Abstract
Aptamers have been spotlighted as promising bio-recognition elements because they can be tailored to specific target molecules, bind to targets with a high affinity and specificity, and are easy to chemically synthesize and introduce functional groups to. In particular, fluorescent aptasensors are widely used in biological applications to diagnose diseases as well as prevent diseases by detecting cancer cells, viruses, and various biomarkers including nucleic acids and proteins as well as biotoxins and bacteria from food because they have the advantages of a high sensitivity, selectivity, rapidity, a simple detection process, and a low price. We introduce screening methods for isolating aptamers with q high specificity and summarize the sequences and affinities of the aptamers in a table. This review focuses on aptamer-based fluorescence detection sensors for biological applications, from fluorescent probes to mechanisms of action and signal amplification strategies.

Abstract
Trace amounts of mycotoxins in food matrices have caused a very serious problem of food safety and have attracted widespread attention. Developing accurate, sensitive, rapid mycotoxin detection and control strategies adapted to the complex matrices of food is crucial for in safeguarding public health. With the continuous development of nanotechnology and materials science, various nanoscale materials have been developed for the purification of complex food matrices or for providing response signals to achieve the accurate and rapid detection of various mycotoxins in food products. This article reviews and summarizes recent research (from 2018 to 2023) on new strategies and methods for the accurate or rapid detection of mold toxins in food samples using nanoscale materials. It places particular emphasis on outlining the characteristics of various nanoscale or nanostructural materials and their roles in the process of detecting mycotoxins. The aim of this paper is to promote the in-depth research and application of various nanoscale or structured materials and to provide guidance and reference for the development of strategies for the detection and control of mycotoxin contamination in complex matrices of food.

Abstract
Mycotoxins (MYTs), a class of low molecular weight secondary metabolites produced by filamentous fungi in food and feed, pose serious global threat to both human health and world economy. Due to their mutagenic, teratogenic, carcinogenic and immunosuppressive effects, the International Agency for Research on Cancer has classified various MYTs under Group 1 to 3 category with aflatoxins being designated under Group 1 category (carcinogenic to humans). Also, the presence of MYTs in trace amounts in diverse food matrices necessitates exploration of highly sensitive methods for onsite analysis. Although conventional chromatographic methods are highly sensitive, they are expensive, tedious and cannot be applied for rapid onsite analysis. In recent years the application of nanomaterials especially carbon-based nanomaterials (CNMs) in the fabrication of low-cost and miniaturized electrochemical and optical sensors has enabled rapid onsite analysis of MYTs with high sensitivity and specificity. Moreover, the CNMs are employed as effective solid phase extraction (SPE) adsorbents possessing high specific surface area for effective enrichment of MYTs to improve the sensitivity of chromatographic methods for MYT analysis in food. This article aims to overview the recent trends in the application of CNMs as SPE adsorbents for sample pretreatment in chromatographic methods as well as in the fabrication of highly sensitive electrochemical and optical sensors for rapid analysis of MYTs in food. Initially, the efficiency of various functionalized CNMs developed recently as adsorbent in packed SPE cartridges and dispersive SPE adsorbent/purification powder is discussed. Then, their application in the development of various electrochemical immunosensors involving functionalized carbon nanotubes/nanofibers, graphene oxide, reduced graphene oxide and graphene quantum dots is summarized. In addition, the recent trends in the use of CNMs for fabrication of electrochemical and fluorescence aptasensors as well as some other colorimetry, fluorometry, surface-enhanced Raman spectroscopy and electrochemical based sensors are compared and tabulated. Collectively, this review article can provide a research update on analysis of MYTs by carbon-based nanomaterials paving a way for identifying future perspectives.

Abstract
Remarkable advancements have been achieved in the development of rapid analytic techniques toward fumonisin B1 (FB1) monitoring and even trace levels for food safety in recent years. However, the point-of-care testing for quantitative and accurate FB1 determination is still challenging. Herein, an innovative aptasensor was established to monitor FB1 by utilizing graphene oxide (GO) and nuclease-triggered signal enhancement. GO can be utilized as a fluorescence quenching agent toward a fluorophore-modified aptamer, and even as a protectant of the aptamer from nuclease cleavage for subsequent target cycling and signal amplification detection. This proposed sensing strategy exhibited a good linearity for FB1 determination in the dynamic range from 0.5 to 20 ng mL−1 with a good correlation of R2 = 0.995. Its limit of detection was established at 0.15 ng mL−1 (S/N = 3), which was significantly lower than the legal requirements by three orders of magnitude. The interferent study demonstrated that the introduced aptasensor possessed high selectivity for FB1. Moreover, the aptasensor was successfully applied to the detection of wheat flour samples, and the results were consistent with the classical ELISA method. The rapid response, sensitive and selective analysis, and reliable results of this sensing platform offer a promising opportunity for food mycotoxin control in point-of-care testing.

