Abstract
Food-borne pathogen-related biofilms in food processing environments pose significant risks to human health. To ensure human and environmental safety, natural substances with anti-microbial properties and generally recognized as safe (GRAS) status are the future disinfectants of the food industry. The use of postbiotics in food products is gaining attention due to their many benefits. Postbiotics are soluble substances produced by probiotics or released after their lysis, such as bacteriocins, biosurfactants (BSs), and exopolysaccharides (EPS). Postbiotics have drawn attention because of their clear chemical structure, safety dose parameters, long shelf life, and the content of various signaling molecules, which may have anti-biofilm and antibacterial activities. The main mechanisms of postbiotics to combat biofilm contain suppression of twitching motility, disturbing quorum sensing (QS), and reduction of virulence factors. However, there are obstacles to using these compounds in the food matrix because some factors (temperature and pH) can limit the anti-biofilm impact of postbiotics. Therefore, by using encapsulation or application of these compounds in packaging films, the effect of interfering factors can be eliminated. This review summarizes the concept and safety of postbiotics, focusing on their antibiofilm effect, as well as discussing the encapsulation of postbiotics and their application in packaging films.

Abstract
Microbial-derived postbiotics are of interest recently due to their lower side effects than chemotherapy for cancer treatment and prevention. This study aimed to investigate the potential antigenotoxic and cytotoxic effects of cell-free-supernatant (CFS) postbiotics derived from Saccharomyces boulardii by applying SOS chromotest and MTT assay on HT-29 cell lines. Also, further cellular pathway-related assays such as cell cycle, DAPI, and annexin V-FITC/PI staining were performed. Real-time PCR was utilized to assess the expression levels of some genes involved in apoptosis. Based on the outcomes, the CFSs of S. boulardii showed significant antigenotoxic effects (20-60%, P < 0.05), decreased cell viability (with the significant IC50 values of 33.82, 22.68, and 27.67 µg/mL after 24, 48, and 72 h respectively), suppressed the initial (G0/G1) phase of the cell's division, influenced the nucleus of the treated cells, induced apoptosis, and increased the expression of Caspas3 and PTEN genes after 48 h, while the RelA and Bcl-XL genes indicated diminished expression in treated HT-29 cells. Consequently, CFS postbiotics of S. boulardii exhibited significant antigenotoxic and cytotoxic effects and induced apoptosis responses in HT-29 cancer cells. The results of this investigation lead us to recommend that the CFS postbiotics generated from Saccharomyces cerevisiae var. boulardii be taken into consideration as a potential anticancer agent or in the design of supplementary medications to treat and prevent colon cancers.

Abstract
Pesticides possess a pivotal role in the realm of agriculture and food manufacturing, as they effectively manage the proliferation of weeds, insects, plant pathogens, and microbial contaminations. They are valuable in some ways, but if misused, they can cause health issues like cancer, reproductive toxicity, neurological illnesses, and endocrine system disturbances. In this regard, practical methods for reducing pesticide residue in food should be used. For reducing pesticide residue in food processing, some strategies have been suggested. Recent research has been done on detoxification processes, including microorganisms like probiotics and their metabolites. The term "postbiotics" describes soluble substances, such as peptides, enzymes, teichoic acids, muropeptides generated from peptidoglycans, polysaccharides, proteins, and organic acids that are secreted by living bacteria or released after bacterial lysis. Due to their distinct chemical makeup, safe dosage guidelines, lengthy shelf lives, and presence of various signaling molecules that may have antioxidant, anti-inflammatory, anti-obesogenic, immunomodulatory, anti-hypertensive, and immunomodulatory effects, these postbiotics have attracted interest. They also can detoxify heavy metals, mycotoxins, and pesticides. Hydrolytic enzymes have been proposed as a potential mechanism for pesticide degradation. Postbiotics can also reduce reactive oxygen species production, enhance gastrointestinal barrier function, reduce inflammation, and modulate host xenobiotic metabolism. This review highlights pesticide residues in food products, definitions and safety aspect of postbiotics, as well as their biological role in detoxification of pesticides and the protective role of these compounds against the adverse effects of pesticides.

