Abstract
Different resources, such as environmental enrichment, are being evaluated in order to minimize animal stress and promote better conditions during the life cycle of animals, as consumers are increasingly concerned about animal welfare issues. Lairage represents an important stage in the swine production chain and is directly related to animal welfare. The aim of this study was to evaluate the effect of lairage time in the slaughterhouse and environmental enrichment on the level of skin lesions and behavioral responses in pigs. A total of 648 finishing pigs of both sexes were assessed before and after lairage at the slaughterhouse with a five-point scale (0 = none, to 4 = ≥16 superficial lesions or >10 deep lesions). After lairage (after slaughter), lesions were also classified according to their source (mounting, fighting, and handling). Pigs were distributed into two treatments groups during lairage: with environmental enrichment (EE) on the pen, with hanging metal chains, and with no enrichment (NE). Behavior was monitored during the first four hours of lairage. Proportional odds, mixed linear model for longitudinal data, and non-parametric Wilcoxon signed rank tests were used to analyze the relation between treatments, skin lesions, and behavior. The simple metal chains did not affect skin lesion score or pigs' behavior (p > 0.05), whereas lairage duration influenced standing (SA), sitting (S), lying (L), idleness (I), and drinking water (D) (p < 0.001). The main source of skin lesions was handling, which did not differ between treatments (EE and NE) (p > 0.05). It was observed that the severity of the lesions (highest scores of 3, 4, and 5) increased in the different anatomical regions of the pigs when compared before and after slaughter, with the exception of the frontal area, which was the same (p = 0.7547). Lairage time has a proportional relation with skin lesions, and hanging chains at the slaughterhouse pens was not enough to reduce the number of lesions and to change pig behavior.

Abstract
Animal welfare during transport became an largely issue because of increasing demand for improved animal welfare standards. Most studies on the animal welfare during transportation have concentrated on the atmosphere and the temperature of the truck compartments. Thus, the objective of study was to collect and quantify three axis acceleration and determine the effect of bedding for transporting pigs from farm to slaughterhouse. A total of 2,840 crossbred fattening pigs with a live weight of approximately 115 kg were used. They were raised in the same commercial farms and transported to the same commercial slaughterhouse. A 3×2×2 completely randomized factorial design was used to investigate effects of rubber type bedding (bedding or non-bedding) and two levels of driving style (aggressive or normal) in three different time periods with different outside temperatures. Air temperature treatments were as follow: high temperature ([HT] higher than 24°C); low temperature ([LT] lower than 10°C); normal temperature ([NT] 10°C to 24°C). In our experiment, pigs transported under aggressive driving style showed lower (p < 0.05) pH and water holding capacity (WHC) than those transported under normal driving style. Pigs transported under normal driving style showed a lower percentage of drip loss (DL) (p < 0.05) than those transported with an aggressive driving style. Also, transported with bedding showed higher (p < 0.05) lying behavior but lower (p < 0.05) sitting behavior than those transported without bedding. Pigs transported under normal driving style showed lower (p < 0.05) cortisol level than those transported under aggressive driving style. In conclusion, aggressive driving style cause acute stress in pigs, while bedding helps alleviate acute stress in pigs during transportation in LT.

Abstract
Environmental enrichment consists of a way to provide better living conditions for animals, but its influence on physical integrity, thermoregulatory responses, and quality of pork meat is not known. The objective of this study was to evaluate the thermoregulatory responses, lesion score, lameness, carcass traits, and meat quality of pigs with and without access to environmental enrichment (EE) in the finishing phase. A total of 432 pigs of the Hampshire lineage, males and females, with average initial and final weights between 22-27 kg and 110-125 kg respectively were evaluated. The experimental design used was in randomized blocks, with 6 treatments, distributed in a 2×3 factorial scheme (sex × environmental enrichment), with 12 repetitions per treatment, totaling 72 stalls. The treatments were branched chain for males (T1), branched sisal rope for males (T2), males without EE (T3), branched chain for females (T4), branched sisal rope for females (T5), and females without EE (T6). Weekly, two assessments of physiological data were performed, in loco, in the morning and afternoon. Lesions on the tail, ear, body, and lameness were evaluated on the 1st, 16th, 37th, 51st, 79th, 93rd, and 112th days. On the 112th day, 72 animals were slaughtered for carcass traits and meat quality analyses. Statistical analysis was performed using generalized and mixed linear models. There was no effect (p>0.05) of the interaction of the studied factors (environmental enrichment × sex × period) on the head, back, leg, and average temperature. However, there was an effect of the period factor (p<0.01), with higher temperatures in the afternoon compared to the morning. For tail injury, there was no association between injury degree and gender (p=0.56) and between injury degree and enrichment (p=0.99), and there was no interaction effect (p=0.15). For ear injury, there was no association between the degree of ear injury and gender (p=0.72), as well as for the degree of ear injury and enrichment (p=0.99) and interaction (p=0.47). There was a higher occurrence of categories 2, 3, and 4 for lesions on the body in males (p=0.0257), regardless of the EE. Water retention, carcass yield, cut yield, marbling pattern, pH, and color showed no effect for sex, enrichment, and interaction between the two factors (p>0.05). The use of environmental enrichment with sisal ropes and branched chains does not change the thermophysical responses, carcass traits, and meat quality of finishing pig.

