Horticultural plant materials not usually used from onion, carrot, beetroot, sea buckthorn, black and red currants as well as a wastewater powder from olive oil production were analyzed for total phenols content (FC), ferric reducing ability of plasma (FRAP), radical scavenging capacity (ABTS), and for major phenolic compounds by HPLC-MS. Antioxidant capacity and phenol content varied significantly between species and cultivars, with extracts of sea buckthorn leaves being superior. In different species, different phenolic compounds were closely associated with FRAP, ABTS and FC. For instance, hydrolysable tannins were major antioxidants in sea buckthorn whereas quercetin was the major antioxidant in onion peel and skin. This study shows that horticultural plant materials usually left in the field or waste materials from processing may have high antioxidant properties, and that extracts of these materials therefore could be of potential interest for development of antioxidant food additives.

Functionalization of chitosan by a free radical reaction: Characterization, antioxidant and antibacterial potential

Chitosan was functionalized with epigallocatechin gallate (EGCG) by a free radical-induced grafting procedure, which was carried out by a redox pair (ascorbic acid/hydrogen peroxide) as the radical initiator. The successful preparation of EGCG grafted-chitosan was verified by spectroscopic (UV, FTIR and XPS) and thermal (DSC and TGA) analyses. The degree of grafting of phenolic compounds onto the chitosan was determined by the Folin-Ciocalteu procedure. Additionally, the biological activities (antioxidant and antibacterial) of pure EGCG, blank chitosan and EGCG grafted-chitosan were evaluated. The spectroscopic and thermal results indicate chitosan functionalization with EGCG; the EGCG content was 25.8mg/g of EGCG grafted-chitosan. The antibacterial activity of the EGCG grafted-chitosan was increased compared to pure EGCG or blank chitosan against S. aureus and Pseudomonas sp. (p<0.05). Additionally, EGCG grafted-chitosan showed higher antioxidant activity than blank chitosan. These results indicate that EGCG grafted-chitosan might be useful in active food packaging.

Provitamin A potential of landrace orange maize variety (Zea mays L.) grown in different geographical locations of central Malawi

The provitamin A potential of landrace orange maize from different locations (A, B, C and D) of central Malawi has been evaluated. Physicochemical compositions, color, total carotenoid content (TCC), carotenoid profiles, and oxygen radical absorbance capacity (ORAC) and 2,2-diphenyl-1-picryhydrazyl (DPPH) free radical scavenging activity as antioxidant capacities of maize were determined. Color values of orange maize had correlations with β-cryptoxanthin (r>0.36). TCC of white and orange maize averaged 2.12 and 59.5 mg/kg, respectively. Lutein was the most abundant carotenoid (47.8%) in orange maize, followed by zeaxanthin (24.2%), β-carotene (16.4%) and β-cryptoxanthin (11.6%). Location D showed the highest levels of lutein, zeaxanthin and antioxidant capacity. Provitamin A content of orange maize met the target level (15 μg/g) of biofortification. Retinol activity equivalent (RAE) from β-cryptoxanthin and β-carotene in orange maize averaged 81.73 μg/100g. In conclusion, orange maize has the potential to be a natural source of provitamin A.