Abstract
In this work, we reported a rapid and sensitive fluorescence assay in homogenous solution for detecting organophosphorus pesticides by using tetramethylrhodamine (TAMRA)-labeled aptamer and its complementary DNA (cDNA) with extended guanine (G) bases. The hybridization of cDNA and aptamer drew TAMRA close to repeated G bases, then the fluorescence of TAMRA was quenched by G bases due to the photoinduced electron transfer (PET). Upon introducing the pesticide target, the aptamer bound to pesticide instead of cDNA because of the competition between pesticide and cDNA. Thus, the TAMRA departed from G bases, resulting in fluorescence recovery of TAMRA. Under optimal conditions, the limits of detection for phorate, profenofos, isocarbophos, and omethoate were 0.333, 0.167, 0.267, and 0.333 µg/L, respectively. The method was also used in the analysis of profenofos in vegetables. Our fluorescence design was simple, rapid, and highly sensitive, which provided a means for monitoring the safety of agricultural products.

Abstract
Cryptosporidium, an intestinal protozoan pathogen, is one of the leading causes of death in children and diarrhea in healthy adults. Detection of Cryptosporidium has become a high priority to prevent potential outbreaks. In this paper, a simple, easy to fabricate, and cost-effective on-chip-based electrochemical biosensor has been developed for the sensitive and label-free detection of Cryptosporidium oocysts in water samples. The sensor was fabricated using standard lithography using a mask with a 3-electrode design and modified by self-assembling a hybrid of a thiolated protein/G and the specific anti-Cryptosporidium monoclonal antibodies (IgG3). The electrochemical impedance spectroscopy (EIS) was employed to quantitate C. parvum in the range of 0 to 300 oocysts, with a detection limit of approximately 20 oocysts/5 µL. The high sensitivity and specificity of the developed label-free electrochemical biosensor suggest that this novel platform is a significant step towards the development of fast, real-time, inexpensive and label-free sensing tool for early warning and immediate on-site detection of C. parvum oocysts in water samples, as compared to the traditional methods (such as PCR and microscopy). Furthermore, under optimized conditions, this label-free biosensor can be extended to detect other analytes and biomarkers for environmental and biomedical analyses.

Abstract
To ensure the safety of dairy products, especially milk, and consequently protect human health, accurate and simple analytical techniques are highly necessary to determine the low concentration of aflatoxin M1 (AFM1) as an important carcinogen. Herein, a novel, accurate and simple fluorescent aptasensor was designed for selective detection of AFM1 based on bivalent binding aptamer-cDNA (BBA-cDNA) structure. Moreover, MoS2 nanosheets (MoS2 NSs) were used as the fluorescent quencher and FAM-labeled complementary strand of aptamer (FAM-CS) was applied as a fluorescent probe. In this study, we achieved a new result. Unlike previous studies, in this work, the BBA-cDNA structure was not disassembled in the presence of the target. Therefore, as the AFM1 concentration increased, more targets were attached to the BBA-cDNA structure and as a result, the BBA-cDNA structure/AFM1 could not be placed on the surface of MoS2 NSs, leading to the more fluorescent intensity detection. Under optimized conditions, the developed fluorescent analytical method revealed great selectivity toward AFM1 with a limit of detection (LOD) of 0.5 nM and a linear range from 0.7 to 10 nM. This fabricated aptasensor indicated excellent analytical performance for AFM1 detection in milk samples with LOD of 0.1 nM. Overall, the proposed approach could provide an effective basis for small molecule analysis to guarantee food and human safety using appropriate aptamer sequences.

