Abstract
The majority of poultry meat used to be sourced from intensively housed birds. However, consumer preference has since demanded poultry producers develop more sustainable farming systems. Although free-range farming is considered beneficial for animal welfare, it is not as easy to standardize as an intensive system, which makes the choice of bird genotype appear crucial for alternative systems. In this study, we aimed to evaluate the effect of conventional and free-range rearing systems on the immune status, stress parameters, intestinal morphology and mortality in commercial hybrids (Ross 308) and local poultry strains, Bionda Piemontese (BP), Robusta Maculata (RM), BP x Sasso (BPxS), and RM x Sasso (RMxS). RNA was extracted from the jejunum and spleen to assess the mRNA expression of IL-2, IL-6, IL-10, IL-18, IL-1β, inducible nitric oxide synthase (iNOS), toll-like receptor (TLR)-4, and interferon gamma (IFN-γ). The heterophil:lymphocyte (H/L) ratio and intestinal histomorphometric evaluation were also calculated. We found that compared to the conventional system, the rearing system significantly affected the jejunum expression of IL-10, iNOS, IL-2, and IL-6, where these genes were upregulated in free-range system. A significant interaction between the rearing system and the genotype was also shown. More specifically, local breeds showed a significantly higher expression (P < 0.001) of IL-6 in the free-range system compared to the same genotypes in the conventional system. Moreover, IL-6 is constantly upregulated in local breeds within the free-range system compared to Ross hybrids. We also found significantly increased H/L and mortality rates in the latter, compared to the local breeds in the free-range reared system. The jejunum morphology also demonstrated a significantly higher villus height in BP and BPxS compared to the Ross hybrids. Overall, the results of our study confirm that the intense selection for growth in broiler chickens may have reduced their ability to react to the environmental stimuli related to free-range systems, resulting in a lower adaptability to a free-range environment, thus making them inappropriate for any farming system other than the conventional one. On the contrary, local chicken breeds are able to adapt and survive in the free-range system of rearing, and represent a genetic resource especially when adaptability to free-range conditions is required.

Abstract
An extensive rearing system (ERS) for poultry requires an outdoor run, which enhances the foraging activity of chickens. Slow-growing (SG) strains are more adapted to ERS than fast-growing (FG); and generally, have higher levels of bioactive compounds in their meat. The aim of this paper was to assess the storage efficiency of n-3 and n-6 polyunsaturated fatty acids (PUFA), tocols and carotenes in the meat of seven commercial SG genotypes (SG1-7). One hundred SG chicks/strain of both sexes were included and their walking activity (High- or Low-W) was classified: SG1-4, HW comprised more than 10% of the time budget, and SG5-7, less than 10% (LW). Chickens were reared in pens (4 pens/strain) with indoor (0.10 m2/bird) and outdoor (4 m2/bird) areas, and they were fed the same diet ad libitum (starter feed for 1-21 d, grower feed from 22 d to slaughter at 81 d). The chickens were weighed weekly; feed consumption and grass intake were also estimated. At 81 days of age, 32 chickens/genotype were selected on the basis of the average weight (1:1, M:F) and slaughtered. The breast, thigh and drumstick meat were excised from 30 carcasses/genotype, sampled and stored at -20°C until analysis. Nutrients (e.g., n-3, n-6, carotenes and tocols) of feed, grass and meat were analyzed. The storage efficiency of nutrients was estimated as the ratio between the amount deposited in the body muscles (OUT) and the dietary intake (feed and grass, IN). The genotype affected chickens foraging behavior and the intake of nutrients. For SG1, SG2 and SG3, more than 50% of the intake of n-3 came from grass, whereas in the other genotypes, less than 20%. Accordingly, chickens that foraged more showed better meat nutritional profiles (less fat, more n-3 and antioxidants), which, in ERS, was ascribed to grass ingestion. However, the storage efficiency of nutrients into meat was inversely correlated with the grass intake: strains with higher grass intake (SG1, SG2, and SG3) had lower storage rates. Several hypotheses were proposed to explain these trends.