In the framework of its Farm to Fork Strategy, the Commission is undertaking a comprehensive evaluation of the animal welfare legislation. The present Opinion deals with protection of pigs during transport. The welfare of pigs during transport by road is the main focus, but other means of transport are also covered. Current practices related to transport of pigs during the different stages (preparation, loading/unloading, transit and journey breaks) are described. Overall, 10 welfare consequences were identified as highly relevant for the welfare of pigs during transport based on the severity, duration and frequency of occurrence: group stress, handling stress, heat stress, injuries, motion stress, prolonged hunger, prolonged thirst, restriction of movement, resting problems and sensory overstimulation. These welfare consequences and their animal‐based measures are described. A variety of hazards were identified, mainly relating to factors such as mixing of unfamiliar pigs, inappropriate handling methods and devices, the use of pick‐up pens, inexperienced/untrained handlers, structural deficiencies of vehicles and facilities, poor driving conditions, unfavourable microclimatic and environmental conditions and poor husbandry practices leading to these welfare consequences. The Opinion contains general and specific conclusions relating to the different stages of transport of pigs. Recommendations to prevent hazards and to correct or mitigate welfare consequences are made. Recommendations were also developed to define quantitative thresholds for microclimatic conditions and minimum space allowance within means of transport. The development of the welfare consequences over time was assessed in relation to maximum journey duration. The Opinion covers specific animal transport scenarios identified by the European Commission relating to transport of cull sows and ‘special health status animals’, and lists welfare concerns associated with these.

Carcass Lesion Severity and Pre-Slaughter Conditions in Heavy Pigs: A Prospective Study at a Commercial Abattoir in Northern Italy. APPLIED SCIENCES-BASEL 2022. Abstract
Pre-slaughter conditions and their effects on carcass quality have been largely addressed for pigs of 90–100 kg live weight, while few studies consider the effects of pre-slaughter conditions on the quality of the carcasses obtained from heavy pigs intended for Protected Designation of Origin (PDO) production. A total of 1680 heavy pigs were transported in 72 batches from a farm to a commercial abattoir on 16 different days, avoiding mixing unfamiliar animals. Slaughterhouse conditions, animal behaviors, and human–animal interactions were annotated at unloading and during the race toward the stunning cage. Carcass lesions on the rear, middle, and shoulder parts of the carcasses were scored. The prevalence of carcasses with severe lesions was 6.92%, 11.87%, and 6.83%, for the rear, middle, and shoulder parts, respectively. Among the pre-slaughter events, waiting before unloading and improper handling practices at the abattoir were the major factors affecting carcass lesion severity. Lairage pen space allowance was also found to affect severe rear and shoulder lesions, and the batches that were transported in the trailer had an increased prevalence of severe shoulder lesions. Our results suggest waiting time before unloading should be shortened as much as possible, and educational programs to train operators for more careful management of animals in the abattoir are greatly required to avoid improper animal handling practices.