Abstract
BACKGROUND Antibiotic resistance is a serious public health problem as it causes previously manageable diseases to become deadly infections that can cause serious disability or even death. Scientists are creating novel approaches and procedures that are essential for the treatment of infections and limiting the improper use of antibiotics in an effort to counter this rising risk. OBJECTIVE With a focus on the numerous postbiotic metabolites formed from the beneficial gut microorganisms, their potential antimicrobial actions, and recent associated advancements in the food and medical areas, this review presents an overview of the emerging ways to prevent antibiotic resistance. RESULTS Presently, scientific literature confirms that plant-derived antimicrobials, RNA therapy, fecal microbiota transplantation, vaccines, nanoantibiotics, haemofiltration, predatory bacteria, immunotherapeutics, quorum-sensing inhibitors, phage therapies, and probiotics can be considered natural and efficient antibiotic alternative candidates. The investigations on appropriate probiotic strains have led to the characterization of specific metabolic byproducts of probiotics named postbiotics. Based on preclinical and clinical studies, postbiotics with their unique characteristics in terms of clinical (safe origin, without the potential spread of antibiotic resistance genes, unique and multiple antimicrobial action mechanisms), technological (stability and feasibility of large-scale production), and economic (low production costs) aspects can be used as a novel alternative agent or adjuvant for the common antibiotics utilized in the production of animal-based foods. CONCLUSION Postbiotic constituents may be a new approach for utilization in the pharmaceutical and food sectors for developing therapeutic treatments. Further metabolomics investigations are required to describe novel postbiotics and clinical trials are also required to define the sufficient dose and optimum administration frequency of postbiotics.

Abstract
Food degradation made by mycotoxigenic molds represents a significant challenge too food security. Postbiotics are associated with soluble compounds liberated by living bacterial cells or their construction release after lysis, and these metabolites offer the host biological action and specific physiological benefits. In this work, the postbiotics from tree strains of Lactobacillus spp. (Limosilactobacillus reuteri ATCC 367, Lacticaseibacillus casei431and Limosilactobacillus reuteri ATCC) were lyophilized, filtered, and tested to evaluate the antimicrobial and anti-biofilm activity in vitro and milk against P. expansoum. Also, to assess the antioxidant efficacy and the free radical scavenging possibility of the postbiotic, DPPH and ABTS + methods were used. Antimicrobial activity and biofilm removal activity of postbiotics depended on the Lactobacillus strains used. The minimum inhibitory concentration (MIC) of the prepared postbiotic was determined to be 70ug/ml. The lowest minimum effective concentration (MEC) of postbiotics were significantly differed, in the food matrix, and a low MEC index (100 mg/ml) was detected for postbiotic of L. brevis. Postbiotics derived from L. brevis showed the highest antimicrobial activity compared to L. casei and L. reuteri. The postbiotic extracted from Lactobacillus strain may have functional properties (potential antimicrobial and anti-biofilm) in vitro and food models.

Abstract
Postbiotics are soluble metabolites that are liberated from the structure of lysing bacteria or are produced by live bacteria; these byproducts give the host increased biological activity and certain physiological effects. In the current study, the anti-Staphylococcus properties of postbiotics isolated from Lactobacillus acidophilus,L.paracasei,and L.plantarum were investigated in vitro, and pasteurized milk. Potential activity of postbiotics was performed via agar-disk diffusion method. Besides, the effect of heat and pH on the postbiotics antibacterial activity was measured via the agar-well diffusion method. To determine the antioxidant effect and the free radical scavenging potential of the postbiotics, 1,1-Diphenyl-2-picrylhydrazyl (DPPH) method was utilized. The postbiotics chemical composition was identified via gas chromatography-mass spectrometry. The antibacterial activity was mainly associated with lactic acid, laurostearic acid, and isopropylidene-3,3-dimethyl. Also, postbiotics showed strong antioxidant activity. Postbiotics derived from L.plantarum showed the highest antioxidant properties compared to L.paracasei and L.acidophilus. Lower minimum effective concentrations of postbiotic were altered in food model, and substantially, a low minimum effective( MEC) concentrations index (15 mg/mL) was identified for postbiotic of L.plantarum. The Lactobacillus spp. postbiotic, in particular L.plantarum, may have useful functional characteristics (possible antibacterial and antioxidant) in in vitro and food model.

