Assessment of Welfare Problems in Broilers: Focus on Musculoskeletal Problems Associated with Their Rapid Growth

The growth of the broiler industry has been accompanied with concerns over the environmental and social impacts on intensive production systems, as well as the welfare of the animals themselves. As a result, since the 2000s, there has been growing interest in alternative production systems that improve animal welfare and sustainability. In this context, it is important to prioritize the welfare of broilers in commercial production systems and to use reliable welfare indicators to provide consumers with information about the welfare of the animals they consume. Resource-based measures (RBM) are based on assessing the resources available to the birds in terms of their housing, environment, and management practices, such as stocking density, litter quality, lighting and air quality, etc. Outcome-based measures (OBM), also known as animal-based measures, focus on assessing the actual welfare outcomes for the birds, such as footpad dermatitis, hock burn, contamination or damage to feathers, gait score, mortality, etc. These OBM-based measures are one of the more direct indicators of welfare and can help identify any welfare issues. The present review highlighted the factors that affect animal welfare indicators focused on OBMs which can be used in the commercial broiler farms.

miRNAs as Biomolecular Markers for Food Safety, Quality, and Traceability in Poultry Meat-A Preliminary Study

In this study, the expression and abundance of two candidate chicken (Gallus gallus; gga) microRNAs (miRNAs, miR), gga-miR-21-5p (miR-21) and gga-miR-126-5p (miR-126), have been analyzed in order to identify biomarkers for the traceability and quality of poultry meat. Two breeds of broiler chickens were tested: the most common Ross308 (fast-growing) and the high-quality Ranger Gold (slow-growing). A preliminary analysis of the two miRNAs expressions was conducted across various tissues (liver, lung, spleen, skeletal muscle, and kidney), and the three tissues (lung, spleen, and muscle) with a higher expression were chosen for further analysis. Using quantitative reverse transcription polymerase chain reaction (RT-qPCR), the expression of miRNAs in the three tissues of a total of thirteen animals was determined. The results indicate that miR-126 could be a promising biomarker for the lung tissue in the Ranger Gold (RG) breed (p < 0.01), thus suggesting a potential applicability for tracing hybrids. RG exhibits a significantly higher miR-126 expression in the lung tissue compared to the Ross308 broilers (R308), an indication of greater respiratory capacity and, consequently, a higher oxidative metabolism of the fast-growing hybrid. During sampling, two R308 broilers presented some anomalies, including airsacculitis, hepatic steatosis, and enlarged spleen. The expression of miR-126 and miR-21 was compared in healthy animals and in those presenting anomalies. Chickens with airsacculitis and hepatic steatosis showed an up-regulation of miR-21 and miR-126 in the most commercially valuable tissue, the skeletal muscle or breast (p < 0.05).

Water pollution from pharmaceutical use in livestock farming: Assessing differences between livestock types and production systems

Livestock production is a major source of pharmaceutical emissions to the environment. The current scientific discourse focuses on measuring and modeling emissions as well as assessing their risks. Although several studies corroborate the severity of pharmaceutical pollution resulting from livestock farming, differences in pollution between livestock types and production systems are largely unknown. In fact, there is no comprehensive analysis of factors influencing pharmaceutical use-the emission's source-in the diverse production systems. To address these knowledge gaps, we developed a framework to investigate pharmaceutical pollution from different livestock production systems and applied it in a first pilot assessment to compare pollution from organic and conventional cattle, pig, and chicken production systems on selected indicator substances, covering antibiotics, antiparasitics, hormones, and nonsteroidal anti-inflammatory drugs (NSAIDs). Given the lack of statistics, for this article we retrieved novel qualitative information about influential factors for pharmaceutical use and pollution from expert interviews and combined this with quantitative data on, among other factors, the environmental behavior of specific substances from the literature. Our analysis reveals that factors across a pharmaceutical's entire life cycle influence pollution. However, not all factors are livestock type or production-system dependent. The pilot assessment furthermore reveals that differences in pollution potential between conventional and organic production exist, but for antibiotics, NSAIDs, and partially for antiparasitics, some factors lead to greater pollution potential in conventional systems, and others in organic systems. For hormones, we identified a comparatively greater pollution potential from conventional systems. Among the indicator substances, the assessment over the entire pharmaceutical life cycle illustrates that flubendazole in broiler production has the greatest per unit impact. The framework and its application in the pilot assessment generated insights useful to identifying which substances, livestock types, production systems, or the combination thereof have great or little pollution potential, informing more sustainable agricultural management practices. Fast- and slower-growing broilers respond similarly to a reduction in stocking density with regard to gait, hock burn, skin lesions, cleanliness, and performance

