Abstract
Grape seed proanthocyanidin (GSP) is a type of plant polyphenol with a wide variety of biological activities, such as antioxidant properties. This study investigated the effects of GSP supplementation on growth performance and meat quality in growing-finishing pigs. A total of 180 pigs (with an initial average body weight of 30.37 ± 0.66 kg) were randomly assigned to five treatments: a control diet or a control diet supplemented with GSP at 15, 30, 60, and 120 mg/kg. Each treatment group comprised six replicate pens (6 pigs per pen). Results showed that GSP supplementation linearly increased the average daily gain (P = 0.048) and quadratically decreased the feed intake to gain ratio (P = 0.049) with the lowest values at 30 and 60 mg/kg GSP. Serum concentrations of immunoglobulins (Ig) (IgA, IgG, IgM), total antioxidative capacity, catalase, and total superoxide dismutase were elevated with the peak levels at 30 mg/kg GSP (P < 0.05). Serum glutathione peroxidase increased and malondialdehyde decreased quadratically (P < 0.05), with peak and trough levels at 120 and 60 mg/kg GSP, respectively. The GSP also improved dressing percentage and muscle redness (a∗45 min) with optimal levels at 30 and 60 mg/kg (P < 0.05). Additionally, GSP supplementation quadratically reduced the muscle yellowness (b∗24 h) and shear force (P < 0.05), with the lowest values at 120 mg/kg. The expression level of myosin heavy chain I in muscle was quadratically increased with maximum expression at 30 and 60 mg/kg (P = 0.015). Furthermore, the expression levels of fatty acid synthase, phosphoenolpyruvate carboxykinase (PEPCK), and glucokinase in the muscle were decreased quadratically (P < 0.05) with the lowest values at 120 mg/kg. Additionally, GSP supplementation at 60 mg/kg upregulated the expression of hepatic hormone-sensitive triglyceride lipase and PEPCK (P < 0.05). These results suggest that GSP enhances carcass characteristics and meat quality in growing-finishing pigs, potentially through improved antioxidative capacity, modified muscle fiber type distribution, and altered glucose-lipid metabolism in muscle and liver.

Abstract
The use of agro-industrial by-products in livestock nutrition is of increased interest to the feed industry. Some of the by-products are rich in bioactive compounds that could lead to an increase in the quality of animal meat products. This study aimed to evaluate the effects of dietary incorporation of grape pomace (GP), a by-product rich in polyphenols, on growth and on the oxidation status and the fatty acid profile of rabbit meat. Forty-eight male rabbits (Oryctolagus cuniculus) (aged 55 ± 3 d and ca 2.3 kg) divided into three groups of 16 were used in the trial. The rabbits were housed in pairs in wire-mesh cages (26 × 46 × 35 cm) giving n = 8 for each diet treatment. The first group was fed a basal diet (CTR) (ca 18% protein and ca 4% fat), the second was given a basal diet supplemented with 5 g GP per head per day (low-GP) and the third group was fed a basal diet supplemented with 10 g GP per head per day (high-GP). The trial lasted three weeks, and the animals were weighed weekly. The rabbits were slaughtered, and the weight and the pH of the carcasses was measured immediately after slaughter and after 24 h of cooling at 4 °C. The pH of the stomach and cecum was measured. A sample of Longissimus Dorsi (LD) was collected and stored at -80 °C for the analysis of proximate composition, thiobarbituric acid reactive substances (TBARs) and fatty acid profile (FA). The diet did not influence the growth or the pH of the stomach and cecum of the rabbits. The chemical composition of the meat was similar in all groups, with a mean protein of 22.3% and fat of 0.95%. The fatty acid profiles of the LD were not influenced by the diet, and the most abundant FAs were C16:0, C18:2n6 and C18:1c9. Feeding GP to the rabbits gave a linear decrease of TBARs in the meat, indicating a reduction in oxidative stress. The TBARs' reduction was 60% in the meat of the rabbits given high-GP compared to CTR. In conclusion, GP could be used in rabbit diets without any negative influence on meat quality but with an increase in oxidation stability that could enhance meat shelf-life.