Abstract
The use of “omics” has become widespread across poultry production, from breeding to management to bird health to food safety and everywhere in between. While the conventional poultry industry has become more exposed to the power and utility of “omic” technologies, smaller poultry flock producers typically do not have this same level of experience. Because smaller, nonconventional poultry production is a growing portion of the overall poultry market, it is important that they also have educational access to these research tools and the resultant data. While small flock producers are dedicated and knowledgeable farmers, their knowledge of these newer technologies may be limited at best, and it is the task of academic researchers to communicate the importance of these “omic” tools and how the omic data can improve a variety of different aspects of their operations. This review discusses ways to effectively communicate complex microbiota and microbial genome sequence data to small flock producers and transforming this data into meaningful and applicable information that they can utilize to inform beneficial management decisions.

Abstract
The aim of the present study was to develop a multicriteria model for the comparison of three commercial poultry farms: organic with Ross 308 genotype (OR), organic with Naked Neck genotype (ONN) and a conventional system (C), which represents the most common commercial farming system. A model based on multicriteria decision analysis was developed, considering for the first time the One Welfare approach in an operational manner, including three dimensions: human, environmental and animal welfare. The three alternatives demonstrated different performances, according to the different dimensions considered. In particular, the two organic systems performed better for human welfare and animal welfare, with relevant differences due to the genetic strains used. Conventional rearing performed better for the environment index due to the method chosen. The multicriteria analysis showed that the organic system performed better overall than the conventional system. In particular, the use of an adapted Slow Growing (SG) strain positively affected the final rank, mainly by reducing welfare problems and producing good economic and social performance. The stability of the results was verified by performing a sensitivity analysis, specifically a weight stability analysis, which confirmed the strength of results.

Abstract
Alternative poultry production systems continue to expand as markets for organic and naturally produced poultry meat and egg products increase. However, these production systems represent challenges associated with variable environmental conditions and exposure to foodborne pathogens. Consequently, there is a need to introduce feed additives that can support bird health and performance. There are several candidate feed additives with potential applications in alternative poultry production systems. Prebiotic compounds selectively stimulate the growth of beneficial gastrointestinal microorganisms leading to improved health of the host and limiting the establishment of foodborne pathogens. The shift in the gastrointestinal microbiota and modulation of fermentation can inhibit the establishment of foodborne pathogens such as Campylobacter and Salmonella. Both current and potential applications of prebiotics in alternative poultry production systems will be discussed in this review. Different sources and types of prebiotics that could be developed for alternative poultry production will also be explored.

How the kinetic behavior of organic chickens affects productive performance and blood and meat oxidative status: a study of six poultry genotypes. Poult Sci 2021; 100:101297. Abstract
The aim of this study was to analyze the relationship between the kinetic behavior, carcass characteristics, oxidative status (blood and meat), and meat fatty acid profiles of 6 organically reared slower growing chicken genotypes (SrG). One hundred male chickens of 6 SrG were used: Ranger Classic (RC), Ranger Gold (RG), Rowan Ranger (RR), RedJA (RJ), CY Gen 5 JA87 (CY), and M22 × JA87 (M). Twenty chickens/genotype were selected to analyze behavior, while, 15 individuals were slaughtered and different traits were analyzed in the blood and drumstick meat. The variables were grouped into different principal components: kinetic activity (PC1, with explorative attitude as the highest score), productive performance (PC2, carcass and head/feet yields), blood (PC3, carbonyls, and TBARS) and meat (PC6, thiols, and TBARS) markers, technological traits (PC4, pH, and color), proximate meat composition (PCA5, moisture, lipids, protein, and ash), fatty acid profile, and nutritional indexes (PC7, IP, and PUFAn-3). Uni- and bivariate analyses showed a strong positive association between kinetic behaviors and blood and meat oxidation and a medium positive association with fatty acid profile and nutritional indexes, whereas a negative association was found between productive performance loads and the technological traits of meat. Generalized linear models showed that all PCs were influenced by genotype. In particular, CY and M resulted as less active genotypes; conversely, RR showed more kinetic activity, whereas RJ, RG, and RC exhibited intermediate levels of activity. Cluster analysis of kinetic behavior and blood or meat oxidative status highlighted 2 groups: nonwalking (NW: CY and M) and walking (W: RC, RG, RR, and RJ) animals. However, in the W group, another was visualized, constituted by genotypes with high kinetic activity resulting in the worst oxidative balance (Walking not trained-genotypes, Wnt: RR and RJ). The present results confirmed that the kinetic behavior of SrG genotypes is negatively correlated with productive performance. Furthermore, a significant association between kinetic behavior and blood (positively correlated) or meat (negatively correlated) oxidative status was noted. Such differences are mainly due to the intrinsic response of the genotypes used (i.e., training-walking capacity).

