Abstract
The composition of secondary metabolites undergoes significant changes in plants depending on the growth phase and the influence of environmental factors. Therefore, it is important to determine the harvesting time of plant material for the optimum secondary metabolite profile and therapeutic activity of the primary material. The shoots of Epilobium angustifolium are used as a healing tea due to the presence of polyphenolic compounds. The aim of this study was to assess the composition of phenolic compounds and triterpenoid saponins in E. angustifolium leaves and flowers and to estimate the dynamics of their content depending on the flowering phase. Qualitative and quantitative characterisation of polyphenols and triterpenoids in E. angustifolium samples from Ukraine of three flowering phases were performed using the high-performance liquid chromatography photo diode array (HPLC-PDA) method. During the present study, 13 polyphenolic compounds and seven triterpenoids were identified in the plant material. It was noted that the largest content and the best polyphenol profile was in late flowering. The most important polyphenolic compounds in the plant material were chlorogenic acid, hyperoside, isoquercitin, and oenothein B. The triterpenoid profile was at its maximum during mass flowering, with corosolic and ursolic acids being the dominant metabolites. The results of the analysis revealed that the quantity of many of the tested metabolites in the raw material of E. angustifolium is dependent on the plant organ and flowering phase. The largest content of most metabolites in the leaves was in late flowering. In the flowers, the quantity of the metabolites studied was more variable, but decreased during mass flowering and increased significantly again in late flowering. The results show that E. angustifolium raw material is a potential source of oenothein B and triterpenoids.

Abstract
The goal of this investigation was to establish the impact of solid-state fermentation of different durations on the quantitative changes of vitamin C, sugars and photosynthetic pigments in the leaves of willow herbs. The tested leaves were fermented using two solid-state fermentation methods (aerobic and anaerobic) for different time periods (unfermented and fermented for 24, 48 and 72 h). The quantitative and qualitative composition of chlorophylls, carotenoids, sugars and vitamin C were determined using high performance liquid chromatography (HPLC) with UV detectors. Results indicated that aerobic and anaerobic solid-state fermentation significantly decreased the contents of vitamin C, dehydroascorbic and L-ascorbic acids in leaves compared with the unfermented leaves. The contents of total chlorophyll and chlorophyll a were the highest in unfermented leaves and after 24 h of aerobic solid-state fermentation. The maximum content of total carotenoids in leaves were after 48 and 72 h of aerobic solid-state fermentation (149.31 mg 100 g-1 and 151.51 mg 100 g-1, respectively). The application of anaerobic solid-state fermentation resulted in significant increase in the content of total sugars, fructose and glucose in investigated samples. In conclusion, optimization of fermentation parameters allows increasing the content of sugars and photosynthetic pigments in leaves of willow herbs.

Abstract
Healthy foods containing omega-3/omega-6 polyunsaturated fatty acids (PUFAs) have been in great demand because of their unique dietary and health properties. Reduction in chronic inflammatory and autoimmune diseases has shown their therapeutic and health-promoting effects when consumed under recommended ratio 1:1-1:4, however imbalanced ratios (>1:4, high omega-6) enhance these risks. The importance of omega-6 is apparent however microbial production favors larger production of omega-3. Current research focus is prerequisite to designing omega-6 production strategies for better application prospects, for which thraustochytrids could be promising due to higher lipid productivity. This review provides recent updates on essential fatty acids production from potential microbes and their application, especially major insights on omega research, also discussed the novel possible strategies to promote omega-3 and omega-6 accumulation via engineering and omics approaches. It covers strategies to block the conversion of omega-6 into omega-3 by enzyme inhibition, nanoparticle-mediated regulation and/or metabolic flux regulation, etc.

Abstract
The aim of this research was the comparative study of the content of the amino acids in the herb and tubers of Stachys sieboldii. The study of the amino acid composition of the raw materials was carried out using high-performance liquid chromatography (HPLC). The results obtained have shown that the aerial parts of plants investigated have higher amino acid content than the underground organs. Free and bound L-aspartic acid, L-proline, and L-phenylalanine were present in the analyzed samples in the greatest amount. Moreover, L-cysteine was found only in Stachys sieboldii tubers in amounts (8.11 mg/g). This research established that Stachys sieboldii herb and tubers have the most suitable amino acids composition and are prospective for further pharmacological studies.

Abstract
Chamaenerion angustifolium (L.) Scop. (fireweed) is a perennial herbaceous plant of the Onagraceae family widely used in folk and scientific medicine. It is a promising source of bioactive components. One of the modern trends in extraction is the use of natural deep eutectic solvents (NADESs) combined with ultrasound-assisted extraction (UAE). However, works devoted to the extraction of biologically active substances from C. angustifolium using NADESs are scarce. The aim of this work is a comprehensive study of UAE of bioactive components from C. angustifolium using NADESs based on choline chloride and malonic, malic, tartaric, and citric acids. The antioxidative properties, total phenols, and flavonoids content were estimated for NADES-based extracts. The reference solvents were water and 90% v/v ethanol. Volatile extracted components were identified using GC-MS. The kinetics of the UAE were studied at 45 °C for 20–180 min with water added to 30 wt% NADES. The power of the ultrasound was 120 W, and the frequency was 40 kHz. It was found that NADES choline chloride + citric acid is more effective for the extraction of bioactive components. For this, NADES UAE conditions were optimized following a Box–Behnken design of the experiment and a response surface methodology. The temperature ranged from 30 to 60 °C, the time of extraction ranged from 20 to 60, and the addition of water ranged from 30 to 70 wt%. We established the optimal extraction conditions: temperature 58 °C, time of extraction 35 min, and 70 wt% water. The obtained results expand the knowledge about the use of NADES for the extraction of biologically active compounds from cheap and available plant raw materials.

Abstract
One of the tasks of pharmaceutical science is to find new sources of effective drugs. Such sources include plants such as Angelica archangelica L. and Angelica sylvestris L., which have been used for many years to treat various diseases in folk medicine. Because the chemical composition of these plants is poorly understood, the aim of our study was to investigate the amino acid composition of the leaves of A. archangelica L. and A. sylvestris L. The amino acids of the leaves of the study species of the genus Angelica L. were determined by the HPLC method. Eighteen free and nineteen bound amino acids were identified in the leaves of A. archangelica L. The A. sylvestris L. leaves contained nineteen free and the same amount of bound amino acids. High concentrations of free and bound amino acids such as L-glutamic acid and L-aspartic acid predominate in A. archangelica L. and A. sylvestris L. This allowed these amino acids to be considered distinguishing markers of the study plants. Character metabolic processes in which these amino acids take part may be associated with the medicinal properties of these plants pursuant to their use in medicine and, therefore, may contribute to the insight of their therapeutic properties.
