Abstract
Foodborne illnesses can be infectious and dangerous, and most of them are caused by bacteria. Some common food-related bacteria species exist widely in nature and pose a serious threat to both humans and animals; they can cause poisoning, diseases, disabilities and even death. Rapid, reliable and cost-effective methods for bacterial detection are of paramount importance in food safety and environmental monitoring. Polymerase chain reaction (PCR), lateral flow immunochromatographic assay (LFIA) and electrochemical methods have been widely used in food safety and environmental monitoring. In this paper, the recent developments (2013-2023) covering PCR, LFIA and electrochemical methods for various bacterial species (Salmonella, Listeria, Campylobacter, Staphylococcus aureus (S. aureus) and Escherichia coli (E. coli)), considering different food sample types, analytical performances and the reported limit of detection (LOD), are discussed. It was found that the bacteria species and food sample type contributed significantly to the analytical performance and LOD. Detection via LFIA has a higher average LOD (24 CFU/mL) than detection via electrochemical methods (12 CFU/mL) and PCR (6 CFU/mL). Salmonella and E. coli in the Pseudomonadota domain usually have low LODs. LODs are usually lower for detection in fish and eggs. Gold and iron nanoparticles were the most studied in the reported articles for LFIA, and average LODs were 26 CFU/mL and 12 CFU/mL, respectively. The electrochemical method revealed that the average LOD was highest for cyclic voltammetry (CV) at 18 CFU/mL, followed by electrochemical impedance spectroscopy (EIS) at 12 CFU/mL and differential pulse voltammetry (DPV) at 8 CFU/mL. LOD usually decreases when the sample number increases until it remains unchanged. Exponential relations (R2 > 0.95) between LODs of Listeria in milk via LFIA and via the electrochemical method with sample numbers have been obtained. Finally, the review discusses challenges and future perspectives (including the role of nanomaterials/advanced materials) to improve analytical performance for bacterial detection.

Abstract
This paper presents a novel electrochemical transduction method for the rapid and straightforward detection of bacterial biofilm. Briefly, fifteen isolates from various sources were collected and evaluated for their ability to generate biofilm. The Congo red-based agar method and the tube test were used for preliminary screening. A microtiter experiment was also performed to quantitatively examine the screening results and validate the outcomes of the proposed methylene blue-based electrochemical detection method. Electrochemical sensing was performed on the two selected isolates using methylene blue as a redox indicator. For optimization goals, several methylene blue concentrations were studied. Methylene blue at a concentration of 0.4 mM was used for the analysis conclusion. The developed electrochemical method displayed a linear R2 value of 0.9747. The new electrochemical approach demonstrated great sensitivity and rapid response compared to conventional microtiter test methods.

Abstract
Pesticide testing is an important topic in environmental protection and food safety. The development of green, accurate and reliable pesticide residue detection methods is an important technical support for implementing of agricultural quality supervision. Electrochemical sensors are a very promising analytical method for pesticide detection due to their high sensitivity, speed, low cost and portability. Performance enhancement of electrochemical sensors is often accompanied by research advances in materials science. Among them, carbon material is a very important electrode material for the fabrication of electrochemical sensors. The discovery of graphene makes it the most promising candidate among carbon materials for sensor performance enhancement. The topic of this review is the use of graphene-modified electrochemical sensors for pesticide detection in the last decade. Traditional literature summaries and bibliometric analyses were used for an in-depth analysis of this topic. In addition to the introduction of different sensor types and performance comparisons, this review also parses the authors' country, keywords and publication frequency. The related research experienced rapid growth several years ago and has now reached a relatively stable stage. We also discuss the perspectives on this topic.

Abstract
Photodynamic technology (PDT) is an emerging non-thermal processing technique, however, due to a lack of edible photosensitizers, its application to the food industry is limited. To better understand sodium copper chlorophyll (SCC) feasibility as a photosensitizer, we analyzed the effects of PDT-SCC on Escherichia coli O157:H7 inactivation using different lighting times (15, 30, 45, 60, and 75 min), lighting power (30, 60, 90, 120, and 150 W), and SCC concentrations (2, 4, 6, 8, and 10 mM). We showed that bactericidal effects depended on all three parameters, but the most suitable sterilization condition for E. coli occurred at 10 mM SCC, for 60 min at 120 W. We also investigated cell morphology, reactive oxygen species (ROS) production, the activity of three oxidative response enzymes (superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPX)), and ompA, ompF, uvrA, and recA expression. When compared with the control group, PDT-SCC destroyed bacterial morphology, increased ROS production, decreased antioxidant enzyme activity (SOD, CAT, and GPX), down-regulated membrane protein gene expression, including ompA and ompF, and up-regulated the DNA damage-repair related genes, uvrA and recA. Thus, bacterial rupture caused by oxidative damage could be the main mechanism underpinning PDT-SCC action.

