Effect of Large-Scale Paddy Rice Drying Process Using Hot Air Combined with Radio Frequency Heating on Milling and Cooking Qualities of Milled Rice

Influences of emerging drying technologies on rice quality

Rice is an important staple food in the world. Drying is an important step in the post-harvest handling of rice and can influence rice qualities and thus play a key role in determining rice commercial and nutritional value. In rice processing, traditional drying methods may lead to longer drying times, greater energy consumption, and unintended quality losses. Thus, it is imperative to improve the physical, chemical, and milling properties of rice while preserving its nutritional value, flavor, and appearance as much as possible. Additionally, it is necessary to increase the efficiency with which heat energy is utilized during the thermal processing of freshly harvested paddy. Moreover, this review provides insights into the current application status of six different innovative drying technologies such as radio frequency (RF) drying, microwave (MW) drying, infrared (IR) drying, vacuum drying (VD), superheated steam (SHS) drying, fluidized bed (FB) drying along with their effect on the quality of rice such as color, flavor, crack ratio, microstructure and morphology, bioactive components and antioxidant activity as well asstarch content and glycemic index. Dielectric methods of drying due to volumetric heating results in enhanced drying rate, improved heating uniformity, reduced crack ratio, increased head rice yield and better maintain taste value of paddy grains. These novel emerging drying techniques increased the interactions between hydrated proteins and swollen starch granules, resulting in enhanced viscosity of rice flour and promoted starch gelatinization and enhanced antioxidant activity which is helpful to produce functional rice. Moreover, this review not only highlights the existing challenges posed by these innovative thermal technologies but also presents potential solutions. Additionally, the combination of these technologies to optimize operating conditions can further boost their effectiveness in enhancing the drying process. Nevertheless, future studies are essential to gain a deeper understanding of the mechanism of quality changes induced by emerging processing technologies. This knowledge will help expand the application of these techniques in the rice processing industry.

Optimal conditions for beef tenderization through radiofrequency heating with cold air

High-temperature (15-37°C) aging can shorten the tenderizing time of beef; however, the use of constant temperature heating can lead to microbial spoilage. This study tested radiofrequency (RF) tenderization (RF-T) to find the appropriate conditions for the aging-like effect of beef without microbial spoilage. After subjecting beef to 22 h RF-T with four different cooling temperatures (15, 5, -10, and -20°C), the proliferated aerobic bacteria on the surface showed a concentration of 6-6.2 log CFU/g at -10 and -20°C, lower than 7-7.5 log CFU/g at 15 and 5°C. When beef was treated with 25 W/kg RF heating power for 48 h RF-T, the estimated reduction rate of the sliced shear force (SSF) and the increase rate of glutamic acid based on the weight before RF-T were 22.6% and 1.51-fold, which were greater than 19.6% and 1.37-fold with 20 W/kg, and 11.0% and 1.11-fold with 15 W/kg. The optimal specific RF heating power was calculated as 30 W/kg from the results' extrapolation. When processed for 48 h under optimal conditions (30 W/kg specific RF heating power, -20°C cooling air), the tenderization rate and the increased rates of free amino acids based on the weight before RF-T of beef reached over 20% and 1.5-fold with 5.22 log CFU/g aerobic bacteria, which was lesser than the Korean regulation value of 6.7 log CFU/g (5 × 106  CFU/g). Therefore, RF-T could be proposed as a promising high-temperature tenderization method with lowered risk of microbial spoilage. PRACTICAL APPLICATION: We showed that lowering the chamber temperature during RF-T was effective in surface drying and inhibiting aerobic bacteria. RF-T for 24-48 h with 30 W/kg specific RF heating power had an aging-like effect given tenderization and increase in FAAs. Moreover, by providing the matching circuit and impedance during RF-T, this method could be industrially reproducible.