Abstract
Oral diseases are among the most common diseases around the world that people usually suffer from during their lifetime. Tooth decay is a multifactorial disease, and the composition of oral microbiota is a critical factor in its development. Also, Streptococcus mutans is considered the most important caries-causing species. It is expected that probiotics, as they adjust the intestinal microbiota and reduce the number of pathogenic bacteria in the human intestine, can exert their health-giving effects, especially the anti-pathogenic effect, in the oral cavity, which is part of the human gastrointestinal tract. Therefore, numerous in vitro and in vivo studies have been conducted on the role of probiotics in the prevention of tooth decay. In this review, while investigating the effect of different strains of probiotics Lactobacillus and Bifidobacteria on oral diseases, including dental caries, candida yeast infections, periodontal diseases, and halitosis, we have also discussed postbiotics as novel non-living biological compounds derived from probiotics.

Abstract
Precise monitoring of antibiotic residues in aqueous solution is of vital significance for safeguarding the environment and food resources. Herein, a convenient platform was fabricated for the electrochemical assay of ciprofloxacin (CFX) in real milk samples using aminated aptamer and graphene oxide nanogold-functionalized branched polyethyleneimine (GO-PEI-AuNPs) nanocomposite. For the first time, a gold electrode was modified with GO-PEI-AuNPs. The modified surface endowed excellent electrochemical substrates with large surface areas, excellent electron transfer rates, and suitable capabilities to firmly attach high amounts of aptamer. After further modification of substrate with CFX specific aptamer a recognition probe enabling selective and sensitive determination of CFX was realized. All of the aptasensor fabrication steps were surveyed via cyclic voltammetry techniques. The construction and morphology of the GO-PEI-AuNPs composite were evaluated by UV-Vis spectroscopy, transmission electron microscopy, and field emission scanning electron microscopy. Under optimal conditions, the suggested scaffold can offer an acceptable linear range of 0.001 to 100 μM and a low limit of quantification of 0.001 μM for selective and sensitive monitoring of CFX in real samples. The effectiveness of the apta-assay was confirmed by detection of CFX in pasteurized and local milk samples for which suitable analytical results were achieved. It is expected that the developed substrate can be facilely extended to other aptamer-based multiplex screening platforms in actual food and environmental samples. A convenient platform was fabricated for the electrochemical assay of ciprofloxacin using aminated aptamer immobilized in GO-PEI-AuNPs nanocomposite.![]()

Abstract
Food is the essential need of human life and has nutrients that support growth and health. Gastrointestinal tract microbiota involves valuable microorganisms that develop therapeutic effects and are characterized as probiotics. The investigations on appropriate probiotic strains have led to the characterization of specific metabolic byproducts of probiotics named postbiotics. The probiotics must maintain their survival against inappropriate lethal conditions of the processing, storage, distribution, preparation, and digestion system so that they can exhibit their most health effects. Conversely, probiotic metabolites (postbiotics) have successfully overcome these unfavorable conditions and may be an appropriate alternative to probiotics. Due to their specific chemical structure, safe profile, long shelf-life, and the fact that they contain various signaling molecules, postbiotics may have anti-inflammatory, immunomodulatory, antihypertensive properties, inhibiting abnormal cell proliferation and antioxidative activities. Consequently, present scientific literature approves that postbiotics can mimic the fundamental and clinical role of probiotics, and due to their unique characteristics, they can be applied in an oral delivery system (pharmaceutical/functional foods), as a preharvest food safety hurdle, to promote the shelf-life of food products and develop novel functional foods or/and for developing health benefits, and therapeutic aims. This review addresses the latest postbiotic applications with regard to pharmaceutical formulations and commercial food-based products. Potential postbiotic applications in the promotion of host health status, prevention of disease, and complementary treatment are also reviewed.