Abstract
The residues of antibiotics in the environment pose a potential health hazard, so highly sensitive detection of antibiotics has always appealed to analytical chemists. With the widespread use of new low-dimensional materials, graphene-modified electrochemical sensors have emerged as an excellent candidate for highly sensitive detection of antibiotics. Graphene, its derivatives and its composites have been used in this field of exploration in the last decade. In this review, we have not only described the field using traditional summaries, but also used bibliometrics to quantify the development of the field. The literature between 2011 and 2021 was included in the analysis. Also, the sensing performance and detection targets of different sensors were compared. We were able to trace not only the flow of research themes, but also the future areas of development. Graphene is a material that has a high potential to be used on a large scale in the preparation of electrochemical sensors. How to design a sensor with selectivity and low cost is the key to bring this material from the laboratory to practical applications.

Abstract
Escherichia coli (E. coli) O157:H7 can cause many food safety incidents, which seriously affect human health and economic development. Therefore, the sensitive, accurate, and rapid determination of E. coli O157:H7 is of great significance for preventing the outbreak and spread of foodborne diseases. In this study, a carbon dots-Fe3O4 nanomaterial (CDs-Fe3O4)-based sensitive electrochemical biosensor for E. coli O157:H7 detection was developed. The CDs have good electrical conductivity, and the surface of carbon dots contains abundant carboxyl groups, which can be used to immobilize probe DNA. Meanwhile, the CDs can be used as a reducing agent to prepare CDs-Fe3O4 nanomaterial. The Fe3O4 nanomaterial can improve the performance of the electrochemical biosensor; it also can realize the recovery of CDs-Fe3O4 due to its magnetism. As expected, the electrochemical biosensor has excellent specificity of E. coli O157:H7 among other bacteria. The electrochemical biosensor also exhibited good performance for detecting E. coli O157:H7 with the detection range of 10-108 CFU/ml, and the detection limit of this electrochemical biosensor was 6.88 CFU/ml (3S/N). Furthermore, this electrochemical biosensor was successfully used for monitoring E. coli O157:H7 in milk and water samples, indicating that this electrochemical biosensor has good application prospect. More importantly, this research can provide a new idea for the detection of other bacteria and viruses.

Abstract
Silicon plays a very important role in the growth of rice. The study of the relationship between rice and silicon has become a hot area in the last decade. Currently, the silica-molybdenum blue spectrophotometric method is mostly used for the determination of silicon content in rice. However, the results of this method vary greatly due to the different choices of reducing agents, measurement wavelengths and color development times. In this work, we present for the first time an electrochemical sensor for the detection of silicon content in rice. This electrochemical analysis technique not only provides an alternative detection strategy, but also, due to the rapid detection by electrochemical methods and the miniaturization of the instrument, it is suitable for field testing. Methodological construction using electrochemical techniques is a key objective. The silicon in rice was extracted by HF and becomes silica after pH adjustment. The silica was then immobilized onto the glassy carbon surface. These silica nanoparticles provided additional specific surface area for adsorption of sodium borohydride and Ag ions, which in turn formed Ag nanoparticles to fabricate an electrochemical sensor. The proposed electrochemical sensor can be used for indirect measurements of 10-400 mg/L of SiO2, and thus, the method can measure 4.67-186.8 mg/g of silicon. The electrochemical sensor can be used to be comparable with the conventional silicon-molybdenum blue spectrophotometric method. The RSD of the current value was only 3.4% for five sensors. In practical use, 200 samples of glume, leaf, leaf sheath and culm were tested. The results showed that glume had the highest silicon content and culm had the lowest silicon content. The linear correlation coefficients for glume, leaf, leaf sheath and culm were 0.9841, 0.9907, 0.9894 and 0.993, respectively.

Abstract
In this work, an integrated electrode system consisting of a graphene working electrode, a carbon counter electrode and an Ag/AgCl reference electrode was fabricated on an FR-4 glass fiber plate by a polyethylene self-adhesive mask stencil method combined with a manual screen printing technique. The integrated graphene electrode was used as the base electrode, and AuNPs were deposited on the working electrode surface by cyclic voltammetry. Then, the carcinoembryonic antigen aptamer was immobilized using the sulfhydryl self-assembly technique. The sensor uses [Fe(CN)6]3-/4- as a redox probe for label free detection of carcinoembryonic antigen based on the impedance change caused by the difference in electron transfer rate before and after the binding of carcinoembryonic antigen aptamer and the target carcinoembryonic antigen. The results showed a good linear relationship when the CEA concentration is in the range of 0.2-15.0 ng/ml. The detection limit was calculated to be 0.085 ng/ml (S/N = 3).
