Abstract
The COVID-19 pandemic has caused major problems in many areas of the world and has deeply affected many sectors and industries. The food and beverage industry is one of the industries that has been severely affected by the COVID-19 pandemic. This study aims to explore the impact of the pandemic on the Turkish fruit juice industry and the attitudes and behaviors of companies. In addition, the study seeks to identify the changes in the industry caused by the pandemic and discuss its long-term effects. The material used for the study consists of the data obtained from the surveys conducted among the companies producing fruit juices in Türkiye. The results show that the pandemic had a significant impact on companies' logistics activities, while supply activities were moderately affected. However, the effects of the pandemic on exports, sales, production, total profit, and R&D activities were comparatively limited. When comparing the pre-pandemic period with the first year of the COVID-19 pandemic, it was observed that some companies in the industry experienced declines in production, sales, exports, and overall profit, whereas others experienced increases in these metrics. These variations were not associated with company size or length of operation, suggesting that the impact of the pandemic on individual companies was unique. Interestingly, some companies reported positive effects from the pandemic, such as increased demand for certain products, new export markets, improved food safety practices, new suppliers and improved crisis management skills. However, the fruit juice industry in Türkiye was found to be vulnerable in the areas of logistics and supply chain management. The study suggests that companies should strengthen supply chain management, improve stock management, and create online marketing plans to reduce potential problems in future crises. Additionally, it contributes to the development of strategies to mitigate the impact of future pandemics or bottlenecks that may emerge in the future, thereby promoting the efficiency and sustainability of the fruit juice industry as a whole.

Abstract
The global-local supply chains are affected by the forward and downward propagation of COVID-19. The pandemic disruption is a low-frequency and high-impact (black swan) event. Adapting to the "New Normal" situation requires adequate risk mitigation strategies. This study proposes a methodology to implement a risk mitigation strategy during supply chain disruptions. Random demand accumulation strategies are considered to identify the disruption-driven challenges under different pre and post-disruption scenarios. The best mitigation strategy and the optimal location of distribution centers to maximize the overall profit were determined using simulation-based optimization, greenfield analysis, and network optimization techniques. The proposed model is then evaluated and validated using appropriate sensitivity analysis. The main contribution of the study is to (i) perform cluster-based supply chain disruption analysis, (ii) propose a resilient and flexible model to illustrate the proactive and reactive measures for the ripple effect, (iii) prepare the supply chain for future pandemic-like crises, and (v) reveal the relationship between the pandemic impact and supply chain resilience. A case study of an ice cream manufacturer is used to demonstrate the proposed model.

Abstract
The adoption of a vegetarian diet might have public health and environmental benefits. However, little is known about urban and rural Generation Z tourists' attitudes toward vegetarianism or vegetarian consumption within the Chinese urban and rural settings. Hence, to address this gap, the present study adopted a sequential and mixed research approach based on a survey (n = 212) and laddering interviews (n = 20) to validate post-millennial tourists' motives for adopting a vegetarian diet. The results identified the top four motives as environmental protection and resource conservation, ethical consideration, personal taste and choice, and personal healthcare issues. The top four barriers to vegetarianism were unavailability and limited choice, peer pressure, traditional prejudice/habit, and the inability to change. The results also demonstrated that both rural and urban tourists adopt vegetarianism mainly for environmental protection and ethical consideration, a subtle difference between them is that urban vegetarians emphasized ethical considerations more but rural ones emphasized food and variety. Urban consumers considered unavailability and limited choice as the topmost barriers to being vegetarian, while rural vegetarians found traditional prejudice to be restricting. Due to traditional dietary habits and peer influence, rural tourists face many more challenges when adopting a vegetarian diet. Understanding the perceived benefits and barriers to being vegetarian in different regions will not only enrich the theory of food nutrition but also expand Generation Z tourists' consumption behavior and practices.