Abstract
This study aimed to investigate the effects of prebiotics on metabolic indices and menopausal symptoms. This triple-blind randomised controlled trial was conducted on 60 menopausal women. The participants were assigned to two groups based on block randomisation. Over 6 weeks, the experimental group received 100 g of prebiotic-rich yogurt daily after lunch and the control group received regular yogurt. Menopausal symptoms and metabolic indices were assessed before and after the treatment. The mean total score of menopausal symptoms (p < 0.001), anxiety (p < 0.001), depression (p = 0.003), vasomotor (p < 0.001), and low-density lipoprotein (p = 0.028) was statistically lower in the experimental group than the control group. Moreover, the serum insulin level was statistically higher among those in the experimental group (p = 0.011). The study results demonstrated the positive effects of prebiotic-rich yogurt on menopausal symptoms and some metabolic indices. Abstract
BACKGROUND Hyperbilirubinemia is a common problem in neonates. The aim of this study was to evaluate the effect of synbiotic in addition to routine phototherapy on the treatment of neonatal jaundice. METHOD This double-blind clinical trial, was performed on 194, 3-14 days old neonates. Neonates were divided into intervention and placebo groups. The intervention group received 5 drops of oral synbiotic daily along with phototherapy and the placebo group underwent phototherapy plus a placebo. Gestational age, age, weight, sex, initial and daily bilirubin level, frequency of defecation, mode of delivery, and length of hospitalization were assessed. RESULTS The rate of bilirubin reduction on the first day of admission was significantly higher in the intervention group (2.9±1.81 vs. 2.06±1.93, p = 0.002). The mean level of bilirubin on the second (9.8±1.92 vs. 10.88±2.26) and third days (8.06±1.54 vs. 9.86±1.7) was lower in the intervention group (p = 0.001). The proportion of discharged patients in the third and fourth days was higher in the intervention group compared to the control (65% vs. 41%, 99% vs. 86.5%, respectively, p = 0.001). However, the duration of hospitalization was shorter in the intervention group compared to the control (2.36±0.5 vs. 2.74±0.74, p = 0.001). CONCLUSION Based on our results, daily treatment with 5 drops of synbiotic along with phototherapy can be a safe and effective modality in faster bilirubin reduction, decreasing the hospitalization period and phototherapy. Therefore, it seems that it can be used as an adjunct therapy for neonates with jaundice.

Abstract
The constant need of humans and animals for food resources was led to overuse of antibiotics as vital medicines. In this regard, we are now facing major concern about the risks on the food safety and environment owing to their uncontrolled disposal. Hence, the progress of simple and sensitive approaches for fast monitoring of antibiotic levels is highly desirable. Here, we aimed to describe a new sensitive and easy-to use strategy based on electrochemical single off apta-assay toward ciprofloxacin (CFX). A novel interface using 3D Au-PAMAM/rGO have been designed via full electrochemically technique on the surface of glassy carbon electrodes (GCE) and evaluated with cyclic voltammetry method. Firstly, rGO with large amount of active functional groups as substrate was fabricated on the GCE electrode. Thereby, the 3D Au-PAMAM nanocomposite was synthesized and covalently electrodeposited onto the rGO-GCE modified surface. The structure and morphology of 3D Au-PAMAM were studied using UV-Vis spectroscopy, Field emission scanning electron microscopes (FE-SEM) and Transmission electron microscopy. Also, FE-SEM and Energy-dispersive X-ray spectroscopy (EDS) have been carry out to illustrate surface morphology of electrodes. The obtained results from square wave voltammetry, different pulse voltammetry, and chronoamperometry techniques implied that the suggested scaffold could be used as facile bio-device toward antibiotic detection with low limit of quantification (LLOQ) of 1 nM and a linear range of 1 μM-1 nM. Interestingly, the suggested aptasensor is successfully used to measure CFX residues in local and pasteurized milk samples. It can be deduced that Apt/rGO/3D Au-PAMAM/GCE as a novel biocompatible interface could offer suitable, cost-effective, reliable, rapid, and user-friendly sensing device for direct determination of CFX in real samples.

