Abstract
This study investigated the variation in daily time spent grazing and rumination in spring-calved grazing dairy cows (n = 162) of three breeds, Holstein-Friesian (HFR), Jersey (JE), and KiwiCross (KC) with different breeding worth index, and in different years of lactation (1st, 2nd, 3rd, 4th). The cows were managed through a rotational grazing system and milked once a day at 05:00 a.m. The cows grazed mainly pasture and received supplementary feeds depending on the season. Automated AfiCollar device continuously monitored and recorded grazing time and rumination time of the individual cows throughout the lactation period for three study years (Year-1, Year-2, Year-3) with 54 cows per year. A general linear mixed model fitted with breed × lactation year with days in milk (DIM), breeding worth (BW) index value, individual cow, season, and feed, and their interactions was performed in SAS. Variance partitioning was used to quantify the effect size of study factors and their interactions. Individual cows, DIM, and BW (except Year-3) had effects on grazing and rumination times throughout the study years. Grazing time and rumination time were different for different seasons due to varying supplementary feeds. Grazing time varied among breeds in Year-2 and Year-3, and among lactation years only in Year-1. Although rumination time differed among breeds in Year-3, it remained the same within different lactation years. Grazing time and rumination time had a negative relationship with each other, and their regression lines varied for different seasons. The total variance explained by the model in grazing time was 36-39%, mainly contributed by the individual cow (12-20%), season (5-12%), supplementary feed (2-6%), breed (1-5%), and lactation year (1-6%). The total variance explained in rumination was 40-41%, mainly contributed by the individual cow (16-24%), season (2-17%), supplementary feed (1-2%), breed (2-8%), and lactation year (~1%). These findings could contribute to improving the measures for feed resource management during different seasons over the lactation period for a mixed herd comprising JE, HFR and KC breeds in different years of lactation.

Abstract
Fatty acids (FAs) metabolism in animals represents an important field of study since they influence the quality and the properties of the meat. The aim of this study is to assess the possibility to discriminate the diets of cows in different animal compartments and to study the fate of dietary FAs in the bovine organism, using carbon isotopic ratios. Five FAs, both essential (linoleic and linolenic) and non-essential (palmitic, stearic, and oleic) in four compartments (feed, rumen, liver, meat) of animals fed two different diets (based on either C3 or C4 plants) were considered. For all compartments, the carbon isotopic ratio (δ13C) of all FAs (with few exceptions) resulted significantly lower in cows fed on C3 than C4 plants, figuring as a powerful tool to discriminate between different diets. Moreover, chemical reactions taking place in each animal compartment result in fraction processes affecting the δ13C values. The δ13CFAs tendentially increase from feed to meat in group C3. On the other hand, the δ13CFAs generally increase from rumen to liver in group C4, while δ13CFAs of rumen and meat are mostly not statistically different. Different trends in the δ13CFAs of the two groups suggested different FAs fates depending on the diet.