Abstract
Simple Summary The aim of this review paper was to retrace the research journey of the researchers of the Department of Agricultural, Food, and Environmental Science at the University of Perugia, Italy that lasted twenty years and draw updated guidelines regarding the best synergy between chicken type and environment in extensive rearing systems in order to optimize animal welfare, quality, and environmental impact, linked with economical sustainability. Abstract The demand for poultry meat, being cheaper than red meat, will drive worldwide production of this product. Accordingly, an increase in production up to 16% is expected in 2025, most of which will occur in developing countries. Most poultry meat production is realized with intensive production systems, and extensive rearing systems (ERS) of poultry (organic, free-range, and low-input) represent only a small portion of poultry production in the EU (about 5%). However, there is an increasing interest in such rearing systems to maintain the good image of product and environmental sustainability, improved animal welfare, and meat quality with an annual trend of growth of about 10%. The aims of this work were to summarize the activities and the viewpoint of the researchers of the Department of Agricultural, Food, and Environmental Science of the University of Perugia (Italy). One of the most important goals of the research unit was the challenge of identifying the best poultry genotypes for ERS, which are important not only for the food industry but also for the improvement of human nutrition. Only the definition of the best genotypes adapted to ERS through the measurement of a wide panel of traits—genetic, physiologic, and behavior—and not only relying on daily weight gain will allow us to achieve this goal.

Abstract
In alterative rearing systems, the use of outdoor space has a crucial role. It is well known that only some commercial poultry genotypes are suitable to be reared in these systems. It is necessary to find a balance between productive performance and adaptability. The aim of this study was to evaluate the productive performance, behavior, and welfare status of six poultry genotypes reared in an organic system. One hundred males/genotype (Hubbard RedJA (A), CY5XJA87 (CY), M22XJA87 (M), Ranger Classic (R1), Ranger Gold (R2), and Rowan Ranger (R3)) were reared from 1 to 81 days of age. The number of culled birds was recorded daily, whereas live weight and feed consumption were recorded weekly. Behavior evaluation was undertaken through a computerized system one week before slaughtering; the breast yield and muscle/bone ratio of the drumstick was also evaluated in refrigerated carcasses. The results showed that A and R3 had good adaptability, showing active behaviors and satisfactory productive performance 3083.6 g and 3022.1 g, respectively. Although CY and M achieved the best productive performance, they did not appear adapted to the organic system due to a higher frequency of static behaviors (rest and roost), mortality, footpad dermatitis, breast blisters, and poor feather condition.