Abstract
The study investigates the effect of dietary herbal mixture (HM) levels on growing New Zealand White (NZW) rabbits' performance, carcass characteristics, blood biochemicals, and microbiological characteristics from 5 to 13 weeks of age. In this study, 96 New Zealand White rabbits (male and female ratio 1:1) were used, and they were five weeks old. The rabbits were at random allocated into four experimental groups (n = 24 each) comprising 12 replicates, each with two rabbits. The 1st group acted as the control and received feed without additional supplements. The 2nd group received 0.30% HM, the 3rd group received 0.50% HM, and the 4th group received 0.70% HM. As the concentration of the herbal mixture extract was raised, the inhibitory zones grew significantly. The addition of HM to rabbit diets at a 0.5% concentration significantly increased body weight and weight gain compared to the control diet and other treatments. The apparent digestibility coefficient of ether extracts and the rabbits' capacity to absorb lipids significantly increased with increasing HM levels up to 0.7%. In addition, the HM increased high-density lipoprotein (HDL) and decreased triglycerides and low-density lipoprotein (LDL) in the blood. Interestingly, when rabbits were fed varying amounts of HM, all types of bacteria significantly declined, yet helpful lactic acid bacteria increased. In conclusion, HM supplementation improved rabbit growth, blood parameters, and gut microbial balance, with a 0.5% level yielding the best results, indicating that HM has significant potential as a novel feed supplement for growing rabbits.

Abstract
The objective of this study was to observe the effects of Rosa roxburghii Tratt seed (RRTS) on growth performance, meat quality, and sensory characteristic parameters in rabbits. Ninety-six New Zealand White rabbits were allotted to four dietary treatments containing 0 (CON), 120 (LR), 240 (MR), and 360 mg/kg (HR) RRTS. The experimental period lasted for 11 weeks. Thirty-two fattened rabbits were slaughtered, and the Longissimus thoracis et lumborum (LTL) muscle was used for analyses. The feeding of RRTS was significantly (P < 0.05) decreased the feed conversion ratio (FCR). pH45min, pH24h, lightness, redness, drip loss, and percentage of water loss were unaffected (P > 0.05) by dietary treatments, whereas MR and HR treatments resulted in lower (P < 0.05) levels of yellowness and higher (P < 0.05) levels of shear force. LR showed significantly higher (P < 0.05) meat polyphenol compounds and vitamin E relative to the CON. Moreover, compared to the CON, HR treatment showed significantly higher (P < 0.05) vitamin C and glutathione peroxidase, and LR and MR displayed lower (P < 0.05) superoxide anion radicals, and all treatments had higher levels catalase (CAT). C18:2n-6 t, C20:2, C20:3n-6, C20:4n-6, C20:5n-3, C22:5n-3, and C22:6n-3 in LTL meat were higher (P < 0.05) in MR than CON rabbits. Moreover, the LTL muscle sensory evaluation parameters of appearance and fibrousness were improved (P < 0.05). Overall, dietary supplementation with RRTS is a valid strategy for decreasing FCR, and improving meat CAT concentration, C20:5n-3 and C22:5n-3 profiles, and sensory characteristics parameters of rabbits.

Abstract
Rabbit meat has high nutritional and dietetic characteristics, but its consumption rate is comparatively lower than other meat types. The nutritional profile of rabbit meat, by comparison with beef, pork, and poultry, is attributed to relatively higher proportions of n-3 fatty acids and low amounts of intramuscular fat, cholesterol, and sodium, indicating its consumption may provide health benefits to consumers. But, the quality attributes of rabbit meat can be originated from different factors such as genetics, environment, diet, rearing system, pre-, peri-, and post-slaughter conditions, and others. Different rabbit breeds and the anatomical location of muscles may also affect the nutritional profile and physicochemical properties of rabbit meat. However, adequate information about the effect of those two factors on rabbit meat is limited. Therefore, cumulative information on nutritional composition and carcass and meat quality attributes of rabbit meat in terms of different breeds and muscle types and associated factors is more important for the production and processing of rabbits. Moreover, some studies reported that rabbit meat proteins exhibited angiotensin-converting enzyme inhibitory characteristics and antioxidant properties. The aim of this review is to elucidate the determinants of rabbit meat quality of different breeds and its influencing factors. In addition, the proven biological activities of rabbit meat are introduced to ensure consumer satisfaction.