Abstract
Simple Summary Dairy herds in alpine areas usually adopt summer grazing, mainly to reduce feeding costs. This practice is related to the maintenance of local traditions and to the manufacturing of niche dairy products. However, it is important to assess the impact of this practice on cattle health. This case study investigated how milk-related health traits vary across extensive grazing during the summer period, using data collected in a dairy herd whose cows were repeatedly controlled for individual milk samples. Although the transition from barn farming to pasture led to a reduction in milk production, proper grazing management can make dairy cows more resilient in terms of udder health and metabolic efficiency. Findings of the present research report suggested that pasture can be adopted to maintain dairy herd sustainability without impairing animal health. Abstract Extensive summer grazing is a dairy herd management practice frequently adopted in mountainous areas. Nowadays, this activity is threatened by its high labour demand, but it is fundamental for environmental, touristic and economic implications, as well as for the preservation of social and cultural traditions. Scarce information on the effects of such low-input farming systems on cattle health is available. Therefore, the present case study aimed at investigating how grazing may affect the health status of dairy cows by using milk traits routinely available from the national milk recording scheme. The research involved a dairy herd of 52 Simmental and 19 Holstein × Simmental crossbred cows. The herd had access to the pasture according to a rotational grazing scheme from late spring up to the end of summer. A total of 616 test day records collected immediately before and during the grazing season were used. Individual milk yield was registered during the milking procedure. Milk samples were analysed for composition (fat, protein, casein and lactose contents) and health-related milk indicators (electrical conductivity, urea and β-hydroxybutyrate) using mid-infrared spectroscopy. Somatic cell count (SCC) and differential SCC were also determined. Data were analysed with a linear mixed model, which included the fixed effects of the period of sampling, cow breed, stage of lactation and parity, and the random effects of cow nested within breed and the residual. The transition from barn farming to pasture had a negative effect on milk yield, together with a small deterioration of fat and protein percentages. Health-related milk indicators showed a minor deterioration of the fat to protein ratio, differential SCC and electrical conductivity, particularly towards the end of the grazing season, whereas the somatic cell score and β-hydroxybutyrate were relatively constant. Overall, the study showed that, when properly managed, pasture grazing does not have detrimental effects on dairy cows in terms of udder health and efficiency. Therefore, the proper management of cows on pasture can be a valuable solution to preserve the economic, social and environmental sustainability of small dairy farms in the alpine regions, without impairing cows’ health.

Abstract
Simple Summary The traditional transhumant system of rearing dairy cows in mountain areas expects animals to remain indoors in the valley during the cold season, whereas during the summer they are moved to pastures at progressively higher altitudes. The animals transferred from the valley farm to the alpine pasture must adapt to various management changes. This study aimed to evaluate whether a gradual inclusion of fresh grass in the diet of dairy cows in the valley farm can improve the performance and milk characteristics during summer grazing. Three groups of six animals each were considered: one group was kept in the stable, one was transferred from the valley to the summer farm without adaptation, and the other was progressively adapted to grazing with a feeding adaptation period. Compared to animals kept indoors, grazing animals had similar performance and milk characteristics, higher rumination time and, with respect to volatile compounds in milk, higher concentrations of alcohols, aldehydes, hydrocarbons, and ketones but lower concentrations of organic acids, phenolic compounds, and dimethyl sulfone, regardless of the feeding adaptation. In conclusion, the gradual inclusion of fresh grass in the diet in the valley farm did not improve the performance and milk characteristics during summer grazing. Abstract According to the alpine transhumance system, dairy cows are moved from indoor feeding with conserved forage to fresh herbage feeding on pasture. The aim of this study was to assess, as a feeding adaptation technique, the effect of a gradual inclusion of fresh herbage in the diet of Italian Simmental dairy cows before their transfer to alpine pasture on performance, behavior, and milk characteristics. Eighteen cows were assigned to three groups: animals transferred to alpine pasture with a 10-d feeding adaptation period consisting in gradual access to a pasture close to the valley farm (GT), animals transferred to alpine pasture without a feeding adaptation period (AT), and animals kept in the valley farm (IND). During the first two weeks of summer grazing, GT and AT showed higher rumination time and different concentrations of ketones, hydrocarbons, organic acids, toluene, alcohols, phenols, and dimethyl sulfone in milk as compared to IND, whereas no differences were found in milk yield, composition, or coagulation properties. No differences between GT and AT were evident for the studied variables. The feeding adaptation technique used in this study did not influence the performance and milk characteristics of Italian Simmental dairy cows grazing on alpine pasture.