Abstract
According to outcomes from clinical studies, an intricate relationship occurs between the beneficial microbiota, gut homeostasis, and the host's health status. Numerous studies have confirmed the health-promoting effects of probiotics, particularly in gastrointestinal diseases. On the other hand, the safety issues regarding the consumption of some probiotics are still a matter of debate, thus to overcome the problems related to the application of live probiotic cells in terms of clinical, technological, and economic aspects, microbial-derived biomolecules (postbiotics) were introducing as a potential alternative agent. Presently scientific literature confirms that the postbiotic components can be used as promising tools for both prevention and treatment strategies in gastrointestinal disorders with less undesirable side-effects, particularly in infants and children. Future head-to-head trials are required to distinguish appropriate strains of parent cells, optimal dosages of postbiotics, and assessment of the cost-effectiveness of postbiotics compared to alternative drugs. This review provides an overview of the concept and safety issues regarding postbiotics, with emphasis on their biological role in the treatment of some important gastrointestinal disorders.

Abstract
The purpose of the current research was to determine optimal situation by applying Simplex lattice mixture design for the formulation of prebiotic sucrose-free milk chocolate. Chocolate samples were prepared using two different sugar alcohols containing xylitol and maltitol along with galactooligosaccharide as prebiotic substance. The effects of sugar alcohols and prebiotic blends on rheological attributes and some physical characteristics were assessed. The outcomes represented the high coefficient of determination (≥ 90%) of fitted models. The optimization of the variables indicated that using 20.857 g maltitol, 7.131 g xylitol and 5.012 g galactooligosaccharide generated the optimized chocolate with the highest desirability (1.00) without undesirable changes in the rheological and physical properties. Furthermore, the optimum formulation was prepared to validate the optimum model. The sensory evaluation of the optimized formulation of chocolate pleased the consumer needs.

Abstract
As many investigations have reported, there is a complicated relation between fermented foods, lactic acid bacteria (LAB), and human health. It seems that bioactive components such as prebiotics, probiotics, and postbiotics are key mediators of the complex and direct association between these factors. LAB activity in the matrix of fermented foods and improving their growth by prebiotic compounds ultimately results in the production of bioactive molecules (postbiotics), which possess specific biological and physiological properties. The term "postbiotics" refers to a complex of biological micro- and macromolecules, if consumed in adequate amounts, provides the host with different health-promoting effects. Different reports have suggested that postbiotics possess the ability to moderate the effectiveness of cancer treatment and reduce the side-effects of conventional therapies in cancer patients due to their anti-proliferative, anti-inflammatory and anti-cancer properties. Consequently, postbiotics, for their unique characteristics, have gained great scientific attention and are considered as a novel approach for adjuvant therapy in patients with cancer.

Abstract
In this study, the emulsifying and foaming properties of a novel exudate gum from Dorema ammoniacum (AMG) were assessed in comparison with the well-known gum Arabic from Acacia tree (GAC). The sunflower oil-based emulsion (10% v/v) containing various concentrations (5%-15% w/v) of AMG and GAC was prepared. At all concentrations, AMG showed higher surface and interface activity than GAC. Increasing in AMG and GAC concentrations caused to increase and decrease in Z average, respectively. Overall, the GAC-stabilized emulsion showed lower Z average and PDI value than the AMG-stabilized emulsion during storage time. The sample containing AMG showed higher emulsion capacity and lower emulsion stability in comparison with the one containing GAC at all concentrations. The storage stability decreased and increased with increasing in AMG and GAC concentrations, respectively. After two-week storage, the emulsions containing 10 and 15% AMG showed higher phase separation than those containing GAC; however, this was opposite about sample containing 5% AMG. At thermal, centrifuge, and freezing conditions, the emulsion containing 5% AMG indicated significantly higher stability than GAC samples; however, at higher concentration, opposite effect could be observed. The foaming capacity of the samples containing AMG increased from 81% to 93% by increasing gum concentration from 5% to 15%. The solutions containing AMG showed higher foam capacity than control samples (without gum) and those containing GAC at all concentrations. Increasing in AMG and GAC concentrations slightly improved foam stability, and the highest value (92%) belonged to 15% AMG solution.