Abstract
The coronavirus disease 2019 (COVID-19) pandemic, which began in 2019, has far-reaching ramifications, including economic losses and health challenges that still affect various parts of the world. During our review, we learned that the entire world is working to stop the spread of the SARS-CoV-2 outbreak. We explore ways that may lower the danger of SARS-CoV-2 contamination and useful strategies to avoid the possibility of SARS-CoV-2 spreading through food. While hygienic protocols are required in the food supply sector, cleaning, disinfection, and the avoidance of cross-contamination across food categories and other related goods at different stages of the manufacturing process remain especially important because the virus can survive for long periods of time on inert materials such as food packaging. Furthermore, personal hygiene (regular washing and disinfection), wearing gloves and using masks, garments, and footwear dedicated to maintaining hygiene provide on-site safety for food sector personnel, supply chain intermediaries, and consumers. Restrictions imposed in response to the pandemic (e.g., closure of physical workplaces, canteens, cafes, restaurants, schools, and childcare institutions), changes in household grocery shopping frequency, individuals' perceived risk of COVID-19, income losses due to the pandemic, and sociodemographic factors are among the factors. The conclusions drawn from this study consider the implications of healthy diets, food system resilience, behavior change, and nutritional imbalance for policymakers and food supply chain participants, as well as the antimicrobial effects of vitamins and nutrients. During a public health crisis, people should eat less, necessitating preventive policies and nutritional advice to deal with this.

Abstract
The COVID-19 pandemic’s characteristics, including how quickly it spread, and the emergence of new virus variations, raise serious questions about the pandemic’s potential repercussions and complications in the food and beverage industry, among other industries. The global COVID-19 pandemic highlights the pressing need to reconsider how we manufacture and market food and beverage goods. During the epidemic, SMEs must build organizational resilience (OR) in order to recover economically, socially, and communally. Relational capital (RC) is a crucial factor that can be deployed by SMEs to acquire the resources existing in the external networks to adapt to disturbances; however, the impact of RC on the resilience of Egyptian food and beverage SMEs is under-examined. Additionally, it is unclear how RC promotes organizational resilience. In this regard, we argue that social interactions and regular communication can let an SME and its business partners exchange information and best practices, thereby enabling it to immediately establish backup plans to deal with the disruption. In order to achieve our aim, we investigated how relational capital affected organizational resilience both directly and indirectly through environmental scanning, utilizing partial least squares structural equation modeling (PLS–SEM).The results from 217 Egyptian food and beverage SMEs demonstrate that relational capital directly and positively affected organizational resilience. Besides, the RC–OR relationship is partially mediated by environmental scanning. Our current study, therefore, adds to the extant literature through being one of the few studies to address the topics of relational capital and resilience altogether during crisis times within a developing country, an issue that has not been sufficiently investigated in exiting literature. Moreover, our current study is the first one to empirically investigate the role of relational capital in facilitating environmental scanning activities of SMEs to ultimately foster their resilience. Our results, thus, prove that a large amount of information relevant for recovery are inherent within an SME’s external relations network. We provide implications for theory and practice.

Abstract
COVID-19 has had a strong impact on the food supply chain (FSC) in many countries. The objective of this study was to determine the vulnerability of the FSC in a developing country, namely Peru. The main weakness of the FSC is its centralization, and COVID-19 aggravated this deficit in Peru. This prevents its stability on a large scale, especially in rural areas, which suffer from food and nutritional insecurity. In spite of this, the food system was stabilized due to agricultural, livestock and fishing potential of Peru. In addition, the efforts of local producers and informal vendors helped to maintain the availability of food throughout the country. Several examples of short (and decentralized) FSC were described, highlighting their importance for supplying the population in different areas of the country. In addition, they allow for rapid resolution of interruptions such as the current health crisis. Also mentioned are some suggestions for strengthening Peru's FSC such as the use of new technologies, self-production of food and the exploitation of non-conventional food sources. Emphasis is placed on the importance of environmental sustainability of the FSC and of implementing strategies to prevent illness among workers. This study aims to reflect on the importance of having a resilient and flexible FSC. Taking Peru as a model, the information provided is useful to understand how to improve the food system through the intervention of all the agents involved, such as government, academia, industry and the population.

