Abstract
Aspergillus flavus contamination in agriculture and food industries poses threats to human health, leading to a requirement of a safe and effective method to control fungal contamination. Chitosan-based nitrogen-containing derivatives have attracted much attention due to their safety and enhanced antimicrobial applications. Herein, a new benzimidazole-grafted chitosan (BAC) was synthesized by linking the chitosan (CS) with a simple benzimidazole compound, 2-benzimidazolepropionic acid (BA). The characterization of BAC was confirmed by Fourier transform infrared (FTIR) spectroscopy and nuclear magnetic resonance spectroscopy (1H and 13C NMR). Then, the efficiency of BAC against A. flavus ACCC 32656 was investigated in terms of spore germination, mycelial growth, and aflatoxin production. BAC showed a much better antifungal effect than CS and BA. The minimum inhibitory concentration (MIC) value was 1.25 mg/mL for BAC, while the highest solubility of CS (16.0 mg/mL) or BA (4.0 mg/mL) could not completely inhibit the growth of A. flavus. Furthermore, results showed that BAC inhibited spore germination and elongation by affecting ergosterol biosynthesis and the cell membrane integrity, leading to the permeabilization of the plasma membrane and leakage of intracellular content. The production of aflatoxin was also inhibited when treated with BAC. These findings indicate that benzimidazole-derived natural CS has the potential to be used as an ideal antifungal agent for food preservation.

Abstract
Herein, a dual-functioning deep eutectic solvent system based on triethylmethylammonium chloride and imidazole was harnessed as a swelling agent and a reaction medium for the esterification of cellulose with n-octyl succinic anhydride (OSA). The modified or amphiphilic cellulose nanofibers (ACNFs), synthesized using three different OSA-to-anhydroglucose unit molar ratios (0.5:1, ACNF-1; 1:1, ACNF-2; and 1.5:1, ACNF-3), were further converted into nanofibers with degree of substitution (DS) values of 0.24-0.66. The ACNFs possessed a lateral dimension of 4.24-9.22 nm and displayed surface activity due to the balance of hydrophobic and hydrophilic characteristics. The ACNFs made stable aqueous dispersions; however, the instability index of ACNF-3 (0.51) was higher than those of ACNF-1 (0.29) and ACNF-2 (0.33), which was attributed to the high DS-induced hydrophobicity, causing the instability in water. The amphiphilic nature of ACNFs promoted their performance as stabilizers in oil-in-water Pickering emulsions with average droplet sizes of 4.85 μm (ACNF-1) and 5.48 μm (ACNF-2). Self-standing films of ACNFs showed high contact angles for all the tested DS variants (97.48-114.12°), while their tensile strength was inversely related to DS values (ACNF-1: 115 MPa and ACNF-3: 49.5 MPa). Aqueous dispersions of ACNFs were also tested for coating fruits to increase their shelf life. Coatings improved their shelf life by decreasing oxygen contact and moisture loss.

Abstract
Food is a crucial source for the endurance of individuals, and quality concerns of consumers are being raised with the progression of time. Edible coatings and films (ECFs) are increasingly important in biobased packaging because they have a prime role in enhancing the organoleptic characteristics of the food products and minimizing the spread of microorganisms. These sustainable ingredients are crucial for a safer and healthier environment. These are created from proteins, polysaccharides, lipids, plasticizers, emulsifiers, and active substances. These are eco-friendly since made from innocuous material. Nanocomposite films are also beginning to be developed and support networks of biological polymers. Antioxidant, flavoring, and coloring compounds can be employed to improve the quality, wellbeing, and stability of packaged foods. Gelatin-enhanced fruit and vegetable-based ECFs compositions have the potential to produce biodegradable films. Root plants like cassava, potato, and sweet potato have been employed to create edible films and coatings. Achira flour, amylum, yam, ulluco, and water chestnut have all been considered as novel film-forming ingredients. The physical properties of biopolymers are influenced by the characteristics, biochemical confirmation, compatibility, relative humidity, temperature, water resistance, and application procedures of the components. ECFs must adhere to all regulations governing food safety and be generally recognized as safe (GRAS). This review covers the new advancements in ECFs regarding the commitment of novel components to the improvement of their properties. It is expected that ECFs can be further investigated to provide innovative components and strategies that are helpful for global financial issues and the environment.

