Sire Effects on Post-Weaning Growth of Beef-Cross-Dairy Cattle: A Case Study in New Zealand

Rethinking efficiency: Growth curves as a proxy for inputs and impacts in finishing beef systems

Quantifying and improving efficiency within beef systems is essential for economic and environmental sustainability. The industry standard for assessing efficiency is liveweight gain per day, however, this metric is limited in that it values each day of a growing animal's life as equally costly, despite the increasing maintenance requirements, inputs, and emissions associated with increasing liveweight. Quantifying the area under the growth curve (AUC) considers both time and liveweight as a cost and therefore may hold potential as a better estimate of cost, impact, and efficiency in beef systems. Liveweight data was taken from 439 finishing beef cattle split across three herds grazing on different pastures, known as 'farmlets'. Analysis was conducted in three parts: [1] Validation of AUC as a proxy for costs using data from a sub-set of 87 animals that had been part of a previous life cycle assessment (LCA) study in which dry matter intake (DMI), methane emissions (CH₄), and nitrous oxide emissions (N₂O) were calculated. [2] Calculation of AUC relative to liveweight gain (LWG AUC^-1) and comparison of that metric against the industry standard of liveweight gain per day (LWG day^-1). [3] Assessment of how LWG AUC^-1 varied with breed, sex, and management. When comparing to LCA results, AUC correlated significantly with DMI (r = 0.886), CH₄ (r = 0.788) and N₂O (r = 0.575) emissions. Over the full dataset, there was a negative non-linear relationship between LWG AUC^-1 and slaughter age (r = -0.809). There was a significant difference in LWG AUC^-1 between breeds (p = 0.046) and farmlets (p = 0.028), but not sex (p = 0.388). LWG AUC^-1 has the potential to act as a proxy for feed intake and emissions. In that regard it is superior to LWG day^-1, whilst requiring no additional data. Results highlighted the decreasing efficiency of beef cattle over time and the potential benefits of earlier slaughter. The use of LWG AUC^-1 could allow farmers to improve their understanding of efficiency within their herds, aiding informed management decision making.

Growth and Carcass Characteristics of Beef-Cross-Dairy-Breed Heifers and Steers Born to Different Dam Breeds

The dairy industry is an important source of animals for the beef industry in New Zealand. Since 1998, the proportion of Friesian–Jersey cows in dairy herds has increased from 19% to 49%. The aim of this study was to investigate the effect of dam breed on growth and carcass characteristics of beef-cross-dairy-breed progeny born to Friesian, Friesian-cross, Friesian–Jersey and Jersey-cross cows. Dam breed had an effect on all growth traits, as well as carcass weight, fat colour, fat depth, and ossification score. An increase in Jersey genetics in calves retained for beef finishing would result in calves that take a longer time to reach weaning weight and have a lighter carcass and yellower fat.

Abstract

Approximately two thirds of the annual beef kill in New Zealand originates from the dairy industry. The recent increase in Jersey genetics in the dairy herd will inevitably result in an increase in Jersey genetics entering the beef herd from retention of dairy-origin calves for finishing. Limited literature is available on the effect of dam breed on the performance of beef-cross-dairy-breed progeny. The aim of this study was to investigate the effect of dam breed from dams with varying proportions of Friesian and Jersey genetics on growth traits and carcass characteristics of their 24-month-old beef-cross-dairy-breed heifer and steer progeny. Liveweights of 142 heifers and 203 steers from Friesian (F), Friesian-cross (FX), Friesian–Jersey (FJ) and Jersey-cross (JX) dams were recorded at birth, weaning, as yearlings and at slaughter. Carcass characteristics were also recorded. At each point measured, liveweight was greatest for calves born to F dams. Calves born to F dams took 93 days to reach a weaning weight of 100 kg, whereas those from FX, FJ and JX dams took 99, 101 and 102 days, respectively. Carcass weight was greatest for progeny of F dams (286 kg, compared with 279, 275 and 276 for progeny of FX, FJ and JX dams, respectively). The progeny of JX dams had yellower fat than all other dam breed groups and a greater incidence of excessively yellow fat (fat score ≥ 5).