Abstract
PurposeThe purpose of this study is to augment the perceived service quality (PSQ) dimensions as well as evaluate the effects of pandemic susceptibility and severity by appending crucial enablers of customer satisfaction (CS) in the restaurant industry (RI).Design/methodology/approachThe top 10 restaurants from Mumbai and Kolkata were selected based on the Conde Nast Traveller Magazine List, 2020. The study used a cross-sectional design to collect responses from 840 respondents across the two major metropolitans of India after the second wave of COVID-19 by employing a structured questionnaire. The proffered hypotheses in this study were validated using factor analysis and structural equation modelling (SEM) techniques.FindingsThis research espies pivotal facilitators of CS and customers' perceived value (CPV). The results divulge that food quality (FQ) and tangibility dimensions markedly enhance CS while the FQ and digital technologies (DT) dimensions augment CPV in Indian restaurants. The study asserts that CPV acts as a partial mediator between FQ and DT on the one hand and CS on the other. In addition, perceived pandemic susceptibility (PPSU) and perceived pandemic severity (PPSE) moderate the association between CPV and CS in restaurants.Research limitations/implicationsThis study exemplifies the critical enablers of CS and CPV that may invigorate restaurant owners, managers and policymakers to prioritize the identified dimensions to aggrandize CS and CPV quotients.Originality/valueThe study enriches the literature by assimilating DT and CPV dimensions in a comprehensive theoretical framework. The research is unique in attempting to unfurl the moderating effects of PPSU and PPSE in the RI.

Abstract
Purpose
Prior research studies have discussed the role of corporate social responsibility (CSR) during crisis situations in increasing the resilience and sustainability of the companies. There are two basic models of crisis management – reactive and proactive. When a crisis occurs, suddenly firms tend to act reactively and progressively take proactive steps to manage the crisis. CSR can also be reactive and proactive during crisis situations. Against this backdrop, this paper aims to explore whether CSR during the COVID-19 pandemic moved from a reactive to a proactive stance, with specific focus on CSR legislation, corporate CSR response and corporate thinking about CSR.
Design/methodology/approach
This paper adopts a mixed methods approach, using both qualitative and quantitative research designs. This study draws upon both primary and secondary data.
Findings
The results highlighted the change in the CSR approach from being reactive to being proactive as the pandemic progressed. This was observed through the increase in frequency of CSR legislation, and the shift in the intent of CSR legislation from “prompting to donate” to “prompting to volunteer.” Similarly, the shift in reactive to proactive CSR corporate response was observed through the increased spending on CSR and improved COVID-related CSR reporting.
Practical implications
This study recommends companies to manage crises by becoming more proactive. CSR activities need to be closely aligned with national developmental objectives, and collaborate with various stakeholders to achieve the intended outcomes of the activities.
Originality/value
To the best of the authors’ knowledge, this research paper is one of the few to study the impact of COVID-19 pandemic on CSR in India at a time when India went through three waves of the pandemic. This study corroborates with other studies in terms of managing crisis.

Abstract
The COVID-19 pandemic has changed traditional consumer consumption behavior and requires a new service strategy to cope with sustainable consumption. Moreover, it is necessary to focus academic attention on consumer behavior to cook and eat more easily amid Korea’s socioeconomic changes such as the increase in single-person households, aging, rising prices, and continuing economic recession. In this study, we used a revised importance–performance analysis (IPA) to identify specific measures to improve consumer satisfaction with home meal replacements (HMRs). An online survey of Korean adults who had purchased HMRs was conducted based on a convenience sampling method. According to the results, items that could be intensively improved were the ‘introduction of new dishes’, ‘creation of various flavors’, ‘cost-effectiveness, and ‘reasonable price’, whereas ‘easy to prepare’, ‘easily available’, and ‘identified country of origin’ received favorable assessments. With the growth of the non-face-to-face economy due to COVID-19, our findings suggest marketing strategies for sustainable HMR consumption.