Abstract
The occurrence of colorectal cancer (CRC) has been rising expeditiously and anticipated that 2.4 million new occasions of CRC will be detected yearly around the world until the year 2035. Due to some side-effects and complications of conventional CRC therapies, bioactive components such as microbial-derived biomolecules (postbiotics) have been attaining great significance by researchers for adjuvant therapy in CRC patients. The term 'postbiotics' encompasses an extensive range of complex micro- and macro-molecules (<50, 50-100, and 100< kDa) such as inactivated microbial cells, cell fractions or metabolites, which confer various physiological health benefits to the host when administered in adequate amounts. Postbiotics modulate the composition of the gut microbiota and the functionality of the immune system, as well as promote the CRC treatment effectiveness and reduces its side-effects in CRC patients due to possessing anti-oxidant, anti-proliferative, anti-inflammatory, and anti-cancer activities. Presently scientific literature confirms that postbiotics with their unique characteristics in terms of clinical (safe origin), technological (stability), and economic (low production costs) aspects can be used as promising tools for both prevent and adjuvant treat strategies in CRC patients without any serious undesirable side-effects. This review provides an overview of the concept and safety issues regarding postbiotics, with emphasis on their biological role in the prevention and treatment of CRC.

Abstract
During the last two decades, the prevalence and severity of clinical appearances of food allergy (FA) have a significant rise. FA derives from a breakdown of immune tolerance. In recent year's clinical evidence have shown that the probiotics have significant influences on FA by improving the immune tolerance. Besides, postbiotics due to their unique characteristics (safe profile, more shelf life, resistance to mammalian enzymes and stable to digestive system conditions), may have safety superiority against their parent live cells and as a novel strategy can be applied for improvement immune tolerance and treatment of FA without any undesirable side-effects or human opportunistic infections, particularly in infants and pediatrics.

Abstract
BACKGROUND Gestational diabetes mellitus (GDM) is a complication of pregnancy that can be associated with neonatal complications and adverse pregnancy outcomes. Recently, probiotic use has been proposed for better control of glucose in GDM patients. The aim of this study was to evaluate the effect of probiotic yoghurt compare with ordinary yoghurt on GDM women. METHODS In this double-blind placebo-controlled clinical trial, 84 pregnant women with GDM were randomly assigned into two groups of 42 recipients who underwent 300 g/day of probiotic yoghurt or placebo for 8 weeks. Blood glucose, HbA1c, and the outcome of pregnancy were compared between the two groups after the intervention. RESULTS According to the findings of present trial no significant differences were observed in general characteristics between the two groups (p > 0.05). Both fasting and post prandial blood glucose as well as the level of HbA1c were decreased significantly in probiotic group (p < 0.05), although these changes are not statistically significant in the placebo group. The between group differences was significant after the 2 month intervention (p < 0.05). Neonates born of probiotic group mothers, have significantly lower weight and fewer macrosome neonates were born in this group compared with control group (p < 0.05). However, no difference was observed in other values of outcome. CONCLUSIONS Our study revealed that better control of blood glucose can be achieved by consumption of probiotic yoghurt in patients whose pregnancy is complicated by GDM, compared with placebo. Also incidence of macrosomia may be decreased by this regimen.