Abstract
Simple Summary The occurrence of traumatic injuries was assessed in cattle, sheep, goats and pigs reared and slaughtered in the Czech Republic. For the purposes of the study, the results of veterinary postmortem examinations at slaughterhouses in the period from 2010 to 2019 were analyzed. In the studied animal species, findings of traumatic lesions were detected at low frequency. The low frequency of traumatic lesions is favorable from the perspective of the welfare of slaughtered animals. In terms of further improvements to animal welfare, it would be desirable to focus on the prevention of trauma in cattle in particular, in which findings of trauma were more frequent than in the other species studied. The category most affected by trauma both to the limbs and body was cows. Abstract The welfare of cattle, pigs, sheep and goats was assessed by measuring trauma detected during veterinary postmortem inspection at slaughterhouses. The subject of this evaluation were all bovine, porcine, ovine and caprine animals slaughtered at Czech slaughterhouses in the monitored period, i.e., a total of 1,136,754 cows, 257,912 heifers, 1,015,541 bulls, 104,459 calves, 586,245 sows, 25,027,303 finisher pigs, 123,191 piglets, 22,815 ewes, 114,264 lambs, 1348 does and 5778 kids. The data on the numbers of traumatic findings were obtained retrospectively from a national veterinary database collecting data from slaughterhouse postmortem examinations. The results showed that findings of trauma were observed at a low frequency in the studied species. Injuries were detected most frequently in cows (1.71%). In contrast, no findings associated with the presence of trauma were recorded in does and kids. From the viewpoint of trauma localization, findings on the limbs were more frequent than findings on the body (p < 0.01). The only exceptions to this were lambs, does and kids, for which there was no statistically significant difference between findings on the limbs and the body (p = 1.00). The results show that housing system (bedding, the presence of slats, floor hardness), transport of animals to the slaughterhouse (moving animals to the vehicle, loading ramps, floors in transport vehicles and the transport of animals itself) and design of the slaughterhouse (unloading ramps, passageways and slaughterhouse floors) have a greater impact on the limbs than the bodies of animals in the majority of species. A difference was also demonstrated in the occurrence of findings of trauma in the limbs and body (p < 0.01) between culled adult animals and fattened animals, namely in cattle and pigs. A difference (p < 0.01) between ewes and lambs was found only in the occurrence of traumatic injury to the limbs. The results showed that fattened animals are affected by the risk of trauma to a lesser extent than both culled adult animals and young animals. Statistically significant differences (p < 0.01) were also found between the studied species and categories of animals. The category most affected from the viewpoint of injury both to the limbs and body was cows. In contrast to cows that are typically reared indoors, the low frequency of traumatic findings was found in small ruminants and in bulls, i.e., animals typically reared outdoors. Assumedly, access to pasture may be beneficial considering the risk of traumatic injury.

Abstract
The feed restriction of pigs aims to improve the nutrient utilization of the diet, reduce carcass fat and increase lean meat. Immunocastration is a painless, reversible technique that improves animal welfare, decreases boar taint in meat, leading to lower fat deposition and increases lean meat. This study aimed at evaluating either feeding (restricted) programs (FP) and castration categories (surgically castrated × immunocastration) in terms of pig performance, carcass traits and meat quality. Castration category and FP did not influence marbling, initial pH and drip loss in loin and ham. However, immunocastrated pigs presented lighter loins and hams with lower ultimate pH, compared to the surgically castrated pigs. The FP with lower feed volume resulted in higher ultimate pH. Immunocastrated males had a higher live weight than those surgically castrated. Also, the more the feed supply decreased, the better the feed conversion. Immunocastrates had lower carcass yields, however these pigs had their backfat thickness decreased and lean meat increased in the carcass, without affecting the loin depth.