Abstract
Simple Summary One-day-old laying cockerels are killed after hatching because they do not reach the growth rate of broiler chickens, and their fattening would be economically disadvantageous. A possible variant of the use of these cockerels could be organic or free-range farming, where it is desirable that the animals are fattened for a longer period of time, are more physically active, and graze pasture vegetation. Another possibility is dual-purpose genotype breeding, where hens are used for egg production and cockerels are fattened for meat. In the present study, three genotypes of dual-purpose cockerels Dominant were compared. All three genotypes showed the ability to graze with resulting improvements in meat quality. The Dominant 102 cockerels have the greatest prerequisites for use in extensive fattening, mainly due to higher performance, willingness to graze and vitamin E content, which protects the fat from becoming rancid. Abstract The culling of layer cockerels due to economic inefficiency is an ethical problem. Organic or free-range fattening of these cockerels or dual-purpose genotypes breeding is a possible solution to this problem. The aim of the study was to assess the differences in performance and meat quality characteristics in dual-purpose cockerels Dominant of three genotypes (Dominant Sussex D 104, Dominant Brown D 102 and Dominant Tinted D 723, 100 cockerels per genotype) with access to pasture. The cockerels were housed in mobile boxes on the pasture herbage from the 50th to 77th day of age (stocking density: 0.108 m2/bird). The highest body weight on the 77th day of age (p < 0.001) and the nonsignificantly lowest feed conversion was achieved by Dominant Brown D 102 cockerels (1842 g and 2.79, respectively). Non-significantly higher pasture herbage intake on the 70th day of age was recorded in genotype Dominant Brown D 102 (7.41 g dry matter (DM)/bird/day) and Dominant Tinted D 723 (7.52 g DM/bird/day). The pasture herbage contained 56.9 mg/kg DM α-tocopherol, 170.3 mg/kg DM zeaxanthin and 175.0 mg/kg DM lutein and had a favourable n6/n3 ratio (0.26). The boiled meat of cockerels Dominant Tinted D723 showed the highest tenderness based on both the sensory evaluation (p = 0.022) and the value of shear force (p = 0.049). This corresponds with a higher (p < 0.001) cross-sectional area and muscle fibre diameter in these chickens. The highest content of n3 fatty acids (eicosapentaenoic, clupanodonic and docosahexaenoic acids) in breast meat were found in Dominant Sussex D104 chickens (p < 0.001). In contrast, a significantly higher α-tocopherol content (p < 0.001) and higher oxidative stability (p = 0.012) were found in Dominant Brown D102 (4.52 mg/kg and 0.282 mg/kg) and Dominant Tinted D 723 chickens (4.64 mg/kg and 0.273 mg/kg) in comparison with the Dominant Sussex D104 genotype (3.44 mg/kg and 0.313 mg/kg). The values of the atherogenic and thrombogenic indexes were the lowest (p < 0.001) in meat from Dominant Brown D102 chickens. Moreover, a lower cholesterol content (p < 0.001) was recorded from the genotypes Dominant Brown D102 (396 mg/kg) and Dominant Tinted D723 (306 mg/kg) chickens, contrary to the Dominant Sussex D104 cockerels (441 mg/kg). It can be concluded that cockerels Dominant Brown D102 are a suitable genotype for free-range rearing due to higher performance and higher pasture herbage intake, which positively influences meat quality, whereas the meat of Dominant Sussex D104 cockerels shows higher amounts of n3 fatty acids and lower n6/n3 ratios.

Abstract
Simple Summary Poultry meat production is now based on fast-growing strains, with consequences for animal health and welfare. There is also an increasing demand for products from extensive rearing systems; there are, however, several criticisms including the difficulty of slaughtering chickens from a logistic, legislative and economic point of view. A possible solution could be represented by the use a Mobile Poultry Processing Unit (MPPU), which directly reaches the poultry farms. The aim of this review is to analyse the requisites and economic efficiency of a MPPU prototype in Italy; further, the related animal welfare aspects and the qualitative and sanitary implications are discussed. Abstract Nowadays there is an increasing demand for poultry products from alternative rearing systems. These systems, commonly named pastured poultry production (PPP), are more expensive than intensive rearing system but sustain biodiversity, local economies and farm multi-functionality besides providing meat to which consumers attribute high ethical value and quality. PPP generally uses large outdoor runs, small number of animals and requires chickens adapted to natural environment. One of the most relevant obstacles to further development of PPP systems is related to the slaughtering of animals economically and at the same time complying with the sanitary regulations to maintain food safety standards. A possible solution could be represented by a Mobile Poultry Processing Unit (MPPU), which directly reaches the poultry farms. MPPU can consider a good compromise for the niche production providing an opportunity to small farmers to exploit the full potential of their production system. The aim of this review is to analyse the essential requisites and MPPU economic viability in an Italian system. Qualitative, societal aspects are discussed together with bird welfare and hygiene implications. The case study indicates the viability of MPPUs but notes that up scaling to medium sized operations would not be permissible under current EU regulations.