There is an increasing trend toward broiler production systems with higher welfare requirements. Breed and stocking density are considered key factors for broiler welfare that are often specified as criteria for such higher welfare systems. However, it remains unknown how slower-growing broilers respond to a reduction in stocking density with regard to their welfare and performance, and whether this response differs from fast-growing broilers. Therefore, we compared fast- (F) and slower-growing broilers (S) housed at 4 different stocking densities (24, 30, 36, and 42 kg/m2, based on slaughter weight) and measured their welfare scores (i.e., gait, footpad dermatitis, hock burn, skin lesions and cleanliness), litter quality and performance. The experiment had a 2 × 4 factorial design with 4 replicates (pens) per treatment (32 pens in total). Thinning (15%) was done in a 50/50 male/female ratio at 38 (F) and 44 (S) d of age (estimated body weight of 2.2 kg). We hypothesized that breeds would respond differently to a reduction in stocking density. Contrary to our hypothesis, only one interaction between breed and stocking density was found on footpad dermatitis, indicating that fast- and slower-growing broilers generally showed similar responses to a reduction in stocking density. F broilers showed a steeper decline in the prevalence of footpad dermatitis with reducing stocking density compared to S broilers. Broilers housed at lower stocking densities (24 and/or 30 kg/m2) showed improved welfare measures, litter quality and performance compared to those housed at higher stocking densities (36 and/or 42 kg/m2). S broilers had better welfare scores (gait, footpad dermatitis and skin lesions), litter quality and lower performance compared to F broilers. In conclusion, reducing stocking density improved welfare of both F and S broilers, but more for F broilers in case of footpad dermatitis, and using S broilers improved welfare compared to F broilers. Reducing stocking density and using slower-growing broilers benefits broiler welfare, where combining both would further improve broiler welfare.

Welfare of broilers on farm

This Scientific Opinion considers the welfare of domestic fowl (Gallus gallus) related to the production of meat (broilers) and includes the keeping of day-old chicks, broiler breeders, and broiler chickens. Currently used husbandry systems in the EU are described. Overall, 19 highly relevant welfare consequences (WCs) were identified based on severity, duration and frequency of occurrence: 'bone lesions', 'cold stress', 'gastro-enteric disorders', 'group stress', 'handling stress', 'heat stress', 'isolation stress', 'inability to perform comfort behaviour', 'inability to perform exploratory or foraging behaviour', 'inability to avoid unwanted sexual behaviour', 'locomotory disorders', 'prolonged hunger', 'prolonged thirst', 'predation stress', 'restriction of movement', 'resting problems', 'sensory under- and overstimulation', 'soft tissue and integument damage' and 'umbilical disorders'. These WCs and their animal-based measures (ABMs) that can identify them are described in detail. A variety of hazards related to the different husbandry systems were identified as well as ABMs for assessing the different WCs. Measures to prevent or correct the hazards and/or mitigate each of the WCs are listed. Recommendations are provided on quantitative or qualitative criteria to answer specific questions on the welfare of broilers and related to genetic selection, temperature, feed and water restriction, use of cages, light, air quality and mutilations in breeders such as beak trimming, de-toeing and comb dubbing. In addition, minimal requirements (e.g. stocking density, group size, nests, provision of litter, perches and platforms, drinkers and feeders, of covered veranda and outdoor range) for an enclosure for keeping broiler chickens (fast-growing, slower-growing and broiler breeders) are recommended. Finally, 'total mortality', 'wounds', 'carcass condemnation' and 'footpad dermatitis' are proposed as indicators for monitoring at slaughter the welfare of broilers on-farm.