Service Sire Effects on Body Condition Score, Milk Production, and Rebreeding of Mixed-Aged Dairy Cows Bred to Angus and Hereford Bulls—A Case Study in New Zealand

Beef-breed bulls are used in dairy herds to produce a calf of greater value for finishing than calves sired by dairy bulls. There is limited research about which beef-breed bulls are most appropriate, and whether any negative impact on cow performance in terms of milk production and rebreeding should be considered. The aim of this case study was to compare the body condition score, milk production, and rebreeding performance of mixed-aged dairy cows bred to a selection of Angus and Hereford beef-breed bulls. Body condition score, post-calving live weight, milk production, rebreeding performance, and survival of 952 mixed-aged dairy cows artificially bred to 65 Angus and Hereford bulls were compared. There was no effect of service sire on post-calving live weight, days in milk, milk production, or inter-calving intervals of mixed-aged cows. Service sire had an effect on the calving day due to differences in gestation length (p < 0.001), although this did not translate into an effect on days in milk. A longer gestation length negatively influenced pregnancy rates, and greater birth weight of the calf negatively influenced survival to rebreeding (p < 0.05), indicating the potential for an effect of service sire. Selection of beef-breed service sires for dairy cows should include emphasis on lighter calves and shorter gestation lengths. The general absence of the service sire effect on the parameters measured in this study indicated that any of the service sires used in this experiment would be appropriate for use over dairy cows.

Estimated Breeding Values of Beef Sires Can Predict Performance of Beef-Cross-Dairy Progeny

On average, half of the animal's estimated breeding value (EBV) is passed on to their progeny. However, it is not known how the performance of beef-cross-dairy cattle relates to the EBV of their beef sire. Such information is required to determine the genetic potential of beef sires selected based on existing EBV to be used on dairy cows in New Zealand. This study evaluated the relationship between the EBV of 30 Angus and 34 Hereford sires and the performance of their progeny for birth, growth, and carcass traits, via progeny testing of 975 beef-cross-dairy offspring born to dairy cows and grown on hill country pasture. Overall, BREEDPLAN EBV did predict progeny performance of the beef-cross-dairy cattle from this study. Gestation length and birthweight increased with increasing sire EBV (mean 0.37-0.62days and 0.52-0.64kg, respectively, p<0.05). Age at weaning decreased with increasing sire EBV for liveweight at 200days (0.17-0.21days per extra kilo of sire EBV, p<0.05) but sire EBV for liveweight at 200days had no effect on the liveweight of the progeny at 200days for either breed (p>0.05). Liveweight increased with sire EBV for liveweight at 400, 600, and 800days, by a similar amount for both breeds (between 0.23 and 0.42kg increase in progeny liveweight per extra kilo of sire EBV, p<0.05). The relationships were more inconsistent for carcass traits. For Hereford, carcass weight and eye muscle area increased with increasing sire EBV (0.27kg and 0.70cm², respectively, p<0.05). For Angus, marble score increased by 0.10 with 1% extra in sire EBV for intramuscular fat (p<0.05). Rib fat depth tended to increase with sire EBV for both breeds (p<0.1). EBV derived from beef-breed data work in dairy-beef systems but maybe slightly less than the expected 0.5units of performance per unit of EBV. New Zealand farmers should consider BREEDPLAN EBV when selecting sires to mate dairy cows or when buying beef-cross-dairy calves for beef production, to ensure the resulting calves are born safely and on time and then grow well to produce carcasses of suitable meat and fat composition.

Sire Effects on Carcass of Beef-Cross-Dairy Cattle: A Case Study in New Zealand

Cattle born in the dairy industry are a very important source of beef. This study evaluated the carcasses of cattle born to dairy cows and sired by a range of Angus and Hereford sires. Sire affected most carcass traits of their progeny, particularly size and fat traits. The heaviest sire had 46 kg greater carcass weight compared with the lightest sire, equivalent to NZ$266 greater value per progeny. Carcass fat traits (rib fat depth and marble scores) were the most variable among sires, indicating possibility of selection. Thus, using beef-breed sires chosen for greater carcass weight has the potential to increase the meat production of cattle born on dairy farms, while maintaining adequate fat levels and carcass quality to receive optimum payment.