Abstract
Simple Summary Welfare assessment in outdoor and extensive systems has rarely been investigated, and little is known about the most appropriate indicators. This study aimed at compiling a list of animal-based measures of welfare for domestic ruminants raised on outdoor/extensive systems by means of a systematic review. Out of 810 papers retrieved, 52 matched the inclusion criteria and went through an in-depth analysis. According to available literature, 45 indicators have been used to assess welfare on pasture, often following different methodologies. Most indicators were measured by observers even if the use of sensor technologies increased in recent years. Considering the growing interest in pasture-based or grass-fed products, it is suggested that welfare assessment in outdoor/extensive farming systems is carried out by following shared methodologies in order to provide evidence of the higher animal welfare claims that these products often imply compared to indoor systems. Abstract Outdoor and extensive farming systems allow animals to behave in a natural way and are often perceived as welfare friendly. Nonetheless, the natural environment poses multiple challenges to the welfare of animals, sometimes hampering their capacity to cope. Welfare assessment in outdoor and extensive systems has been rarely investigated, and little is known about the most appropriate indicators. The aim of this review was to identify animal-based measures of welfare to apply in extensive and pasture-based systems in domestic ruminants. Through the use of a dedicated software for systematic reviews, 810 papers were screened and a total of 52 papers were retained for in-depth analysis. ABM resulting from these papers were initially divided according to the species (cattle and small ruminants, including sheep and goats) and then to four principles: comfort, behavior, feeding and health. The results showed that welfare data were collected applying different methodologies, with an increasing use of sensors in recent years. The need to herd and restrain animals for individual data collection is one of the major constraints to data collection in extensive farming systems. It is suggested that welfare assessment in outdoor/extensive farming systems is carried out by following shared procedures in order to provide evidence of the higher animal welfare claims that these products often imply compared to indoor systems.

Comparison of Mineral, Metabolic, and Oxidative Profile of Saanen Goat during Lactation with Different Mediterranean Breed Clusters under the Same Environmental Conditions. Abstract
Simple Summary The study aims to compare physiological and productive responses of five Mediterranean heritage goat breeds with a high production breed, spread worldwide, the Saanen breed. The overall objective of the paper was to highlight that in difficult environmental conditions, although not so extreme, a high production breed does not actually represent the best solution, both from animals’ welfare conditions and for production. Mediterranean breeds showed better milk quality than Saanen, and tended to recover earlier from negative energy balance. However, no differences were observed on long-term oxidative stress markers. This paper contributes to increase interest towards animal biodiversity and valorization of local breeds, which are characterized by a long selective pressure linked to the environmental adaptation and less selected for productive traits. Abstract This study aimed to describe metabolic, oxidative, and mineral blood profiles of Saanen does through lactation compared with Mediterranean breed clusters (Maltese and Rossa Mediterranea, and Jonica, Garganica, and Girgentana). Milk and blood samples of 57 dairy goats (9–10 goats per breed) were collected from the 2nd to the 30th week of lactation every 2–3 weeks. Saanen showed greater milk yield and somatic cell score, and lower fat and protein percentage through lactation (p < 0.05) than the Mediterranean breed clusters. Blood analysis revealed that stage of lactation had a greater impact than breed cluster, except for uric acid, alkaline phosphatase, and aspartate aminotransferase. Plasmatic non-esterified fatty acids indicated a greater negative energy balance in Saanen than the other breed clusters during early and medium lactation stages (p < 0.05). Serum Cl, Mg, and Ca increased in all the breed clusters from early to the following stages of lactation (p < 0.05). No significant prooxidant/antioxidant imbalances were detected in any of the three clusters during the entire lactation. In conclusion, Mediterranean breeds tended to recover earlier from negative energy balance than Saanen, but effects of breed or stage of lactation on long-term oxidative stress indicators were not evident.