Abstract
Sucrose-free milk chocolates containing different types of bulk (isomalt, xylitol and maltitol) and high intensity (Stevia) sweeteners were produced by using a ball mill. The main quality characteristics of the formulated chocolates were evaluated and compared with those of the conventional sample containing sucrose. The Casson model was the best fitting model for the rheological data. Casson viscosity and Casson yield stress were significantly affected by the type of bulking agent in chocolates formulated with xylitol (p < 0.05). However xylitol notably improved the overall acceptability according to the sensory analysis results. Chocolates containing the sucrose replacers demonstrated lower Tonset values and higher enthalpy than the control sample. Sucrose-free chocolates illustrated a higher degree of particle agglomeration. Bulk sweeteners meanwhile seem to have high potential for milk chocolate production with low calorie values by using the ball mill technique. Industrial applications: the production of sucrose-free chocolates with conventional methods requires a lot of time and energy. Recently, using alternative methods for chocolate production has been raising interest in many small industries. This study proposed a ball mill method for the preparation of sucrose-free milk chocolates with physiochemical properties almost ranging in the standard limit defined for chocolate. Although using the ball mill method presents a more cost-effective technique for chocolate production and provides shorter processing times for small chocolate industries, it seems to be less efficient in evaporating moisture than the conventional processing. Challenges are still ahead for upgrading this alternative technique to be efficient in evaporating more moisture during operation ending in a high quality product. Abstract
BACKGROUND Probiotics can alter the colonic microbiota and might improve bowel function. OBJECTIVES The aim of this study was to evaluate the effect of the consumption of yogurt, enriched with Bifidobacterium and Lactobacillus 4.8 × 1010 (CFU) on the symptoms of constipated pregnant women. MATERIALS AND METHODS This triple-blind randomized controlled trial was conducted on 60 constipated pregnant women who were diagnosed by the ROME III criteria in Tabriz, Iran from December 2014 to July 2015. Participants were randomly put into two groups including the treatment and the control group through block randomization. The treatment group received 300 g of yogurt enriched with Bifidobacterium and Lactobacillus 4.8 × 1010 colony forming units (CFU) (n = 30) while the control group received conventional yogurt (n = 30) for 4 weeks. The defecation frequency, stool consistency, straining during defecation, sensation of anorectal obstruction, sensation of incomplete evacuation and manual manoeuvres to facilitate defecation were primary outcomes while the amount of defecation, stool colure, and quality of life were secondary outcomes. RESULTS The frequency of defecation was increased from 2.1 (0.8) at baseline to 8.3 (4.4) in the probiotic yogurt group vs. 2.3 (0.7) at baseline to 8.1 (4.3) in the conventional yogurt group at the end of 4th week. These results were based on the repeated measure ANOVA test and there was no statistically significant difference between the two groups (mean difference: 0.1; Confidence Interval 95%: -1.4 to 1.7; P = 0.872). Constipation symptoms including straining, anorectal obstruction, manipulation to facilitate defecation, consistency of stool and color of stool were improved significantly (P < 0.05) in both groups. In addition, the amount of defecation was significantly increased in both groups (P < 0.05), while incomplete evacuation was significantly reduced in the treatment group (P = 0.01). There was no statistically significant difference between the groups in the mean scores of physical (P = 0.726) and mental (P = 0.678) aspects of quality of life after the intervention with the adjusting of baseline scores. CONCLUSIONS Consumption of 300 g/day probiotic and conventional yogurt can play a role in improving the symptoms of constipation during pregnancy.