A comparison of online and live training of livestock farmers for an on-farm self-assessment of animal welfare

One approach to strengthening the involvement of farmers or stockpersons in the evaluation and improvement of animal welfare is the implementation of an on-farm self-assessment. A valid comparison of the results with reference values, between or within farms, requires that training of the farmers and reliability testing have taken place. We investigated two different training methods (online vs. live) with a total of 146 livestock farmers from farms with dairy cows and calves, beef cattle, sows and suckling piglets, weaners and fattening pigs, laying hens, broiler chickens, and turkeys from all over Germany. Online tests were conducted by assessing photos/videos of each indicator of the assessment scheme to estimate the inter-rater reliability (prevalence-adjusted and bias-adjusted kappa, PABAK). The farmers were requested to provide information on their professional background and rate their motivation to participate in the training and their subjective training success, meaning their confidence in assessing each indicator later on-farm. They evaluated the feasibility of the training and its impact on their views and attitudes. In general, farmers achieved at least substantial inter-rater reliability (PABAK ≥ 0.61) in 86.8% of all initial tests; 13.4% of the tests were repeated once or more times, resulting in a significant improvement of the agreement, with 90.9% of the tests reaching a PABAK ≥ 0.61. However, reliability was higher for indicators with a lower number of score levels. The subjective evaluation of training success was, on average, positive (score = 74.8 out of 100). No effects of the training method or the farmers’ professional background on the inter-rater reliability or the subjective training success were detected. Furthermore, for both methods, farmers moderately agreed that the training had sharpened their views on the animals, encouraged them to implement the assessment on their farm, and made it clear that self-assessment supports animal management. Although the reported costs and time investment for the online training were significantly lower, the effort required for both methods and the ease of integration into the workflow were ranked as similarly acceptable. Overall, both training methods appear feasible for the training of farmers/stockpersons on the assessment of animal-based indicators.

Health-Based Welfare Indicators and Fear Reaction of Slower Growing Broiler Compared to Faster Growing Broiler Housed in Free Range and Conventional Deep Litter Housing Systems

This study investigated the welfare of a slow-growing broiler with a commercially available fast-growing breed housed in a free-range and conventional deep litter housing system. There were four main groups (2 genotypes x 2 housing systems), and each main group consisted of 5 replicates. Ante-mortem and postmortem health-based welfare indicators wıth fear reactıons and distribution of severity of them in 200 male chicks (100 slow growing, 100 fast growing) were investigated. All welfare parameters investigated were found to be significantly different between both broiler genotypes. No significant differences were detected for all broiler welfare parameters between the two housing systems. There were significant genotype x housing system interactions for breast dirtiness and feather cover of the birds (P < 0.001). In conclusion, it can be said that slow-growing broilers express more health-based indicators of positive welfare, and they might be more suitable for free-range broiler meat production. Planning further studies especially in commercial conditions that take into account economic efficiency as well as animal welfare and growth performance would be very beneficial.

Effects of common litter types and their physicochemical properties on the welfare of broilers

Background and Aim:

In broiler production, the poor quality litter not only may lead to a deterioration of the welfare status but also negatively affect carcass quality, overall health and growth performance, which may result in economic losses. The effects of litter types on the welfare of broilers are known but the effects of their characteristics have been little studied. This study aimed to evaluate correlations between welfare parameters of broilers and physicochemical characteristics of five common litter types.

Materials and Methods:

Over 42 days, 600 (Cobb 700) male broiler chicks were placed within 30 pens (each 2 m²) at a density of 10 birds/m². The experiment included five treatments with six replicates per treatment. The following litter (or bedding) materials were examined: Standard quality straw, low-quality straw, wood shavings (WS), sawdust, and crop residues. Footpad condition, hock burns, and plumage cleanliness, as well as litter condition, were scored according to previously developed point scale systems. Litter quality was evaluated according to pH level, moisture, water-holding capacity, and ammonia content.

Results:

No significant differences were found among litter types in terms of pH, moisture content, or ammonia levels. WS had a significant positive effect on footpad health and plumage cleanliness. However, hock burn was not affected by different bedding types. The severity of pododermatitis was negatively correlated with litter type (r = −0.78; p < 0.001) and positively correlated with the litter scores (r = 0.67; p < 0.001). However, contact dermatitis observed (pododermatitis and hock burn) was not correlated with any of the physicochemical parameters we studied. Meanwhile, we observed a correlation between footpad lesions and hock burn (r = 0.45; p < 0.05), and between footpad lesions and plumage cleanliness (r = 0.59; p < 0.01).