Simple Summary Free-range chicken meat consumption has increased. However, little is known about how meat chickens use the outdoor range. Understanding ranging behaviour could help improve management and shed and range design to ensure optimal ranging opportunities. We tracked 1200 individual broiler chickens in four mixed sex flocks on one commercial farm across two seasons. More chickens accessed the range in summer than winter. Chickens that accessed the range in winter did so less frequently and for a shorter period of time daily than chickens ranging in summer. The number of chickens ranging and the frequency and duration of range visits increased over the first two weeks of range access and stabilised thereafter. More chickens entered and exited the range through particular doors in the shed. More chickens ranged in the morning and evening compared to the middle of the day. Ranging behaviour decreased with increased rainfall and shed dew point. This study provides knowledge regarding ranging behaviour in commercial conditions that may guide improvements on farm to provide chickens with optimal ranging opportunities. Abstract Little is known about the ranging behaviour of chickens. Understanding ranging behaviour is required to improve management and shed and range design to ensure optimal ranging opportunities. Using Radio Frequency Identification technology, we tracked 300 individual broiler chickens in each of four mixed sex ROSS 308 flocks on one commercial farm across two seasons. Ranging behaviour was tracked from the first day of range access (21 days of age) until 35 days of age in winter and 44 days of age in summer. Range use was higher than previously reported from scan sampling studies. More chickens accessed the range in summer (81%) than winter (32%; p < 0.05). On average, daily frequency and duration of range use was greater in summer flocks (4.4 ± 0.1 visits for a total of 26.3 ± 0.8 min/day) than winter flocks (3.2 ± 0.2 visits for a total of 7.9 ± 1.0 min/day). Seasonal differences were only marginally explained by weather conditions and may reflect the reduction in range exposure between seasons (number of days, hours per day, and time of day). Specific times of the day (p < 0.01) and pop-holes were favoured (p < 0.05). We provide evidence of relationships between ranging and external factors that may explain ranging preferences.

Abstract
<p>The aim of this trial was to study the effect of an alternative housing system on the oxidative status and meat quality of fattening rabbits. From May to June 2014, 60 rabbits of 35 d of age were reared in Mobile Arks (MA) placed on alfalfa grass and frequently moved for 40 d. To assess the health status of animals, blood samples were collected at slaughter in MA and in conventional cages (C). Meat quality parameters were also evaluated. Concerning the <em>in vivo </em>oxidative status, ark-reared rabbits showed higher thiobarbituric reactive substances values than C ones, probably for the higher motor activity due to the larger living area. The lipid percentage of <em>Longissimus lumborum </em>muscle was lower (1.22 <em>vs. </em>1.48%) in the ark group. There were no significant differences in the muscle pH, colour, water holding capacity and cooking loss. Given the higher intake of grass, rich in vitamins, carotenes, polyphenols and polyunsaturated fatty acids, the antioxidant content of meat was higher in ark-reared rabbits (7.42 <em>vs. </em>6.82 µg/g of retinol, 719.2 <em>vs. </em>683.3 ng/g of α-tocopherol, respectively). Even the fatty acid profile of MA rabbits reflected the higher intake of essential fatty acids from grass and the n-3 long chain polyunsaturated fatty acids (arachidonic acid, eicosapentaenoic acid and docosahexaenoic acid) were almost doubled. Our study suggested that the fattening of rabbits in ark system could be a possible alternative system to improve the meat quality of rabbits.</p><p><strong><br /></strong></p>

Abstract
The aim of this study was to analyze the transfer of bioactive compounds from the pasture to the body and meat of organic free-range chickens and to verify the effect of these compounds on the oxidative processes of the meat. Starting at 21 d of age, 100 male naked-neck birds were divided into two homogeneous groups: an indoor group (0.12 m(2)/bird) and an outdoor group (0.12 m(2)/bird indoor and 10 m(2)/bird of forage paddock). At slaughter (81 d of age), blood samples were collected, and the carcasses were stored for 24 h at 4°C (20 birds/group). The grass samples had higher values of carotenoids, tocopherols, and flavonoids respect to standard feed (based on dry matter comparison). The polyunsaturated fatty acid ( PUFA: ) content was also greater in grass, especially the n-3 series (so named because its first double bond occurs after the third carbon atom counting from the methyl at the end of the molecule). The antioxidant profile of the grass improved the antioxidant status of the crop and gizzard contents in the outdoor chickens. The higher antioxidant intake resulted in a higher plasma concentration of antioxidants in outdoor birds; thiobarbituric acid reactive substances ( TBARS: ) and the antioxidant capacity of the plasma were also better in the outdoor than the indoor group. The meat of the outdoor birds had higher levels of antioxidants, mainly due to the higher amount of tocopherols and tocotrienols. Despite the higher antioxidant protection in the drumstick of the outdoor group, the TBARs value was greater, probably due to the kinetic activity of birds, the higher percentage of PUFAs, and the peroxidability index. In conclusion, grazing improved the nutritional value of the meat (PUFA n-3 and the ratio between n-6 and n-3 PUFA) with a minor negative effect on the oxidative stability. Suitable strategies to reduce such negative effects (e.g., reduction of kinetic activity in the last days of rearing) should be studied.