Abstract
Simple Summary The rabbit farming industry has gained more interest due to its high productivity, high growth rate, and high-quality meat. One of the public health concerns is that global rabbit production is expected to increase to meet the increasing demand for lean meat. In the present study, we focused on the use of phytogenic feed additives (essential oils of rosemary (REO) and ginger (GEO)) as environmentally friendly supplementation to improve rabbit growth performance, physiological status, and meat quality. The results indicated that the use of REO and GEO at a dose of 0.5% dramatically improved the growth performance and feed utilization of treated rabbits. The cholesterol level decreased significantly in rabbit plasma and meat after REO and GEO treatments. The fat content tended to decline in the muscles and the triglycerides were remarkedly reduced in the plasma of treated animals. In addition, the oxidant/antioxidant balance in the plasma could be improved with supplementation with a high dose of REO and GEO. Accordingly, the use of REO and GEO as supplementations for growing rabbits could contribute to improving the sustainable production of the rabbit industry. Abstract This study was conducted to assess the impacts of using two essential oils, rosemary and ginger, on growing rabbits’ performance, carcass traits, meat composition, blood biochemicals, and the redox status of growing New Zealand White (NZW) rabbits. A total of 120 unsexed NZW rabbits, 42-days-old, were assigned randomly to five experimental groups (n = 24, 6 replicates with 4 rabbits each). The first group received a basal diet (control), the second to fifth groups were dietary supplemented daily with rosemary essential oil (REO) and ginger essential oil (GEO) at doses of 0.25 and 0.5% for each supplementation (REO-0.25, REO-0.5, GEO-0.25, and GEO-0.5), respectively. The growth traits were studied for 7 weeks, from the 7th to the 13th week of the rabbits’ age. The results revealed that final body weight, weight gain, and average daily gain increased significantly (p < 0.01) in the REO-0.5 and GEO-0.5 treatments compared to the control group. Daily feed intake decreased (p = 0.005) in essential oil treatments. Meanwhile, the feed conversion ratio improved significantly (p = 0.001) in REO and GEO at the high doses compared to the control group. The weight percentages of liver and giblets increased (p < 0.001) with both treatments of REO and GEO compared to the control group. The dietary supplementation with REO and GEO did not affect (p > 0.05) the meat composition of Longissimus dorsi and hind leg muscles. Meanwhile, REO and GEO supplementation significantly decreased cholesterol levels in the rabbit meat. Thiobarbituric acid reactive substance concentrations decreased by 10 and 15% in the meat of REO-0.5 and GEO-0.5 treatments, respectively, compared to the other groups. In the same trend, REO and GEO treatments induced a significant (p = 0.001) reduction in the plasma cholesterol concentrations and triglycerides compared to the control. The total antioxidant capacity increased by 7.60% and the malondialdehyde decreased by 11.64% in the plasma of GEO-0.5 treatment than the control. Thus, the dietary supplementation of REO and GEO have a beneficial effect in improving the productivity and meat quality of growing rabbits.

Abstract
<p>This study aimed to characterise the quality of meat from commercially-raised rabbits. Animals came from five different producers and were laughtered in three different plants under provincial or federal inspection jurisdiction. Animal behaviour evaluated by scan sampling prior to feed withdrawal (FW) and transport, as well as blood lactate concentration at exsanguination, did not raise concerns with respect to stress. Stomach pH was higher (<em>P</em>=0.047) when the FW time was short (≤13.5 h), at a mean value of 2.23. All pH values measured 1 h post-mortem from the Biceps femoris (BF) and almost all (97.6%) from the Longissimus lumborum (LL) were higher than 6. Values for ultimate pH measured 24 h postmortem(pH<sub>u</sub>) ranged from 5.80 to 6.83 and from 5.70 to 6.70 for BF and LL muscles, respectively. The maximum meat drip loss recorded was 2.6%, while cooking loss reached 30%. Meat lightness (L*) and colour intensity (C*) for the long FW times (≥23 h) were no different from those with short and intermediate (15.5 to 17.3 h) FW times. However, these colour parameters were higher for the short FW time class compared to the intermediate FW time class (<em>P</em><0.02). A hierarchical cluster analysis based on pH<sub>u</sub>, cooking loss and lightness (L*) from 200 rabbit loins was performed. Of the four clusters created, clusters 1 and 2 had the best and second-best meat quality, respectively. Clusters 3 and 4 had the lowest meat quality and presented DFD-like (dark, firm and dry) characteristics. Meat did not exhibit PSE-like (pale, soft, exudative) characteristics, even for the slaughter lot with the minimum mean pH<sub>u</sub>. Of the eight slaughter lots evaluated, more than 50% of the meat from three of them fell into clusters 3 and 4; all three were in the intermediate FW time class. Overall, the quality of rabbit meat analysed was acceptable for commercial use, but rather variable. This suggests that there are factors within the value chain that are not yet fully controlled and require further investigation.</p>