Abstract
This work provides the first description of the synthesis and characterization of water-soluble chitosan (Cs) derivatives based on the conjugation of both diethylaminoethyl (DEAE) and catechol groups onto the Cs backbone (Cs-DC) in order to obtain a Cs derivative with antioxidant and antimicrobial properties. The degree of substitution [DS (%)] was 35.46% for DEAE and 2.53% for catechol, determined by spectroscopy. Changes in the molecular packing due to the incorporation of both pendant groups were described by X-ray diffraction and thermogravimetric analysis. For Cs, the crystallinity index was 59.46% and the maximum decomposition rate appeared at 309.3 °C, while for Cs-DC, the values corresponded to 16.98% and 236.4 °C, respectively. The incorporation of DEAE and catechol groups also increases the solubility of the polymer at pH > 7 without harming the antimicrobial activity displayed by the unmodified polymer. The catecholic derivatives increase the radical scavenging activity in terms of the half-maximum effective concentration (EC50). An EC50 of 1.20 μg/mL was found for neat hydrocaffeic acid (HCA) solution, while for chitosan-catechol (Cs-Ca) and Cs-DC solutions, concentrations equivalent to free HCA of 0.33 and 0.41 μg/mL were required, respectively. Cell culture results show that all Cs derivatives have low cytotoxicity, and Cs-DC showed the ability to reduce the activity of reactive oxygen species by 40% at concentrations as low as 4 μg/mL. Polymeric nanoparticles of Cs derivatives with a hydrodynamic diameter (Dh) of around 200 nm, unimodal size distributions, and a negative ζ-potential were obtained by ionotropic gelation and coated with hyaluronic acid in aqueous suspension, providing the multifunctional nanoparticles with higher stability and a narrower size distribution.

Abstract
Dermatophytosis is a fungal infection of skin, nails and hair. Treatments can be long and infections are often recurrent, and novel treatments are desirable. Here we tested the use of polymeric films that can be sprayed on the skin for the prevention and treatment of dermatophytosis. The two polymers selected were ABIL T Quat 60 and Eudragit E100, which were tested ex vivo using a porcine skin model, and in vitro using microbiological and microscopy techniques. Acceptability of the polymeric films was tested on the skin of healthy volunteers. The results showed that ABIL and Eudragit films prevented and treated fungal skin infections. Whilst polymer films may provide a physical barrier that prevents fungal colonization, it was shown that both polymers are active antifungals ex vivo and in vitro and have intrinsic antifungal activity. For ABIL, we also established that this polymer binds essential nutrients such as metal ions and sugars, thereby restricting the growth of fungi. When applied to healthy subjects’ skin, the polymeric films neither modified the skin color nor increased trans-epidermal water loss, suggesting a low potential for skin irritation, and the approach was generally found to be acceptable for use by the volunteers. In conclusion, we developed a novel strategy for the potential prevention and treatment of dermatophytosis.

Abstract
Edible films and coatings can enhance the quality of food products, protecting them from biological deterioration, especially against fungal diseases and pathogenic microorganisms. In this study, films from chitosan, diethylaminoethyl-chitosan (DEAE-CH) and its hydrophobicized derivative DEAE-CH-DD were prepared by casting and their physicochemical and antimicrobial properties evaluated. The grafting with DEAE and dodecyl groups resulted in films with an elasticity modulus up to five times higher than commercial chitosan and increased water vapor permeability. Field emission gun - scanning electron microscopy and atomic force microscopy techniques showed films with smooth surfaces and the contact angle measurements revealed a correlation between the grafted group and hydrophilic/hydrophobic nature of the surface of the film. The amphiphilic derivatives exhibited better antimicrobial activity than unmodified chitosan against Penecillium expansum, Alternaria alternata and Alternaria solani. The amphiphilics DEAE-CH and DEAE-CH-DD showed no toxicity and delayed rotting and loss of water in strawberries and bananas, suggesting that this kind of film has great potential for increasing the shelf-life of different fruits.