Abstract
In Western countries the dietary guidance emphasizes the need to decrease the intake of saturated fatty acids and to replace them with polyunsaturated fatty acids (PUFA), particularly long chain n-3 PUFA (LC-PUFA). The production of poultry meat having a lower fat content and healthier fatty acid (FA) profile is a hot topic for the poultry industry, and the possibility to identify genotypes able to produce meat with a higher LC-PUFA content deserves attention. The aims of the present study were to evidence in chicken (i) a genotype-related different expression of the desaturating enzymes delta-6 (Δ6, EC 1.14.99.25), delta-5 (Δ5, EC 1.14.19.) and delta-9 (Δ9, EC 1.14.19.1); (ii) the impact of the hypothesized different expression on the meat FA composition; (iii) the distribution of desaturase products in the different lipid classes. Slow (SG), medium (MG) and fast (FG) growing chickens fed the same diet were evaluated either for the relative expression of FADS1, FADS2 and SCD1 genes in liver (by q-PCR), or for the FA composition of breast meat. MG and particularly SG birds showed a greater expression of FADS2 and FADS1 genes, a higher Δ6 and Δ5 activity (estimated using desaturase indices), and consequently a higher LC-PUFA content in the breast meat than FG birds. The relationship between genotype and desaturating ability was demonstrated, with a significant impact on the PUFA content of breast meat. Due to the high consumption rate of avian meat, the identification of the best genotypes for meat production could represent an important goal not only for the food industry, but also for the improvement of human nutrition.

Abstract
The recent increase in free-range meat and egg production and consumption has led to extensive investigation in this area and has revealed that the level of animal performance achieved in such systems is low compared with that achieved in conventional production systems. In Australia, this difference has been attributed either to the absence of in-feed antibiotics or to range access, which may result in exposure to detrimental climatic conditions, predators, disease, welfare challenges and nutrient dilution. Moreover, although poultry in free-range systems have ready access to outside runs, not all birds utilise them optimally. Pasture consumption results in dilution of energy and protein intake and may cause impaction and dietary electrolyte imbalance. This paper provides an overview of these issues to provide a conceptual framework for further study in this area.

Abstract
BACKGROUND Breast meat from broilers produced in very different production systems may vary considerable in sensory profile, which may affect consumer interests. In this study the aim was to evaluate differences in the sensory profiles of breast meat from five broiler products: two conventional standard products (A and B) and three organic niche genotypes (I657, L40 and K8) reared in an apple orchard. RESULTS Thirteen out of 22 sensory attributes differed significantly between the products. The aroma attributes 'chicken', 'bouillon' and 'fat' scored highest and the 'iron/liver' aroma lowest for the niche products. The meat was more 'tender', 'short' and 'crumbly' and less 'hard' and 'stringy' in the standard products than in one or more of the niche products. Product 'I 657' was less 'juicy' than the rest. Products 'I 657' and 'L 40' were more 'cohesive' and tasted more 'sourish' and less of 'sweet/maize' than the standard products. The 'overall liking' score was significantly higher for the 'K 8' product than for the 'Standard A' and 'L 40' products. The 'overall liking' score was significantly correlated with the scores for aroma and taste of 'chicken', 'umami/bouillon', 'iron/liver' and 'fat' aroma. CONCLUSION The sensory profiles differed particularly between conventional standard broilers and organic niche broilers, although differences were also found between breeds. The present study indicates that aroma and taste attributes were more important for the assessors than meat 'tenderness' for the overall liking of broiler meat.