Abstract
The aim of this study was to determine how cows with different genetic merit behave and perform when grazing biodiverse and heterogeneous mountain pastures with different slopes. Three groups of 12 cows in late lactation, each composed of four Holstein, four Montbéliarde and four Valdostana Red Pied cows, breeds of increasing presumed robustness and decreasing milk yield (MY) potential. Cows grazed without concentrate either on a low-diversity flat pasture or on two species-rich mountainous pastures having slopes of either 7° or 22°. Milk yield, BW and grazing behaviour were monitored two times in the first and once in the second grazing cycle. Cows of different breeds had similar behaviour on all pastures. The Montbéliarde cows performed close to their production potential; Holstein and Valdostana cows produced less milk than anticipated. No breed difference in terms of BW loss was found. The Valdostana cows exhibited the least selective behaviour with respect to plant species and plant growth stage. Still, all cows searched for the most palatable vegetation regardless of pasture diversity. On the steep pasture, cows optimised the trade-off between ingesting and saving energy to obtain feed. They remained longer at the lowest zone and selected forbs, whereas cows on the flatter pasture went to the upper zone to select grasses. The present study gave no evidence for a superior short-term adaptation to harsh grazing conditions through an optimised feeding behaviour of the Valdostana breed compared to Montbéliarde and Holstein cows.

Different management systems are practiced in the upland depending on topography and available infrastructures. This study aimed to assess the effects of two traditionally practiced upland pasture management systems (full-time grazing and part-time grazing) on feeding behavior and milk yield and quality. Cows with access to pasture for only 6 h per day had different feeding behaviors than cows on pasture 24 h per day; their milk yields, however, were similar. Although protein and casein contents were higher in the milk of cows with full-time access to pasture, milk coagulation properties did not differ between the two systems. The differences found in milk fatty acid profiles suggest that cows with part-time access to pasture mobilized more body fat reserves to counterbalance the energy expenditures required during fasting periods and for walking back and forth between the barn and the pastures. Abstract Different grazing management systems are practiced on upland dairy farms during summer, depending on topography, local traditions, and infrastructure. The present experiment compared two distinct management systems with respect to feeding behavior and milk-related properties. Two similar groups of eight Valdostana Red Pied cows originating from two farms were followed during three grazing events in summer on three upland grazing sites. Cows in the full-time grazing group were kept exclusively on pasture and milked twice daily in a mobile milking parlor. Cows in the part-time grazing group had access to pasture for 4 h and 2 h after their morning and evening milkings, respectively. The part-time grazing cows differed markedly in their feeding behavior; they exhibited shorter daily ingestion times and longer durations of ingestion and idling bouts than full-time grazing cows. Part-time grazing cows had lower milk protein and casein contents, but milk yield and milk coagulation properties did not differ from the full-time grazing cows. As a result of the fasting periods in the barn, part-time grazing cows synthesized less fatty acids de novo and mobilized body fat reserves, as evidenced by the higher proportion of oleic acid in their milk fat.

Abstract
Simple Summary Summer transhumance of dairy cows is a seasonal pastoral system practiced in many European countries from ancient times. This practice provides additional forage supply for mountain dairy farms and plays a role in the preservation of landscape, biodiversity, and natural habitats and conservation of local traditional dairy products, but it may affect cows’ physiological and nutritional status. This study aimed to investigate the effects of transhumance of Brown Swiss cows to summer pastures on the yield, composition, and coagulation properties of milk, and on cheese yield. For this study, twelve multiparous cows from a mountain lowland permanent farm were divided into two groups of six cows: One group stayed at the permanent farm while the other moved to the alpine pasture (1860 m above sea level). Cows at the alpine pasture had reduced milk yield and body condition, and greater fat and lower protein contents in milk compared to cows at the permanent farm. Conversely, neither milk coagulation properties nor cheese yield were affected by summer transhumance. In conclusion, summer transhumance did not affect the cheese making efficiency of milk compared to permanent farm, but the negative effect on milk yield depressed daily cheese yield, which was 2 kg/d lower in cows moved to Alpine pasture. Abstract Summer transhumance to alpine pastures (ALP) is widespread in dairy systems of alpine regions. This study aimed to investigate the effects of transhumance of Brown Swiss cows to ALP on the yield, composition, and coagulation properties of milk (MCP), and on cheese yield (CY). The study involved 12 multiparous cows kept at a mountain lowland permanent farm (PF), which were divided into two equal groups: One remained at the PF, the other was moved to the ALP (1860 m above sea level) from July to September. Every month (June to October), daily milk yield (MY) and body condition score (BCS) were recorded, and individual milk samples (n = 60, 2000 mL each) were collected to assess milk composition, MCP, and CY. Compared with PF, ALP cows had a reduced MY and BCS, which was maintained on return to the PF, greater fat and lower protein contents of milk. Neither MCP nor CY were affected by summer transhumance. In conclusion, summer transhumance did not affect the cheese making efficiency of milk but depressed MY and consequently daily cheese yield, which was nearly 2 kg/d lower for the ALP than the PF cows and was only partially recovered after returning to the PF in autumn.