Abstract
Simple Summary Herbs can be a perfect supplement in the animal diet. In addition, they improve the functioning of the immune system, regulate the appetite and feed intake of animals, regulate the functioning of the digestive system, stimulate the metabolism of the body as well as quality parameters of meat. In the literature regarding herbal supplements to rabbit fodder, there is not much information on the use of nettle or fenugreek in their nutrition. Both of these herbs are valuable sources of vitamins and minerals. They regulate the digestive system and stimulate appetite. They have a positive impact on the functioning of the immune system and they exhibit antibacterial activity. Nettle improves biochemical, haematological, and immunological parameters. Numerous studies have shown that fenugreek can also have anti-inflammatory, analgesic, and antipyretic properties. The purpose of the study was to analyse the effect of nettle (Urtica dioica L.) leaves and fenugreek (Trigonella foenum-graecum L.) seeds as additives to fodder in order to improve post-slaughter traits and quality parameters Termond White of rabbit meat. Rabbits fed with pellets with the addition of nettle were characterized by a higher slaughter weight, higher weight of hot and cold carcasses, as well as a higher weight of the fore, middle and hind part of the carcass compared to the other two groups. The carcasses of animals fed with fenugreek and nettle had a higher percentage of the fore and hind parts compared to the carcasses of the animals from the control group. For most colour measurement traits, the differences depending on the feeding regime were significant. Summing up, it can be stated that feeding rabbits with herbal supplements, such as nettle or fenugreek, has no negative impact on technological parameters of the meat or the microstructure of the muscles. On the contrary, in the case of nettle, one can speak of a beneficial effect of this herbal supplement on the post-slaughter traits and microstructure of the muscles, as evidenced by the greater share of type I muscle fibres in the composition of muscles, e.g., longissimus lumborum, indicating a more oxidative nature of these muscles, which in turn may translate into the quality of rabbit meat. Abstract The purpose of the study was to analyse the effect of nettle (Urtica dioica L.) leaves and fenugreek (Trigonella foenum-graecum L.) seeds as additives to fodder in order to improve post-slaughter traits and quality parameters of Termond White rabbit meat (n = 60; 30♂, 30♀). Three experimental groups were created. The control group (n = 20; 10♂ and 10♀) was fed ad libitum feed containing corn, bran, wheat, dried alfalfa, soybean meal, sunflower meal, dicalcium phosphate, calcium carbonate and vitamin-mineral premix. The animals from the first experimental group (n = 20; 10♂ and 10♀) were fed a complete mixture added with 1% of nettle (Urtica dioica L.) leaves. Rabbits from the second group (n = 20; 10♂ and 10♀) were fed with a complete mixture added with 1% of fenugreek (Trigonella foenum-graecum L.) seeds. Rabbits fed with pellets with the addition of nettle were characterized by a higher slaughter weight, higher weight of hot and cold carcasses, lungs, kidneys and head as well as a higher weight of the fore, middle and hind part of the carcass compared to the other two groups. The carcasses of animals fed with fenugreek and nettle had a higher percentage of the fore and hind parts compared to the carcasses of the animals from the control group. The female carcasses were characterized by a significantly higher percentage of the middle part compared to the male carcasses. For most colour measurement traits, the differences depending on the feeding regime were significant. The effect of gender on meat colour was non significant. The effect of feeding regime and of gender on texture traits such as shear force, hardness, springiness, cohesiveness and chewiness were non significant. Feeding had no effect on muscle fibre diameter, but it affected the muscle fibre type I percentage. Thus, the group fed with pellets containing nettle leaves had higher percentage of type I muscle fibres than the control group. The effect of gender on muscle fibre traits was non significant.

Abstract
The use of agroindustry by-products in animal diets allows the use of residues that are not fit for human consumption. In this study, it was investigated whether fattening commercial rabbits during 30 days with a non-medicated feed, with 20% addition of grape pomace (GPD), affected production traits and the fatty acid composition, antioxidants properties, and the shelf life of the meat compared to a conventional strategy (CON). Furthermore, it was tested, by chromatographic analysis, whether this alternative diet allowed the transfer of phenolic compounds to the meat. Thirty-six weaned rabbits were allotted to the two treatments. In each treatment, 18 rabbits were fattened in three indoor cages, each housing three males and three female rabbits. No significant differences were found in live weights (p > 0.05), but the feed conversion rate and carcass weight and yield were found to be impaired in the GPD group (p ≤ 0.05). The GPD group had a higher intramuscular fat percentage (2.01 vs. 1.54), improved polyunsaturated/saturated fatty acids ratio (0.75 vs. 0.66), and better atherogenicity (0.71 vs. 0.83) and thrombogenicity (1.14 vs. 1.24) indexes, while the n-6/n-3 ratio was higher (25.4 vs. 20.3). Total volatile basic nitrogen in meat was lower in the GPD group (p = 0.01), suggesting a delayed spoilage. However, no improvements in total phenolic content, antioxidant capacity, reducing power, and lipid oxidation (p > 0.05) were found in the meat. Even though the GPD pellets offered to the animals had several grape-derived phenolic compounds, and higher antioxidant properties compared to the CON diet, none of the phenolic compounds detected in feeds were detected in the meat samples.

