Abstract
BACKGROUND This study aimed to evaluate the antimicrobial effects of zahter extract, zahter essential oil, laurel extract, and laurel essential oil on Salmonella Typhimurium inoculated on chicken wings. METHODS A total of 10 groups, including eight study groups and two control groups were formed, consisting of zahter extract and zahter essential oil and laurel extract and laurel essential oil in different proportions. In the study, laurel extract at 6.4% and 12.8% concentrations, laurel essential oil at 0.2% and 0.4% concentrations, zahter extract at 0.2% and 0.4% concentrations, and zahter essential oil at 0.2% and 0.4% concentrations were used. RESULTS The broth microdilution method was used to evaluate the antimicrobial activity of the extract and essential oils on the S. Typhimurium. Minimum inhibitory concentrations of the extracts and essential oils used in the study against S. Typhimurium were determined. The highest inhibitory effect on S. Typhimurium was observed in the 0.4% laurel essential oil group. It was determined that the inhibitory effect increased as the concentration of laurel essential oil increased. In addition, the antimicrobial activity of zahter essential oil is less inhibitory than the laurel extract, laurel essential oil, and zahter extract. CONCLUSION According to the results of this study, it has been revealed that extracts and essential oils obtained from zahter and laurel plants, which have been shown to be natural antimicrobial, can be used in foods as an alternative to chemical additives. To develop research results, the applicability of these extracts and essential oils in different foodstuffs should be examined using different ingredients and concentrations.

Abstract
In samples of Artemisia campestris (AC), Artemisia herba-alba (AHA) and Salvia jordanii (SJ) essential oils, up to 200 distinct volatile compounds were identified. Using headspace solid-phase microextraction combined with gas chromatography-olfactometry-mass spectrometry (HS-SPME-GC-O-MS), different panelists detected 52 of these compounds. This study offers the most detailed analysis of bioactive compound profiles conducted so far. The most abundant compounds identified were curcumene, making up 12.96% of AC, and camphor, constituting 21.67% of AHA and 19.15% of SJ. The compounds with the highest odor activity value (OAV) were (E,Z)-2,4-nonadienal (geranium, pungent), 3-nonenal (cucumber) and 2-undecenal (sweet) in AC, AHA and SJ, respectively. AHA essential oil showed significant antioxidant activity (IC50 = 41.73 ± 4.14 mg/g) and hydroxyl radical generation (hydroxylation percentage = 29.62 ± 3.14), as assessed by the diphenylpicrylhydrazyl (DPPH) method. In terms of oxygen radical absorbance capacity (ORAC), the strongest antioxidant activity was obtained for SJ essential oil (antioxidant activity of the essential oils, AOX = 337.49 ± 9.87).

Abstract
Nowadays, the wide spread of foodborne illness and the growing concerns about the use of synthetic food additives have shifted the focus of researchers towards essential oils (EOs) as possible antimicrobials and preservatives of natural origin. Thanks to their antimicrobial properties against pathogenic and food spoilage microorganisms, EOs have shown good potential for use as alternative food additives, also to counteract biofilm-forming bacterial strains, the spread of which is considered to be among the main causes of the increase in foodborne illness outbreaks. In this context, the aim of this study has been to define the antibacterial and antibiofilm profile of thyme (Thymus vulgaris L.) essential oil (TEO) against widespread foodborne pathogens, Salmonella enterica subsp. enterica serovar Typhimurium and Bacillus cereus. TEO chemical composition was analyzed through gas chromatography-mass spectrometry (GC-MS). Preliminary in vitro antibacterial tests allowed to qualitatively verify TEO efficacy against the tested foodborne pathogens. The subsequent determination of minimal inhibitory concentration (MIC) and minimal bactericidal concentration (MBC) values allowed to quantitatively define the bacteriostatic and bactericidal effects of TEO. To evaluate the ability of essential oils to inhibit biofilm formation, a microplate assay was performed for the bacterial biofilm biomass measurement. Results suggest that TEO, rich in bioactive compounds, is able to inhibit the growth of tested foodborne bacteria. In addition, the highlighted in vitro anti-biofilm properties of TEO suggest the use of this natural agent as a promising food preservative to counteract biofilm-related infections in the food industry.