Abstract
BACKGROUND To our knowledge there has been no study investigating the impact of freeze-dried strawberry (FDS) supplementation on metabolic biomarkers of atherosclerosis in subjects with type 2 diabetes (T2D). OBJECTIVE This study was carried out to determine the effects of FDS supplementation on glycemic control, biomarkers of oxidative stress, inflammation and serum total antioxidant status in subjects with T2D compared to matched control subjects. METHODS Thirty-six subjects with T2D (23 females; mean body mass index 27.90 ± 3.7; mean age 51.57 ± 10 years) were randomly divided into two groups. The treatment group consumed 2 cups of FDS beverage (50 g of FDS is equivalent to 500 g of fresh strawberries) or macronutrient matched placebo powder with strawberry flavor daily for 6 weeks in a randomized double-blind controlled trial. Anthropometric measurements, dietary intakes, hemoglobin (Hb)A1c, antioxidant status, C-reactive protein and malondialdehyde (MDA) levels were assessed at baseline and 6 weeks post-intervention. RESULTS FDS supplementation significantly decreased C-reactive protein levels as a biomarker of inflammation (2.5 vs. 2.04 mg/l, p < 0.05) and lipid peroxidation in the form of MDA (3.36 vs. 2.7 nmol/ml, p < 0.05) at 6 weeks compared to the baseline. Moreover, supplementation led to a decreasing trend in HbA1c (-5.7%, p < 0.05) and significant increase in total antioxidant status in the FDS group (1.44 vs. 1.26 mmol/l, p < 0.01) compared to the placebo group. No significant changes were observed in serum glucose concentrations and anthropometric indices. CONCLUSIONS FDS improved glycemic control and antioxidant status, and reduced lipid peroxidation and inflammatory response in patients with T2D. Supplementation with freeze-dried berry products, as natural sources of antioxidants with low glycemic index, could be considered as an adjunctive therapy in ameliorating metabolic complications of T2D.

Abstract
In this research, the survival of probiotic microorganisms in yogurts stored at room temperature (cold chain interruption conditions) was studied. Milk inoculated with yogurt bacteria (mixed culture of Streptococcus thermophilus and Lactobacillus delbrueckii ssp. bulgaricus) and a single probiotic culture (L. acidophilus LA-5 or Bifidobacterium lactis Bb- 12 or L. rhamnosus HN001 or L. paracasei Lpc-37) were incubated till pH of 4.5 was reached. Probiotic yogurts were stored at two different temperatures including cold (control) and room temperatures (5 and 20°C, respectively). Changes in pH decrease, titratable acidity increase and redox potential increase as well as the viability of probiotics per 6 h intervals during an assumptive interrupted cold storage (24 h) were monitored. The survival of probiotics was strongly dependent on the storage temperature and remarkable viability loss occurred in room temperature compared to refrigerated storage. In addition, the survivability was dependent on probiotic strain. Among our experimental strains, B. lactis Bb-12 showed the less resistance to be stored at 20°C (24 h) and referring to the recommended minimum numbers of 10(7) cfu mL(-) (1), L. rhamnosus HN001 was the most suitable probiotic strain to be used in probiotic yogurts especially in countries having high possibility of cold chain interruption during storage.

Abstract
BACKGROUND The aim of this study was to assess physical properties of dietetic chocolate milk produced by stevia as a sugar replacer and inulin. Along with having prebiotic effect, inulin can also participate in enhancing textural properties of beverages. Therefore, this novel food will be useful for all people especially for diabetics. METHODS This study was carried out in Quality Control Laboratory of Food Science and Technology Department, Health and Nutrition Faculty, Tabriz University of Medical Science, during 2011-2012. The assay was performed on nine treatments with three replications. Sugar was substituted with stevia in two proportions of sucrose to stevia; 50:50 and 0:100. Inulin, in four levels of 0%, 2%, 4% and 6%, was added to the treatments of 50% and 100% stevia. The control sample contained no stevia and no inulin, such as commercial ones. Precipitation amount and viscosity were measured 24 hours after production. Data analyzed by one-way ANOVA, at the significant level of 0.05, using SPSS software ver. 17. RESULTS Sugar replacement with stevia caused significant increase in precipitation and significant decrease in viscosity (P<0.05), whereas using inulin in formulation significantly decreased precipitation and increased viscosity (P<0.05). The sample containing 100% stevia and 6% inulin revealed a viscosity with a non-significant difference with the control (P>0.05). The sample containing 50% stevia and 6% inulin had the lowest precipitation while having a non-significantly difference with the control. Conclusion A thickener agent, such as inulin, should be used in the chocolate milk sweetened by stevia to improve physical properties of the product.