Conclusion:

For all litter types examined, contact dermatitis was not correlated with any of the physicochemical components we studied. There were, however, significant correlations between litter type and footpad lesions, as well as between footpad dermatitis and hock burns.

Differences in Tibia Shape in Organically Reared Chicken Lines Measured by Means of Geometric Morphometrics

Simple Summary

Organic poultry production should use only genetic lines and animals resistant to disease and well adapted to live outdoor, according to principles, rules, and requirements of organic farming systems. When broiler’s walking performance is reduced animals are not suitable for outdoor rearing. There is a straightforward relationship between bone health and growth rate in broilers. Body and breast weight play an important role in leg disorders. During the last decades, genetic selection has led to high producing broilers over the time. Unfortunately, fast growth may negatively influence correct leg development, reducing walking performance, and raising welfare issues. Leg abnormalities could represent a criterion for the choice of genetic lines suitable for organic production. A method for their early detection was developed in this study by means of Geometric Morphometrics (GM) that represents a tool for bone shape analysis and its correlation with walking capability. A valuable information emerged from the present study in relation to broiler intrinsic adaptability to organic production.

Abstract

In the present study, the conformation of the tibia of seven genetic lines of broilers was analyzed by Geometric Morphometrics and correlated to carcass weight and walking ability. The used chicken genetic lines were classified as fast, medium, or slow growing and ranked for their walking ability. Six chicken types were reared in an organic farm and slaughtered at 81 days of age while one slow-growing and highly walking line (Naked Neck) was reared in a commercial farm and used as external reference for moving activity and growth speed. A mixed landmarks and semi-landmarks model was applied to the study of tibia shape. Results of this study showed that: (i) body weight gain was positively correlated to the curvature of the antero-posterior axis of the tibia; (ii) the shape of the tibia and the active walking behavior were significantly correlated; (iii) walking and not-walking genetic lines could be discriminated in relation to the overall shape of the tibia; (iv) a prevalence of static behavior was correlated to a more pronounced curvature of the antero-posterior axis of the tibia. Results of this study revealed that the walking genetic types have a more functional and natural tibia conformation. This easy morphologic method for evaluating tibia shape could help to characterize the adaptability of genotypes to organic and outdoor rearing.

Demand-oriented riboflavin supply of organic broiler using a feed material from fermentation of Ashbya gossypii

Alternatives to riboflavin (vitamin B₂) production by recombinant microorganisms are needed in organic poultry production, but are cost-intensive, so that a demand-oriented riboflavin supply is necessary. Details on the riboflavin requirements of organic poultry are not available. A feed material with high native riboflavin content from fermentation of the filamentous fungus Ashbya gossypii was studied. Two runs with 800 Ranger Gold™ broilers each (40 pens with 20 animals) were conducted. The fattening period was divided into starter (S), grower (G) and finisher (F) stage. In the first run, a basal diet without riboflavin supplementation (NATIVE; 3.27, 3.50 and 3.16 mg riboflavin/kg DM in S, G and F) was compared to diets with supplementation at low (LOW; 5.30, 4.85 and 5.19 mg/kg in S, G and F), medium (MEDIUM; 7.56, 6.88 and 7.56 mg/kg in S, G and F) and high (HIGH; 10.38, 9.14 and 9.93 mg/kg in S, G and F) dosage. In the second run, different combinations of low and medium riboflavin supplementation were used in S, G and F diets: S-LOW (4.50 mg riboflavin/kg DM), G-MEDIUM (6.66 mg/kg), F-MEDIUM (5.71 mg/kg) (Treatment A), S-LOW (4.50 mg riboflavin/kg DM); G-LOW (4.92 mg/kg), F-LOW (4.01 mg/kg) (Treatment B); S-MEDIUM (6.37 mg/kg), G-MEDIUM (7.37 mg/kg), F-MEDIUM (5.07 mg/kg) (Treatment C); S-MEDIUM (6.37 mg/kg), G-LOW (5.28 mg/kg), F-LOW (4.22 mg/kg) (Treatment D). Body weight, feed and water consumption were recorded weekly, health and welfare indicators were scored bi-weekly. Slaughter traits were assessed for five males and females per pen. In the first run, NATIVE animals showed symptoms of riboflavin deficiency and lower live weights in the second week of age. Riboflavin contents of this group were increased to avoid further deficiency and recovery was observed. Feed conversion was better in HIGH (2.07) compared with NATIVE and LOW (2.11). At slaughter, treatments differed neither for foot pad dermatitis nor plumage cleanliness. In the second run, daily weight gains did not differ between treatments in any of the weeks. Feed conversion ranged between 1.99 and 2.04. Riboflavin deficiency was not observed in the second run, while treatment D showed superior economic efficiency. In conclusion, native contents of feed components (3.27 mg/kg DM) were not sufficient to meet the riboflavin demand and a total content of 4.50 mg/kg DM was identified as safe lower threshold. The levels rather according to commercial recommendations were not additionally beneficial to performance and health.