Abstract
Allium tenuissimum L. as a kind of food condiment in northern China, is popular among more and more consumers owning to its special flavor from the flower. However, its composition has not been widely studied. Hence, the aim of this study was to investigate the chemical composition and antimicrobial and antioxidant activity of essential oil from Allium tenuissimum L. flowers. Gas chromatography−mass spectrometry (GC-MS) was applied to detect the chemical composition. The antimicrobial activity against foodborne pathogens was evaluated by measuring the zones of inhibition (ZOI), the minimal inhibitory concentration (MIC), and the minimal bactericidal concentration (MBC). The antioxidant effect was tested by the scavenging capacity on DPPH, ABTS+•, and •OH. The results of GC-MS showed that 72 volatile components were isolated and the structures 68 of them were identified, which comprised about 91.92% of the total composition of the oil. Among these compounds, terpenoid compounds and sulfurous compounds had the highest contents, especially dimethyl trisulfide. Our investigation demonstrated that the essential oil has better antimicrobial efficiency to Staphylococcus aureus, Bacillus subtilis, Escherichia coli, Aspergillus flavus, and Saccharomyces cerevisiae. In addition, the essential oil had a strong stability to UV. Furthermore, the essential oil exhibited a high radical-scavenging effect on DPPH, ABTS+•, and •OH, which is significant for application in the food industry. In conclusion, the essential oil could be used as an inexpensive and natural antibacterial and antioxidant agent in food.

Abstract
Essential oils (EOs) find application as flavoring agents in the food industry and are also desirable ingredients as they possess preservative properties. The Mediterranean diet involves the use of a lot of herbs and spices and their products (infusions, EOs) as condiments and for the preservation of foods. Application of EOs has the advantage of homogeneous dispersion in comparison with dry leaf use in small pieces or powder. Among them, Laurus nobilis (bay laurel) L. EO is an interesting source of volatiles, such as 1,8-cineole and eugenol, which are known for their preservative properties. Its flavor suits cooked red meat, poultry, and fish, as well as vegetarian dishes, according to Mediterranean recipes. The review is focused on its chemistry, quality control aspects, and recent trends in methods of analysis and activity assessment with a focus on potential antioxidant activity and applications to olive industry products. Findings indicate that this EO is not extensively studied in comparison with those from other Mediterranean plants, such as oregano EO. More work is needed to establish authenticity and activity methods, whereas the interest for using it for the preparation of flavored olive oil or for the aromatization and preservation of table oils must be further encouraged.

Abstract
The purpose of this study was to compare the yield, chemical composition, antimicrobial and antioxidant properties of essential oils isolated from leaves of Laurus nobilis L. by two different distillation methods. The essential oils isolated by hydrodistillation (HD) and steam distillation (SD) were analyzed by gas chromatography coupled to mass spectrometry (GC-MS) and gas chromatography with flame ionization detector (GC-FID). Hydrodistillation produced a yield of 0.95 ± 0.06% which is slightly higher than yield obtained by steam distillation 0.79 ± 0.07%. Seventy three compounds in the bay leaves oil obtained by steam distillation were identified while in essential oil obtained by hydrodistillation were identified only 54 compounds. The antioxidant activity was evaluated by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical method. Antimicrobial activity of obtained essential oils was evaluated by disc diffusion method in comparison with several chosen antimicrobials. The antimicrobial activity was tested on five microorganisms - Escherichia coli, Staphylococcus aureus, Enterococcus faecalis, Pseudomonas aeruginosa and Candida albicans. In general, oils produced by steam distillation had higher antimicrobial and antioxidant activities than hydrodistillation extracts. It seems that hydrodistillation is better for higher yield while steam distillation is better to use for more quality oils with stronger biological properties.

Abstract
Sustainable plant protection can be applied on apples against fungal pathogens such as Botrytis cinerea (which is responsible for gray mold)-a significant global postharvest disease. This pathogen can affect a wide range of hosts; and fruits may have variable susceptibilities to B. cinerea from different plant hosts. New possibilities to control gray mold in food production are under demand due to the emergence of resistance against antifungal agents in fungal pathogens. Cinnamon, pimento, and laurel extracts were previously assessed for antifungal activities under in vitro conditions and were found to have the potential to be effective against postharvest gray mold. Therefore, this study aimed to investigate the antifungal activity of cinnamon, pimento, and laurel extracts in vitro and against postharvest gray mold on apples to determine the susceptibility of apple fruits to B. cinerea from different plant hosts, and to analyze the chemical composition of the extracts. Apples (cv. "Connell Red") were treated with different concentrations of extracts and inoculated with B. cinerea isolates from apple and strawberry followed by evaluation of in vitro antifungal activity. The results reveal that most of the concentrations of the extracts that were investigated were not efficient enough when assessed in the postharvest assay, despite having demonstrated a high in vitro antifungal effect. Apples were less susceptible to B. cinerea isolated from strawberry. To conclude, cinnamon extract was found to be the most effective against apple gray mold; however, higher concentrations of the extracts are required for the efficient inhibition of B. cinerea in fruits during storage.