Abstract
The economic specialties caused by the global coronavirus pandemic completely changed everyday life regarding certain sectors. For the small and medium enterprises, processing during the pandemic held several significant challenges, such as: cost-efficient operations, hardship of keeping employees, efficient management of innovation and various corporate activities, keeping the customers, etc. Many enterprises saw severe damages indirectly from the coronavirus pandemic, as society itself had its habits significantly changed, thereby necessitating changes in strategy for small and medium enterprises, most notably for local service providers and producers that have no delivery service. In order to solve the issue at hand, several governments tried applying a variety of solutions—mostly by financing the enterprises in question. The goal of the authors is to understand the current operation of innovation initiatives that small and medium enterprises have post-COVID-19, and to obtain a clear view on changes in marketing habits. Furthermore, the analysis concentrates on the following: the state of family SMEs dealing in foodstuffs, and how to create a future view for such members of the sector by identifying best practices. Using data collected during 2020 and 2021, and employing descriptive statistics and a conjoint analysis, the authors wished to see how the coronavirus pandemic affected SMEs, detect the changes in their marketing and innovation policy due to the pandemic, and help them create core business strategy via consumer feedback. Authors found that SMEs had to innovate by 2021 beyond their 2019 expectations, and that customers had partially validated their endeavors through their answers.

Abstract
Technological advances such as blockchain, artificial intelligence, big data, social media, and geographic information systems represent a building block of the digital transformation that supports the resilience of the food supply chain (FSC) and increases its efficiency. This paper reviews the literature surrounding digitalization in FSCs. A bibliometric and key-route main path analysis was carried out to objectively and analytically uncover the knowledge development in digitalization within the context of sustainable FSCs. The research began with the selection of 2140 articles published over nearly five decades. Then, the articles were examined according to several bibliometric metrics such as year of publication, countries, institutions, sources, authors, and keywords frequency. A keyword co-occurrence network was generated to cluster the relevant literature. Findings of the review and bibliometric analysis indicate that research at the intersection of technology and the FSC has gained substantial interest from scholars. On the basis of keyword co-occurrence network, the literature is focused on the role of information communication technology for agriculture and food security, food waste and circular economy, and the merge of the Internet of Things and blockchain in the FSC. The analysis of the key-route main path uncovers three critical periods marking the development of technology-enabled FSCs. The study offers scholars a better understanding of digitalization within the agri-food industry and the current knowledge gaps for future research. Practitioners may find the review useful to remain ahead of the latest discussions of technology-enabled FSCs. To the authors’ best knowledge, the current study is one of the few endeavors to explore technology-enabled FSCs using a comprehensive sample of journal articles published during the past five decades.

Abstract
This research investigates how biomass supply chains (BSChs) for bioenergy within the broader bioeconomy could contribute to the post-COVID-19 recovery in three dimensions: boosting economic growth, creating jobs, and building more resilient and cleaner energy systems in four future scenarios, in the short term (by 2023) and long term (by 2030). A SWOT analysis on BSChs was used for generating a questionnaire for foresight by a two-round Delphi study. To interpret the results properly, a short survey and literature review is executed to record BSChs behavior during the pandemic. In total, 23 (55% response rate) and 28 (46% response rate) biomass experts from three continents participated in the Delphi and the short survey, respectively. The strongest impact from investment in BSChs would be on economic growth, followed by a contribution to the resilient and cleaner energy systems and job creation. The effects would be more visible in the long- than in the short-term period. Investments with the most impact on recovery are those that improve biomass material efficiency and circularity. Refurbishment of current policies to enhance the supply of biomass as a renewable resource to the future economy is a must.

Abstract
Coronavirus disease 2019 (COVID-19), caused by severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2), has led to an excess in community mortality across the globe. We review recent evidence on the clinical pathology of COVID-19, comorbidity factors, immune response to SARS-CoV-2 infection, and factors influencing infection outcomes. The latter specifically includes diet and lifestyle factors during pandemic restrictions. We also cover the possibility of SARS-CoV-2 transmission through food products and the food chain, as well as virus persistence on different surfaces and in different environmental conditions, which were major public concerns during the initial days of the pandemic, but have since waned in public attention. We discuss useful measures to avoid the risk of SARS-CoV-2 spread through food, and approaches that may reduce the risk of contamination with the highly contagious virus. While hygienic protocols are required in food supply sectors, cleaning, disinfection, avoidance of cross-contamination across food categories, and foodstuffs at different stages of the manufacturing process are still particularly relevant because the virus persists at length on inert materials such as food packaging. Moreover, personal hygiene (frequent washing and disinfection), wearing gloves, and proper use of masks, clothes, and footwear dedicated to maintaining hygiene, provide on-site protections for food sector employees as well as supply chain intermediates and consumers. Finally, we emphasize the importance of following a healthy diet and maintaining a lifestyle that promotes physical well-being and supports healthy immune system function, especially when government movement restrictions ("lockdowns") are implemented.