Bird Health, Housing and Management Routines on Swedish Organic Broiler Chicken Farms

Slower-growing broilers on organic farms have replaced fast-growing hybrids to increase bird welfare. Due to limited knowledge of broiler welfare and management on organic farms in Sweden, the study aim was to gather information regarding health, housing and management routines, in order to describe the current situation on these. Farm visits performed in 2018 included 8 out of 12 established organic farms, on which either Rowan Ranger or HubbardJA57/HubbardJA87 were reared. Chickens in the observed flocks were 55 ± 6 (44-62) days of age. Observations included farmer interviews, indoor environment assessments, clinical examinations and gait scoring. Clinical examinations revealed no severe remarks, however minor to moderate plumage dirtiness, food pad dermatitis and hock burns were found in 47%, 21% and 13% of the birds, respectively. Although no severe walking impairments were observed, minor to moderate gait abnormalities were seen in two-thirds of the birds. Gait in birds assessed outdoors was significantly better than in birds observed indoors. Body weight uniformity was low in all flocks. This study provides increased knowledge of certain chicken health and welfare aspects, housing and management on Swedish organic farms. Future research should further investigate important aspects related to bird welfare, such as the high mortality rates observed.

Physical quality characteristics of breast and leg meat of slow- and fast-growing broilers raised in different housing systems

This study was made to determine the effects of genotype and housing system on physical quality characteristics of breast and leg meat of broilers under experimental conditions. The 150 slow-growing and 150 fast-growing 1 d old chicks were divided into three sub-groups with indoor raised slatted plastic floor, indoor concrete floor with rice hull litter, and free-range housing systems (2 genotype groups  ×  3 housing systems). All birds were offered the same diet and were housed in similar conditions until they were 56 d old. At slaughter, 10 birds from each main group were selected randomly to determine the quality characteristics of the meat. In total, 60 breast meat pieces (pectoralis major muscle) and 60 legs of the chickens were used for meat quality analysis including pH, shear force, and colour characteristics such as lightness ( L ∗ ), redness ( a ∗ ), yellowness ( b ∗ ), saturation ( C ∗ ), and hue angle ( h ∗ ). The pH of breast meat was significantly affected by genotype and housing system ( P < 0.001 and P < 0.001 ). There were significant genotype  ×  housing system interactions for pH ( P < 0.015 and P < 0.001 ) and shear force values ( P < 0.007 and P < 0.012 ) of leg and breast meat. There were no significant effects of genotype and housing system on leg and breast meat colour properties except for effects of genotype on redness ( a ∗ ) of breast meat ( p < 0.005 ) and effects of housing on redness of leg meat colour ( p < 0.031 ). Slow-growing chickens and chickens housed in deep litter had a higher redness (darker) value of breast and leg meat colour compared to fast-growing birds and free range and slatted floor. In conclusion, it can be said that fast-growing broilers may be more appropriate for slatted plastic floor housing and slow-growing broilers may be more suitable for a free-range housing system, but further research on factors affecting meat quality would be very beneficial, especially in slow-growing broilers.