Abstract
The antifungal activity of Pelargonium capitatum essential oil (PCEO) and Cymbopogon martini essential oil (CMEO) against C.albicans were evaluated. The main components of essential oils were β-cytronellol 58.81% and geraniol 83.94% in PCEO and CMEO, respectively. PCEO was more activity than CMEO for all C.albicans strains tested with values MIC50 or MIC90 of 780 µg/ml. PCEO used in combination with fluconazole or CMEO shows synergistic effect with FICI values ≤ 0.5. Moreover both essential oils are able to inhibit the major virulence factor of C.albicans as the germ tube formation at sub-inhibitory concentration of 195 µg/ml. In conclusion, it is possible to hypothesize that PCEO can be used in combination with fluconazole or CMEO. Further studies are in due course to confirm these results.

Abstract
Essential oils obtained via the hydrodistillation of two Asian herbs (Houttuynia cordata and Persicaria odorata) were analyzed by gas chromatography coupled to mass spectrometry (GC–MS) and gas chromatography with flame ionization detector (GC–FID). Additionally, both the liquid and vapor phase of essential oil were tested on antimicrobial activity using the broth microdilution volatilization method. Antimicrobial activity was tested on Gram-negative and Gram-positive bacteria—Escherichia coli, Staphylococcus aureus, Pseudomonas aeruginosa, Enterococcus faecalis, Streptococcus pyogenes, Klebsiella pneumoniae, Seratia marcescense and Bacillus subtilis. Hydrodistillation produced a yield of 0.34% (Houttuynia cordata) and 0.40% (Persicaria odorata). 41 compounds were identified in both essential oils. Essential oils contained monoterpenes and their oxidized forms, sesquiterpenes and their oxidized forms, oxidized diterpenes, derivates of phenylpropene and other groups, such as, for example, aldehydes, alcohols or fatty acids. Both essential oils were antimicrobial active in both vapor and liquid phases at least in case of one bacterium. They expressed various antimicrobial activity in the range of 128–1024 μg∙mL−1, 512–1024 μg∙mL−1 in broth and 1024 μg∙mL−1, 512–1024 μg∙mL−1 in agar, respectively. Research showed new interesting information about P. odorata and H. cordata essential oils and demonstrated that both essential oils could be possibly used in the field of natural medicine or natural food preservation.

Abstract
The evolution of antimicrobial resistance (AMR) in pathogens has prompted extensive research to find alternative therapeutics. Plants rich with natural secondary metabolites are one of the go-to reservoirs for discovery of potential resources to alleviate this problem. Terpenes and their derivatives comprising of hydrocarbons, are usually found in essential oils (EOs). They have been reported to have potent antimicrobial activity, exhibiting bacteriostatic and bactericidal effects against tested pathogens. This brief review discusses the activity of terpenes and derivatives against pathogenic bacteria, describing the potential of the activity against AMR followed by the possible mechanism exerted by each terpene class. Abstract
The present work describes the antimicrobial action of 25 monoterpenes (six hydrocarbons, five ketones, two aldehydes, six alcohols and six acetate analogues) against Gram-negative Escherichia coli and Gram-positive Staphylococcus aureus and antifungal activity against Aspergillus flavus. The antibacterial activity was evaluated by broth microdilution technique as a minimum inhibitory concentration (MIC) and the antifungal activity was performed by mycelia radial growth technique as the effective concentration causing 50% inhibition of the mycelial growth (EC50). The results showed that thymol and α-terpineol were the most potent against E. coli (MIC = 45 and 55 mg/L, respectively) and S. aureus (MIC = 135 and 225 mg/L, respectively). The results also showed that thymol displayed the maximum antifungal action against A. flavus with EC50 20 mg/L. Furthermore, the antioxidant activity was determined using N,N-dimethyl-1,4-phenylenediamine (DMPD) and the results showed that geraniol were the most potent compound (IC50 = 19 mg/L). Molecular docking studies indicated that the compounds displayed different binding interactions with the amino acid residues at the catalytic sites of N5-carboxyaminoimidazole synthetase and oxysterol binding protein Osh4 enzymes. Non-covalent interactions including van der Waals, hydrogen bonding as well as hydrophobic were observed between the compounds and the enzymes. A significant relationship was found between the docking score and the biological activity of the tested monoterpenes compared to the ceftriaxone and carbendazim as standard bactericide and fungicide, respectively. In silico ADMET properties were also performed and displayed potential for the development of promising antimicrobial agents. For these reasons, these compounds may be considered as potential ecofriendly alternatives in food preservation to delay or prevent the microbial infection and prolong the shelf life of food products.