On Deploying Blockchain Technologies in Supply Chain Strategies and the COVID-19 Pandemic: A Systematic Literature Review and Research Outlook. SUSTAINABILITY 2021. Abstract
The emergence of a new pandemic, known as COVID-19, has touched various sections of the supply chain (SC). Since then, numerous studies have been conducted on the issue, but the need for a holistic review study that highlights the gaps and limits of previous research, as well as opportunities and agendas for future studies, is palpable. Through a systematic literature review on blockchain technology (BCT) deployment in supply-chain management (SCM) concerning the COVID-19 pandemic, this research seeks to add to the content of previous studies and to enlighten the path for future studies. Relevant papers were found using a variety of resources (Scopus, Google Scholar, Web of Science, and ProQuest). Seventy-two articles were systematically selected, considering the PRISMA procedure, and were thoroughly analyzed based on BCT, methodologies, industrial sectors, geographical, and sustainability context. According to our findings, there is a significant lack of empirical and quantitative methodologies in the literature. The majority of studies did not take specific industries into account. Furthermore, the articles focusing on the sustainability context are few, particularly regarding social and environmental issues. In addition, most of the reviewed papers did not consider the geographical context. The results indicate that the deployment of BCT in several sectors is not uniform, and this utilization is reliant on their services during the COVID-19 pandemic. Furthermore, the concentration of research on the impacts of the BCT on SCM differs according to the conditions of various countries in terms of the consequences of the COVID-19 pandemic. The findings also show that there is a direct relationship between the deployment of BCT and sustainability factors, such as economic and waste issues, under the circumstances surrounding COVID-19. Finally, this study offers research opportunities and agendas to help academics and other stakeholders to gain a better knowledge of the present literature, recognize aspects that necessitate more exploration, and drive prospective studies.

Abstract
This article is focused on the creation of a system for forecasting of future orders for a specific beverage cans manufacturer. The problem comes from the irregular ordering of cans from different customers; not only national companies, but also from companies abroad. This causes fluctuations in production and consequently an irregular transport regime. That is why the beverage can producer demanded a forecasting system that would help to create an annual production plan. The aim is to analyze the ordering process for the last two years and on that basis to create a forecast system of the possible ordering process for the following year. This is necessary for the introduction of regularity of production, because the frequent transitions of the line to another assortment range or other surface printing requires long downtimes due to the technological setting, thus creating large losses due to inactivity of the production line. As drinking habits of final customers reflect the sale of cans, it was expected that sale data would have a seasonable character; this was proved after a brief analysis of the former data. After that, the appropriate forecasting methods were chosen. The methodology was created to combine multiple forecast results into one to increase the forecast objectivity. Forecasting is performed at three different levels: forecasting of assortment, forecasting of region sale and total forecasting of all orders. In spite of the change in market behavior in 2020, due to the pandemic situation in the first wave of the COVID-19 crisis, the sale of beverage cans is expected to stabilize and return to pre-crisis level as early as 2021. Then the forecasting system will fully meet the company’s requirements.

Abstract
Edible seaweed, a nutrient-rich and sustainable food, has a long dietary history in China. To get a better understanding of the seaweed consumption of consumers in China, this study investigates the quantity and trend of seaweed consumption of Chinese residents and employs a Tobit model to examine the effects of urbanization and dietary knowledge on seaweed consumption among residents. The results show an increasing trend of household seaweed consumption in China, including both seaweeds consumed at home (SAH) and seaweeds consumed away from home (SAFH). Households in urban areas consumed more seaweeds on average than those in rural areas. Urbanization promotes total household seaweed consumption, including SAH and SAFH, whilst dietary knowledge has a significantly positive impact on total household seaweed consumption and SAH. The findings supplement empirical evidence on the seaweed consumption behavior of Chinese residents and have important policy implications for further promoting Chinese seaweeds consumption in the context of urbanization and increasing dietary knowledge.