Abstract
The aim of this trial was to assess the effect of pasture type and concentrate supplementation on the fatty acids (FA) composition of milk and cheese obtained during summer grazing on mountain pasture. Seventy-two Italian Simmental dairy cows were assigned to two groups that differed by the amount of concentrate supplementation: 3.0 kg/head/d (HIGH) vs. 1.5 kg/head/d (LOW). The dairy cows grazed on a Poion alpinae alliance pasture (PAST1), and subsequently they grazed on a Seslerion caeruleae alliance pasture (PAST2) for 10 d each. In the last three days of each experimental period, milk samples were collected immediately before each cheese-making event. Cheese samples were collected from each cheese loaf after 60 d of ripening. LOW showed higher isoFA, FA intermediates of the ruminal biohydrogenation, C18:3 c9,c12,c15, and total polyunsaturated fatty acid (PUFA) levels than HIGH. The pasture type had a more limited effect on FA composition of milk than concentrate level and was mainly related to monounsaturated fatty acids (MUFA), which were higher in PAST1 than PAST2 (p < 0.05). In cheeses, these differences were reduced. The phytanic acid and phytanic isomer ratio (SRR/RRR) in milk were not affected either by supplement level (p > 0.05) or by type of pasture (p > 0.05). Increasing the concentrate offered to dairy cows from 1.5 to 3.0 kg/d did not markedly influence the level of PUFA in cheeses produced during summer grazing on high mountain pasture.

Abstract
Lameness is a key health and welfare issue affecting commercial herds of dairy cattle, with potentially significant economic impacts due to the expense of treatment and lost milk production. Existing lameness detection methods can be time-intensive, and under-detection remains a significant problem leading to delayed or missed treatment. Hence, there is a need for automated monitoring systems that can quickly and accurately detect lameness in individual cows within commercial dairy herds. Recent advances in sensor tracking technology have made it possible to observe the movement, behaviour and space-use of a range of animal species over extended time-scales. However, little is known about how observed movement behaviour and space-use patterns in individual dairy cattle relate to lameness, or to other possible confounding factors such as parity or number of days in milk. In this cross-sectional study, ten lame and ten non-lame barn-housed dairy cows were classified through mobility scoring and subsequently tracked using a wireless local positioning system. Nearly 900,000 spatial locations were recorded in total, allowing a range of movement and space-use measures to be determined for each individual cow. Using linear models, we highlight where lameness, parity, and the number of days in milk have a significant effect on the observed space-use patterns. Non-lame cows spent more time, and had higher site fidelity (on a day-to-day basis they were more likely to revisit areas they had visited previously), in the feeding area. Non-lame cows also had a larger full range size within the barn. In contrast, lame cows spent more time, and had a higher site-fidelity, in the cubicle (resting) areas of the barn than non-lame cows. Higher parity cows were found to spend more time in the right-hand-side area of the barn, closer to the passageway to the milking parlour. The number of days in milk was found to positively affect the core range size, but with a negative interaction effect with lameness. Using a simple predictive model, we demonstrate how it is possible to accurately determine the lameness status of all individual cows within the study using only two observed space-use measures, the proportion of time spent in the feeding area and the full range size. Our findings suggest that differences in individual movement and space-use behaviour could be used as indicators of health status for automated monitoring within a Precision Livestock Farming approach, potentially leading to faster diagnosis and treatment, and improved animal welfare for dairy cattle and other managed animal species.