Abstract
Aim This study was aimed to evaluate the effects of Artemisia herba-alba (white wormwood) or olive leaf (Olea europaea) powder supplementation on growth performance, carcass yield, and serum biochemical parameters in broilers. Materials and Methods The study was conducted from April to May 2017 in Chemini region, Northern Algeria. A total of 60 1-day-old Ross 308 male chicks were divided into three groups consisted of 10 chicks, in each of two replications. The chicks in Group 1 were fed with a standard commercial diet (SCD); Group 2 received the same SCD with 2% supplementation of A. herba-alba powder; and Group 3 received the same SCD with 2% supplementation of O. europaea powder. Growth performance was measured with body weights every 2 weeks, daily feed intake, feed conversion ratio (FCR), and carcass yield at the end of 42 days of rearing. Blood samples were collected to analyze serum glucose, cholesterol, triglycerides, urea, and total protein levels. Results Results showed that, at 42 days of rearing, supplementation of O. europaea and A. herba-alba significantly increased (p<0.001) mean body weight (2230.10±26.38 g and 2117.42±26.38 g, respectively, vs. 2336.66±27.88 g in chicks of Group 1), but there was no significant difference (p≥0.05) among the three diets for FCR or percentage carcass yield. Among the serum biochemical parameters, glucose was significantly affected (p<0.01) by supplementation of olive leaf powder (1.90 g/L: Group 3), compared to the SCD (2.24 g/L: Group 1) or Artemisia powder (2.05 g/L: Group 2). Moreover, the supplementation of olive leaf powder in Group 3 broilers significantly affected (p<0.05) the serum cholesterol level (0.95 g/L), compared to the control diet (1.13 g/L). There was no significant difference (p≥0.05) for the other selected serum biochemical concentrations, namely triglycerides, urea, and total protein. Conclusion The supplementation of Artemisia or olive leaf powder into the diet for broilers improved body weight by about 5% or 10%, respectively, at slaughter with moderate changes in blood biochemical parameters.

Abstract
Essential oils of aromatic and medicinal plants generally have a diverse range of activities because they possess several active constituents that work through several modes of action. The genus Artemisia includes the largest genus of family Asteraceae has several medicinal uses in human and plant diseases aliments. Extensive investigations on essential oil composition, antimicrobial, insecticidal and antioxidant studies have been conducted for various species of this genus. In this review, we have compiled data of recent literature (2012-2017) on essential oil composition, antimicrobial, insecticidal and antioxidant activities of different species of the genus Artemisia. Regarding the antimicrobial and insecticidal properties we have only described here efficacy of essential oils against plant pathogens and insect pests. The literature revealed that 1, 8-cineole, beta-pinene, thujone, artemisia ketone, camphor, caryophyllene, camphene and germacrene D are the major components in most of the essential oils of this plant species. Oils from different species of genus Artemisia exhibited strong antimicrobial activity against plant pathogens and insecticidal activity against insect pests. However, only few species have been explored for antioxidant activity.

Abstract
Salmonella typhimurium is a severe threat to human life. The treatment became more difficult with the emergence of multidrug resistance. In the present in silico study, a novel drug target L-asparaginase was tested against three ligands eucalyptol, sabinene, and cinnamaldehyde, major components of cardamom, nutmeg, and cinnamon, respectively. The lowest docking score was obtained for sabinene followed by eucalyptol and cinnamaldehyde i.e. -5.648, -3.939 and -3.469. The docking score of sabinene is also better than the standard drug, Ciprofloxacin (-4.661) and natural substrate L-asparagine (-5.497). The amino acid residues involved in interactions inside the binding pocket are threonine 115 and threonine 35. The ADMET profile studied, also suggests the potency of the test ligands as a drug candidate. The results suggest they could be safe alternatives of chemical compounds to treat infections and combat multidrug-resistant bacteria.

Abstract
In recent years, the use of nitrites and sulfites as food preservatives has been a cause for concern due to the health problems that these additives can cause in humans. Natural products have been studied as an alternative, but most of them have hardly been applied in the food industry for technological and economic reasons. In this sense, organic salts such as sodium acetate are a good alternative due to their affordability. Thus, this study evaluated the capacity of sodium nitrite, sodium sulfite, a sodium acetate product (TQI C-6000), and chitosan to inhibit two important foodborne pathogens, Salmonella enterica and Listeria monocytogenes. The MIC of each chemical was in vitro evaluated and their antibacterial action was subsequently checked in situ using minced meat as a food model. MIC values of sodium nitrite (10,000 mg/L) and sodium sulfite (50,000 mg/L) for Salmonella enterica were higher than the values allowed by legislation (450 mg/L for sulfites and 150 mg/L for nitrites). Additionally, the sodium acetate product caused the inhibition of Salmonella enterica and Listeria at a relative low quantity. The two foodborne pathogens were inhibited in the food model with 1% of the sodium acetate product. Additionally, there were no significant differences between sodium nitrite, sodium sulfite, and sodium acetate products in the inhibition of Salmonella enterica and Listeria monocytogenes in the food model. Thus, products based on sodium acetate can be an alternative to traditional preservatives in food products.