Abstract
Simple Summary Transport and lairage conditions can negatively affect pig welfare and carcass quality. The effects of transport and lairage conditions are not clear because some studies were focused on one or two main factors within a well-controlled environment, without considering the interaction of commercial conditions. Therefore, the aim of the study was to assess pig welfare at the slaughterhouse based on the presence of skin damage and to evaluate the effects of transport and lairage conditions. For research purposes, 4507 pigs were transported from one farm to one slaughterhouse. On the slaughter line, skin damage was separately scored per carcass part (shoulder, middle, and ham). The incidence of skin damage was most prevalent in the shoulder region of the pig carcass. Sex, wind velocity, regrouping, transport combination, transport compartment, lairage time, and ham angle affected the skin damage incidence. In conclusion, the incidence of skin damage is influenced by many factors and is an indicator of the level of welfare exercised during transport and slaughterhouse conditions. Abstract Transport and associated handling can have adverse effects on pig welfare. The transport of fattening pigs can cause economic losses by virtue of mortality, skin damage, and the general deterioration of meat quality. A total of 4507 fattening pigs were transported from a farm to a commercial slaughterhouse (distance 110 km) in 128 transports. Skin damage was visually assessed in the slaughter line in different parts of the carcass, i.e., shoulder, middle, and ham, using a 4-point scale. The incidence of skin damage was most prevalent (31%) in the shoulder region of the pig carcass. Sex, wind velocity, regrouping, transport combination, transport compartment, lairage time, and ham angle affected the skin damage incidence. In conclusion, scoring the incidence of skin damage is an indicator of the level of welfare exercised during transport and the slaughterhouse conditions. Furthermore, skin damage monitoring can be used to determine critical control points in the transport procedure. Given the importance from both a commercial and welfare perspective, it should be a powerful incentive to handle fattening pigs with care during the transport process and the lairage period.

Simple Summary In practice, unfamiliar pigs are frequently mixed prior to loading in order to obtain groups of uniform weight and to adjust the group size to the dimensions of the trailer compartments. Regrouping pigs is associated with establishing a new social rank via aggressive interactions. Fighting results in skin lesions and pre-slaughter stress, which leads to reduced meat quality. In this study, four grouping strategies, namely, non-regrouping and regrouping at fattening (regrouped at 80 kg and kept till slaughter), loading and lairage, were compared by determining skin lesions and meat quality at slaughter. The non-regrouped pigs showed, at slaughter, fewer skin lesions and better meat quality than the pigs regrouped at loading or in lairage. Pigs mixed at 80 kg at the farm have, in general, a comparable amount of skin lesions and comparable meat quality as the non-mixed group. If mixing is unavoidable, due to large within-group weight variations, mixing at 80 kg can be an alternative to reduce skin lesions at slaughter and to optimise meat quality. However, mixing at 80 kg is still associated with aggressive interactions after regrouping and with weight variations at slaughter. A study was performed to compare the effect of non-regrouping and regrouping at fattening (at 80 kg and kept till slaughter), loading and lairage. A total of 1332 pigs were included over 30 transports from one pig farm to one slaughterhouse (110 km). Skin lesions were determined on 1314 carcasses. Meat quality was measured on 620 pigs. The non-regrouped pigs had fewer skin lesions and better meat quality than the pigs regrouped at loading or in lairage. Pigs mixed at 80 kg at the farm had, in general, a comparable amount of skin lesions and comparable meat quality as the non-mixed group. If mixing is unavoidable, due to large within-group weight variations, mixing at 80 kg can be an alternative to reduce skin lesions at slaughter and to optimise meat quality.

Abstract
This study used social network analysis to investigate the indirect contact network between counties through the movement of live pigs through four wholesale live pig markets in Guangdong Province, China. All 14,118 trade records for January and June 2016 were collected from the markets and the patterns of pig trade in these markets analysed. Maps were developed to show the movement pathways. Evaluating the network between source counties was the primary objective of this study. A 1‐mode network was developed. Characteristics of the trading network were explored, and the degree, betweenness and closeness were calculated for each source county. Models were developed to compare the impacts of different disease control strategies on the potential magnitude of an epidemic spreading through this network. The results show that pigs from 151 counties were delivered to the four wholesale live pig markets in January and/or June 2016. More batches (truckloads of pigs sourced from one or more piggeries) were traded in these markets in January (8,001) than in June 2016 (6,117). The pigs were predominantly sourced from counties inside Guangdong Province (90%), along with counties in Hunan, Guangxi, Jiangxi, Fujian and Henan provinces. The major source counties (46 in total) contributed 94% of the total batches during the two‐month study period. Pigs were sourced from piggeries located 10 to 1,417 km from the markets. The distribution of the nodes' degrees in both January and June indicates a free‐scale network property, and the network in January had a higher clustering coefficient (0.54 vs. 0.39) and a shorter average pathway length (1.91 vs. 2.06) than that in June. The most connected counties of the network were in the central, northern and western regions of Guangdong Province. Compared with randomly removing counties from the network, eliminating counties with higher betweenness, degree or closeness resulted in a greater reduction of the magnitude of a potential epidemic. The findings of this study can be used to inform targeted control interventions for disease spread through this live pig market trade network in south China.