Abstract
Carbon-based nanomaterials have become the subject of intensive interest because their intriguing physical and chemical properties are different from those of their bulk counterparts, leading to novel applications in smart sensors. Mycotoxins are secondary metabolites with different structures and toxic effects produced by fungi. Mycotoxins have low molecular weights and highly diverse molecular structures, which can induce a spectrum of biological effects in humans and animals even at low concentrations. A tremendous amount of biosensor platforms based on various carbon nanocomposites have been developed for the determination of mycotoxins. Therefore, the contents of this review are based on a balanced combination of our own studies and selected research studies performed by academic groups worldwide. We first address the vital preparation methods of biorecognition unit (antibodies, aptamers, molecularly imprinted polymers)-functionalized carbon-based nanomaterials for sensing mycotoxins. Then, we summarize various types of smart sensors for the detection of mycotoxins. We expect future research on smart sensors to show a significant impact on the detection of mycotoxins in food products.

Abstract
This paper presents a comprehensive review of the detection of aflatoxin compounds using carbon allotrope-based sensors. Although aflatoxin M1 and its derivative aflatoxin B1 compounds have been primarily found in milk and other food products, their presence above a threshold concentration causes disastrous health-related anomalies in human beings, such as growth impairment, underweight and even carcinogenic and immunosuppressive effects. Among the many sensors developed to detect the presence of these compounds, the employment of certain carbon allotropes, such as carbon nanotubes (CNTs) and graphene, has been highly preferred due to their enhanced electromechanical properties. These conductive nanomaterials have shown excellent quantitative performance in terms of sensitivity and selectivity for the chosen aflatoxin compounds. This paper elucidates some of the significant examples of the CNTs and graphene-based sensors measuring Aflatoxin M1 (ATM1) and Aflatoxin B1 (AFB1) compounds at low concentrations. The fabrication technique and performance of each of the sensors are shown here, as well as some of the challenges existing with the current sensors.

Abstract
The detection of food adulterants and toxicants can prevent a large variety of adverse health conditions for the global population. Through the process of rapid sensing enabled by deploying novel and robust sensors, the food industry can assist in the detection of adulterants and toxicants at trace levels. Sensor platforms which exploit graphene-based nanomaterials satisfy this requirement due to outstanding electrical, optical and thermal properties. The materials' facile conjugation with linkers and biomolecules along with the option for further enhancement using nanoparticles results in highly sensitive and selective sensing characteristics. This review highlights novel applications of graphene derivatives for detection covering three important approaches; optical, electrical (field-effect) and electrochemical sensing. Suitable graphene-based sensors for portable devices as point-of-need platforms are also presented. The future scope of these sensors is discussed to showcase how these emerging techniques will disrupt the food detection sector for years to come.

Abstract
A new double-shelled carbon nanocages material was synthesized and developed an aptasensor for determining Pb2+ in aqueous solution. Herein, nanoporous carbon materials derived from core–shell zeolitic imidazolate frameworks (ZIFs) demonstrated excellent electrochemical activity, stability, and high specificity surface area, consequently resulting in the strong binding with aptamers. The aptamer strands would be induced to form G-quadruplex structure when Pb2+ was introduced. Under optimal conditions, the aptasensor exhibited a good linear relationship of Pb2+ concentration ranging from 0.1 to 10 μg L−1 with the detection limits of 0.096 μg L−1. The feasibility was proved by detecting Pb2+ in spiked water samples and polluted soil digestion solution. The proposed aptasensor showed excellent selectivity and reproducibility, indicating promising applications in environmental monitoring.

Abstract
Mycotoxins are a large type of secondary metabolites produced by fungi that pose a great hazard to and cause toxic reactions in humans and animals. A majority of countries and regulators, such as the European Union, have established a series of requirements for their use, and they have also set maximum tolerance levels. The development of high sensitivity and a specific analytical platform for mycotoxins is much in demand to address new challenges for food safety worldwide. Due to the superiority of simple, rapid, and low-cost characteristics, aptamer-based biosensors have successfully been developed for the detection of various mycotoxins with high sensitivity and selectivity compared with traditional instrumental methods and immunological approaches. In this article, we discuss and analyze the development of aptasensors for mycotoxins determination in food and agricultural products over the last 11 years and cover the literatures from the first report in 2008 until the present time. In addition, challenges and future trends for the selection of aptamers toward various mycotoxins and aptasensors for multi-mycotoxins analyses are summarized. Given the promising development and potential application of aptasensors, future research studies made will witness the great practicality of using aptamer-based biosensors within the field of food safety.