Verification of rice quality during storage after drying with hot air and radio frequency heating

The objectives of the study were to observe the milling and cooking qualities of paddy rice dried with hot air (HA) and hot air and radio frequency heating (HA/RF) at 38 °C and 42 °C, and to observe these qualities after 6 months of storage under average temperature and RH of 28.4 °C and 70%, respectively. During storage, the average moisture content of paddy rice decreased from 13.66% to 11.37% in HA, 13.66% to 11.40% in HA/RF38, and 13.58% to 11.63 in HA/RF42. The milling qualities of rice were affected by the RF heating temperature and storage period. Rice dried with HA/RF38 and HA/RF42 could be safely stored for up to 5 months and 4 months, respectively, with satisfactory fissure percentage and head rice yield. The whiteness index significantly increased from 63.37 ± 0.58 to 64.46 ± 0.75 at HA, 62.78 ± 0.97 to 63.75 ± 1.55 at HA/RF38, and 62.77 ± 1.90 to 64.45 ± 0.95 at HA/RF42 during storage. For cooking qualities, elongation ratio (ER) was affected by RF and storage period, while texture profiles and pasting properties were only affected by storage period. The ER increased from month 3, by 10%, 11%, and 11% in HA, HA/RF38, and HA/RF42. The hardness of cooked rice reached its peak value between months 4-5. However, adhesiveness decreased as the storage period increased. The peak viscosity and setback increased with increasing storage period while breakdown conversely decreased. This study showed that hot air drying and RF heating temperatures of 38 °C could replace hot air drying without undesirable changes in milling and cooking properties during storage up to 5 months. Therefore, this is a promising drying technology for the rice milling industry.

Effects of emerging food pretreatment and drying techniques on protein structures, functional and nutritional properties: An updated review

Protein is one of the most important components of food which significantly contributes to the structure, functionality, and sensory properties which may affect consumer acceptability of processed products. Conventional thermal processing affects protein structure and induce undesirable degradation of food quality. This review provides an overview of emerging pretreatment and drying technologies (plasma treatment, ultrasound treatment, electrohydrodynamic, radio frequency, microwave, and superheated steam drying) in food processing by assessing protein structural changes to enhance functional and nutritional properties. In addition, mechanisms and principles of these modern technologies are described while challenges and opportunities for the development of these techniques in the drying process are also critically analyzed. Plasma discharges can lead to oxidative reactions and cross-linking of proteins that can change the structure of proteins. Microwave heating contributes to the occurrence of isopeptide or disulfide bonds which promotes α-helix and β-turn formation. These emerging technologies can be adopted to improve protein surface by exposing more hydrophobic groups which restrict water interaction. It is expected that these innovative processing technologies should become a preferred choice in the food industry for better food quality. Moreover, there are some limitations for industrial scale application of these emerging technologies that need to be addressed.

Discrepancy of Effective Water Diffusivities Determined from Dynamic Vapor Sorption Measurements with Different Relative Humidity Step Sizes: Observations from Cereal Materials

Water diffusivity, a critical parameter for cereal processing design and quality optimization, is usually concentration-dependent. dynamic vapor sorption (DVS) system provides an approach to establishing the relationship between water concentration and diffusivity. However, the usual relative humidity (RH) jump during practical sorption processes is usually greater than that adopted in DVS measurements. Water vapor sorption kinetics of glutinous rice grains, glutinous rice flour and wheat flour dough films were measured using the DVS system to verify if varying RH step sizes can obtain identical diffusivities within the same range. The effective diffusivities were determined according to Fick’s second law. The results revealed that increasing RH step size led to a higher estimated diffusivity, regardless of whether the water concentration gradient or potential chemical gradient was considered a driving force for water diffusion. This finding was further confirmed by a linear RH scanning DVS measurement. The water concentration-dependent diffusivity obtained from a multi-step DVS measurement, according to Fick’s second law, will overestimate the required time for practical cereal drying or adsorption. Thus, this paradoxical discrepancy needs a new mass transfer mechanism to be explained.