Abstract
This study was carried out in order to determine the effects of different combinations of on-farm fasting intervals (8, 12, 16, 20 h) and 1.5 h of transport plus lairage periods (1, 3, 6 h) at different seasons (summer/winter) on blood stress parameters (cortisol and lactate), stomach content and weight, skin lesion and meat quality in a total of 960 pigs from eight farms. Blood lactate levels were greater in the summer (P < 0.001) and stomach content was affected (P < 0.05) by season, on-farm fasting interval (P < 0.001), lairage time (P < 0.0001). Stomach content weight reduces as the total feed withdrawal time increases up to on-farm fasting of 17 and 1 h of lairage. Stomach content can be influenced by feed and water in different ways according to treatments. Only 8 h of on-farm fasting is not enough to empty stomachs from feed content. However, an on-farm fasting period of 16 h or longer can also increase the occurrence of more water in the stomachs. Carcass lesions caused by fighting were greater (P ≤ 0.005) in the winter, mainly after 3 and 6 h of lairage (P ≤ 0.005). Loin and ham pHu was lower (P ≤ 0.05) for pigs slaughtered after 6 h of lairage during the summer. The application of 12 h of on-farm fasting with 6 h of lairage seemed to be best combination to reduce stomach content weight (feed and water). In the winter, shorter lairage period can be used to reduce percentage of skin lesions and better pork quality traits in pigs.

Simple Summary The effect of different group sizes of pigs (3, 5, and 10 pigs) during handling on physiological parameters, carcasses, and pork quality traits at the farm and slaughterhouse were evaluated in 360 pigs. Ease of handling decreased as the group size increased. Moving pigs in smaller groups improve animal welfare parameters and carcass quality. However, meat quality classifications of the carcasses were not affected by the groups size used in preslaughter handling. Based on the results, moving groups of five pigs seems to be the best strategy to improve animal welfare and carcass quality. Abstract The effect of different group sizes of pigs (3, 5, and 10 pigs) during handling on physiological parameters, carcasses, and pork quality traits at the farm and slaughterhouse were evaluated in 360 pigs from five farms (four repetitions or group/treatment/farms). Data was analyzed as a factorial of 3 × 5 (3 treatments × 5 farms) to check effects of treatments by analysis of variance in ANOVA. Ease of handling decreased as the group size increased. However, time taken in handling was not influenced by the group size (p > 0.10). Moving pigs in groups of five animals reduced effects on blood cortisol levels (p < 0.05). Fighting and handling lesions in the carcasses increased for bigger handling groups (p < 0.05). Pigs handled in groups of three and ten animals had a higher pHu and initial temperature in Longissimus thoracis and Semimembranosus (p < 0.05) and lower drip loss in Semimembranosus (p < 0.05). However, meat quality classifications of the carcasses were not affected by treatments. Based on the results, moving groups of five pigs seems to be the best strategy to improve animal welfare, carcasses and pork quality.

Abstract
Pork meat is considered a source of high nutritional value due to its high protein content, however, transport is a critical link to generate economic losses by producing alterations in animal welfare, which have an impact on nutritional parameters, decreasing the capacity of water retention, and generating protein losses. The objective of this study was to relate the characteristics of transport, with the nutritional characteristics of pork for human consumption in the Valle de Aburrá in 2017. Three slaughterhouses of Valle de Aburrá were visited with probabilistic sampling, stratified by plant and equal affixation, obtaining information from 338 animals. The nutritional parameters of the meat samples and sociodemographic variables, infrastructure, animal welfare and driving practices in the transporters were analyzed. Chi square tests were performed for dichotomous qualitative variables, logistic regression for qualitative polytomous variables and U Mann - Whitney for quantitative variables. An association was found between several of the parameters investigated with statistically significant p values (p = 0.000), where, having no permanent water supply for the animals increases the possibility of presenting nutritionally inadequate meats 46.55 times (IC 18.08 - 120.07). It concludes that factors such as lack of water supply to pigs, poor condition of the floors and separators, lack of training in transporters, lack of supervision of animals, lack of mechanical technical certification and average speed of 80 Km/Hr are associated with the generation of nutritionally inadequate meat products.