Abstract

There is interest in increasing the carcass value of surplus calves born in the dairy industry that are reared for beef production in New Zealand. This experiment evaluated the carcass of Angus and Hereford sires via progeny testing of beef-cross-dairy offspring grown on hill country pasture. Weight and carcass traits were analyzed from 1015 animals and 1000 carcasses of 73 sires. The mean of the progeny group means was 567 kg for live weight at slaughter, 277 kg for carcass weight, 48.9% for dressing-out, 240.3 cm for carcass length, 73.6 cm² for eye muscle area, 7.4 mm for rib fat depth, 0.91 for marble score, 3.05 for fat color score, 3.01 for meat color score, and 5.62 for ultimate pH. Sire affected (p < 0.05) carcass size and fat traits, but not fat color, meat color, or ultimate pH (p > 0.05). There was a 46 kg increase in carcass weight between the best and worst sires tested. Carcass fat traits were the most variable among sires. The use of genetically superior beef-breed sires over dairy-breed cows has the potential to increase carcass weights from surplus calves born in the dairy industry, while maintaining adequate fat levels and carcass quality.

Energy Balance Indicators during the Transition Period and Early Lactation of Purebred Holstein and Simmental Cows and Their Crosses

Dairy cows undergo a very challenging time between the weeks immediately before calving and the start of lactation after calving. In particular, high yielding dairy cows, such as purebred Holstein cows, have to cope with a severe negative energy balance. In comparison to the feed (energy) intake, they produce a great surplus of milk energy. The energy deficit is supposed to be smaller in dual-purpose breeds, such as (German) Simmental. Therefore, crossbreeding of both breeds, with the aim of using the advantageous characteristics of both breeds, and the expected advantage of crossbred cows, might reduce the negative effects of the metabolic and physiologic challenges by improving the production efficiency of dairy herds. After calving, Simmental cows and cows with greater Simmental proportions decreased less in the body condition score, had lower concentrations of ketone bodies, and nonesterified fatty acids in the blood, which are common indicators of metabolic disorders during the transition period. In particular, first generation (F1) crossbred cows produced more energy corrected milk (ECM) than purebred Holstein cows, while the other crossbred generations still showed positive heterosis effects for ECM. That means, they produced more ECM than the average of both parental breeds.

Abstract

Crossbreeding in dairy cattle has been used to improve functional traits, milk composition, and efficiency of Holstein herds. The objective of the study was to compare indicators of the metabolic energy balance, nonesterified fatty acids (NEFA), beta-hydroxybutyrate (BHBA), glucose, body condition score (BCS) back fat thickness (BFT), as well as milk yield and milk composition of Holstein and Simmental cows, and their crosses from the prepartum period until the 100th day of lactation at the Livestock Center of the Ludwig Maximilians University (Munich, Germany). In total, 164 cows formed five genetic groups according to their theoretic proportion of Holstein and Simmental genes as follows: Holstein (100% Holstein; n = 9), R1-Hol (51–99% Holstein; n = 30), first generation (F1) crossbreds (50% Holstein, 50% Simmental; n = 17), R1-Sim (1–49% Holstein; n = 81) and Simmental (100% Simmental; n = 27). The study took place between April 2018 and August 2019. BCS, BFT blood parameters, such as BHBA, glucose, and NEFA were recorded weekly. A mixed model analysis with fixed effects breed, week (relative to calving), the interaction of breed and week, parity, calving year, calving season, milking season, and the repeated measure effect of cow was used. BCS increased with the Simmental proportion. All genetic groups lost BCS and BFT after calving. Simmental cows showed lower NEFA values. BHBA and glucose did not differ among genetic groups, but they differed depending on the week relative to calving. Simmental and R1-Sim cows showed a smaller effect than the other genetic groups regarding changes in body weight, BCS, or back fat thickness after a period of a negative energy balance after calving. There was no significant difference for milk yield among genetic groups, although Simmental cows showed a lower milk yield after the third week after calving. Generally, Simmental and R1-Simmental cows seemed to deal better with a negative energy balance after calving than purebred Holstein and the other crossbred lines. Based on a positive heterosis effect of 10.06% for energy corrected milk (ECM), the F1, however, was the most efficient crossbred line.