Abstract
BACKGROUND AND OBJECTIVE The consumption of fresh rabbit meat has become more popular among consumers in recent years, but they are easily perishable. In this study antioxidant and antimicrobial effects of mulberry (Morus nigra) leaves extract (MLE) and olive (Olea europaea) leaves extract (OLE) dip treatments at 2% w/v on the quality attributes and shelf-life of fresh rabbit meat during chilling storage under aerobic conditions were investigated. MATERIALS AND METHODS Rabbit meat samples were refrigerated at 4±1°C to be periodically examined for their sensory quality, physicochemical parameters and bacteriological status. RESULTS Results indicated that as the time of cold storage progressed, the overall mean scores of physicochemical and microbiological parameters were increased, while sensory scores were decreased (p<0.05) irrespective of treatment. Both natural extracts (MLE/OLE) significantly (p<0.05) delayed oxidative quality changes, protein deterioration and proliferation of bacteria noticed during the chilling study. CONCLUSION Olive leaves extract (OLE; 2%) was more significant (p<0.05) positively affect than mulberry leaves extract (MLE; 2%) in maintaining chemical indices, lipid stability, consumer acceptance, microbial load and can prolonged the expiry of treated rabbit meat by 4 days as compared to control one. Hence, the potential of olive leaves extract to preserve rabbit meat during cold storage has been demonstrated.

Abstract
Thirty-four New Zealand White rabbits of both sexes were fed a control or supplemented (2 g/kg quercetin dihydrate) diet from weaning until slaughter (13 weeks). After post-mortem chilling, excised and minced Longissimus thoracis et lumborum muscles were stored at 3.2 °C under oxygen-permeable wrapping for 1, 3 or 5 days. Colour, pH, lipid oxidation (TBARS), antioxidant capacity (FRAP), volatile profile (day 1 and 5) and microbial count (day 5) were determined. Quercetin reduced alkane (day 5) and hexanal (day 1) concentrations, but otherwise had minimal antioxidant effect, and did not benefit microbial quality, and thus did not substantially improve the shelf-life. The sex effect was similarly limited. Overall, the pH increased and FRAP decreased during storage, but TBARS did not change and discolouration seemed delayed. The volatile profile was dominated by esters, alcohols and heterocyclic compounds, and while it changed during storage, lipid oxidation products did not increase as expected, suggesting that rabbit meat may have relatively active reducing mechanisms.

Abstract
<p>The effects of dietary <em>Mucuna pruriens</em> leaf meal (MLM) supplementation on rabbits’ performance, haemato-biochemical indices and antioxidant status outside their thermal neutrality zone (21 to 25°C) were evaluated. One hundred and twenty 35-d old crossbreed (Chinchilla×New Zealand) rabbits weighing 694±5 g were allotted to 4 treatments (30 rabbits/treatment; 3 rabbits/replicate). A basal diet (crude protein: 16.9%, crude fibre: 17.6%, digestible energy: 2671 kcal/kg) was divided into 4 equal portions i.e. diets 1, 2, 3 and 4, supplemented with 0, 4, 8 and 12 g MLM/kg, respectively, and pelleted. The average body weight in rabbits fed on diets 3 and 4 was higher compared to those fed on diet 1 (control) at 91 d of age (+228 and +262 g, respectively; P=0.01). Within 35 to 91 d, the average daily weight gain in rabbits fed on diets 3 and 4 was higher compared to those fed on the control diet (+4.1and +4.8 g/d, respectively; P=0.01). The dressing-out percentage of rabbits fed on diets 3 and 4 increased (P=0.05) compared to those fed the control diet. At 63 d and 91 d of age, the white blood cell level of rabbits fed on diet 4 increased significantly compared to those fed the control diet (+5.05×10<sup>9</sup> and +5.32×10<sup>9</sup>/L, respectively). At 63 and 91 d of age, the cholesterol level of rabbits fed on diets 3 (–1.0 and –1.16 mmol/L, respectively) and 4 (–1.10 and –1.21 mmol/L, respectively), were significantly lower compared to those fed on the control diet. The aspartate aminotransferase (AST) concentration in rabbits fed on diet 4 was reduced compared to those on control diet at 63 d of age (–33.68 IU/L; P=0.02). At 63 d and 91 d of age, compared to control, the activities of glutathione peroxidase in rabbits fed on diets 3 (+35.77 and +49.09 mg protein, respectively) and 4 (+54.52 and +55.02 mg protein, respectively) increased significantly, while catalase activities in rabbits fed diet 4 (+217.7 and +209.5 mg/g, respectively) also increased significantly. It could be concluded that dietary MLM supplementation enhanced the rabbits’ performance, reduced serum AST and cholesterol and improved the antioxidant status.</p>

