oil was more efficient in protecting proteins from degradation than the nanoemulsion. For instance, after 24h of E. hirae contamination, 26% of the total proteins were consumed in the presence of nano-encapsulated essential oil, while only 14% of the initial content was consumed when free essential oil was added. Concerning milk acidity increase and the inhibition of peroxide production, no statistical differences have been recorded between the use of free essential oil or its nano-emulsion. In conclusion, bulk or nano-encapsulated T. capitatus essential oil preserve milk quality and can extend its shelf life.

Abstract
A survey of commercially available lamb meat was performed in northern Spain in order to evaluate their fatty acid (FA) composition with emphasis on trans fatty acid (TFA) and conjugated linoleic acid (CLA) isomers. Samples were collected in spring (n=24) and winter (n=24) of 2013, and were obtained in about equal numbers from grocery stores and butcher-shops. Subcutaneous fat, known to be a sensitive indicator of TFA content in ruminants, was analyzed by GC-FID. In general, very few differences were observed between collection periods and type of stores because of the high variability within the groups that was believed to be associated with differences in genetics and feeding strategies. However, the 10t/11t ratio of all samples showed two clearly identifiable groups irrespective of the source: 1) when 10t/11t was >1, 10t-shifted samples; 2) when 10t/11t was ≤1, non-shifted samples where 11t-18:1 was the predominant isomer. These two groups were clearly identified and associated with distinct FAs using principal component analysis.

Abstract
Vaccenic acid (VA), the predominant ruminant-derived trans fat in the food chain, ameliorates hyperlipidemia, yet mechanisms remain elusive. We investigated whether VA could influence tissue endocannabinoids (ECs) by altering the availability of their biosynthetic precursor, arachidonic acid (AA), in membrane phospholipids (PLs). JCR:LA-cp rats were assigned to a control diet with or without VA (1% w/w), cis-9, trans-11 conjugated linoleic acid (CLA) (1% w/w) or VA+CLA (1% + 0.5% w/w) for 8 weeks. VA reduced the EC, 2-arachidonoylglycerol (2-AG), in the liver and visceral adipose tissue (VAT) relative to control diet (P < 0.001), but did not change AA in tissue PLs. There was no additive effect of combining VA+CLA on 2-AG relative to VA alone (P > 0.05). Interestingly, VA increased jejunal concentrations of anandamide and those of the noncannabinoid signaling molecules, oleoylethanolamide and palmitoylethanolamide, relative to control diet (P < 0.05). This was consistent with a lower jejunal protein abundance (but not activity) of their degrading enzyme, fatty acid amide hydrolase, as well as the mRNA expression of TNFα and interleukin 1β (P < 0.05). The ability of VA to reduce 2-AG in the liver and VAT provides a potential mechanistic explanation to alleviate ectopic lipid accumulation. The opposing regulation of ECs and other noncannabinoid lipid signaling molecules by VA suggests an activation of benefit via the EC system in the intestine.

Abstract
BACKGROUND Evidence from in vitro and animal studies indicates that conjugated linoleic acid (CLA) possesses anti-diabetic properties, which appear to be attributed to cis-9, trans-11 CLA, the major CLA isomer in ruminant fat. However, there is a shortage of studies addressing CLA from natural source. The present study aimed to evaluate the effects of butter naturally enriched in cis-9, trans-11 CLA on parameters related to glucose tolerance, insulin sensitivity and dyslipidemia in rats. METHODS Forty male Wistar rats were randomly assigned to the following dietary treatments (n=10/group), for 60 days: 1) Normal fat-Soybean oil (NF-So): diet containing 4.0% soybean oil (SO); 2) High Fat-Control Butter (HF-Cb): diet containing 21.7% control butter and 2.3% SO; 3) High Fat-CLA enriched Butter (HF-CLAb): diet containing 21.7% cis-9, trans-11 CLA-enriched butter and 2.3% SO; and 4) High fat-Soybean oil (HF-So): diet containing 24.0% SO. HF-Cb and HF-CLAb diets contained 0.075% and 0.235% of cis-9, trans-11 CLA, respectively. RESULTS HF-CLAb-fed rats had lower serum insulin levels at fasting than those fed with the HF-Cb diet, while the PPARγ protein levels in adipose tissue was increased in HF-CLAb-fed rats compared to HF-Cb-fed rats. Furthermore, R-QUICK was lower in HF-Cb than in NF-So group, while no differences in R-QUICK were observed among NF-So, HF-CLAb and HF-So groups. Serum HDL cholesterol levels were higher in HF-CLAb-fed rats than in those fed NF-So, HF-Cb and HF-So diets, as well as higher in NF-So-fed rats than in HF-Cb and HF-So-fed rats. HF-CLAb, HF-Cb and HF-So diets reduced serum LDL cholesterol levels when compared to NF-So, whereas serum triacylglycerol levels were increased in HF-CLAb. CONCLUSION Feeding rats on a high-fat diet containing butter naturally enriched in cis-9, trans-11 CLA prevented hyperinsulinemia and increased HDL cholesterol, which could be associated with higher levels of cis-9, trans-11 CLA, vaccenic acid, oleic acid and lower levels of short and medium-chain saturated fatty acids from butter naturally modified compared to control butter. On the other hand CLA-enriched butter also increased serum triacylglycerol levels, which could be associated with concomitant increases in the content of trans-9 and trans-10 C18:1 isomers in the CLA-enriched butter.