<p class="Articletitle">The effect of sorghum hydrolysed by <em>Trametes maxima</em> CU1 and <em>Pycnoporus sanguineus</em> CS2 was evaluated on growth performance traits and rabbit meat quality. A total of 24 unsexed New Zealand rabbits, weaned at 20 d of age, were allocated to 2 treatments: T1 (diet including 300 g/kg of non-hydrolysed sorghum) and T2 (diet including 300 g/kg of hydrolysed sorghum by <em>Trametes maxima</em> CU1 and <em>Pycnoporus sanguineus</em> CS2). Rabbits of group T2 did not have significantly different (<em>P</em>>0.05) feed intake compared to those in T1. Carcass traits were also not significantly different (<em>P</em>>0.05) between the 2 groups. The pH, water-holding capacity, colour and cooking loss of the longissimus lumborum were not different (<em>P</em>>0.05) between treatments, whereas the pH of the rabbits biceps femoris was higher in T2 (6.21; <em>P</em><0.05) than in T1 (6.14). Meat hardness and gumminess in T2 were lower (<em>P</em><0.05) in comparison to meat from T1. Thus, sorghum hydrolysed by <em>Trametes maxima</em> CU1 and <em>Pycnoporus sanguineus</em> CS2 contributed to a better rabbit meat texture.</p>

Abstract
The effects of dietary supplementation of different parts of Andrographis paniculata on fatty acids, lipid oxidation, microbiota and quality attributes of Longissimus thoracis et lumborum (LTL) muscle in goats were assessed. Twenty four, entire Boer bucks (4 months old; 20.18 ± 0.19 kg BW) were randomly allotted to either a basal diet without additive (AP0), a basal diet + 1.5% Andrographis paniculata leaves (APL) or a basal diet + 1.5% Andrographis paniculata whole plant (APW). The bucks were fed the diets for 100 d and slaughtered. The LTL muscle was subjected to a 7 d chill storage. The AP0 meat had higher (p < .05) concentration of C16:0 and C18:0 than the APW and APL meat. The concentrations of total C18:1trans, total CLA, C18:1n-9, C18:2n-6, C18:3n-3 and C20:5n-3 were higher (p < .05) in APL and APW meat than the AP0 meat. Diets had no effect (p > .05) on muscle glycogen, pH, drip loss, chemical composition and lactic acid bacteria count. Cooking loss, shear force, and TBARS values were lower (p < .05) in APL (23.98%, 0.76 kg, 0.12 mg MDA/kg) and APW (24.53%, 0.80 kg, 0.15 mg MDA/kg) meat compared with AP0 (26.49%, 1.13 kg, 0.23 mg MDA/kg) meat. Meat redness was higher (p < .05) in APL (13.49) and APW (12.98) than AP0 (10.86). Sensory scores for juiciness, tenderness, and overall acceptability of APL (7.92, 7.88, 7.89) and APW (7.90, 7.08, 7.77) meat were higher (p < .05) than that of the AP0 (5.38, 5.95, 5.41) meat. Total viable counts and populations of Pseudomonas spp, Escherichia coli and Enterobacteriacea were higher (p < .05) in AP0 meat than in APL and APW meat. The APL exhibited higher (p < .05) antimicrobial potential than the APW. Chill storage affected (p < .05) the physicochemical properties, lipid oxidation and microbial counts in chevon. Dietary APL and APW enhanced the beneficial fatty acids, quality attributes and oxidative stability, and reduced microbial counts in chevon.
